Abstract

This study was conducted to determine the effect of different solvents on the antioxidant activity of gale of the wind extract and to find out the right type of solvent used to extract gale of the wind with the highest antioxidant activity using maceration method. The experimental design used in this study was a completely randomized design (CRD) with a type of solvent as a treatment. The treatment consisting of four levels, namely methanol, ethanol, acetone, isopropanol. All treatments were repeated four times so that they were obtained 16 experimental units. The data obtained were analyzed by variance and if the treatment had significant effect followed by Duncan test. The results showed that the type of solvent treatment had a very significant effect on yield, total phenol, total flavonoids, total tannin, and antioxidant activity (IC50). The results showed that acetone solvent had the best treatment which produced a yield of 22.58%, total phenol content of 188.77 mg GAE/g, total flavonoid content of 247.60 mg QE/g, total tannin content of 297.51mg TAE/g, and antioxidant activity (IC50) of 15.19 ppm.

Abstract

This study aims to determine the effect of processing methods on antioxidant activity and characteristics of matoa leaf herbal tea (Pometia pinnata) as well as to obtain the right processing method which produces matoa leaf herbal tea (Pometia pinnata) with the antioxidant activity and the best characteristics. The design used in this study was a Completely Randomized Design with the treatment of method processing consisting of 4 levels, method A (oven drying), method B (steaming and oven drying), method C (withening and roasting), and method D (steaming and roasting). This study was repeated 4 times to obtain 16 trial units. The data obtained were analyzed by analysis of variance and if the treatment had a significant effect it was followed by Duncan's test. The results showed that the processing method significantly affected the water content, crude fiber content, extract content in water, total flavonoids, total phenols, antioxidant activity, IC50, the sensory characteristics include color, aroma, taste and overall acceptance, and color objectively, but the treatment method has no significant effect on the ash content. The matoa leaf herbal tea with method A (oven drying) had the highest antioxidant activity and the best sensory characteristics with a water content of 8.46%, ash content of 4.64%, crude fiber content of 53.17%, extract content in water 5.25%, total flavonoids 0.87mgQE/g, total phenols 17.35mgGAE/g, antioxidant activity 87.50%, IC50 57.94ppm and color determination l, a, b (18.33: 12.02: 10.48) as well as yellowish color sensory characteristics, very typical aroma of matoa leaf herbal tea, taste rather bitter, and overall acceptance likes.

Abstract

This study aimed to determine the effect of the ratio of chicken meat and red bean sprouts flour to the characteristics of the meatballs and to determine the appropriate ratio of chicken meat and red bean sprouts flour to get the best meatball characteristic. Thisstudyused the completely randomized design, with ratio of chicken meat and red bean sprout flour treatmen consisted 5 level,namely (B0) 100% : 10%, (B1) 90% : 10%, (B2) 80% : 20%, (B3) 70% : 30%, (B4) 60% : 40%. Each treatment was repeated 3 times, in order to obtain 15 experimental units. The data obtained were using analysis of varianceandif thetreatmenthada significanteffect,itwascontinuedwiththe DuncanMultiple Range Test.The results showed that the ratio of chicken meat and red bean sprouts flour had an effect on moisture content, fat content, crude fiber content, texture, hedonic, aroma, taste, texture, and overall acceptance. And scoring on color, taste, and texture. The meatball with a ratio of chicken meat and red bean sprout flour of 90%: 10% was the best meatball characteristics with the criteria: water content of 68.86%, protein content of 23.22%, fat content of 8.03%, crude fiber content of 32.35 %, texture 6.63 N, color sensory test, aroma, taste, texture, and overall acceptance are liked.

Abstract

This research was conducted to determine the effect of additional WPC 80 to the red guava and sweet orange blend on characteristics smoothie. The completely randomized block design was used in the research with the treatment of WPC 80 additional in different concentration level (0%, 0,5%, 1%, 1,5% and 2%). The treatment repeated 3 times for producing 15 experimental units. Data were analyzed with variance analysis followed by Duncan multiple range test, if they were significant different effect (P<0,05). The result of this research showed that the additional of 2% WPC 80 produce the best smoothie characteristics (water content 89,13 %, protein content 6,35 %, total soluble solids 11,40 °brix, pH 4,54, vitamin C 64,05 mg/100 ml, viscositas 288 m.Pas, dietary fiber 1,37%), with color rather like, flavour like, taste creamy and like, texture thick and rather like.

Abstract

This study aimed to determine the effect of comparison between white glutinous rice and purple sweet potato on the chemical characteristic and sensory of brem beverage also the best ratio of white glutinous rice and purple sweet potato to produce brem beverage with the best characteristic. The design method used Completely Randomized Design with one treatment, namely the comparison of white glutinous rice and purple sweet potato (100:0%) (P0), 90%:10% (P1), 80%:20% (P2), 70%:30% (P3), 60%:40% (P4). This research repeats three times, resulting in 15 times experiments. The data obtained then analyzed with the Analysis of Variance, and if the treatments had a significant effect, continued with the Duncan Multiple Range Test. The best characteristics obtained from the comparison of white glutinous rice and purple sweet potato 80%:20% with the criteria reducing sugar value 8.57%, sugar value 28.86%, alcohol value 3.093%, pH 4.27, acid value 2.10%, antioxidant activity 32.63%, anthocyanin value 6.68 mg/L, mold/yeast value 5.67 x 101 log CFU/ml. The characteristic of the brem beverage color was violet and liked, the aroma was liked, the taste was sweet and liked, and overall acceptance was liked.

Abstract

This research aims to know differences in the physical, chemical, and functional properties of red kidney beans and red kidney beans tempeh flour. Data were analyzed by paired t-test at the 95% confidence interval using SPSS (Statistical Program for Social Science). The results showed that there are differences in the physical properties is bulk density, the chemical properties are water content, ash content, fat content, carbohydrate content, and the functional properties are water absorption capacity, oil absorption capacity, swelling power, solubility, while there are no differences in color test, and protein content. The results of research showed that red kidney bean flour for bulk density (0.58g/ml), color test (L value (44.08), a value (-4.65), b value (13.63)), water content (6.79%bb), ash content (3.33%bb), fat content (12.56%bb), protein content (9.04%bb), carbohydrates content (68.28%bb), water absorption capacity (246.04%), oil absorption capacity (91.14%), swelling power (4.27g/g), and solubility (12.12%), while the red kidney beans tempeh flour for bulk density (0.54g/ml), color test (L value (41.08), a value (-6.45), b value (15.83)), water content (8.26%bb), ash content (2.14%bb), fat content (7.11%bb), protein content (9.87%bb), carbohydrates content (72.62%bb), water absorption capacity (277.81%), oil absorption capacity (99.00%), swelling power (4.75g/g), and solubility (21.67%).

Abstract

This study aims were to determine the effect of tofu waste flour and wheat flour on the characteristic of flakes and to find out the best ratio of tofu waste flour and wheat flour that produce flakes with the best characteristic. The design of research was Completely Random Design (CRD). The treatment factor was ratio of tofu waste flour and wheat flour with 5 levels : 20%:80%, 25%:75%, 30%:70%, 35%:65% and 40%:60%. Each treatment was repeated three times in order to obtain 15 experimental units. The results showed that the ratio of tofu waste flour and wheat flour in the production of flakes has effect on the water content, ash content, protein content, fat content, carbohydrate content, crude fiber content, color, flavor, taste, texture and overall acceptability. Ratio of 40% tofu waste flour and 60% wheat flour produced flakes with the best characteristic with 1,31% water content, 2,97% ash content, 13,01% protein content, 10,73% fat content, 71,99% carbohydrate content, 7,64% crude fiber content, color (liked), flavor (liked), taste (liked), texture (liked) and overall acceptability (liked)

Abstract

This study was conducted to determine the effect of the comparison of semolina and brown rice flour on the characteristics of fresh fettucine and to find out the comparison of semolina and brown rice flour to produce fresh fettucine with the best characteristics. The experimental design used in this study was a completely randomized design (CRD) with various types of comparative treatment of semolina and brown rice flour consisting of 6 treatments namely 100% : 0%, 90% : 0%, 80% : 20%, 70% : 30%, 60% : 40%, and 50% : 50%. All treatments were repeated three times so that they were obtained 18 experimental units. The data obtained were analyzed by variance and if the treatment had significant effect then followed by Duncan test. The results showed that the comparison of semolina and brown rice flour had a significant effect on the ash content, total anthocyanin content, antioxidant activity, texture preferences (hedonic test), and color (scoring test). Ratio of 50% semolina and 50% brown rice flour had the best characteristics that were water content of 67.23%, ash content of 0.36%, total anthocyanin content of 1.05 mg/100g, antioxidant activity of 80.08%, purplish brown color and rather liked, rather chewy and ordinary texture, overall acceptance rather liked.

Abstract

This study aims to determine the effect of the length of soaking time in  Ca(OH)2 saturated solution on the nutrient content and sensory characteristics of crispy oyster mushrooms and determine the length of time of soaking in a saturated solution of Ca(OH)2 right to produce a crispy oyster mushroom with best characteristics. The experimental design used was Completely Random Design (CRD) with treatment duration of soaking that consists of 5 levels: T0= without soaking, T1= 15 minutes, T2= 30 minutes, T3= 45 minutes, T4= 60 minutes. Each treatment was repeated three times to obtain 15 experimental units. The results showed that treatment duration of soaking in a saturated solution of Ca(OH)2 affect the ash content, protein content, fat content, crude fiber content, colour, texture and overall acceptance, but has no effect on the moisture content, carbohydrate content, taste, and aroma. Characteristics of the best crispy oyster mushroom soaking time was obtained in the treatment of saturated solution Ca(OH)2 15 minutes with 26.82% moisture, 0.68% ash content, 6.73% protein, 2.32% fat, 63.18 carbohydrate, 9.45% crude fiber content with sensory evaluation that consists of color with score test 4,75 (rather tawny) and hedonic test 5.15 (rather like), aroma 5.13 (rather like), taste 5.25 (rather liked), texture with score test 3,50 (normal) and hedonic test 3.75 (normal) and 5.00 over all acceptance (rather like).

Abstract

The purpose of this study was to determine the effect of wheat flour comparison with red bean sprout flour on the characteristics of lumpur cakes and to determine the ratio of wheat flour to red bean sprouts flour which can produce mud cakes with the best characteristics.This research used a Completely Randomized Design (CRD) with a comparison of flour and red bean sprouts as treatment. Treatment consisting of 6 levels (100%: 0%, 80%: 20%, 60%: 40%, 40%: 60%, 20%: 80%, and 0%: 100%). The experimentation was repeated 3 times So that it is obtain 18 experimental units. Observed variables of moisture content, ash content, protein content, fat content, crude fiber content, color, aroma, taste, texture, and overall acceptance of lumpur cakes. The data obtained were then analyzed by variants and if there was any effect on the treatment, then continued with Duncan test. The results showed that the addition of red bean sprout affected moisture content, ash content, protein content, fat content, crude fiber content, color, aroma, taste, texture, and overall acceptance of lumpur cakes. The best characteristic of lumpur cake substitution was 60% wheat flour and 40% red bean sprouts flour that produced moisture content of 35,62%, an ash content of 0,78%, protein content of 11,09%, a fat content of 36,67%, crude fiber content of 16,47%, regular color (normal), aroma (like), soft texture (like), taste (like), and overall acceptance (like).
