Abstract

The purpose of this research was to be know  antioxidant activity, anticolestrol and antihypertence of extract rusip. This research was conducted from May 2017 until October  2017 using experimental laboratory method and data analysis was done descriptively. The research stages included measurement of pH, salt content analysis, determination of protein content, determination of peptides, antioxidants testing with the ABTS method, the analysis of ACE inhibitors (Angiotensin Converting Enzyme) and analysis of HMG-CoA reductase inhibitors. The results showed  that there are three types of rusip which has the complete label is rusip A, B and C. The pH value rusip ranged from 5.85 to 6.01. The salt contained in rusip ranged from 13.94 to 15.68%. Rusip protein content ranged from 14.71 to 18.39 mg / mL. The content of yield rusip extract ranged from 2.26 to 3.32 % and the content of peptide extract ranged from 13.05 to 14.80%. Rusip is a highly protein-rich food and contains many peptides. The antioxidant activity of rusip extract and activity of HMG-CoA inhibitor of russip extract are low. Rusip extract has a high activity as an ACE inhibitor (Angiotensin-I Converting Enzyme) of 95.75%.

Abstract

Research was conducted to know sensory and chemical characteristic of fish crackers dried with dryer greenhouse effect. This research was used survey and laboratory method. It is observing fish crackers dried process used dryer greenhouse effect modified of air sirculations. The result of chemical analysis (water content, ash content, protein, fat, and carbohydrate) showed that H1 (first day) has higer water content and H3 (third days) has higest of mineral, protein, fats, and carbohydrate on inside room themperature 42.38 °C – 42.89 °C, and humidity 40%. Result of sensory test used paired comparation test is not differently between greenhouse effect H2 and H3 crakers with control on 1% level. But color of greenhouse effect crackers with control is different on 1% level. Color of greenhouse effect crackers whiter than control

Abstract

The purpose of the research was to know the physicochemical and sensory characteristic of seaweed nugget with an addition of carp fish meal. The research was conducted from March 2016 until February 2017. The research method used a randomized block design (RBD). The treatments were 0%, 10%, 20%, 30% and 40% of fish meal. The parameters of this research were chemical analysis such as water content, ash content, protein content, carbohydrate content, and calcium; physical analysis was hardness, color and sensory analysis (color, taste, and texture). The results showed that treatments gave significant effect on water content, ash content, protein content, lipid content, carbohydrate content, calcium, lightness, chroma, hardness, and taste, but there was no effect on hue, color and texture. The water content was 47.01%-48.19%, ash was 1.29%-4.36%, protein was 2.26%-7.10%, lipid was 11.83%-14.79%, carbohydrate was 26.75%-36.42%, calcium was 15.11 mg/100g-48.46 mg/100g. The lightness of this seaweed nugget were 33.70%-63.43%, chroma 25.00%-35.10%, texture 26.97 gf – 50.80 gf. Taste sensory analysis of seaweed nugget were 2.72 (unlike) – 3.84 (like). The best treatment found in this research was A1.

Abstract

The purpose of this research was to observe the effects of threadfin breams surimi (Nemiptarus nematophorus) and mussel (Pilsbryoconcha exilis) to physical, chemical and sensory characteristics of nugget. This research used randomized block design (RBD) consisted of one factor treatment and three replications. Factor treatment consisted of combination ratio threadfin breams surimi and mussel 100% : 0%, 75% : 25%, 50% : 50%, 25% : 75%, 0% : 100%. The variables observed were physical characteristics (elasticity), chemical characteristics (moisture content, ash, protein, fat, carbohydrate, and iron) and sensory analysis on appereance, flavour, taste and texture of the final products. Different combinations of threadfin breams surimi and mussel had significant effect on elasticity (222.53 gf, 278.33 gf, 300.66 gf, 312.13 gf, 452.86 gf), ash content (3.26%, 2.51%, 2.23%, 1.63%, 1.45%), protein content (8.27%, 12.11%, 14.8%, 17.14%, 20.73%), carbohydrate content (17.32%, 14.34%, 11.11%, 8.42%, 3.5%), and iron (23.61%, 18.56%, 12.77%, 7.24%, 1.54%). Based on the results, the greater addition of surimi concentration caused the increasing value of elasticity, protein, and water content. While the greater addition of mussel concentration resulted on the increased value of ash, fat and iron. This research showed that the combination of 75% threadfin breams surimi and 25% mussel produced on nugget with the best characteristics.

Abstract

Verification method is required to generate data analysis with accurate and precise value corresponding to the standrad method. This study aims to verify fat analysis method by using direct extraction method. The study was conducted in Laboratorium Pengujian, FPIK, Universitas Halu Oleo. Fat analysis method verified was direct extraction method or soxhlet method. The results showed that all precision values from experiments I-VIII, consisting of repeatability and reproductibility, have RSD values (0.03 – 0.14) lower than 2/3 RSD Horwitz (1.99). The accuracy results (% Recovery) indicated similarly RSD, lower than 2/3 RSD Horwitz (1.33). Based on these results, it can be concluded that fat analysis method used in Laboratorium Pengujian, meet the pecise and accuray standard, and generates valid data and accounted for.

Abstract

Penelitian ini bertujuan untuk mengetahui profil fisik ikan lele (Clarias gariepinus)  asap yang diintroduksi dengan gambir (Uncaria gambir Roxb). Metode penelitian menggunakan rancangan acak lengkap yang disusun secara faktorial dengan 2 faktor, penambahan gambir (faktor A: 0, 2, 4 dan 6%),  lama waktu introduksi (faktor B: 15, 30,dan 45 menit) sebagai perlakuan. Semua perlakuan dilakukan 3 ulangan.  Karakteristik ikan lele asap yang diamati adalah meliputi analisis fisik (tekstur dan warna (Lightness), Chroma, dan Hue)), Hasil pengujian menunjukkan bahwa penambahan gambir berpengaruh nyata terhadap tekstur dan warna. Tekstur yaitu 835,2 gf, lightness 27,8%, chroma 6,3%, hue 31,3o dan membentuk fenomena case hardening.

Abstract

Catfish (Pangasius sp.) aquaculture in Gandus district until now have some problems such as decreasing environmental quality due to decreased water quality so resulting water pollution, limited knowledge and skill of cultivators, the technology used is still limited and simple, and technical production has not same of SOP (Standard Operation Procedure) so that production not yet good. Constraints and problems in cultivation need to considered, because in addition to being a challenge also a threats to the development of fish farming. Therefore, catfish aquaculture in Gandus district Gandus subdistrict needs to developed based on application of cultivation technology in accordance with the support environment. The research was held in Gandus district of Palembang. The purposes of this research were to identification enlargement catfish aquaculture situation, analyze internal and external factors of the aquaculture and analyze a developing strategy catfish aquaculture. The research was descriptive. Data resulted were analyzed by descriptive qualitative and quantitative. The score of the IFAS analysis was (-0,18) and score of EFAS was 0,77. The SWOT analysis result was in the third quadran, so the strategy applied is WO strategy (Weakness-Opportunities). WO strategy is a strategy minimalized weakness to get the opportunity. In the business, WO strategy was used in the standard category. Strategy are used water quality management and good in terms of quantity and quality to reduce pollution of the aquatic environment, give training and skills to cultivators about technology utilization and production system to increase global production, the use of appropriate technology to reduce pollution of aquatic environment to increasing market demand, and enhance cultivation cooperation with local agencies in providing extension regarding the implementation of production standards.

Abstract

The purposes of the research were to compare the method of makes daruju (Acanthus illicifolius) leaves the tea to determine the bioactive compounds. The research was conducted from June 2016 until December 2016. This research uses laboratory experimental methods and data analysis was done descriptively. The parameters observed testing phytochemical compounds flavonoids, alkaloids, tannins, saponins, phenols and steroids and analysis of antioxidant with DPPH and reducing power. The result showed that the crude extract daruju leaves tea has a bioactive compound acts as an antioxidant compound. The result of antioxidant activity DPPH methods was medium in the methanol extract with IC50 values of 101.4 ppm and boiled extract (217.5 ppm) and a very weak activity in the brewed extract (294.9 ppm) while the reducing power method shown good results in the methanol extract instead of boiled extract and brewed extract. From the results of the antioxidant activity of these three methods, the use of extraction are best is methanol. While the comparing from the method of makes daruju leaves the are best is boiled extract than brewed extract.

Abstract

Purpose of this research was to know formaldehyde content, pesticides (organochlorine and organofosfat), and molds on various type of dried salted fish. This research used survey methods, sampling and laboratory analysis. The fish used are salted siamese gourami fish (Trichogaster pectoralis), salted bagrid catfish (Hemibagrus nemurus), salted longjaw thryssa fish (Thryssa setirostris), salted snakehead fish (Channa striata) and salted fish anchovies (Stolephorus sp.). Result showed that salted snakehead fish (Channa striata) and salted anchovy fish (Stolephorus sp.) in August and September are positive to formaldehyde content. All tested samples were negative to pesticide residues. The result of molds test revealed that all samples still met National Food and Drug Agency (BPOM) RI 2009 standards which were less than 1x105 colonies/gram.
