Abstract

Coffee fruit peel is known to contain of polyphenols, caffeine, chlorogenic acid and flavonoids which are beneficial as antioxidants, antiaging, antibacterial and face brightener. This research aims to formulate a serum preparation with the active ingredient coffee fruit peel extract. This research was carried out by carrying out various stages, such as making extract, making serum preparations and evaluating the physical properties, antioxidant, antibacterial and inhibitory activity enzim tyrosinase. Based on the research results, coffee fruit peel extract can be formulated into a serum preparation. The combination of ethanol and water extract of coffee fruit peel provides the best bacterial growth inhibitory effect on P. acnes. Serum preparations of ethanol and water extract of coffee fruit peel and their combination have weak antioxidant activity. Serum preparations of water extract of coffee fruit peel have the best % inhibition of the tyrosinase enzyme. Keywords:          coffee fruit peel, serum, DPPH, antibacterial, tyrosinase enzyme   Abstrak Kulit buah kopi mengandung senyawa metabolit sekunder seperti polifenol, kafein, asam klorogenat, dan flavonoid yang bermanfaat bagi kulit sebagai antioksidan, antiaging, antibakteri, dan face brightener. Banyaknya manfaat yang diberikan oleh kulit buah kopi untuk kulit wajah, membuatnya berpotensi sebagai bahan baku kosmetik. Penelitian ini bertujuan untuk formulasi sediaan serum dengan zat aktif ekstrak kulit buah kopi. Penelitian ini dilaksanakan dengan melakukan berbagai tahapan, seperti pembuatan ekstrak, pembuatan sediaan serum dan evaluasi sifat fisiknya, uji aktivitas antioksidan, antibakteri, dan penghambatan enzim tirosinase. Berdasarkan hasil penelitian, ekstrak kulit buah kopi dapat diformulasikan menjadi sediaan serum Kombinasi ekstrak etanol dan ekstrak air kulit buah kopi memberikan daya hambat pertumbuhan bakeri terbaik pada bakteri  P. acnes. Sediaan serum ekstrak etanol dan ekstrak air kulit buah kopi  beserta kombinasinya  mempunyai aktivitas antioksidan yang lemah.Sediaan serum ekstrak air kulit buah kopi  mempunyai   %penghambatan enzim tirosinase  terbaik dibandingkan serum ekstrak etanol dan kombinasi ekstrak kulit buah kopi. Abstract

Coffee production in Indonesia continues to increase from year to year, followed by an increase in the amount of waste produced. One of these wastes is fruit peel. Coffee peel is known to contain various secondary metabolite compounds such as polyphenols, anthocyanins and caffeine which have antioxidant activity. Antioxidants are needed by the skin to overcome skin problems. In this way, coffee peel has the potential to be formulated as a sleeping mask gel. This research aims to formulate a sleeping mask gel and determination of total phenol content, caffeine content and, and activity antioxidant. This research was by carrying out various stages, such as making coffee peel extract, formulation sleeping mask gel preparations with 5 different formulas, evaluation of the physical properties, determination of total phenol content, caffeine content and, and activity antioxidant (% reduction of free radicals). The best formula that meets the requirements for a good gel preparation with the highest caffeine and phenol levels as well as the best antioxidant activity is F3. The resulting sleeping mask gel is brown in color, smells of coffee, and has a thick form. F3 has a caffeine content of 3.03 ppm, a total phenol content of 2.56 ppm and a free radical inhibition percentage of 5.13%. Keywords:          caffeine, coffee peel,  free radical scavenging ,total phenol, waste coffee   Abstrak Produksi jumlah kopi di Indonesia yang terus meningkat dari tahun ke tahun, diikuti dengan peningkatan jumlah limbah yang dihasilkan. Salah satunya adalah kulit buah. Kulit buah kopi diketahui mengandung berbagai macam senyawa metabolit sekunder seperti polifenol, antosianin, dan kafein yang mempunyai aktivitas sebagai antioksidan. Antioksidan dibutuhkan oleh kulit untuk mengatasi permasalahan kulit. Dengan begitu, kulit buah kopi memiliki potensi difomulasikan sebagai sleeping mask gel. Penelitian ini bertujuan untuk memformulasikan sleeping mask gel beserta penentuan kadar fenol total, kafein dan aktiivtas antioksidannya. Penelitan dilaksanakan dengan tahapan, seperti pembuatan ekstrak kulit buah kopi, pembuatan sediaan sleeping mask gel dengan 5 formula yang berbeda pada konsentrasi ekstrak kulit buah kopi: F1 (1%),F2 (1,5%), F3(2%), F4 (2,5%), dan F5(3%), evaluasi sifat fisik sediaan, penentuan kadar fenol total, kadar kafein serta aktivitas antioksidan (% peredaman radikal bebas) dengan metode DPPH. Berdasarkan hasil penelitian, formula terbaik yang memenuhi syarat sediaan gel yang baik dengan kadar kafein dan kadar fenol tertinggi serta aktivtas antioksidan terbaik adalah F3. Sleeping mask gel yang dihasilkan berwarna coklat, berbau kopi, dan mempunyai bentuk kental. F3 mempunyai kadar kafein sebesar 3,03 ppm, kadar fenol total sebesar 2,56 ppm dan % penghambatan radikal bebas sebesar 5,13%. Abstract

Coffee fruit peel contains several secondary metabolite compounds whith have antioxidant activity as antiaging skin, so it can be formulated into a cosmetic preparation. Arabica coffee fruit peel is formulated into a lotion preparation with an extract concentration of 1% and various TEA concentrations (2%, 3%, and 4%). This research to determine the effecf of variations in TEA concentration on the physical properties and physical stability of lation preparations. Type of experimental research,namely measuring the effect of variations in TEA concentration in lotion preparations in the physical properties and physical stability of the roomtemperature methods measured during 28 days of storage which was tested on days 0, 7, 14, 21 and 28 including organoleptic, homogeneity, pH, spreadability,adhesion and emulsion type. The results showed that the Arabica coffee fruit peel extractlotion with varying concentrations of TEA as an emulsifier met the physical properties requirements. The stability of the room temperature methods affects the lotion preparations during the 28 days storage period, there by influencing changes in the characteristics of the preparation. Based on the results of statistical tests with a dependent T test, it was stated that lotion F2 with TEA 3% was the most stable formulation.
