Abstract

Background: School snacks remain a public health concern because some products do not meet food safety standards and may contain unsafe food additives. Limited student knowledge regarding preservatives, colorants, sweeteners, and flavor enhancers increases the risk of unhealthy snack consumption. Purpose: This study aimed to analyze the effectiveness of animated health education videos in improving elementary school students’ knowledge of food additives. Methods: A pre-experimental design with a one-group pre-test and post-test approach was conducted among 23 fifth-grade students selected through purposive sampling at SDN Karangrejo 6 in 2025. A structured knowledge questionnaire was administered before and after the animated video intervention. Data were analyzed using the Wilcoxon signed-rank test with a significance level of 0.05. Results: The proportion of students with good knowledge increased from 43% to 61%, while the proportion in the poor knowledge category decreased from 35% to 13%. Statistical analysis showed a significant difference between pre-test and post-test scores (p = 0.004). Conclusion: Animated video media is effective in improving students’ knowledge of food additives and is recommended as an innovative school-based health education strategy to strengthen food safety literacy from an early age.

Abstract

Modern dietary patterns have increased children’s consumption of processed foods containing food additives, namely preservatives, flavor enhancers, sweeteners, and colorants (4Ps), which may increase the risk of degenerative diseases in the future. Although many studies discuss unhealthy food consumption among children, limited educational media specifically address food additives in a form that is engaging and suitable for elementary school students. This study aimed to fill this gap by developing an animated educational video on 4P foods as an innovative medium for school-based health promotion. This study used a Research and Development (R&D) approach with the 4D model (Define, Design, Develop, Disseminate) and applied a pre-test–post-test design to evaluate its effectiveness. The developed animation was validated by media and material experts and then tested on 23 elementary school students to assess feasibility, acceptance, and knowledge improvement. The results showed that the animation was highly feasible and well accepted by students. Students reported that the video was interesting, easy to understand, and helpful in learning about healthy food choices. After watching the video, students’ knowledge about food additives increased compared to before the intervention, indicating that the animation effectively supported learning. This study demonstrates that animated educational media can be an effective and practical tool for school health promotion, helping teachers deliver health messages in an engaging way and supporting early prevention of unhealthy eating habits among children.

Abstract

Growth monitoring of under-five children is an important effort for early detection of growth disorders. However, growth monitoring activities at Community Health Center (CHC) still face several challenges, including manual data recording, limited interpretation of measurement results, and suboptimal nutrition education media for parents. The utilization of digital technology through mobile health applications is an alternative approach to improve the effectiveness of child growth monitoring. This study aimed to develop and evaluate the feasibility of the My Baby application as a digital media for growth monitoring and nutrition education among under-five children. This study employed a Research and Development (R&D) method using the ADDIE model (Analysis, Design, Development, Implementation, and Evaluation). The study was conducted in Sucopangepok Village, Jelbuk District, Jember Regency, from May to December 2025. The application trial involved 14 respondents consisting of 1 village midwife and 13 CHC cadres. Data were collected using a feasibility evaluation questionnaire and analyzed descriptively. The results showed that the My Baby application was successfully developed with features including child identity recording, anthropometric measurement recording in both offline and online modes, nutritional status interpretation, growth charts, nutrition education materials, two user dashboards (mother and cadre dashboards) and export data into Microsoft Excel. The feasibility evaluation showed that the application achieved a score of 90.3%, categorized as highly feasible. The application was considered easy to use, informative, and beneficial in supporting child growth monitoring and CHC recording activities. The My Baby application has the potential to serve as a digital supporting medium for primary healthcare services in early detection of growth disorders.

Abstract

Household organic waste such as fruit and vegetable scraps can be utilized as the main ingredient for eco enzyme, which serves as a natural and environmentally friendly base for liquid detergent production. This community service activity aims to empower local residents to transform kitchen waste into useful products that contribute to pollution reduction. The methods included education sessions, eco enzyme production training, liquid detergent formulation, and hands-on practice. The target group was the PKK women’s organization of Puger Kulon Village, Puger District, Jember Regency, who play an essential role in household waste management. The results showed an increase in participants’ knowledge and skills in independently producing liquid detergent. The product proved effective for household cleaning and has the potential to develop into a small-scale business opportunity. This program is expected to encourage the adoption of a green lifestyle and raise community awareness of sustainable waste management practices.

Abstract

Snacking behavior among elementary school students contributes substantially to daily energy intake and may increase the risk of consuming foods high in sugar, fat, and food additives such as preservatives, colorings, flavor enhancers, and sweeteners (4P). The school food environment and family economic factors are assumed to influence such behavior. This study aimed to analyze the effect of pocket money and purchase location on 4P snacking behavior among elementary school students. A quantitative cross-sectional design was applied involving 23 fourth-grade students at SDN Karangrejo VI Jember by total sampling. Data were collected using structured questionnaires assessing pocket money categories, snack purchase locations, and 4P snacking behavior scores, which have been validated and are reliable. Data were analyzed using univariate and bivariate analysis with chi-square tests. The results showed that most students received IDR 6,000–10,000 as daily pocket money (57%) and predominantly purchased snacks at the school canteen (60%). The highest proportion of 4P snack consumption was 1–2 times per week (56.5%). Statistical analysis indicated no significant association between pocket money (p=0.231) or purchase location (p=0.366) and 4P snacking behavior. These findings suggest that children’s snacking behavior is influenced by more complex and interacting factors.
