Abstract

Traditional coconut oil of mandar is oil extracted from coconut flesh through a heating process. Repeated use of cooking oil has the potential to reduce the oil’s quality, characterized by an increase in free fatty acid levels. The study aimed to analyze the fatty acid composition and the effect of repeated use on the quality of traditional coconut oil from mandar. This study was an experimental design with a completely randomized design (CRD). The frying technique used was deep fat frying with a total of 9 liters of oil. The product being fried was kepok banana, with a total weight of 9 kg, fried at 180°C for 10 minutes in each cycle. There was a 5-minute interval between frying cycles, and a total of 9 cycles were performed on the same day. The parameters analyzed in this research were free fatty acid content and fatty acid profile of traditional coconut oil of Mandar. The results showed that the fatty acid profile was dominated by saturated fatty acids (76,49%) and a small portion of unsaturated fatty acids (0,59%). The level of ALB in traditional coconut oil of mandar did not exhibit significant differences (p>0,05) from the initial use up to the 9th repetition. Thus, traditional coconut oil from Mandar remains suitable for frying purposes for up to 9 cycles.

Abstract

Masa balita, masa proses tumbuh kembang yang sangat pesat. Oleh karena itu, kebutuhan gizi balita harus tercukupi. Balita kekurangan gizi kronis akan berdampak terhadap tingkat kecerdasan dan motorik serta dapat menghambat pertumbuhan ekonomi bangsa di masa yang akan datang. Namun, diantara permasalahan yang sering ditemui pada anak balita adalah rendahnya konsumsi sayuran. Padahal banyak sayuran lokal yang mempunyai nilai gizi tinggi, namun belum optimal pemanfaatannya, misalnya sayur kelor (Moringa oleifera). Oleh karena itu, dilaksanakan Program Kemitraan Masyarakat Stimulus (PKMS) melalui pemberdayaan kader kesehatan di Desa Pallis Kecamatan Balanipa dengan target peserta sebanyak 10 orang. Tujuan PKMS untuk mengembangkan kader kesehatan yang mandiri secara ekonomi melalui kelompok pembuatan kerupuk kelor bergizi tinggi. Kader kesehatan memiliki peranan yang sangat penting dalam rangka pemantauan status gizi balita dan penyuluhan  masalah gizi pada ibu balita dalam pemanfaatan dan pembuatan kerupuk kelor. Metode yang digunakan dalam PKMS ini berupa pendekatan Participatory Rural Appraisal (PRA), pendekatan dengan pemanfaatan teknologi tepat guna atau Participatory Technology Development (PTD), pendekatan dengan memberikan edukasi tentang manfaat dan nilai gizi daun kelor serta pelatihan pembuatan kerupuk kelor (demo masak) dan manajemen pemasaran secara edukatif. Hasil dari kegiatan PKMS adalah kader kesehatan meningkat pengetahuannya terkait kandungan gizi dan manfaat daun kelor serta pemanfaatan teknologi, pengemasan dan pelabelan kerupuk kelor.

Abstract

Banggae Subdistrict is one of the highest producers of capture fisheries in Majene Regency, with a production of 2,598 tons in 2024, making the fisheries sector one of the most promising sectors for development. However, the community of Cilallang in Banggae Subdistrict has not optimized fish processing. Despite the high fish production, diversifying local fish processing could also be an alternative to improve the nutritional status of toddlers. Data on the nutritional status of toddlers, particularly stunting in Banggae Subdistrict, shows a rate of 30.82%. This means that stunting is still a nutritional problem for the community. Therefore, as part of the optimization of food processing based on local food, community service was carried out focusing on the diversification of local skipjack tuna food through the production of fish-based meatballs and nuggets. The results of the community service program showed that after the education, there was an increase in mothers' knowledge about the importance of fish consumption and the importance of diversifying fish processing. There was also an increase in the skills of mothers of toddlers after the demonstration of making fish-based nuggets and meatballs. The community service program targeted a group of 12 housewives with stunted toddlers. The issue addressed was encouraging innovation and creativity among the group of mothers, particularly in terms of diversifying the processing of local skipjack tuna as an effort to improve the skills of mothers of stunted toddlers in the Cilallang Majene coastal area. Through more varied fish products, it is hoped that toddlers will enjoy eating fish to support improved nutritional status and reduce stunting rates in the Cilallang area. The results of the community service program show that after the education, there was an increase in mothers' knowledge about the importance of fish consumption and the importance of diversifying fish products, as well as an increase in the skills of mothers of toddlers after demonstrations on making fish-based nuggets and meatballs.

Abstract

Masalah gizi pada anak usia dini merupakan isu kesehatan masyarakat yang masih menjadi tantangan di berbagai daerah, termasuk di Kabupaten Majene. Salah satu faktor risiko utama yang dapat memengaruhi status gizi anak adalah riwayat berat badan lahir rendah (BBLR), yang diketahui dapat berdampak terhadap pertumbuhan dan perkembangan anak. Penelitian ini bertujuan untuk menganalisis hubungan antara riwayat BBLR dengan status gizi anak usia 0–24 bulan di Kabupaten Majene. Penelitian ini menggunakan desain observasional dengan pendekatan potong lintang dan dilaksanakan pada bulan Agustus–September 2024 di Kecamatan Banggae Timur. Sampel terdiri atas 91 anak yang dipilih menggunakan teknik purposive sampling. Analisis data dilakukan menggunakan uji chi-square dan perhitungan odds ratio (OR) dengan interval kepercayaan 95%. Hasil penelitian menunjukkan bahwa riwayat BBLR berhubungan signifikan dengan kejadian stunting (p = 0,012; OR = 3,30; 95% CI: 1,37–7,94) dan underweight (p = 0,006; OR = 3,41; 95% CI: 1,40–8,33). Hubungan antara BBLR dan wasting juga menunjukkan kecenderungan signifikan (p = 0,055; OR = 2,55; 95% CI: 0,96–6,71). Temuan ini mengindikasikan bahwa anak dengan riwayat BBLR memiliki risiko lebih tinggi mengalami masalah gizi dibandingkan anak yang lahir dengan berat badan normal. Upaya pencegahan BBLR melalui peningkatan gizi ibu hamil dan pemantauan kehamilan secara berkelanjutan perlu diperkuat untuk menurunkan risiko gangguan gizi pada anak usia dini. Childhood malnutrition remains a major public health concern, particularly in regions such as Majene Regency. One of the key risk factors influencing nutritional outcomes in early life is a history of low birth weight (LBW), which has been associated with impaired growth and development. This study aimed to analyze the relationship between LBW history and the nutritional status of children aged 0–24 months in Majene Regency. A cross-sectional observational design was employed, and data collection was conducted in Banggae Timur Subdistrict during August–September 2024. A total of 91 children were selected through purposive sampling. Data were analyzed using the chi-square test and odds ratios (OR) with 95% confidence intervals. The results showed that LBW was significantly associated with stunting (p = 0.012; OR = 3.30; 95% CI: 1.37–7.94) and underweight (p = 0.006; OR = 3.41; 95% CI: 1.40–8.33). A near-significant association was also observed between LBW and wasting (p = 0.055; OR = 2.55; 95% CI: 0.96–6.71). These findings indicate that children with a history of LBW are at higher risk of experiencing nutritional problems compared to those born with normal weight. Strengthening efforts to prevent LBW through improved maternal nutrition and antenatal care is essential to reduce the risk of early childhood malnutrition.

Abstract

Underweight is the most common condition of malnutrition in children aged five years and under and is caused by food intake that does not meet the physiological needs of the body. A lack of food intake can occur due to a lack of energy from staple food sources. Underweight in children under five years old can be caused by various factors, including a lack of knowledge about nutrition and health of parents, especially mothers and the socioeconomic situation of the family is one of the factors that determine the amount of food available in the family so that it also determines the nutritional status of the family. The purpose of this study was to determine the relationship between maternal nutritional knowledge and the incidence of underweight in toddlers in Bonde Utara Village, Pamboang District, Majene Regency. The type of research used is quantitative research with a cross sectional design and the sampling technique is purposive sampling. The analysis test used was chi-square test. The results showed a significant relationship between maternal nutrition knowledge (p=0.03 <0.05), an intensive nutrition education program is needed to reduce the prevalence of underweight in North Bonde Village.

Abstract

Stunting is a critical global issue. Stunting increases vulnerability to disease and death, impairs brain development, and slows motor and mental development. One of the causes of stunting is inadequate protein intake, as protein plays a role in the production of Insulin-like Growth Factor (IGF)-1, which is essential for bone development and enhances children’s growth rates. This study aims to determine the history of protein intake as a risk factor for stunting in toddlers aged 24–59 months in the service area of the Keang Community Health Center. This is a quantitative case-control study with a population of 246 toddlers. The sample consisted of 64 toddlers, comprising 32 toddlers with stunting as the case group and 32 toddlers with normal nutritional status as the control group. The instruments used to collect data included a microtoise, a questionnaire, and the Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ). Nutritional status data were grouped into two categories: stunting, defined as a z-score between -3 SD and < -2 SD; and normal, defined as a z-score between -2 SD and +3 SD. Meanwhile, protein intake history was categorized as adequate if intake was ≥40% of the RDA and inadequate if intake was <40% of the RDA. The data were analyzed using the chi-square test and odds ratio. The study results showed a p-value of 0.001 < 0.05 and a crude OR (95% CI) of 11.88 (3.535–39.925), indicating that toddlers with a history of inadequate protein intake are at a higher risk of stunting. The crude OR value of 11.88 indicates that toddlers with inadequate protein intake have significantly higher odds of experiencing stunting compared to toddlers with adequate intake. It is therefore concluded that a history of inadequate protein intake is a risk factor for stunting among toddlers aged 24–59 months in the service area of the Keang Community Health Center.
