Abstract

Diabetes melitus adalah kondisi kronis yang terjadi akibat peningkatan kadar gula darah karena tubuh tidak dapat menggunakan insulin secara efektif. Salah satu upaya pengendalian diabetes adalah dengan mengonsumsi makanan tinggi serat dan antioksidan, seperti buah naga dan tomat. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian jus buah naga dan tomat terhadap kadar gula darah penderita diabetes melitus di Kecamatan Semanding, Kabupaten Tuban. Jenis penelitian adalah True Eksperimental dengan desain Two Group pre-test and post-test. Sampel penelitian berjumlah 36 responden yang dibagi menjadi 2 kelompok, yaitu 18 responden kelompok jus tomat dan 18 responden kelompok jus buah naga, menggunakan teknik purposive sampling. Data diambil menggunakan alat Easy Touch dan lembar observasi, lalu dianalisis dengan uji Paired T-Test dan Independent T-Test. Hasil menunjukkan kadar gula darah sebelum terapi jus buah naga merah sebesar 362,22 mg/dL dan setelah terapi menjadi 353,17 mg/dL. Selisih rata-rata penurunan kadar gula darah pada pemberian jus buah naga sebesar 16,72 mg/dL, sedangkan pada jus tomat sebesar 21,72 mg/dL. Uji t-test menunjukkan pengaruh signifikan dari kedua terapi, namun jus buah naga merah lebih efektif dalam menurunkan kadar gula darah dibanding jus tomat.

Abstract

Iron deficiency anemia represents a significant health burden among the female adolescent demographic, manifesting through multifaceted implications for physical well-being, cognitive function, and developmental processes. Clinical presentations commonly include persistent fatigue, diminished concentration capacity, and disruptions to normal growth patterns. Epidemiological data from Tuban Regency in 2023 revealed a concerning prevalence rate of 40.8% among adolescent girls, underscoring the critical requirement for effective intervention strategies. Dietary modification through consumption of iron-rich food sources emerges as a viable non-pharmacological approach, with Amaranthus dubius (red spinach) presenting particular promise due to its dual composition of bioavailable iron and vitamin C, the latter serving as a crucial cofactor in hemoglobin synthesis. This investigation employed a true experimental methodology incorporating pre-test and post-test measurements to examine the efficacy of red spinach juice supplementation on hemoglobin parameters. The study cohort comprised 30 anemic adolescent females from MA Plus Sunan Drajat 7 in Palang District, systematically allocated into intervention and control groups. Statistical evaluation using One Way Anova and Paired T-test procedures demonstrated that while the intervention did not produce statistically significant hemoglobin elevation across the entire sample, observable upward trends manifested within specific individual cases. These findings imply that red spinach juice may possess potential as an auxiliary nutritional intervention for hemoglobin enhancement in anemic adolescent girls, though its therapeutic application warrants further substantiation through expanded research parameters.

Abstract

Exclusive breast milk is breast milk that is given to babies from birth for 6 months without adding or replacing it with other foods and drinks. Providing exclusive breastfeeding is not easy thing, many mothers complain about a lack of breast milk. Data BPS (2022) shows that exclusive breastfeeding coverage in East Java is 69.72%, while in Tuban Regency is 48.8%. from the national target of 100%. To increase breast milk production and maintain the quality of breast milk, mothers need high-protein foods or snacks, so biscuits are made to replace mung bean flour and carrot flour as an alternative snack for breastfeeding mothers. The purpose of this study is to determine the effect of mung bean flour and carrot flour substitution on protein value and organoleptic quality of biscuits. This study used True Experimental Design with (RAL), 4 levels of treatment and 6 times replication, with a ratio of wheat flour: mung bean flour: carrot flour in each treatment is P0(100:0:0), P1(70:20:10), P2(60:10:30), P3(50:30:20). The results showed that there was an effect of increasing protein levels in biscuits with the highest value of mung bean flour and carrot flour substitution in the P3 treatment. There was a significant influence on the color, taste, aroma and texture of biscuits shown by the Kruskal Wallis Test (p<0.005) and the Mann-Whitney follow-up test which showed a difference in all treatments. The conclusion of this biscuits substituted with mung bean flour and carrot flour have an effect on protein content and organoleptic quality.

Abstract

Adolescent obesity is a health problem that arises due to an imbalance between energy intake and expenditure, one of which is influenced by a diet high in fat and low in fiber. This condition needs attention because it has an impact on the risk of chronic diseases in adulthood. This study aims to analyze the effect of substitution of katuk leaf flour and yellow sweet potato flour on the nutritional content and acceptability of muffins as a healthier alternative to high-fiber and low-fat snacks for adolescents. This laboratory's experimental research used a Complete Random Design (RAL) with four formulations (P0, P1, P2, P3). The analysis carried out included a proximate test to determine the nutritional content and an organoleptic test to assess the level of acceptance of panelists. The results of the study show that the substitution of katuk leaf flour and yellow sweet potato flour can increase fiber content and significantly reduce fat content. The best formulation is found in P2 with the highest level of preference. Thus, the use of these two types of flour has been proven to be able to improve the nutritional quality of muffins without reducing the acceptance of panelists, so that it has the potential to be a nutritious snack choice for teenagers.

Abstract

Stunting merupakan masalah gizi kronis yang berdampak panjang pada pertumbuhan fisik dan perkembangan kognitif. Meskipun stunting terjadi pada 1000 Hari Pertama Kehidupan, dampak lanjutannya masih ditemukan pada usia sekolah dasar yang juga rentan terhadap beban gizi ganda. Kegiatan pengabdian massyarakat ini bertujuan untuk meningkatkan pengetahuan siswa mengenai stunting dan penerapan gizi seimbang melalui konsep “Isi Piringku”. Kegiatan dilaksanakan di SDN Gedongombo V, Kabupaten Tuban, dengan sasaran 23 siswa kelas 1. Metode yang digunakan meliputi pengukuran antropometri (berat badan dan tinggi badan), edukasi gizi interaktif menggunakan media visual, permainan puzzle “Isi Piringku”, serta komik edukasi. Hasil menunjukkan bahwa sebagian besar siswa memiliki status gizi normal, namun ditemukan fenomena beban gizi ganda berupa adanya kasus gizi kurang (4,3%) dan gizi lebih (26%). Edukasi interaktif terbukti efektif meningkatkan antusiasme dan pemahaman siswa dalam menyusun komposisi makan sehat. Simpulan dari kegiatan ini adalah intervensi edukasi berbasis sekolah dengan media permainan interaktif mampu memperkuat literassi gizi siswa. Disarankan bagi pihak sekolah dan orang tua untuk melakukan pendampingan pola makan secara berkelanjutan dan skrining gizi berkala guna mencegah masalah gizi ganda pada anak.

Abstract

The underlying problem of this study is the high incidence of nutritional problems, such as under- or over-nutrition, in adolescents due to greater nutritional requirements during growth. Research Objectives: This study examines the relationship between psychosocial stress, sedentary lifestyle, carbohydrate intake, and nutritional status in adolescents. Research Methods: Using a cross-sectional analytic research method on 284 out of 984 adolescent population, this study analyzed the data with Spearman correlation test. Results: The results showed a significant association between the three independent variables (psychosocial stress, sedentary lifestyle, and carbohydrate intake) and the dependent variable (nutritional status). Each independent variable had a significant p-value: 0.057 for psychosocial stress, 0.592 for sedentary lifestyle, and 0.054 for carbohydrate intake. Conclusion: This study concludes that there is a significant relationship between psychosocial stress, sedentary lifestyle, and carbohydrate intake with adolescent nutritional status. Therefore, it is recommended that adolescents apply a balanced nutritional pattern in their daily lives.
