Abstract

Hypercholesterolemia is the main cause of atherosclerosis. Dragon fruit juice and chia seeds is a product that rich in antioxidants, high in fiber, and a source of vitamin B and vitamin C so it can help reduce total cholesterol levels. The purpose of this study was to determine the effect of red dragon fruit juice and chia seeds on total cholesterol levels in hypercholesterolemic patients. This research design used a quasi-experimental two-group pre-post test. Samples were taken by purposive sampling of 32 samples which were divided into two groups. The intervention group was given 215 ml of red dragon fruit juice and chia seeds for 7 days and nutrition education, while the control group was given nutrition education. This research was conducted in February-March in the working area of the Pasirkaliki Health Center. The data collected included age, sex, medical history, education, occupation, weight, height, intake of fat, fiber and cholesterol, and total cholesterol levels. The results showed that there was a significant difference in the average cholesterol levels before and after the intervention group was given (p<0.05). In the control group there was no significant difference in the mean cholesterol levels before and after the intervention (p>0.05). There was a significant difference between the average total cholesterol level in the intervention group and the total cholesterol level in the control group (p<0.05) with an average reduction of 23.25 mg/dl. Samples are advised to consume red dragon fruit juice and chia seeds because these products are effective for lowering cholesterol levels.

Abstract

Latar belakang: Anemia merupakan masalah gizi yang paling sering terjadi pada ibu hamil. Ibu hamil dengan usia kehamilan trimester 2 dan 3 berisiko lebih tinggi mengalami anemia; salah satu penyebabnya adalah kekurangan zat besi. Asupan zat besi pada ibu hamil dipengaruhi oleh pengetahuan dan sikap ibu terhadap makanan tabu karena beberapa makanan tabu merupakan sumber zat besi, seperti daging, jeroan, ayam, udang, dan bayam. Tujuan penelitian ini adalah untuk menggambarkan asupan zat besi, pengetahuan, dan sikap makanan tabu, serta hubungan antara pengetahuan dan sikap makanan tabu terhadap asupan zat besi ibu hamil di Puskesmas Cileungsi. Metode: studi cross-sectional. Populasi penelitian adalah seluruh ibu hamil yang memeriksakan kehamilannya di Puskesmas Cileungsi. Metode pengambilan sampel yang digunakan adalah purposive sampling dengan jumlah sampel 56 orang. Hasil: Hasil penelitian menunjukkan bahwa 44 sampel memiliki asupan zat besi yang kurang (78,6%), 29 memiliki pengetahuan kurang (51,8%), dan 41 memiliki sikap cukup (73,2%). Tidak ada hubungan pengetahuan makanan tabu dengan asupan zat besi pada ibu hamil (p=0,748 > 0,05). Tidak ada hubungan sikap makanan tabu dengan asupan zat besi pada ibu hamil (p=1.000 > 0.05). Kesimpulan: Tidak ada hubungan antara pengetahuan dan sikap makanan tabu dan asupan zat besi pada ibu hamil di Puskesmas Cileungsi. Penelitian selanjutnya diharapkan dapat memberikan edukasi gizi mengenai makanan tabu bagi ibu hamil.

Abstract

Graduates of a university are expected not only to be able to work for an institution or company but also to be able to create jobs for themselves and others. Graduates are expected to have an entrepreneurial spirit and spirit so that they will become graduates who are creative, characterful, capable, and competitive. Universities face challenges in preparing and equipping human resources and graduates with the right competencies and skills in order to continue to be able to contribute to the economic growth and welfare of the Indonesian nation. This community service activity aimed to develop the entrepreneurship of alumni of the Nutrition Department of the Ministry of Health of Bandung. The implementation of business licensing training was carried out for as many as 10 alumni of the Department of Nutrition at the Directorate of Polytechnics of the Ministry of Health Bandung in April 2023. As a result of this activity, there were 10 alumni who have entrepreneurs in the catering, culinary, food, and beverage sectors and as many as 8 people already have Business Identification Numbers (BIN). Halal certification is still being submitted.

Abstract

Pre-hypertension is an early sign of hypertension. Patients with pre-hypertension have twice the risk of developing hypertension. Potassium and calcium are nutrients that can help lower blood pressure, one of which is dates and milk. The purpose of this study was to determine the effect of date ice cream administration in reducing blood pressure in patients with pre-hypertension. The research design used was a quasi experimental one group pre and post test. The intervention given was date ice cream made from 50 grams of Tunisian dates honey, 75 ml of high fat milk and 25 ml of skim milk which was given to 15 samples. The results of the bivariate test showed that there was a decrease in systolic blood pressure after the intervention of date ice cream with a p value <0.05 with an average decrease in systolic blood pressure of 11.1 mmHg and in diastolic blood pressure was 4.8 mmHg. In an effort to prevent pre-hypertension and hypertension, the community can be advised to consume foods that contain potassium and high calcium, one of which is date ice cream.

Abstract

Sweet Potatoes and Red Beans can be processed into Steamed Sponge. This study discusses the manufacture of steamed cake products made from purple sweet potato flour and red bean flour which contains energy, protein, fat, and carbohydrates and is free from gluten-casein and prebiotic sources needed to fulfill nutrition in children with autism. This study aims to determine the best balance of the product fromthe 3 balances of purplesweet potatoflour and red bean flour, the effect of differences in the balance of steamed cake on the color, aroma, taste, and texture of the product, and to determine the levels of macronutrients and prebiotic levels. Experimental study research design with Completely Randomized Design (CRD). The research method used hedonic test to determine organoleptic properties, proximate analysis for macronutrients, and raffinose calculations for prebiotics. The results of the Kruskal Wallis test showed that there was a significant difference in the hedonic test on color and texture. F1 excels in the aspects of color, aroma, and taste. It is hoped that further research can be carried out on the effect of giving Purple Potato Flour and Red Bean Flour Steamed Sponge to children with autism.

Abstract

Endurance athletes potentially have dehydration because the activity that carried out continuously for a long time.The activity can increase oxygen consumption that may lead to the production of free radicals that have a bad effect for health .To neutralize free radicals in the body , athletes need to consume antioxidant .Research aims to asses the differences in formulation of strawberries and mulberry organoleptic ( color, aroma , taste and viscosity) in the sports drink and also potassium, sodium , antioxidant activity and osmolality content in selected sports drinks . Design research used is experimental. Based on statistical tests, there are no significant differences of the formulation on the color , aroma , taste and viscosity. Test the preferences by the 30 disciplinary shows that F3 (75% strawberries: 25% mulberry) is most favored with average score color ( 5.8 ), aroma ( 5.8 ), taste ( 5.37 ) and viscosity ( 5.67 ). In 1 kg sport of drink (F3) containing 704.9 mg sodium, 165 mg potassium, antioxidant activity ( ic50 ) 1323.34 ppm and osmolality 327 mOsmol / kg.

Abstract

Consumption of vegetables and nuts in the community, especially elementary school age children is still low. Intake of vegetables and nuts can be obtained from snacks such as brownies. Red bean flour and moringa leaf flour which are added as ingredients for brownies can be used as snacks high in protein and iron in an effort to increase the intake of vegetables and nuts in elementary school-aged children. The aim of the study was to determine the effect of red bean flour and Moringa leaf flour formulations on organoleptic properties, protein content, and iron content. This research is an experimental study with a comparison formulation of red bean flour and Moringa leaf flour F1 50%: 50%, F2 70%: 30%, and F3 30%: 70%. The organoleptic test was carried out by 30 moderately trained panelists, then the best results were tested for protein content by the micro-kjeldahl method and iron content by the ICP-OES method. Data analysis used the Kruskal Wallis test, followed by the Mann Whitney test. Brownies that have the highest level of preference is the F2 formulation with a ratio of red bean flour and Moringa leaf flour 70%: 30%, color aspect 70% likes, aroma 63% likes, taste 84% likes, texture 80% likes and overall 84% likes . One serving is 60 grams and can meet 10.1% and 24.1%, respectively, of the daily protein and iron adequacy of elementary school-aged children. The results of statistical tests found significant differences between each product formulation. Further research can be done by adding jam or dried fruit to improve the scentand adding toppings to increase the attractiveness of the product as well as targeting research

Abstract

Kekurangan gizi pada remaja dapat dicegah dengan pengembangan makanan selingan berbasis pangan lokal dari tepung tempe dan tepung daun kelor. Tujuan penelitian untuk mengetahui adanya pengaruh formulasi tepung tempe dan tepung daun kelor terhadap sifat organoleptik serta mengetahui nilai gizi (energi, karbohidrat, protein, lemak dan zat besi) pada cookies. Desain penelitian ini adalah eksperimental, melihat pengaruh penambahan tepung tempe dan tepung daun kelor terhadap tiga formulasi yang berbeda, yaitu F1 (30%:5%), F2 (25%:10%) dan F3 (20%:15%). Pengujian organoleptik dilakukan kepada 30 panelis agak terlatih. Hasil uji normalitas dengan Shapiro-wilk menunjukkan nilai p (0.000) < α (0.05), data tidak terdistribusi normal. Hasil uji Kruskal Wallis menunjukkan adanya perbedaan yang bermakna pada tingkat kesukaan panelis terhadap warna pada formula F1 dan F2 serta formula F1 dan F3 dan rasa pada formula F1 dan F3 serta formula F2 dan F3. Hasil uji laboratorium menunjukkan per 100 gram cookies dengan formulasi terbaik (formula 2) mengandung energi 551 kkal, karbohidrat 51.71 gram, protein 12.20 gram, dan lemak 32.81 gram serta zat besi 5.11 miligram. Penelitian lanjutan dapat dilakukan dengan melakukan intervensi pemberian cookies tepung tempe dan tepung daun kelor terhadap kenaikan berat badan pada remaja dengan status gizi kurang.

Abstract

Malnutrition is a common condition among patients with type 2 diabetes mellitus (T2DM), primarily caused by metabolic dysregulation, unbalanced dietary patterns, diabetes-related complications, and recurrent infections. Adequate intake of high-quality protein plays a crucial role in preventing malnutrition in this population. This study aimed to develop and evaluate a high-protein enteral formula based on soybeans, whey protein isolate, and pigeon pea as a potential nutritional intervention for T2DM patients without renal impairment. The evaluation included assessments of organoleptic properties, macronutrient composition, dietary fiber content, antioxidant activity, energy density, flow rate, shelf life, and economic feasibility. An experimental design was employed, involving 15 trained panelists for sensory analysis. The Mann–Whitney test revealed significant differences between formulas F1 and F3 in terms of taste and aroma (p < 0.05), with no significant differences in color, consistency, or overall acceptance (p > 0.05). Formula F2 demonstrated superior sensory attributes compared to F3 in all evaluated aspects (p < 0.05). Proximate and antioxidant analyses of the optimized formula (F2 - Gudelai Dia Pro+) showed an energy content of 273 kcal, protein 16.22 g, fat 9.14 g, carbohydrates 31.47 g, dietary fiber 2.51 g, and antioxidant activity of 150.12 µg/ml. The formula exhibited an energy density of 1.31 kcal/cc and a flow rate of 1.06 ml/sec. Shelf-life testing indicated a decline in quality after 12 hours at room temperature. Cost analysis revealed that Gudelai Dia Pro+ had a production cost of IDR 11,165 per serving, making it more cost-effective than commercial enteral formulas by a margin of IDR 1,835

Abstract

Diabetes Mellitus (DM) is a metabolic endocrine disease with the identical symptom of hyperglycemia. One of the main pillars in DM management is nutrition therapy through limiting the intake of carbohydrates and high simple sugar (monosaccharides). The availability of foods with low glucose levels has become one of the crucial needs of DM patients in controlling blood glucose levels. Tempeh is a soy-fermented local food that has been known widely by Indonesian Society. Tempeh-based food products with high nutritional value and low sugar are still scarcely found in society. Thus, this research aims to develop a tempeh-based product with high nutrition value (protein), low Glycemic Index (GI) level and adequate fibre content. Research and Development Design method was used in this research with the selecting, sorting and processing done with respecting the standard of food processing. The yield product was tested on 40 panellists for organoleptic tests, analyzed in the laboratory to measure the nutrient content, and calculated for glycemic index. The results show that “ATemp” (a tempeh floss) has a result of organoleptic test with the panellist who stated like and very like for colour of the product 65%, for the aroma 67,5%, for the texture 58% and for the taste of the product 50%. Laboratory analysis has shown that 100 g of ATemp contains 23 g of fat, 19 g of protein, 45 g of carbohydrate, 1 g of sugar, 257 mg of sodium, 12 g of fibre and 465 kcal of total energy. The result of GI test shows that Atemp has a GI level of 12 (low) and GL level of 2,7 (low). ATempt has a high potential to be an alternative food for diabetes or for those who are doing low-sugar diet.
