Abstract

ABSTRAK Cabai merah keriting (Capsicum annum L.) merupakan produk hortikultura bernilai ekonomi dengan permintaan yang tinggi baik di pasar dalam maupun luar negeri. Cabai tergolong sebagai produk klimaterik yang mudah rusak,  membuat produk ini rentan mengalami penurunan mutu. Untuk itu diperlukan upaya penjagaan mutu cabai. Penelitian bertujuan untuk mengetahui kombinasi terbaik dari masing-masing faktor perlakuan selama penyimpanan. Penelitian ini dilakukan menggunakan rancangan eksperimen Taguchi, yang disusun berdasarkan matriks orthogonal L9(43). Pada penelitian ini terdapat empat faktor kendali yang masing-masing terdiri dari 3 level, yaitu faktor suhu (5 °C, 10 °C, 24 °C), jenis kemasan (OPP, LDPE, PET), waktu simpan (2, 4, dan 6 hari), dan bulk density (0,156 g/cc, 0,243 g/cc, dan 0,313 g/cc). Dilakukan pengujian terhadap empat parameter mutu cabai merah keriting, yaitu tingkat kerusakan, perubahan warna, perubahan bobot, dan tingkat kekerasan dengan karakteristik semakin kecil nilai semakin baik. Analisa data dilakukan dengan menggunakan rasio signal gangguan (signal to noise ratio), efek faktor, dan analisis variansi. Dari penelitian ini diperoleh kombinasi terbaik level faktor yaitu  suhu 5 °C, jenis kemasan oriented polystyrene (OPP),  waktu simpan dua hari, dan bulk density 0,243 g/cc. Pada kondisi tersebut persentase kerusakan 0%, perubahan bobot 0,01 g, perubahan warna senilai 5,54, dan perubahan kekerasan 0,74 gf. Sehingga pengaruh suhu dan kemasan pada perlakuan penyimpanan ini tidak berpengaruh signifikan atau berpengaruh signifikan.Kata Kunci: Cabai Merah Keriting; Mutu Cabai; Taguchi  ABSTRACTCurly red chili (Capsicum annum L.) is a horticultural product that has an economic value with high demand in both domestic and foreign markets. Chili is classified as a climacteric product that is easily damaged, making this product vulnerable to deterioration. For this reason, efforts are required to maintain the quality of the product. The research aims to find out the best combination of each treatment factor during storage. This research was conducted using the Taguchi experimental design, which was arranged based on the orthogonal matrix L9(43). In this study, there were four selected factors, each of which consisted of 3 levels, i.e., temperature (5 °C, 10 °C, and 24 °C), type of packaging (OPP, LDPE, PET), storage time (2, 4, and 6 days), and bulk density (0.156 g/ cc, 0.243 g/ cc and 0.313 g/ cc). Four selected quality parameters of red curly red chili, i.e., the level of damage, color changes, weight changes, and the level of hardness, were tested with the characteristics the smaller the better. Signal to noise ratio, factor effects, and variance analysis was then performed on the collected experimental data. The conclusion of this study indicated the best combination of factor levels was: 5 °C, oriented polystyrene (OPP) packaging, two-days storage time, and bulk density of 0.243 g/ cc. Under these conditions, the percentage of damage was 0%, weight change of 0.01 g, change in color valued at 5.54, and change in hardness of 0.74 gf. Keywords : Curly Red Chili; Quality; Taguchi

Abstract

AbtrakPenelitian ini bertujuan membedakan produk-produk berindikasi geografis dari Daerah Istimewa Yogyakarta menggunakan kandungan mineralnya. Kandungan dari empat elemen, yaitu Cu, Fe, Mn dan Zn, pada sampel salak pondoh dan nira kelapa yang merupakan produk berindikasi geografis dari Daerah Istimewa Yogyakarta diukur menggunakan Atomic Absorption Spectrometry (AAS). Data yang diperoleh kemudian diolah menggunakan diagram pencar dan analisis diskriminan. Penggunaan diagram pencar elemen Fe dan Mn mampu memisahkan sampel salak pondoh Sleman dengan sampel dari daerah lain, sementara penggunaan Canonical Discriminant Analysis mampu memisahkan sampel nira kelapa Kulonprogo dari daerah lain dengan tingkat ketepatan prediksi mencapai lebih dari 80%.Kata kunci: indikasi geografis, nira kelapa, salak pondoh, Yogyakarta AbstractThis study aims to discriminate Yogyakarta’s geographical indication products using their mineral contents. Mineral content of four elements, Cu, Fe, Mn, and Zn, in pondoh snake fruit and coconut sap which are geographical indication products from Yogyakarta Special Region (DIY) were measured by Atomic Absorption Spectrometry (AAS). The collected data were then analyzed with scatter and discriminant analysis. Scatter diagram of Fe and Mn was able to discriminate Sleman’s Pondoh snake fruits from other regions while Canonical Discriminant Analysis was able to separate Kulonprogo’s coconut sap samples from the other investigated regions with accurate prediction rate more than 80%.Keywords: coconut sap, geographical indication, pondoh snake fruit, Yogyakarta

Abstract

Increased internet usage and fast-paced consumer’s demands have created business opportunities, including online food delivery services. However, competition with similar national-scale businesses allegedly contributed to the decline in the number of XYZ company orders, one of the food-delivery service providers in Yogyakarta. Therefore, this study aimed to identify the need’s attributes of the daring food delivery service consumers, to find out the service-quality satisfaction level, and to determine the technical requirement for improving the delivery service. The combination of Servqual and Quality Function Deployment (QFD) were then used to reach the research goals. The online survey instruments, which were borrowed from the previous studies and adapted for this study, were distributed from June 2016 to February 2017 to more than 700 XYZ’s consumers, with the number of respondents who answered as many as 213 peoples. Cronbach’s Alpha, the most common test for multiple Likert questions in a survey, was then used for analyzing the collected data. The result shows that order conformity; politeness and friendliness of messengers and administrative workers; cleanliness of food box; a good conditionof received ordered food; and affordable delivery costs are the top five attributes of consumer needs. Meanwhile, the top five observed technical requirements are the provision of skills training to messengers and administrative workers; periodic evaluations of service performance; the regular addition of food outlet members; providing map feature on the company website, and provision of ordering applications.  The identified requirements can benefit local food delivery service providers in competing with national scale competitors and adapt to disruptive age.

Abstract

Kopi menjadi salah satu komoditas andalan dalam pasar ekspor internasional. Perannya menjadi penting bagi perekonomian dan mendorong pengembangan agroindustri dunia. Mutu fisik biji dan citarasa kopi merupakan komponen penting yang dipengaruhi oleh sifat genetik tanaman, praktek budidaya dan lingkungan tumbuh maupun interaksi antar keduanya. Tujuan dari penelitian ini adalah untuk mengetahui mutu fisik biji dan citarasa kopi Indikasi Geografis (IG) Arabika Gayo pada ketinggian tempat tumbuh yang berbeda. Penelitian dilakukan di dataran tinggi Gayo, Kabupaten Aceh Tengah dan Bener Meriah. Pengambilan sampel dilakukan dengan metode stratified sampling pada ketinggian 1.000-1.500 mdpl (meter di atas permukaan laut) dan 1.500-1.750 mdpl, masing-masing termasuk ke dalam klasifikasi kesesuaian lahan S1 dan S2. Peubah yang diamati yaitu mutu fisik (bobot 100 biji dan nilai cacat) dan profil citarasa. Data dianalisis dengan independent sample t-test. Hasil penelitian menunjukkan terdapat perbedaan rata-rata bobot 100 biji kopi Arabika antar ketinggian S1 dan S2, dan nilai cacat tidak berbeda antar ketinggian S1 dan S2. Hasil lainnya menunjukkan bahwa profil citarasa kopi IG Arabika Gayo untuk kedua Kabupaten dan ketinggian tempat tumbuh memiliki total skor yaitu 82,75 - 85,25 poin, dan termasuk ke dalam kategori kopi specialty (excellent). Secara umum, lokasi ketinggian S2 dataran tinggi Gayo menghasilkan mutu fisik bobot 100 biji kopi dan citarasa yang lebih baik dibandingkan dengan ketinggian S1.

Abstract

Assessing coffee sensory quality is generally carried out by panelists using cup testing with reference to the Specialty Coffee Association of America (SCAA) standards. A high level of sensitivity sensory is essential thus it must be done by trained panelists. Given the limitations of the method, a deeper study is required to obtain a standard of assessment of coffee sensory quality based on more reliable and precise analytical methods, one of which is biochemical components. This study was aimed to analyze the sensory quality and biochemical components of Arabica coffee and determine the indicators of sensory attributes based on those biochemical components. The study was conducted at two Arabica coffee-producing areas in West Java from May to September 2019. The biochemical components analyzed included caffeine, trigonelline, chlorogenic acid (CGA), sucrose, and lipid, while the sensory attributes assessed were aroma, flavor, aftertaste, acidity, body, balance, uniformity, sweetness, clean cup, and overall. The survey method with stratified and simple random sampling was used and followed by Two-way Anova and Partial Least Square analysis. Results showed variations in the biochemical content of coffee from the two areas. Lipid has a positive correlation with the aroma and flavor attributes, and negatively correlated with the body attribute. Caffeine has a negative correlation with the aftertaste attribute, whereas CGA has a negative correlation with the acidity attribute. Correlation between biochemical components with sensory attributes showed that the biochemical content acts as an indicator of sensory attributes.

Abstract

Cacao genotype most cultivated in Indonesia divided into three main groups, namely Criollo, Forastero, and Trinitari. Beside genetical factor, the pod and beans qualities are also strongly influenced by the environment in which the plant grows. The research aimed to analyze the types and physical qualities of the pod and bean from Patuk, Gunungkidul at three elevations range (154.00–267.20, 302.00–401.00, and 469.20–657.90 m above sea level/asl). The research was conducted at smallholder plantations in Patuk District, Gunungkidul, Yogyakarta from September until Desember 2017. As many as 40–42 samples were randomly taken from each elevation range and analyzed by descriptive statistic and one-way anova. The parameters observed  were  cocoa types identification (Criollo, Forastero, and Trinitario), pod’s physical quality (fresh weight of fruits, length to width ratio, fresh weight of beans, number of beans, and  fresh weight of one bean), and bean’s physical quality (thickness, length/width ratio, dry weight of one bean, and number of beans in 100 g). The results showed that Trinitario cacao type dominates at elevation range of 154.00–267.20 m asl, while Forastero dominates at elevation range of 302.00–401.00 and 469.20–657.90 m asl. The pod physical qualities of Criollo, Forastero, and Trinitario showed highest  fresh weight per bean at 469.20–657.90 m asl compared to those at lower elevation (increased 19.05%–31.94%). At elevation of 469.2–657.9 m asl, Forastero shown  higher beans physical quality at all variables, whereas  Criollo was significantly higher dry weight per bean and number of beans per 100 g, and Trinitario shown significantly higher bean thickness.

Abstract

The composition of fatty acids in cocoa beans, which affect the characteristics of the processed products, is dependent on the geographic location. This research aimed to identify the fatty acid composition of cocoa beans from the Special Region of Yogyakarta (Patuk Gunungkidul and Kalibawang Kulon Progo), used as a geographical origin discrimination parameter. The data were analyzed using ANOVA and Partial Least Square – Discriminant Analysis (PLS-DA). The results showed that the composition from Patuk Gunungkidul and Kalibawang Kulon Progo were dominated by stearic (35.23%), oleic (33.12%), and palmitate acids (27%). The developed method combined with PLS-DA was successfully employed the fatty acid composition to discriminate the geographic origin of cocoa beans in the Special Region of Yogyakarta.

Abstract

Salak Pondoh Sleman (SPS) is an exotic fruit which has geographical indication certification, a sign indicating the unique characteristics inherent in a product due to the influence of its geographical origin. Its unique characteristics can only be found in certain areas. Thus, it is necessary to consider the concept of sustainable agricultural development of the product, involving several dimensions such as environmental, organizational, and technological. The study aimed to assess the sustainability of SPS as a product with geographical indication certification and identify the most influential sustainability attributes in the selected dimensions. A rapid appraisal method of the multidimensional scaling technique was performed to achieve the objective of this study, further mentioned as RAPSalacca. The result showed that the sustainability level of SPS plantation system was classified as ‘quite sustainable,’ with a sustainability index of 59.83. Furthermore, the sustainability analysis of the selected dimensions denoted the important attributes to the sustainability in each dimension, which is further explained in this paper.

Abstract

Geographical Indication (GI) defined as a designation used for products that strongly attached with their origins. The purposes of the study are: to find out consumer behavior at all buying decision stages, to see their perception of agro-geographical indication products, and to determine the most considered attributes in buying decision process of the products. Questionnaires had been distributed to 240 respondents using a purposive sampling technique to collect relevant data for achieving the research’s purposes. Population proportion and Fishbein multi-attributes model were used to analyze the obtained data. Buying decision process of agrogeographical indication products was differentiated into five stages, namely: need recognition; information gathering; alternatives evaluation; purchase decision; and post-purchase behavior. We found the importanceof product’s authenticity at the first stage of buying decision process; the internet and social media as the primary source for GI’s product information at the second stage; and product indigenousness at the third stage. At the fourth stage, most consumers bought the product in the traditional market; and the fifth stage, we found that most of them satisfied with the products, its price, and considered to purchase more in the future. Most of the consumer has a good perception of GI products. However; they had not prioritized GI products over other similar products. The quality of the GI products was the most considered factor in buying decision.

Abstract

Herbal skincare products are becoming more popular nowadays as consumers’ concern regarding the negative side effects of synthetic ingredients are rising as well. XYZ is a newcomer herbal skincare brand from Indonesia and currently has not become one of the 10 famous cosmetic brands in Indonesia. This research was conducted to determine the description of consumer perceptions regarding the quality, price and safety of XYZ products and its influence on consumer loyalty. Questionnaires are distributed online by using google forms to make it easier to cover a wide area. Data collection is done by nonprobability sampling method using purposive and snowball sampling. There were 400 respondents obtained with the criteria of women who have bought and used XYZ products in Indonesia. This research used quantitative, qualitative and descriptive analysis methods. The obtained data was then analyzed by using multiple linear regression method with the help of SPSS software. Based on the conducted research, the results showed the average consumer agrees that XYZ has good product quality, affordable prices and safe to use. Perceived quality, price and safety have a significant effect on the XYZ consumer loyalty products, both partially and simultaneously. Quality perception has the strongest influence whereas, safety perception has the weakest influence on the consumer loyalty.
