Abstract

Tungkal Composite Jambi Liberika Coffee is one of the top qualities of Indonesian coffees that has received a geographic indication certificate (IGs). With its limited production and high prices, currently Tungkal Jambi Liberika coffee is one of the coffees that is prone to being counterfeited. The counterfeiting of Tungkal Jambi Liberika coffee is increasingly difficult to identify, especially in the form of ground roasted coffee. This study evaluated the potential application of UV spectroscopy technology to classify Tungkal Jambi Liberika coffee (with geographic indications) and normal Probolinggo Liberika coffee (non- geographic indications). A total of 120 samples for each Liberika coffee were prepared weighing 1 gram for each sample. Spectra measurements were carried out in the form of a coffee solution. Spectral data were taken using a UV-visible spectrometer with a wavelength interval of 200-400 nm (Genesys™ 10S UV-Vis, Thermo Scientific, USA). By using the average transformed spectra in the 250-350 nm interval, the differences between the two types of Liberika coffee can be clearly seen, especially at some wavelength peaks, namely 270 nm, 300 nm, 315 nm and 346 nm. The classification accuracy obtained for the SIMCA classification is 100% for both Tungkal Jambi Liberika and Probolinggo Liberika coffee. Keywords:   authentication, classification accuracy, Tungkal Jambi Liberika coffee, SIMCA, UV Spectroscopy

Abstract

There are two popular coffees in Indonesia, namely Arabica and Robusta coffees. Arabica coffee has a better quality than Robusta do. This research aimed to identify the  purity of Arabica coffee; and Robusta as mixture ingredient, by using technology of UV-Vis spectroscopy and multivariate analysis, with a method of soft independent modelling of class analogy (SIMCA) and principal component analysis (PCA). The research was conducted using coffee powder with size 0,297 millimeters (50 mesh).The research used 100 samples; sample 1-50 (1 g of Arabica), sample 51-60  (0,8 g of Arabica and 0,2 of Robusta), sample 61-70 (0,7 g of Arabica and 0,3 g of Robusta), sample 71-80 (0,6 g of Arabica and 0,4 of Robusta) sample 81-90 (0,5 g of Arabica and 0,5 g of Robusta), sample 91-100 (0,4 g of Arabica and 0,6 g of Robusta).  The result of classification showed that method of PCA and SIMCA are able to classify the mixture of pure Arabica. PC1 explained 77% various datas, and PC2 explained 10% various datas, whilst from data classification SIMCA obtained the precentage score onaccuracy 56%, sensitivitas 58%, and spesifisitas 0%.Keywords: Arabica coffee, Robusta coffee, PCA, SIMCA, UV-Vis spectroscopy

Abstract

In this research, the feasibility of using NIR spectroscopy coupled with forward interval partial least squares (FiPLS) regression for nondestructive soluble solids content (SSC) determination in Pondoh snake fruit was investigated. Spectra of snake fruit were acquired using a VIS-NIR USB4000 portable spectrometer in absorbance mode. The SSC was measured using a digital refractometer.  The calibration and validation models were developed using the FiPLS regression using original spectra. The result showed that the optimal combinations of 7 spectral intervals among 11 intervals which selected by FiPLS yielded good results (RMSEC = 0.854783%, rc= 0.96, RMSECV = 0.899828%, rv = 0.95).  Keywords: soluble solids content, absorbance mode, nondestructive method, snake fruit, FiPLS regression, NIR spectroscopy

Abstract

In this research, the potentiality of using NIR spectroscopy and chemometrics for nondestructive determination of blood oranges flesh was investigated. Spectra of intact blood oranges fruit were acquired using a VIS-NIR MMS1 portable spectrometer in absorbance mode. The RGB of blood oranges cut flesh was measured using image processing software.  The calibration and validation models were developed using PLS regression using original spectra. The calibration results showed that the developed calibration models were promising with correlation r=0.82 for red component (R) determination and r=0.81 for green component (G) determination, respectively. Keywords: blood oranges, NIR spectroscopy, RGB color, absorbance mode, nondestructive method

Abstract

Arabica coffee is being considered to be of better quality than robusta because of their superior taste and aroma. Adulteration of arabica with other cheaper coffee like robusta coffee has become a great problem related to authentication of food products. Ground coffee samples are most challenging to be discriminated each other and visual inspection by our eyes or even machine vision method becomes very difficult. For this reason, in this research we propose a new analytical method based on UV-visible spectroscopy for quantification of adulteration in arabica-robusta coffee blend. The proposed method is easy to use, low cost with affordable spectrometer and safe for environment with free-chemical analysis. A number of 100 samples was used as samples with different degree of adulteration (10-60% of robusta concentration in arabica-robusta coffee blend). Spectral data of aqueous samples was obtained using a UV-visible spectroscopy in the range 200-400 nm. The result shows that calibration model using selected subintervals (iPLS model) can improve the prediction performance of calibration model using full spectrum (FS-PLS). It is noted that iPLS model removed wavelengths that is not related to the quantification of adulteration in arabica-robusta coffee blend. This study has shown a potential application of using UV-visible spectroscopy for simple and low cost tool to detect the authentication of arabica coffees

Abstract

UV-Vis spectroscopy has been used as a promising method for coffee quality evaluation including in authentication of several high-economic coffee types. In this paper, we have compared the abilities of linear discriminant analysis (LDA) and support vector machines classification (SVMC) methods for Luwak coffee classification. UV-Vis spectral data of 50 samples of pure Luwak coffee and 50 samples of pure non-Luwak coffee were acquired using a UV-Vis spectrometer in transmittance mode. The results show that UV-Vis spectroscopy combined with LDA and SVMC was an effective method to classify Luwak and non-Luwak coffee samples. The classification result was acceptable and yielded 100% classification accuracy for both LDA and SVMC methods. However, due to the simplicity and volume of the required calculation, in this present study LDA method is superior to SVMC method.

Abstract

ABSTRAK Buah mangga memiliki kandungan nutrisi yang bermanfaat bagi kesehatan. Komoditas ini tersedia di pasar dalam berbagai jenis kulitvar, diantaranya cengkir, kweni, kent dan palmer. Tujuan penelitian ini adalah memprediksi kualitas internal buah mangga yaitu vitamin C, total asam tertitrasi, total padatan terlarut (TPT) menggunakan near-infrared reflectance spectroscopy (NIRS). Spektra diffuse reflectance yang diperoleh dari hasil akuisisi spektra dikoreksi dengan pra-pengolahan spektra metode orthogonal signal correction (OSC), dan turunan pertama savitzky-golay (dg1). Hasil penelitian menjelaskan bahwa vitamin C, total asam tertitrasi, dan TPT dapat diprediksi dengan baik menggunakan NIRS. Pra-pengolahan spektra memberikan pengaruh terhadap akurasi pendugaan kualitas internal buah mangga. Spektra dg1 memperoleh nilai R2 kalibrasi tertinggi pada ketiga parameter kualitas yaitu 0,98 (vitamin C), 0,87 (total asam tertitrasi), dan 0,96 (TPT). Namun, pada pendugaan vitamin C dan total padatan terlarut, spektra dg1 menampilkan nilai konsisten yang rendah yaitu sebesar 56% dan 63%. Pra-pengolahan spektra OSC mampu mereduksi jumlah faktor pada spektra original. Model kalibrasi terbaik pendugaan vitamin C dan total padatan terlarut diperoleh oleh spektra original, sedangkan pendugaan total asam tertitrasi ditunjukkan oleh spektra dg1 Kata kunci: Analisis Multivariat; Kalibrasi; Kemometrika; Nondestruktif; Validasi ABSTRACT Mango fruit contains a lot of beneficial nutrition for health. This commodity is available at the market in various cultivars, including cengkir, kweni, kent, and palmer. The purpose of the research was to predict the internal quality of mango such as vitamin C, titratable acidity, soluble solid content using near-infrared reflectance spectroscopy (NIRS). Diffuse reflectance spectra acquired from spectra acquisition were corrected using spectra pre-processing methods of orthogonal signal correction (OSC) and first derivative savitzky-golay (dg1). The results explained that vitamin C, titratable acidity, and SSC were able to be properly predicted using NIRS. Spectra pre-processing gave effect to the accuracy of internal quality prediction of mango. Dg1 spectra obtained the highest calibration R2 in the three quality parameters of 0.98 (vitamin c), 0.87 (titratable acidity), and 0.96 (SSC). However, in vitamin c and SSC prediction, dg1 spectra yielded low consistent values of 56% and 63%. Besides, OSC spectra pre-processing was able to reduce the number of factors in the original spectra. The best calibration model for predicting vitamin c and total dissolved solids was achieved by the original spectra, while the prediction of titratable acidity was shown by dg1 spectra Keywords: Calibration; Chemometrics; Multivariate Analysis; Nondestructive; Validation

Abstract

Kopi spesialti arabika Java Preanger kultivar Typica, Sigarar Utang, dan Yellow Bourbon saat ini tersedia di pasar kopi premium dengan harga mahal dan saat ini menjadi salah satu target pemalsuan kopi. Penelitian ini bertujuan untuk mengevaluasi aplikasi metode spektroskopi UV dan metode PLS-DA (partial least squares-discriminant analysis) untuk autentikasi cepat kopi spesialti arabika Java Preanger dengan tiga kultivar berbeda. Sampel kopi bubuk spesialti arabika dan robusta disiapkan sebanyak 550 sampel dengan berat 1 g untuk setiap sampel. Seluruh sampel diekstraksi dengan prosedur standar dan diencerkan dengan perbandingan 1:70 (volume/volume). Sampel kopi yang telah diencerkan kemudian diambil sebanyak 3 mL, dimasukkan ke dalam sel kuvet kuarsa, dan diambil spektranya menggunakan alat spektrometer UV-visible di rentang panjang gelombang 190-400 nm dengan interval 1 nm. Hasil PCA spektra hasil pengolahan di panjang gelombang 250-400 nm menunjukkan tiga kultivar kopi spesialti arabika dan kopi robusta dapat dibedakan dengan jelas dan terletak di klaster yang berbeda. Namun kopi spesialti arabika Typica dan Sigarar Utang terletak di klaster yang saling berdekatan dan sebagian sampel saling bertumpuk menunjukkan kedua kultivar kopi arabika tersebut memiliki kemiripan. Hasil PLS-DA spektra hasil pengolahan di panjang gelombang 250-400 nm menunjukkan model klasifikasi yang dibangun dapat digunakan untuk klasifikasi kopi robusta dan kopi arabika dengan tiga kultivar berbeda dengan akurasi klasifikasi mencapai 97.8 sampai 100%.

Abstract

Crackers is one of the popular food products among the people of Indonesia. The addition of cassava leaves into crackers take advantage of the availability of cassava leaves, especially during harvesting. The research aims to determine some parameters of drying characteristics of vegetable crackers. Drying crackers were conducted using sun drying and rack dryers with the temperature of 50 °C and crackers’s thickness of 2 mm, 3 mm, and 4 mm. The results showed that drying using dryer with cracker’s thickness of 2 mm, 3 mm, and 4 mm spent a drying time about 3.5-4.5 hours that was faster than sun drying around 4.5 – 5.5 hours. The decrease of moisture content in the dryer was quicker than sun drying. The final moisture content of cracker using dryer had average value of 8.28% which was lower than the sun drying of 12.95% . The color changes that occured after the drying process using dryer and sun drying produced value <0.5 which had a meaningless or unchanged after the drying process. Depreciation of material diameter on dryers had a value of 11.92% which was greater than sun drying. The mean of moisture balance (Me) in the dryer of 7.348 %bb was lower than using sun drying. Drying constant of creackers value using dryer had an average value of 1.196 /hours that was higher than the sun drying 0.84 /hour.

Abstract

Honey with coffee flowers nectar is native honey formed from flower nectar. In this investigation, corn syrup and rice syrup, two artificial sweeteners, were utilized as an adulterant. Portable fluorescence spectroscopy and the SIMCA method are the tools and techniques employed. There were up to 20 samples of pure Apis mellifera honey and up to 120 samples of mixed honey (MC), each used twice. Data on the emission spectra, which are excited at a wavelength of 365 nm, were measured over the wavelength range of 300-800 nm. To improve accuracy, sensitivity, and specificity, the original spectral data was altered using a number of pre-treatments. Pretreatment with the original data with smoothing moving average may accurately identify samples and provides 100% accuracy, sensitivity, and specificity. One of the steps of the SIMCA approach, the cumulative PC, has a value of 92%, which indicates that it well explains the variation of the data. The x-loading plot's values are near the peak of the waves at 378 and 460 nm, indicating the existence of phenolic and flavonoid chemicals at those wavelengths. Keywords:   Apis mellifera honey, Corn syrup, Rice syrup, Portable Spectroscopy, SIMCA.
