Abstract

Food is a source of nutrition for humans and is also a source of food for microorganisms. The growth of microorganisms in foodstuffs can cause unwanted physical or chemical changes causing food to be bad for consumption. Therefore to maintain the quality, the food must be given of preservatives. However, people may misuse the preservatives leading to the low safety of food that threatens health. Natural preservatives of plants is more advisable to minimize the risk. The aim of this research was to see the effect of galangal extract (Alpinia galanga) using 60% ethyl acetate solvent in inhibiting the growth of Escherichia coli bacteria through diffusion disk method. The measured parameter was the inhibition zone formed around the disc paper with a 24-hour incubation period. This research was an experimental study by making galangal extract in certain concentrations. Based on the measurements, the average inhibitory zone diameter at three repetitions with 24 hours observation showed that the galangal extract in several concentrations effectively inhibited the growth of Escherichia coli bacteria. The result showed that the higher the concentration of the extract the larger the mean drag zone formed around the disk paper. The most effective concentration was 20 ml concentration with 25,6 mm inhibition (0.000 (P <0,05), F = 89,592).

Abstract

Malnutrition problems that mostly occur in NTT are particularly caused by low protein intake. Therefore, this study was designed to intervene in feeding energy and protein dense snack to improve the nutritional status of children under five. This research was conducted in Tanah Putih Village, Kupang Tengah Sub-district, Kupang District. The research was an experimental method with a completely randomized design. Three types of intervention were given, namely: p1 = cassava + skipjack fish; p2 = cassava + rice beans; and p3 = cassava + skipjack fish + rice beans. Each sample consumed energy and protein dense snacks (according to treatment) for 30 days of trial. The results showed that the majority of children had a higher acceptance level for the intervention (88,9%). The results also showed that the provision of energy-dense food and protein significantly (p <0.05) improved the nutritional status of children under five, with weight for height indicator. However, the intervention had no significant effect (p> 0.05) with the indicator of height for age. The results of the analysis of variance showed a significant nutritional status improvement for the composition of cassava and fish (P1) (p <0.05) using the indicators wight for height and weight for age. Yet, it had not significantly contributed to improving the nutritional status of children under five using the height for age indicator.Advanced analysis using the Duncan test showed that the intervention treatment with the composition of cassava and rice beans had the strongest effect on improving the nutritional status of children under five.

Abstract

Household food security is related to the ability of the household to fulfill the needs of all its members. This implies physical and economic access to food that is sufficient, safe, and culturally acceptable in terms of the quantity and quality of nutrition to meet the needs of each family member. Pitay Village is one of the villages that is at risk of food vulnerability because it does not meet the three indicators namely availability, access and utilization. This study aims to determine the community's strategy to overcome food insecurity in Pitay Village, Sulamu District, Kupang Regency. This type of research was descriptive quantitative. The population in this study were 250 household heads. The sample consisted of 72 families determined using the Slovin formula. The results showed that 56.9% of respondents experienced food insecurity and 55.6% of respondents ate food from the forest as a strategy to deal with food insecurity. Local governments need to provide social assistance as well as increase entrepreneurial interest by providing working capital funds. Socialization and empowerment for productive age groups related to the use of homeyard (green house program) are recommended to meet household food needs.

Abstract

Malnutrition is a common health problem. One of the causes is the provision of MP-ASI that is not following the age and needs of the baby. This study aims to determine the description of complementary feeding and infant weight gain (MP-ASI). This research is descriptive research with a quantitative approach. Data collection was carried out from October-November 2020. The study population was 90 mothers. The sample size is 73 mothers who have babies aged 6-24 months. The sampling method used is simple random sampling. The results showed that most of the mothers of children under five were young, ranging from 20-35 years (67.12%), had low education (52.05%), and worked as farmers (76.71%). Family income is low (53.42%). Mother's knowledge about MP-ASI is still lacking (52.06%). Infants who received MP-ASI <6 months was 63.02%. The type of MP-ASI, the frequency of MP-ASI, and the form of MP-ASI were not following the needs of infants aged 6-24 months, 63.02%, 53.42%, and 54.79%, respectively. The level of energy and protein adequacy in infants is included in the less category, respectively 71.23% and 64.39%. The baby's weight gain was in the non-increased category, which was 60.27%. The active role of health workers is needed to provide counseling on the correct way of giving MP-ASI. Mothers also need to be more active in seeking information on how to give MP-ASI and actively participate in posyandu (integrated health post) so that mothers can give MP-ASI to babies according to the age of 6-24 months.

Abstract

Stunting is a chronic nutritional problem caused by a lack of nutritional intake during the first 1000 days of life which results in stunted physical growth and cognitive development of children. This study aims to study the relationship between energy and protein adequacy levels with nutritional status. The type of research used in this research is analytic observational with a cross-sectional research design. The sample size in this study was 61 of the 866 population of children under five who were selected by proportional random sampling. Analysis using chi-square test. The results showed that the energy adequacy level variable with significant nutritional status (p-value = 0.000 <0.05) and protein adequacy level with significant nutritional status (p-value = 0.000 <0.05). Nutritional problems, namely stunting, need to be prevented by increasing energy and protein intake in toddlers.
