Abstract

Halal products are crucial for consumers. In Islam, halal and wholesome food consumption is vital for maintaining physical and spiritual well-being. The Indonesian government mandates halal product certification by Law No. 33 of 2014 on Halal Product Assurance. The critical points in determining the halal status of a product refer to processes or ingredients in its production that may potentially involve, contain, or mix with haram substances. Nevertheless, many students lack a clear understanding of halal and haram principles. This knowledge is essential to help students avoid using forbidden ingredients in Islamic teachings. Padang Chemical Analyst High School (SMAKPA) students are the targets of this service because vocational school students must have work-ready skills. Before the education session, a pre-test was conducted to assess the student's understanding of the material presentation. Education was delivered using a flowchart to enhance engagement and comprehension. The content encompasses the concepts of halal and haram in Islam, the responsible parties for halal certification, halal logos, and the analysis of critical points in the halal status of food, cosmetics, and medications. Following the material presentation, a post-test was administered, followed by a question and answer session to evaluate the students' understanding. Pre-tests and post-tests were employed to assess student comprehension, with pre-test scores averaging 99 and post-test scores at 99.5. Abstract

This study presents a comprehensive in silico approach aimed at discovering novel artificial sweetener candidates through an integration of shape-based virtual screening, taste classification, ADMET evaluation, homology modeling, and molecular docking. Using saccharin as a template, compounds were screened from a large high-throughput database employing vROCS software, followed by taste prediction via VirtualTaste and Virtuous Sweet/Bitter. Two promising candidates were identified with Compound 1 exhibiting superior binding affinity against a homology-modeled human T1R2-T1R3 receptor, as evidenced by its docking score of –77.81 kcal/mol. ADMET analysis further revealed favorable pharmacokinetic properties for the compounds, suggesting their potential as safer non-caloric sweeteners. The integrative strategy not only streamlines candidate selection but also underlines the utility of molecular modeling in food science. Nevertheless, experimental validation and sensory evaluation are needed to confirm these findings and establish the compounds’ efficacy and safety profiles. These promising results encourage further in vitro and in vivo studies.

Abstract

Pemahaman mengenai pengemasan pangan merupakan kompetensi penting bagi mahasiswa pendidikan vokasi bidang tata boga, namun banyak mahasiswa yang masih mengalami kesulitan dalam mengaitkan konsep teoretis dengan penerapannya dalam praktik. Penelitian ini bertujuan untuk mengkaji pengaruh penggunaan video pembelajaran terhadap pengetahuan mahasiswa tentang pengemasan pangan pada mata kuliah Pengawetan Pangan. Penelitian menggunakan desain one-group pretest–posttest dengan melibatkan 29 mahasiswa Program Studi D3 Tata Boga Universitas Negeri Padang. Mahasiswa diberikan tes pilihan ganda sebelum dan sesudah menonton video pembelajaran yang dikembangkan dalam penelitian ini. Hasil penelitian menunjukkan adanya peningkatan pengetahuan mahasiswa yang signifikan, dengan nilai rata-rata meningkat dari 76,21 pada pretest menjadi 93,45 pada posttest (p < 0,05). Temuan ini menunjukkan bahwa video pembelajaran membantu memperjelas konsep pengemasan melalui penjelasan visual dan contoh-contoh aplikatif. Penelitian ini menyimpulkan bahwa pembelajaran berbasis video dapat digunakan sebagai strategi pembelajaran pendukung dalam pendidikan vokasi, khususnya untuk memperkuat pemahaman mahasiswa mengenai keamanan pangan dan praktik pengemasan yang bertanggung jawab.

Abstract

Esculetin is a bioactive coumarin derivative with reported antioxidant, anti-inflammatory, and anticancer activities. Despite its pharmacological relevance, achieving selective molecular recognition of esculetin in complex systems remains challenging. Computational screening of functional monomers offers a rational strategy to identify candidates capable of forming stable noncovalent interactions with the target molecule. In this study, 21 monomers were evaluated using a semiempirical extended tight-binding (xTB) approach. Initial screening was performed through automated interaction site screening (aISS) to estimate interaction energies. The aISS results identified 4-vinylbenzeneboronic acid as having the most favorable interaction energy (-312.87 kcal/mol), followed by 2-Acrylamido-2-methyl-1-propanesulfonic acid (-25.34 kcal/mol), p-vinylbenzoic acid (-24.71 kcal/mol), trans-3-(3-pyridyl)acrylic acid (-23.04 kcal/mol), and 9-vinylcarbazole (-22.17 kcal/mol). To evaluate dynamic stability, selected complexes were subjected to molecular dynamics simulations. The results showed that 2-Acrylamido-2-methyl-1-propanesulfonic acid exhibited the lowest average energy (-76.301 kcal/mol), followed by p-vinylbenzoic acid (-70.03 kcal/mol) and 4-vinylbenzeneboronic acid (-69.70 kcal/mol). Metadynamics simulations further confirmed this trend, with total energy (Etot) values of -76.23 kcal/mol, -69.96 kcal/mol, and -69.64 kcal/mol for the same monomers, respectively. The consistency between molecular dynamics and metadynamics analyses indicates that 2-Acrylamido-2-methyl-1-propanesulfonic acid forms the most energetically stable complex with esculetin under simulated conditions. This study provides a computational basis for selecting functional monomers for esculetin recognition systems and supports further experimental validation.

Abstract

Green synthesis is an approach for producing silver nanoparticles (AgNPs) that more popular because the use of bioreductor, making it safer and more eco-friendly. The use of Phyllanthus buxifolius as a source of reducing and stabilizing agents in the formation of AgNPs and its contribution to antioxidant activity is still limited. Therefore, this study aims to synthesize AgNPs using P. buxifolius leaf extract and evaluate its antioxidant activity. The leaves of P. buxifolius were extracted using ethanol in a 1:10 ratio through maceration, then followed by solvent evaporation using a rotary evaporator. AgNO3 was mixed with a 10% P. buxifolius leaf extract solution. The UV-Vis spectrum was analyzed at wavelengths ranging from 400 to 800 nm. Particle size, morphology, functional groups, and crystal structure of AgNPs were characterized. Antioxidant activity was assessed using the DPPH method to determine the IC50, with ascorbic acid as the reference standard. To confirmed the formation of silver nanoparticles, a color change from colorless to brown were observed. These nanoparticles exhibited a Surface Plasmon Resonance (SPR) peak at 420 nm, were non-spherical with the particle size around 50 nm, and showed a crystalline structure. Additionally, the silver nanoparticles synthesized with P. buxifolius extract demonstrated comparable antioxidant activity to standard ascorbic acid, indicating their potential to be developed as antioxidant agents for health and therapeutic uses.

Abstract

Eco-Enzyme, a multifunctional liquid produced from a mixture of organic waste such as vegetables, fruits, brown sugar, coconut sugar, corn sugar, sugarcane, and water that has undergone fermentation, has various benefits for the environment and human health. Eco-Enzyme contains beneficial enzymes that accelerate biochemical reactions in the environment. The enzymes found in Eco-Enzyme can be used for various applications, such as organic liquid fertilizer for plants, an additive in detergents, floor cleaners, pesticide residue cleaners, and rust removers. Using Eco-Enzyme as a liquid soap can help reduce soil pollution. Meanwhile, using Eco-Enzyme as a cleaning agent can help reduce the use of hazardous chemicals that damage the environment. This integrated program is carried out in three stages: the first is to socialize the benefits of using Eco-Enzyme, the second is to make Eco-Enzyme, and the third is to make soap from Eco-Enzyme. The production of Eco-Enzyme begins with the collection of organic waste consisting of fruit and vegetable waste, which is then mixed with brown sugar and water and left to ferment for three months. After the Eco-Enzyme product is ready, soap-making uses ingredients such as potassium hydroxide (KOH), coconut oil, cooking oil, distilled water, orange-scented perfume, and Eco-Enzyme. Training on Eco-Enzyme and soap making is conducted in the Andalas Subdistrict, which is welcomed enthusiastically by the local community. This program is expected to serve as a reference for transforming organic waste into more practical and environmentally friendly sustainable products.

Abstract

Kota Padang merupakan wilayah rawan tsunami dengan risiko evakuasi tinggi. Penelitian ini mengevaluasi kinerja jalur evakuasi tsunami pada Ruas Jalan Sawahan. Penelitian ini bertujuan untuk mengevaluasi kinerja jalur evakuasi tsunami pada Ruas Jalan Sawahan di Kota Padang dengan menganalisis kapasitas jalan, volume lalu lintas, preferensi moda transportasi masyarakat, serta memprediksi kinerja jalan pada saat terjadi tsunami.  Metode kuantitatif diterapkan melalui survei volume lalu lintas, inventarisasi rambu, dan kuesioner preferensi moda transportasi. Analisis menggunakan Manual Kapasitas Jalan Indonesia (MKJI) 1997 dengan simulasi dua skenario evakuasi: kondisi eksisting dan kondisi terburuk (parkir penuh kawasan komersial). Hasil menunjukkan mayoritas penduduk memilih sepeda motor (66,7%) dan mobil (25,2%) untuk evakuasi. Kapasitas jalan normal adalah 4.246,5 smp/jam (tingkat pelayanan C). Saat tsunami, kinerja turun menjadi tingkat D (skenario 1) dan E (skenario 2). Penerapan manajemen lalu lintas seperti pengubahan arah satu arah dan larangan parkir meningkatkan kembali kinerja ke tingkat C. Disimpulkan bahwa Ruas Jalan Sawahan belum optimal menampung arus evakuasi tsunami. Diperlukan intervensi manajemen lalu lintas sistematis dan pemeliharaan berkala untuk menjamin kelancaran evakuasi.

Abstract

The Batanghari 1 Bridge serves as a vital link connecting Jambi City and Muaro Jambi Regency. Currently, the traffic density at the Batanghari intersection is notably high, particularly during peak hours, resulting in frequent traffic jams. To address this issue, the Perencanaan dan Pengawasan Jalan Nasional (P2JN) and Planning Consultants executed a Detailed Engineering Design (DED) Planning for the Duplication of the Batanghari 1 Bridge in 2021. The Duplication DED transformed the original intersection into a combination of an intersection and a U-turn. However, a notable challenge emerged during rush hours, especially for Jalan KH.A. Majid, where a U-turn is essential to cross the Batanghari Bridge. In this study, a traffic microsimulation was initiated at the Batanghari intersection. Using PTV Vissim software, microsimulations were conducted under three scenarios: Existing Condition, Detailed Engineering Design (DED), and an Alternative scenario, which involved incorporating a Flyover for KH.A. Majid Road towards Batanghari Bridge. Furthermore, traffic microsimulations were conducted to anticipate conditions over the next two decades. The analysis involved microsimulation using Vissim software, encompassing calibration, trial and error validation of the intersection model considering driver behavior, and GEH tests on traffic volume. The microsimulation results at the Batanghari intersection revealed that the alternative model effectively reduced queues, minimized delay times, and improved overall travel time compared to the proposed model.
