Abstract

AbstrakPenanganan ikan setelah penangkapan memegang peranan penting untuk memperoleh nilai yang maksimal. Tahap penanganan ini memang menentukan nilai jual dan proses pemanfaatan selanjutnya serta mutu produk. Namun, pada kenyataannya penanganan ikan setelah penangkapan belum dilakukan dengan baik. Adapun tujuan penelitian ini yaitu mengetahui teknik penangkapan diatas kapal purse seine dengan menggunakan metode analisis kualitatif. Hasil penelitian terkait penanganan ada beberapa tahapan yaitu dimulai dari penaikkan ikan ke atas kapal, penanganan ikan sebelum disimpan, penyortiran ikan, pencucian ikan, pembekuan ikan, pengemasan, penyimpanan dan pembongkaran yang ke semuanya itu bertujuan untuk menjaga mutu ikan agar tetap bagus dan harga jualnya tinggi. Kata Kunci : Hasil Tangkapan, Penanganan, Purse Seine AbstractHandling of fish after catching plays an important role to obtain maximum value. This handling phase indeed determines the sale value and the subsequent utilization process and product quality. However, in reality the handling of fish after catching has not been done well. The purpose of this study is to find out the capture technique on purse seine vessels using qualitative analysis methods. The results of the research related to handling there are several stages, namely starting from raising the fish to the boat, handling fish before storing, sorting fish, washing fish, freezing fish, packaging, storing and unloading all of which aim to maintain the quality of fish in order to stay good and the selling price high. Keywords : Catch, Handling, Purse Seine

Abstract

Purse seine adalah alat tangkap yang efektif untuk menangkap ikan-ikan pelagis yang bersifat bergerombol dan hidup di dekat permukaan air. Alat tangkap ini bersifat aktif karena dalam pengoperasiannya yaitu dengan cara menghalangi, mengurung serta mempersempit ruang gerak dari ikan sehingga ikan tidak dapat melarikan diri. Praktik akhir diadakan pada bulan November 2020 hingga bulan mei 2021. Metode pengumpulan data yang digunakan adalah observasi partisipan. Dari hasil pengamatan diketahui bahwa teknik pengoperasian alat tangkap yaitu sama seperti purse seine light fishing pada umumnya yang menggunakan bantuan cahaya lampu untuk mengumpulkan gerombolan ikan selanjutnya ikan dialihkan pada lampu bangkra, lalu kapal bergerak melingkari bangkra sambil menurunkan alat tangkap kemudian diikuti dengan pengerutan bagian bawah jaring sehingga ikan terkurung didalamnya. Jenis ikan hasil tangkapan pada KMN. Samudera Windu Barokah umumnya berupa ikan-ikan kecil seperti Layang, Lemuru, Kemung, dan Selar. Sedangkan untuk jenis ikan-ikan besar seperti Tongkol, Layur, Barakuda, Kuwe serta Bawal.

Abstract

Watchkeeping is guard work carried out on ships or in ports to create situations and conditions to be safe and under control for 24 hours carried out with the aim of work affairs in order to create safety and security while on duty. Hasil Melimpah 18 Vessel is classified as a fishing vessel of a special type only to accommodate fish cargo and does not carry out fishing operations. In an effort to achieve the goal of watchkeeping, a study is carried out related to the evaluation of the activities of the watchkeeping in the operation of the machine. From the results of observations, it is necessary to increase the activities of the watchkeeping in the operation of the main engine. This needs to be done to improve the performance before and after the machine is operated, and the watchkeeping when the machine is operating. The increase in the activities of the watchkeeping in the operation of the main engine can be done by several improvements, such as in the preparation, operation, and watchkeeping duty activities. In preparation activities, it is necessary to increase the availability of OHS equipment, logbooks, and spare parts as needed. In operating activities, it is necessary to increase the availability of OHS equipment, communication tools, and electrical panels. In watchkeeping duty activities, it is necessary to increase the availability of the watchkeeping schedule, machine daily journals, and measuring tools. Periodic control while the machine is operating is very important. The watchkeeper must have a big responsibility because machine damage can occur if the duty officer on duty commits negligence.

Abstract

Penelitian ini bertujuan untuk mengetahui penerapan GMP dan SSOP pada proses pengolahan tuna loin. Penelitian dilakukan pada bulan Maret sampai juli 2021 di Unit Pengolah Ikan di Nusa Tenggar Timur. Metode penelitian dilakukan dengan studi kasus dan observasi langsung proses pengolahan, mulai dari penerimaan bahan baku hingga pemuatan. Metode analisa data dilakukan dengan analisa deskriptif. Pengamatan dilakukan pada tahapan proses pengolahan tuna loin, penereapan rantai dingin, mutu bahan baku dan mutu produk, penerapan GMP dan SSOP. Hasil penelitian menunjukkan bahwa tahapan proses pengolahan tuna loin sesuai dengan alur proses pada SNI  4104-2015 tuna loin beku, penerapan rantai dingin telah dilakukan dnegan baik dengan suhu bahan baku ikan tuna dibawah 4?C. Hasil pengujian organoleptik bahan baku dan produk akhir adalah 8, hasil uji mikrobiologi  5,4 x 103  koloni/gram sudah sesuai dengan SNI dan hasil uji organolpetik produk akhir adalah 8, hasil uji mikrobiologi sesuai dengan SNI SNI 4104:2015. Unit Pengolahan Ikan telah menerapkan GMP dan SSOP dengan baik. Kata Kunci : GMP dan SSOP, mutu, Suhu, Tuna Loin

Abstract

Fish must be given a good treatment or handling so that the quality and quality does not decrease, the application of a principle of handling quickly, carefully, cleanly, healthy and low temperature application. The purpose of this study was to describe the organoleptic test results of frozen fish at KM Naili-XX, which is based at the Nizam Zachman Ocean Fishing Port, North Jakarta. This research was carried out from November 2020 to May 2021. Organoleptic tests were carried out following the procedures in SNI 01-2346-2006 regarding Instructions for Organoleptic and/or Sensory Tests. The results showed that based on the results of organoleptic testing at the time of loading I with an average value of 7.88 at the time of loading II the average value was 7.77 and at the time of unloading the average value was 7.66, meaning that it met the fish classification standard. frozen (SNI 4110-2014), namely products fit for consumption or for export. Abstract

One of the potential of marine products Sorong big enough to be developed in fisheries is Skipjack fish. This study aims to determine the production of maximum sustainable yields (MSY), the level of economic benefits (MEY) and the utilization rate Skipjack fish. The method used stratified random sampling and that became the sample is obtained from the Skipjack fish catches landed in Sorong. The results were obtained MSY amounted to 5,006,321.52 tons / year to an effort of 40 vessels / year while MEY to fish Skipjack 4,999,399.970 tons / year and Effort Maximum Economic Yield (EMEY) 38 vessels / year with a utilization rate has exceeded the amount haul allowed (JTB) that is 80% of the Total Allowable Catch (TAC) which is equal to 106.88%. The result of the calculation of a long relationship forked and weight of Skipjack fish obtained equation W = 0.1931 L 2.4447. Value b = 2.4447, (b less than 3), the pattern of growth Skipjack fish landed in Sorong Regency is Allometric negative. Conditions Skipjack been over exploited fisheries, the management system in accordance with the fisheries Skipjack in Sorong based on the biological aspects include: (1). Setting the fishing season (2). The closure of fishing grounds in certain seasons. (3). Reduction arrest quotas. (4) .Control fishing effort.

Abstract

The purpose of this research was to determine the necessary costs, benefits and feasibility of fishing effort on purse seiner refrigerated frezzer. This research uses descriptive method, sampling with purposive sampling and financial analysis. Business analysis is carried out by identifying the costs incurred in the form of a total cost of IDR 1,362,779,900 / trip, consisting of fixed costs of IDR. 214,500,000 / trip and variable costs of IDR. 1,148,279,900. Income from the sale of the catch is IDR. 2,974,282,400 / trip with a net profit of IDR. 1,611,502,500 and for the ship owner gets a share of 60% so that in 1 fishing trip he gets a profit of IDR.. 966,901,500. It takes 6 trips (3 years) of fishing operations with a profit of IDR. 1,611,502,500 / trip to reach the break even point. The B / C ratio value of 2.18 is greater than 1, so the fishing business by KM. Asia Jaya 03 with purse seine fishing gear is declared feasible to operate and continue.
