Abstract

Tuna is a major fishery commodity that is prone to rapid quality degradation, requiring preservation to extend its shelf life and maintain product quality until it reaches consumers. This study aimed to examine the effect of liquid smoke on the protein content of tuna fillet and its ability to extend shelf life at room temperature (27°C) using the Extended Storage Studies (ESS) method. Liquid smoke concentrations tested were 4%, 6%, and a control without liquid smoke. Observations included sensory evaluation of appearance, color, odor, texture, as well as pH, water content, and protein content. Results showed that the addition of liquid smoke did not maintain protein content during storage, with an average decrease of 4.01% across treatments. However, 6% liquid smoke extended the shelf life of tuna fillet to 54 hours, approximately 2.33 times longer than the control without liquid smoke.

Abstract

Skipjack tuna (Katsuwonus pelamis) is one widely consumed by Indonesian. It is high nutritional content and has good taste, makes skipjack fish very popular. Problems that often occur are in post-harvest handling of skipjack tuna, especially during the harvest season. The damage that commonly occurs is spoilage during storage for a certain period. It was caused by the technology used not being adequate, the water content of skipjack tuna to reach up to 80%, the body pH close to neutral, and the high nutritional content, so that fish is the best medium bacteria and others to grow. One of the post-harvest processing frequently is smoking. This study aims to measure and obtain the concentration of liquid smoke of tabah bamboo and the proper length drying to get the best quality of skipjack tuna. The method used is a factorial completely randomized design with two factors. The first factor is giving the liquid smoke concentration which consists of 1%, 5%, and 9%. The second factor is the length of fish in the oven on the fish consisting of 120 minutes, 180 minutes, and 240 minutes, at a temperature of 90°C. The best treatment combination was at 9% liquid smoke concentration and 240 minutes of oven time to produce smoked skipjack tuna with the following characteristics: water content 41.88%; protein content 20.98%; total microbes 4.50x104CFU/g; the value of the sensory appearance test is 8.33; fragrance 8.87; 8.60 taste and 8.73 texture.

Abstract

The efficiency of distribution becomes the basis in the distribution of irrigation water in subak irrigation systems. The condition of the distribution efficiency in telabah aya is influenced by the physical condition of the canal, particularly depending on the type of lining canal used. The application of lining canals in Subak, Badung Regency is proof that it has a lot of influence in irrigation distribution. The information on thedistribution efficiency is required for the lining of telabah as a basic reference value in irrigation water distribution. The method used in this study is quantitative surveys and lining observations, and direct measurements of debit variables in telabahaya. Lining observations are based on 30 objects with lining canals in Badung regency. The flow speed measurement was carried out using buoy instruments. The size of the flow cross-section was measured with a roll meter. Measurement of water discharge wasperformed upstream and downstream of telabah aya to get the amount of initial discharge and final discharge as a basis for determining the efficiency of distribution. The lining canal used in telabah aya in Badung Regency is 77% types of stone and l-shapeconcrete as much as 23%. The value of distribution efficiency for telabah aya with stone lining by 75.20% and l-shape concrete type by 93.07%. This difference in efficiency value is due to the lining canal conditions in each telabah aya.
