Abstract

In this article, the results of key lime fruit (Citrus aurantifolia) wastes and cabbage (Brassica L.) wastes anaerobic digestion are presented. Anaerobic digestion of the wastes was performed in batch process, neutral pH (key-lime 7.47 and cabbage 7.67) and substrate concentration of Volatile Suspended Solids (VSS) 10 gVSS/L. One of the aims of this research was to check the availability of these substrates to be the source of methane and hydrogen. Key lime wastes produced 32 times more methane than raw cabbage. However, hydrogen production from cabbage was 149 times higher than key lime. The percentage of methane production in cabbage was up to 81% and in key lime was up to 75%. This research showed from the substrates comparison that efficient hydrogen production is less dependent on low pKa, pH than on total solids of the substrates.

Abstract

Anthocyanin was developed into natural food colorant in microemulsion systems to improve their stability and readiness for food preparation. Anthocyanin has an antioxidant activity. The degradation of anthocyanin into small compound could increase the biological activity. Anthocyanin was extracted from black glutinous rice and prepared using food grade surfactant such as Tween 80, Tween 20, and Span 80. Microemulsion was then added into modified deMann Rogosa Sharp (MRS) medium as much as 5, 10, 15, 20 and 25 ppm. Lactic acid bacteria genus Pediococcus pentosaceus N11.16 were grown for 18–24 hours and were used as enzyme producers. This experiment was aimed to determine the stability of anthocyanin in microemulsion systems to enzymatic degradation. The modified MRS medium was added with microemulsion and incubated for 24 h. Phenolic content remained stable during the fermentation process in all treatments, while the highest antioxidant activity was found in the sample with 20 ppm of anthocyanin. Total acid-producing bacteria were also monitored during the incubation and the result showed that there was a decline in their growth. There was a significant change in the antioxidant activity during incubation.

Abstract

Food security was one of the global issues, especially in developing countries, including Indonesia. This study aimed to examine the status of food security and its related factors in the coastal communities in the area of Buru Selatan District, Maluku Province. This study used secondary data collected from a household health survey conducted by the Faculty of Medicine, Pattimura University in November 2017. Information is derived from 899 respondents aged 20−60 years. Food security status was measured using the US Household Food Security/Hunger Survey Module (USFSSM). Factors ranging from environmental, household and individual levels are included in the analysis. Logistic regression method was applied to determine factors associated with food security status. Of the 899 respondents interviewed, only 30% was food secured and about 70% suffered fromfood insecurity (33,7% experienced food insecurity with hunger). Respondents from Waesama Sub-district were more food secured than those from Kepala Madan Sub-district (aOR = 2,16, 95% CI: 1,33-3,52, p=0,002). Respondents from "very rich" households were three and a half times more food-secured than "very poor" households (aOR = 3,49, 95% CI: 2,13-5,73, p<0,001). In addition, those who paid for the membership of health insurance were more food secured than those who got waived payment of contributions (aOR = 1,49, 95% CI: 1,07-2,08, p=0.018); and respondents living in an ideal household density (8 m2 or more per person) were more food secured than those innot ideal condition (aOR = 1,55, 95% CI: 1,01-2,39, p=0,047). Our study showed that intersectoral collaboration is important to improve community’s food security status. Long and short term interventions aimed at reducing poverty and providing subsidized foods, including fortified ones, to the those in need accompanied by educational programs to improve community knowledge about various alternative of local food are essential.

Abstract

Chili is a superior commodity that is much needed by Indonesian people. This commodity is susceptible to damages such as weight loss, decreased vitamin C content, color fades, and decay, which causes reduced shelf life. An improper storage process accounts for about 30% damage to chili. The objective of the research was designing a chili storage tool based on the hypobaric system which can decrease the respiration rate and ethylene gas, thus expending the shelf life. This tool consisted of several components, namely storage room, reservoir tank, vacuum pump, control panel, and a table. The research method included design and instrument, also pepper quality testing. Hypobaric storage used a pressure of -60 (-55) kPa, and a temperature of 22.9 °C. The results showed that the hypobaric storage design, instrument automation ran well, and the chili with hypobaric storage had minimal weight loss, water content, and vitamin C degradation, at 3.28%, 1.05%, and 12.91%. Parameters alteration based on entitlement with refrigerator were 6.66%, 6.8%, and 48.61%, whereas with room temperature the results were 9.7%, 15.98%, and 52.17%. Hypobaric storage for Chili was able to keep the chili quality better than room temperature and refrigerator.

Abstract

High demand of rice can be minimized by promoting cassava as an alternative carbohydrate source. One method to process cassava to ease consumption and to prolong its shelf-life is by making it into analog rice, namely cassava rice. Two drying methods were studied to obtain the physicochemical information of cassava rice. This research aimed at determining color and chemical properties, i.e. water content, ash, lipid, protein, carbohydrate, starch, amylose, amylopectin, and mineral contents of cassava rice processed by roasting and sun-drying. It also compared physicochemical characteristics of cassava rice and paddy rice to get better understanding of nutritional values of cassava rice. Results showed that physical, chemical, and mineral contents of cassava rice were different from paddy rice. Cassava rice had lower water, protein, Zn and P2O5 contents than paddy rice. Roasted cassava rice was darker than cassava rice. Sun-dried and roasted cassava rice showed no different values in terms of lipid, carbohydrate, starch, amylose, amylopectin, Mg, Zn and P2O5 contents, while other characteristics were similar.

Abstract

The Kenaf seed has narrow applications despite the relatively high oil content. This study therefore aims to identify the fatty acid content and chemical characteristics of kenaf seed oil derived from five superior varieties released by Balittas. These include Karangploso (KR) 6, 9, 11, 12, and 14, estimated to have oil content between the range 22.71–32.-32%. Furthermore, the quality is determined by testing several parameters, encompassing the acid number, free fatty acid level, iodine, saponification and peroxide number. The result show an acid rate range of 2.21 mg KOH/g (KR 12) - 3.28 mg KOH/g (KR 11) in kenaf seed oil. Meanwhile, the free fatty acids varied from 1.10–1.64%, with saponification (194.97–243.91 mg KOH/g) iodine rate (54.72– 71.44 g Iod/100 g) and peroxide rate (33.97 mec/kg (KR 14) - 56.23 mec/kg (KR 6)). The kenaf seed oil was concluded to contain numerous essential fatty acids, and oleic acid (44.73% KR 9; 43.01% KR 14), as well as linoleic acid (42.19% KR 12) exhibited the highest amounts.

Abstract

Sorgum (Sorghum bicolor (L) Moench.) merupakan bahan pangan lokal yang dapat digunakan sebagai pengganti beras. Sorgum memiliki kadar protein tidak tinggi, sehingga proses substitusi dengan kacang-kacangan atau proses perkecmabhan biji sorgum diharapkan menjadi solusi untuk meningkatkan kadar protein produk berbasis sorgum. Penelitian ini bertujuan untuk mengetahui karakteristik proksimat nasi sorgum dan nasi kecambah sorgum tersubstitusi kacang tunggak. Metode penelitian yang digunakan adalah deskriptif eksperimental dengan perbandingan sorgum atau kecambah sorgum dengan kacang tunggak sebesar 90:10, 70:30 dan 50:50. Hasilpenelitian menunjukkan komposisi proksimat nasi sorgum mengalami perubahan seiring dengan meningkatnya substitusi kacang tunggak dan perkecambahan. Semakin besar substitusi kacang tunggak meningkatkan kadar protein dan kadar abu namun menurunkan kadar air, kadar lemak, dan kadar karbohidrat nasi sorgum sedangkan perkecambahan sorgum cenderung menaikkan kadar protein dan kadar air namun menurunkan kadar abu, kadar lemak dan kadar karbohidrat nasi kecambah sorgum.

Abstract

In order to study the yield and yield components of two potato cultivars, an experiment was conducted as a split plot based on a randomized complete block design with three replicates. The experiment was performed in two locations, Jolgeh-Rokh district, and Fariman city, in professional farmers’ fields in Khoarasan Razavi province. The main plots consisted of two potato cultivars, Agria and Fontane cultivars (medium maturing), which were identified as the main cultivars used in chips production factories in the Province. Our results showed higher potential of Agria cultivar for production of stems per plant compared to Fontana cultivar. Both stem number and tuber number per plant along with tuber weight and tuber yield were higher in Fariman location than in Jolgeh-Rokh.

Abstract

Steam explosion was proposed as a pretreatment method to accelerate the hydrodistillation (SE-HD) of kaffir lime leaves. This research aimed to compare SE-HD and conventional hydrodistillation (HD) in terms of extraction yield, extraction time, chemical composition, and essential oil quality. The extraction of kaffir lime oil with SE-HD was superior to HD with regard to extraction time (35 min. vs 120 min.) and extraction yield (1.386% vs 1.182%). The chemical composition and the quality of the extracted essential oil from both methods were quite similar, indicating the absence of adverse influence from the application of steam explosion as pretreatment. Therefore, SE-HD was a fast and an energy-saving method for extracting essential oil from kaffir lime leaves.

Abstract

Rice is a vital commodity in Indonesia because it is the main staple food for most Indonesian people.  Balancing supply and demand of rice in Indonesia is complex and has possibly led to polemics, even though the production of rice in Indonesia tends to increase. An analysis of the supply-demand for rice commodity is, therefore, necessary as an effort to improve the national rice condition along with the logistics and supply chain point of view. This study aims to analyze the supply chain risk management of rice to provide recommendations on improving rice supply chain performance on each tier. This study was undertaken at Demak and Sleman Districts, Indonesia. In-depth interviews were used to enrich the information from the respondents along the supply chain. In this study, tiers on the supply chain of rice mainly consists of farmers, collectors who also acts as traders, and retailers. Meanwhile, the role of government is represented by The Indonesia Logistics Bureau (BULOG). The different supply chain pattern could be identified from the role of middleman in each province. This study uses ISO 31000:2009 standard for analyzing the risk in each tier along the supply chain. Based on the risk analysis, on-farm activity plays a vital role in transferring risk along the supply chain in terms of quality and quantity. Risk mitigation of each tier was explored in this study.
