Abstract

Pathogenic effect of Escherichia coli bacteria could be detrimental to health. The presence of the bacteria makes food unsafe to consumed. Personal hygiene practice of sellers can infl uence the presence of Escherichia coli on food. This cross-sectional study was aimed to analyze the relationship between personal hygiene practice of sellers with the presence of Escherichia coli bacteria on a traditional layer cake. The study involved 29 traditional layer cake sellers inPasar Kembang Surabaya. The data collection was done by using observation sheet and laboratory tests on samples of traditional layer cakes. Data was analyzed using chi-square statistical test. The results of this study showed the majority of sellers washed their hands before handling food (96.6%), fingernails were clean and short (86.2%) and didn’t smoke when handling food (82.8%). All sellers used clean clothes (100%), but talked when handling food (100%), did not wear an apron and tools when handling food (100%). Escherichia coli was found in 44.8% samples. This study showed there was no relationship between personal hygiene practices of sellers with the presence of Escherichia coli bacteria in traditional layer cakes (p > 0.05) in Pasar Kembang.

Abstract

The main problem of integrated health post is the lack of community participation, and its resources. One of the alternative solution is finding a special behavior with positive deviance (PD) approach. The aim of this research was to analyze positive behavior through PD approach. This research was a qualitative research. The research method was focus group discussion with all cadre leader and indepth interview technique to 59 subjects, village midwife, cadre, and posyandu target in 10 posyandu (Tunas Harapan-TH 1 to 10) at Sadeng Village, Leuwisadeng sub district, Bogor District and completed with secondary data from monthly report of posyandu. These data were analyzed qualitatively using five basic steps in PD approach. The average attendance posyandu target was low (30.3%). Theresult showed Posyandu TH 6 is defined as a model (performer) of PD. Specific positive behaviors encountered include better management of task distribution, mutual assistance behavior, cadres family members participation as transportvolunteer, cooperation with early childhood education (ECE), sub-village involvement, and adequate posyandu building. These behaviors were applied to the Posyandu TH 4 who had the worst performance and successfully increased its attendance from 23% to 62%. In this research the PD performer and its positive behavior have been identified through the PD approach and those behaviors were successfully applied to other posyandu

Abstract

Cancer patients had a decrease in appetite which leads to weight loss and nutritional status due to the cancer itself or the side effect of therapy. The existence of family support as a chaperone has an important role in the nutritional fulfillment of cancer patients as a form of instrumental support. The aim of this research was to identify the role of family support and the eating habit of cancer patients during undergo a therapy while living in Rumah Singgah Sasana Marsudi Husada, Cancer Foundation Indonesia branch of East Java. This was a descriptive research with cross sectional study design. The sample was total population of cancer patients for about 20 people. Data collected by interview including the role support from chaperone and eating habit of cancer patients which includes the type and frequency of eating. The type and frequency of eating were categorized according to Healthy Eating Index. This research found that 15% respondents who have good diet obtain the good role of chaperone support and respondents who included as diet needs improvement obtain the role of good chaperone support (30%) and quiet chaperone support (35%). The conclusion is that eating habit of cancer patients not only influenced by the role of chaperone support, but also influenced by characteristics of cancer patients. Cancer patients should improve their food intake, especially fruit, vegetable, and milk intake to achieve good diet. Keywords: eating habits, cancer patient, role of chaperone support, therapy

Abstract

Getting older causes many alterations in the human body such as alterations in anatomy, physiology, economy, and social. This condition can cause a disturbance at the consumption pattern. The purpose of this research is to analyze the relation between nutrients adequacy, consumption patterns of foods which support or inhibit iron absorption andanemia status among elderly. This cross sectional research was held in Airlangga Sub - district, Gubeng District of Surabaya from March until April 2016. Sample was 73 elderlies. The research used cluster random sampling method, which sample was taken from each cluster (Posyandu) proportionally based on the number of elderly at elderly health care (Posyandu). The research collected hemoglobin level data using Easy Touch tool, nutrient intake using 2 × 24 hours Food Recall method and frequency of consumption of foods which support or inhibit iron absorption by using Food Frequency Questionnaire. The result of the research shows that there is a relation of adequacy of folate intake (p = 0.002), coffee consumption (p = 0.045), and tea consumption (p = 0.028) with anemia status among elderly. On the other hand, there is no relation between the adequacy level of protein, iron, vitamin C, and vitamin B12 with anemia status among elderly. The research recommends supplementary food program to elderly with foods which may provide iron or iron absorption enhancer.Keywords: anemia, iron enhancer and inhibit, elderly

Abstract

Cigarette smoke contains many hazardous substances and free radical which affect respiratory system. Watermelon “Sugar Baby” juice contain lycopene as antiinfl ammation. The aim of this research was to analyze the effect of watermelon as antiinfl ammation toward neutrophils count in wistar strain male rats exposed by  cigarette smoke. This study was an experimental laboratory research with pre and post test control group design. Sample consisted of 24 wistar strain male rats with ±150-230 grams weight and 3 months old which were divided into four groups. Control group was given placebo (aquadest) and treatment groups were given w atermelon juice with terraced quantity (1.5 ml, 2.5 ml, and 3.5 ml). Every group was given two sticks of cigarette smoked per day during two weeks then smoked with treatment during one week. Neutrophil from peripheral smear was observed by manual method and statistically analyzed using Anova Mixed Design and continued with One Way Anova. The result showed signifi cant increased of  neutrophil at second observation on control group (p=0.002) and treatment groups (p=0.000). Signifi cance decreased also found in the treatment groups’s at third observation p=0.000. Signifi cant between each group p= 0.017. There was signifi cant different between control and treatment groups but there was no signifi cant different between each treatment groups. This study concluded that there was decreased of  neutrophil in wistar strain male rats which were given w atermelon juice 1.5 ml, 2.5 ml, and 3.5 ml during infl ammation. 3.5 ml w atermelon juice which were given showed better result as antiinfl ammation..

Abstract

Food availability is one of food diversity determinants. This study was conducted to examine the relationship of food availability with household food diversity among farm labour in Bojonegoro. This was a cross-sectional study. The population of this study wes farm labor households at RT.17/RW.02, Dander Subdistrict, Bojonegoro District. Thirty-five samples were randomly selected using simple random sampling. Interviews were conducted using questionnaire of food availability and Household Dietary Diversity Score (HDDS) questionnaire. Data were analyzed using Chi-Square test. The result showed that food availability of farm labour (62.9%) was less than normative consumption and food diversity of farm labour (45.7%) was in moderate category. This study also showed that there was relationship betweenfood availability with food diversity of farm labour (p=0.007). The study concluded that there was relationship between food availability with food diversity of farm workers. Improvement in food availability can increase food diversity.

Abstract

Antioxidant plays a role as the free radical savaging. The red guava and the red dragon fruit peel contain high  antioxidants so it is potentially to be a functional product. The aim of this study was to analyze the effect of red guava juice and red dragon fruit peel essence addition on yoghurt acceptability and total cost. The research used a factorial design of 5 repetitions on 5 formulas. There are 1 control formula (F0) and 4 modifi cation formulas (F1, F2, F4, F5) with the addition of red guava juice and red dragon fruit peel. The panelist on this research consist of 30 untrainedpanelists. Descriptive analysis and inferential statistic using Friedman and Wilcoxon Sign Rank Test with α = 0,05 were used to analyze the difference of acceptability between the formulas. Panelists showed that the best treatment was F4 yoghurt formula (44% addition of fruit juice with the ratio of guava juice and red dragon fruit peel 50:50) and it has the most preferred acceptability (color, aroma, texture, and taste) with the average value was 2.91 and food cost per serving (100 ml) was Rp 2.900,00. Formula F4 has a good acceptability and lower total cost than commercialyoghurt. This formula has a potential to be an alternative functional drink. The aroma of yoghurt can be increased by eliminate cooking process on the red dragon fruit peel juice.Keywords: acceptability, red guava, red dragon fruit peel, total cost, yoghurt

Abstract

Food service implementation is oriented towards customer satisfaction that assessed by several indicators, namely the taste, appearance, portion size, punctuality, and cleanliness. One example of the food service implementation is canteen in Airlangga University Hospital which provide food for employees, visitors, and patient’s families that require special attention so that consumers feel satisfi ed. Canteen that is not properly managed can resulting a negative impact such as food poisoning. This study was done descriptively using cross sectional design. Sample was taken using systematic random sampling with a sample size of 50 respondents. The number of respondent who said they were satisfi ed is 29 respondents (58%), while those who are not satisfi ed is 21 respondents (42%). Respondents expressed satisfaction at some satisfaction indicators, among other indicators for example: taste, appearance of food, portion size, and punctuality, but respondents were not satisfi ed with the cleanliness of the cafeteria. It was concluded that the cleanliness of the cafeteria could affects customer satisfaction, that the hygiene indicators need to be improved so that visitors feel more comfortable and safe to buy the food.Keywords: consumer satisfaction, food service

Abstract

In the epidemiological transition, death due to degenerative disease is higher than infectious disease. One of degenerative disease is  hypertension. Some modifi able risk factors of  hypertension are  obesity and  nutrient intake. Many studies showed that o besity, especially central o besity can lead h ypertension. Dietary factors related high fat intake and imbalance calcium magnesium intake ratio also can lead  hypertension. The aims of this study was to determine the relationship between waist circumference, fat intake, and calcium magnesium intake ratio with  hypertension. The subject in this case control study was selected by simple random sampling in 27 hypertensive patients and 27 non hypertensive patients, then they were measured blood pressure and  anthropometry, daily intake recalled, and interviewed. Chi Square test showed that waist circumference (p=0.000) and fat intake (p=0.024) had a signifi cant relationship with h ypertension, while the calcium magnesium intake ratio (p=0.573) had no signifi cant relationship with  hypertension. The logistic regression showed that waist circumference had the most signifi cant relationship with h ypertension (p=0.012; OR=9.508). In this study, there was a relationship between  waist circumference (central o besity) and fat intake above recommended daily intake with h ypertension, while  calcium magnesium intake ratio had no signifi cant relationship with h ypertension. People with central o besity had a 9.508 risk to be hypertensive person than people with normal waist circumference.

Abstract

Premenstrual Syndrome (PMS) is a group of symptoms that occur 1–2 weeks before menstruation period and cause  lower concentration and absents at school. The aim of this study was to describe the association between physical activity and soy dietary intake among adolescent girls who experienced PMS at SMKN 10 Surabaya. This studywas an observational analytic with cross sectional design. Samples were taken as many as 59 students aged 14–17 years old using systematic random sampling. Data were analyzed using chi-square. The study showed that physical activity level of respondents were light (88.1%). 10.2% respondents doing walk and bicycle > 7x in the past 7 days.Soy comsumption level of respondents were moderate (17.22–28.38 portion per month). Tofu (69.5 %) and tempeh (66.1%) were processed product of soybean that frequently consumed by respondents as much as 75 g. Adolescent girls had low physical symptoms of PMS (71.2%). The frequent symptoms were fatigue (25.4%), paintful and tenderbreast (35.6%). There was a signifi cant relationship between PMS with physical activity with PMS (p = 0.011) and soy consumption (p = 0.000). High soy consumption, regular and moderate physical activity can help reduce unfavorable PMS symptoms.
