Abstract

The growing concern over plastic pollution has accelerated the development of biodegradable packaging materials derived from natural polymers. Cassava starch has been widely studied as a potential raw material because of its abundance and biodegradability. However, its properties are often modified with additives such as carboxymethyl cellulose (CMC) and glycerol to improve film performance, which may influence its biodegradation. This study aimed to investigate the effects of different concentrations of CMC and glycerol on the biodegradability of cassava starch-based biofilms. Biofilms were prepared using three levels of cassava starch (5, 10, and 15 g), three concentrations of CMC (1, 2, and 3%), and three levels of glycerol (6, 9, and 12 mL). Thebiodegradability test was performed using the soil burial method for seven days, with weight loss as the primary parameter.The results showed that all biofilm samples achieved more than 60% degradation within seven days, thus meeting the Indonesian National Standard (SNI) for biodegradability. At low starch concentrations (5 g), the addition of higher CMC and glycerol levels reduced biodegradability due to matrix compaction and reduced porosity. At 10 g starch, biodegradability was more stable, with several formulations reaching 100% degradation by day seven. The highest starch concentration (15g) yielded the best results, with nearly all formulations reaching complete biodegradation, supported by sufficient substrate availability and synergistic interactions betweenCMC and glycerol. Overall, the findings indicate that starch concentration plays a dominant role, whereas excessive CMC and glycerol can slow degradation by limiting microbial accessibility.

Abstract

Desa Sumber Berkah di kawasan Gunung Steling, Balikpapan Utara, memiliki potensi agraris tinggi dengan komoditas utama berupa melon. Namun, sebagian hasil panen dijual dalam bentuk segar, sementara buah yang tidak lolos sortasi sering dibuang, menyebabkan kerugian ekonomi dan penumpukan limbah organik. Kegiatan pengabdian masyarakat ini bertujuan meningkatkan nilai tambah hasil pertanian melalui pengolahan melon menjadi selai serta pemanfaatan limbah organik menjadi kompos. Program dilaksanakan tahun 2025 dengan sasaran utama ibu-ibu di Kebun Melon Sumber Berkah. Metode kegiatan mencakup observasi lapangan, demonstrasi pembuatan selai, perbaikan alat pencacah, pelatihan pembuatan kompos, sosialisasi UMKM, dan evaluasi. Hasil menunjukkan peningkatan keterampilan masyarakat dalam mengolah melon menjadi selai dengan tekstur lembut dan cita rasa seimbang. Perbaikan alat pencacah meningkatkan efektivitas pembuatan kompos yang memperbaiki kesuburan tanah dan mengurangi penggunaan pupuk kimia. Evaluasi menunjukkan tingkat kepuasan peserta minimal 80% dengan penilaian positif terhadap manfaat, kejelasan materi, dan relevansi kegiatan. Program ini berhasil meningkatkan nilai ekonomi hasil pertanian, mengurangi limbah, serta mendorong pembentukan UMKM berbasis produk lokal. Keterlibatan aktif masyarakat menjadikan kegiatan ini model potensial bagi pengembangan perkebunan berkelanjutan di wilayah lain.

Abstract

Seasoning is a condiment product that is widely used to improve the taste of food, but generally has low nutritional value. The development of seasonings based on food ingredients with high nutritional value is necessary so it is necessary to produce products that not only provide taste, but also better nutritional benefits. Milkfish (Chanos chanos) is a good source of protein and minerals, while Kappaphycus alvarezii seaweed is rich in dietary fiber and bioactive compounds which have the potential to be used as raw materials for super seasonings. This research aimed to determine the effect of differences in the concentration of milkfish flour and seaweed flour on the physical and sensory quality of super sprinkles and determine the best formula that can be accepted by consumers. This research used an experimental method with four comparison treatments of seaweed flour and milkfish flour, namely F1 (0%: 100%), F2 (20%: 80%), F3 (30%: 70%), and F4 (40%: 60%). The selected super seasoning formula was determined based on hedonic tests and the level of panelist acceptance on the attributes of appearance, color, aroma, taste, texture and colorimetric analysis. The results showed that the difference in concentration of seaweed flour and milkfish flour influenced the level of panelists' acceptance of super seasoning. Formula F2 (20% seaweed: 80% milkfish) is the best formula with the highest taste preference score of 6.88 and obtained the highest average score for all sensory attributes tested. Based on these results, the F2 formula has the potential to be developed as a super product for seasonings that is rich in nutrition and has a good level of consumer acceptance.
