Abstract

Kegiatan pengabdian masyarakat yang dilaksanakan oleh Jurusan Teknologi Hasil Pertanian Fakultas Teknologi Pertanian Universitas Andalas Padang ini bekerja sama dengan mitrayaitu Pondok Pesantren Dr M Natsir di Batu Bagiriak Alahan Panjang, Kabupaten Solok, Provinsi Sumatera Barat. Lokasi kegiatan pengabdian merupakan pondok pesantren yang mana di lingkungan sekitar kaya akan hasil pertanian dan perkebunan. Salah satu komoditi yang banyak dibudidayakan oleh masyarakat sekitaran pondok pesantren adalah kentang. Tanaman kentang ditanam masyarakat di pinggiran kebun atau di pekarangan rumah, tanaman ini tumbuh subur dan berproduksi cukup tinggi di daerah ini. Permasalahan yang dihadapi oleh mitra adalah 1) Umumnya kentang hanya dijual dalam bentuk mentah, pengolahan yang umum dilakukan masyarakat setempat hanya sekedar direbus atau digoreng saja dengan campuran dengan cabe merah, 2) Kurangnya pengetahuan anggota kelompok dalam aspek pengolahan berbagai macam produk olahan. Kegiatan yang telah dilaksanakan oleh tim pengabdian masyarakat untuk menyelesaikan permasalahan mitra adalah 1) Mengevaluasi kegiatan budidaya pertanian dan perkebunan yang ada dilokasi mitra, 2) Kegiatan penyuluhan pengolahan produk olahan dari kentanguntuk meningkatkan nilai jual produk dan ekonomi petani 3) Diversifikasi produk olahan dari kentang untuk meningkatkan umur simpan produk dengan pembuatan berbagai macam produk yaitu donat frozen, stik frozen, es krim, kulit kebab, dan minuman fungsional. Kegiatan ini berlangsung dengan baik dan lancar serta tingginya antusias peserta dalam mengikuti kegiatan ini terutama pada kegiatan pengolahan produk. Kegiatan ini diharapkan meningkatkan kualitas dan kuantitas produksi usaha mitra,dan peningkatan pendapatan mitra. Abstract

ABSTRAK: Permasalahan utama yang dihadapi kelompok saat ini adalah terbatasnya pengetahuan, teknologi dan peralatan produksi untuk mengolah susu kambing. Susu yang dihasilkan hanya diolah menjadi susu pasteurisasi di dalam kemasan kantong plastik. Dalam hal penanganan susu segar, penerapan kebersihan, praktik higiene, dan sanitasi juga masih belum baik. Dengan demikian, susu segar dan susu pasteurisasi yang mereka produksi dan pasarkan belum dapat dijamin keamanannya untuk dikonsumsi. Di samping keterbatasan penguasaan teknologi juga belum optimalnya kelembagaan kelompok yang baru berjalan sebatas bekerja sama dalam hal teknis berternak, namun belum berkembang dalam hal pengadaan bersama dan pemasaran produk secara bersama. Dengan demikian tingkat efisiensi dalam hal biaya produksi dan biaya pemasaran belum bisa diperoleh oleh kelompok. Masalah sebagaimana yang dijelaskan di atas, ditawarkan untuk diselesaikan dengan alternatif sebagai berikut :a) Memberikan pelatihan teknik kebersihan, sanitasi dan higienis pemerahan dan penanganan susu segar dan susu pasteurisasi, serta teknik pengemasan; b) Memberikan pelatihan teknik pengolahan susu menjadi berbagai produk olahan susu c) Memberikan Peningkatan wawasan dan pengetahuan kelompok mengenai pemasaran produk olahan susu kambing d) Memberikan pelatihan penguatan kelembagaan kelompok peternak kambing untuk menuju kelompok tani yang profesional.Kata kunci: Susu Kambing, Ternak Kambing, Olahan Susu Kambing, Kambing Etawa

Abstract

There are two chain structures consisting of main actors and supporting actors. The structure of the first chain is Farmers → Small Collectors, → Large Collectors → Exporters. At the same time, the second chain structure is: Farmers, → Home Industry, → Collecting agents. Areca farmers get an added value of IDR 1,647.12/kilogram with an added value ratio of 71.80%. Small collectors get an added IDR 994.46/kilogram with an added value ratio of 22.10%. Prominent collectors get an added value of IDR 702.67/kg with a value-added ratio of 13.01%. The home industry obtains an added value of IDR 16,634.07/kilogram with an added value ratio of 79.21%. Farmers get a marketing margin of IDR 1,794.19/kilogram. Small collectors earn a marketing margin of IDR 1,500/kg. Collector traders earn a large marketing margin of IDR 900/kg. The home industry earns a marketing margin of IDR 18,000/kilogram.

Abstract

Purpose: This work aimed to analyze the profiles of amino acids in the ficin enzyme isolated from Ficus aurata (Miq.), and to determine the efficiency of these amino acid concentrations under two types of drying – solar drying and freeze drying. Methodology: The enzyme ficin was obtained from fig tree, and the presence of amino acids was determined by UPL chromatography. The applied methods of drying were solar and freeze. However, the primary objectives were aimed at investigating the influence of these treatments on the level of amino acids present in all the samples. Results: The findings indicated that freeze drying techniques retained more amino acids in figs than was observed in the case of solar drying. In particular, the amount of L-glutamic acid in freeze drying was 2.39 mg/g, while that of solar drying was 1.43 mg/g. Similar results were observed in L-lysine and L-aspartic acid, which were relatively higher in freeze drying than solar drying, with concentrations of 2.43 mg/g and 2.55 mg/g, respectively, as opposed to 0.99 mg/g and 1.76 mg/g in solar drying. Besides, freeze drying showed better L-serine, L-phenylalanine, and L-histidine preservation. Findings: It was observed that freeze drying gave the best opportunity to reduce the loss of amino acid of the ficin enzyme. The drying method, in particular, resulted in a concentration of some important amino acids like L-glutamic acid, L-lysine, L-aspartic acid, L-serine and L-phenylalanine, and L-histidine as compared to solar drying. Novelty: This study focused on different types of solar energy and freeze energy economic systems in enzymatic activities in the ficin enzyme extracted from Ficus aurata (Miq.). The novel contribution of this research lies in its objective, which is to show how the drying methods used affected the retention of the most influential and critical amino acids in the enzymatic processes. Originality: The novel aspect of the study was the attachment of ultra vortices to different drying techniques, such as solar drying and freeze drying in select ficin enzymes from Ficus aurata. It opens up a new perspective toward the development of drying parameters for the enhancement of important enzymatic characters from this particular variety. Conclusion: This research considers the changes in amino acid content during the drying of ficin enzyme from Ficus aurata through different drying methods. It is shown that freeze drying enhances the retention of critical amino acids and is thus one of the most efficient methods for the enzymatic processing of this plant species.
