Abstract

Stunting is a serious nutritional problem that requires immediate attention. In Malaka Regency, East Nusa Tenggara Province, the prevalence of stunting remains high due to poor sanitation and ineffective organic waste management. This community service program aims to increase public awareness and skills in utilizing organic waste to produce eco-enzyme and its derivatives, such as eco-enzyme-based liquid soap. The program was conducted from July to November 2025, involving 33 participants representing local government, community leaders, and informal community figures. The activity explained the relationship between sanitation and stunting through discussions and demonstrations on producing eco-enzyme from household organic waste. Evaluation through pre- and post-tests showed a significant increase in participants’ knowledge of sanitation, stunting, and organic waste management. Community-based education on eco-enzyme has proven to support food security and environmental health while contributing to reducing the risk of stunting.

Abstract

Fruit and vegetable waste accounts for approximately 36% of total food waste in Indonesia. The accumulation of this waste in landfills contributes to increasing greenhouse gas (GHG) emissions and environmental pollution through leachate production. Treatment using Black Soldier Fly (BSF) larvae offers an efficient and sustainable alternative, with lower GHG emissions compared to composting or anaerobic digestion. This study aimed to evaluate the bioconversion efficiency of BSF larvae in reducing fruit and vegetable waste (specifically cabbage, water spinach, spinach, mustard greens, watermelon, melon, banana, and papaya) by analyzing the transformation of carbon (C) and nitrogen (N) into larval biomass and residue. Substrate compositions were varied with vegetable-to-fruit ratios of 90:10, 80:20, 70:30, and 60:40 (w/w), and larval densities of 1, 2, and 4 larvae/cm² were tested. Results showed that carbon and nitrogen conversion into larval biomass ranged from 7.92–17.59% and 4.96–21.69%, respectively, while conversion into residue ranged from 22.53–63.75% for carbon and 18.12–80.78% for nitrogen. The substrate with a 90:10 vegetable-to-fruit ratio produced the highest conversion efficiency. The values of Approximate Digestibility (AD), Efficiency of Conversion of Digested Food (ECD), and Efficiency of Conversion of Ingested Food (ECI) ranged from 32.44–74.71%, 17.68–42.96%, and 8.09–18.64%, respectively. The larval survival rates reached 95.61%. Furthermore, BSF bioconversion generated the lowest GHG emissions among all compared waste treatment methods, with a value of 102.27 g CO₂ eq/kg of waste. These findings demonstrate the significant potential of BSF larvae in managing fruit and vegetable waste while minimizing environmental impact, providing a foundation for further optimization in sustainable waste valorization systems.

Abstract

Kabupaten Malaka, NTT, menghadapi krisis pengelolaan sampah akibat tidak adanya TPA. Timbulan yang dihasilkan hingga 27.885,12 juta ton pertahun. Masyarakat membakar sampah untuk mengurangi volume sampah yang ada. Pembakaran sampah melepaskan polutan berbahaya, seperti partikel halus PM2.5, karbon monoksida (CO), dioksin, furan, sulfur dioksida (SO2), nitrogen dioksida (NO2), dan senyawa organik volatil (VOC). Polutan ini meningkatkan risiko penyakit pernapasan dan stunting. Pengabdian masyarakat ini memperkenalkan eco-enzyme solusi penjernih udara alami. Metode kegiatan menggabungkan sosialisasi dampak polusi udara dan demonstrasi pembuatan eco-enzyme. Sebanyak 30 peserta terlibat dalam demonstrasi langsung pengolahan sampah organik. Hasilnya menunjukkan peningkatan pemahaman dan keterampilan yang signifikan. Peserta yang memahami hubungan pembakaran sampah dan polusi udara meningkat dari 67% menjadi 90%. Selain itu, keterampilan praktis pembuatan eco-enzyme meningkat dari 13% menjadi 93%. Kegiatan ini membuktikan bahwa eco-enzyme tidak hanya menjadi solusi sederhana untuk mengurangi polusi udara dan sampah organik, tetapi juga strategi efektif untuk pemberdayaan masyarakat dalam menciptakan lingkungan sehat, mencegah stunting, dan dapat mengurangi volume sampah. Program ini diharapkan dapat berlanjut melalui kolaborasi dengan Pemerintah Kabupaten Malaka guna mendistribusikan eco-enzyme sebagai pembersih udara kepada masyarakat. Selain itu, diperlukan evaluasi dan pemantauan hasil secara hybrid untuk memudahkan komunikasi dan menangani kegagalan dalam pembuatan eco-enzyme.
