Abstract

Kejadian Stunting dapat dicegah mulai dari masa remaja, dimana remaja merupakan generasi calon ibu dan calon bapak, sehingga perlu diberikan pengetahuan yang baik tentang gizi seimbang dan memilih makanan yang tepat guna mencegah terjadinya stunting sejak dini. Salah satu upaya untuk meningkatkan pengetahuan remaja yaitu dengan cara edukasi gizi. Edukasi gizi sangat diperlukan untuk meningkatkan pengetahuan gizi remaja, membentuk sikap positif terhadap makanan bergizi dalam rangka membentuk kebiasaan makan yang baik. Semakin memiliki pengetahuan gizi yang baik, seorang individu akan semakin mempertimbangkan jenis dan kualitas makanan yang akan dipilih untuk dikonsumsi. Pelaksanaan program pengabdian ini dilakukan melalui pemberian materi kuliah melalui media group whatsapp pada siswa Sekolah Menengah Atas di Kalimantan Selatan yang dilakukan dua tahap. Pada tahap pertama materi yang diberikan adalah gizi seimbang untuk anak remaja dan tahap kedua materi pemilihan menu yang tepat sesuai dengan prinsip gizi seimbang. Evaluasi kegiatan dilakukan dengan memberikan pertanyaan kepada responden sebelum pelaksanaan perkuliahan (pretest) dan kembali memberikan pertanyaan lagi setelah pelaksanaan perkuliahan (post-test). Hasil dari kegiatan peningkatan pengetahuan gizi anak remaja dimana adanya peningkatan pengetahuan dari sebelum mengikuti kulwap yang memiliki skor ≥80 sebanyak 20 orang (27%) menjadi 78 orang (72,2%) dan adanya peningkatan keterampilan dalam menyusun pilihan menu sehari yang sehat dan memperhatikan prinsip gizi seimbang. Seluruh peserta antusias dalam mengikuti kegiatan kuliah whatsapp ini dibuktikan dengan banyaknya pertanyaan yang diberikan oleh peserta.

Abstract

Anemia in pregnant women is still one of the national problems because it reflects the value of the socio-economic welfare of the community. It also has large influence on the quality of human resources. Anemia of pregnancy is called 'potential danger to mother and child', and thereby anemia requires attention from all parties involved in health services at the forefront. This descriptive analytic study used a cross-sectional design, with a total sample of 40 anemic pregnant women. This study used a purposive sampling method. It was conducted in the working area of the Puskesmas Danau Panggang. The variables observed in this study were energy and protein consumption levels in anemic pregnant women. The data were analyzed using descriptive analysis, presented in the form of a frequency distribution table. The results showed that the energy consumption level of anemic pregnant women was mostly in the severe deficit category, namely 95% (38) of anemic pregnant women. Based on this number, most of them (i.e., 58% or 22 anemic pregnant women) had the energy consumption level between 30% and 49% RDA. Meanwhile, the level of protein consumption of most anemic pregnant women was in the severe deficit category, i.e., 87,5% (35) anemic pregnant women. Based on this number, the majority, namely 60% (21) pregnant women with anemia, Most of anemic pregnant women (60% or 21 women) had the protein consumption level between 30% and 49% of the RDA.

Abstract

School-aged children have habit to eating hawker foods. Hawker foods are less qualified health and nutrition, so it will health threats to children The study aimed to find out the correlation between gender, pocket money, habitual breakfast and bringing packed meal and nutrition knowledge with the student behaviors on choosing hawker foods. This study type was observational with Cross Sectional approach. This study population was 49 children. The study results that the children’s knowledge level on choosing hawker food, mostly of them had good knowledge of 53%. The gender of student behaviors chose the best hawker foods of 32,7%. Pocket money of student behaviors chose the best hawker foods of 32,7%. Habitual breakfast of student behaviors chose the best hawker foods of 51%. The habitual bringing pack meal of student behaviors chose the best hawker foods of 22,4%. Based on Rank Spearman correlation analysis, that there was no relation between children's knowledge and choosing hawker food (value p = 0,165), There was no relation between sex and choosing hawker food (p value = 0,482), no relation between pocket money and choosing hawker food (value p = 0,127), there was no relation between the habitual bringing packed meal and the choosing hawker food (p = 0, 495), there was relation between habitual breakfast and choosing hawker food (p = 0,030 )

Abstract

Chips made from the mixture of tapioca flour and flavor ingredients such as shrimp or fish. The formulation of chips in this study consist of tapioka flour, patin fish and tofu waste pulp. The purpose of this study was to determine the effect of tapioca formulations, patin fish and tofu waste pulp to water content, protein, crude fiber, and the ability of swell also the acceptable. The method used in this study is an experimental method using RAL with 4 treatments and 3 times replication with the formulation of tapioca flour, pati fish and tofu waste pulp know P0 (100%: 0%: 0%), P1 (43%: 43%: 14 %), P2 (56%: 37%: 7%), P3 (60%: 33%: 7%). Organoleptic test carried out by 25 panelists at the Department of S1 Nutrition STiKes Husada Borneo. Product analysis has done in University of Lambung Mangkurat Laboratory. Data analysis on water content, protein and crude fiber using one way ANOVA, while the acceptable level using Friedman analysis. The results of this study indicate that there is an influence between the formulation of tapioca flour, patin fish and tofu waste pulp to the water content with the highest average value is P3 statistically obtained (P = 0.037 <α = 0.05), the protein with the highest average value is P1 is obtained Statistical results (P = 0,000 <α = 0,05), crude fiber with the highest average value is P3 obtained statistical results (P = 0,000 <α = 0,05) and the ability of swell with the highest average value of P0 obtained statistical results (P = 0,000 <α = 0,05). For the acceptable which includes colour, aroma and taste with the highest value in the P1 category like, the texture with the highest value in the P0 category like. There is a differences in the acceptable of the producing of chips with the formulation of tapioca flour, patin fish and tofu waste pulp produced because p <α = 0.05.

Abstract

The state of health is the health situation experienced by a person and the disease is a factor that is associated with the state of health of a person. The health of a person is said to be good if in a person's body is good nutrition and a maximum satisfied. Meanwhile, nutritional status is a state of the body because of food consumption and utilization of nutrients; health status is affected by the balance between intake and expenditure of nutrients for its use by the body. Nutritional needs that have a role in child development largely covers energy, carbohydrates and proteins, vitamins and minerals are known as elements of nutrition that influence growth and development of children. The nutritional needs of children can be met from the intake of food or beverages consumed at home and consumed outside the home, or often referred to as a street food. In addition to the consumption of food as a major factor affecting the health and nutritional status of a person, there are also other factors that can affect the health of children, behavior of living healthy and clean. Clean and healthy lifestyle behaviors, in essence, is the prevention of human behavior of various diseases. This study aims to determine the relationship of clean and healthy lifestyle behaviors to the health and nutritional status of children SDN Angsau 2 Pelaihari. This research used analytic investigation with the design of the cross section. The study population for all students SDN Angsau 2 samples Pelaihari. total sample of 60 respondents with two criteria for inclusion and exclusion. Based on the results of the statistical tests of Spearman correlation showed there was have association between clean and healthy lifestyle behaviors (p = 0.000) with children’s health status and nutritional status of children SDN Angsau 2 Pelaihari. Abstract

The main cause of heart disease (cardiovascular) is manifestation of arterosclerosis in coronary arteries. Risk factors for coronary heart disease are abnormalities of lipid profile and obesity. Waist circumference is an indicator used to determine the amount of excess fat in the abdomen. Based on the research, the higher ratio of waist circumferencewill be followed by high LDL cholesterol, triglyceride levels and total cholesterol levels. The purpose of this study is the association of obesity indicators with total cholesterol and triglyceride levels of heart disease patients in the Heart Polyclinic of RSUD Brig. H. Hasan Basry Kandangan. This research is an observational analytic research and use cross sectional design. The sample in this study amounted to 78 respondents (48 men and 30 women) with accidental sampling technique. Data analysis with Pearson correlation test with p value <0,05. Based on the research that has been done, the results obtained thatratio of waist circumference ideal of male respondents as much as 30 respondents and women as many as 9 respondents. Total cholesterol content of respondents mostly in the high category (≥ 240 mg/dl), which is 41 respondents; triglyceride levels of respondents are mostly in the high category (250-500 mg/dl), as many as 38 respondents. There is a relationship between ratio of waist circumference with total cholesterol and triglyceride levels of respondents at H. Hasan Basry Kandangan Hospital.

Abstract

The purpose of this study was to analyze the influence of counseling about clean and healthy life behaviour (PHBS) to knowledge, attitude and action of PHBS family in the village of Lok Buntar Sungai Tabuk South Kalimantan. This study used a pre-eksperiment design method with One group pre test and post test design.Wilcoxon signed ranks test and Paired t test results showed an influence between counseling about Clean and Healthy Life Behaviour (PHBS) on knowledge, attitudes and action of PHBS Family. That result showed an difference of knowledge, before and after counseling. That also showed an attitude and action about PHBS.Before counseling the knowledge of respondents in good category as much 7 respondents (23%) and after counseling increased to 22 respondents (73,4%). About attitude of PHBS, before counseling in good category as much 1 respondents (3,3%) increase to 11 respondents (37%) in after counseling. About action of PHBS, before counseling nothing respondents in good category and after counseling increase to 9 respondents (30%) in good category

Abstract

Introduction: Stunting is a condition of failure to thrive in children due to cronic nutritional deficiencies from inadequate complementary feeding. Local food is commonly consumed by local people in accordance with the condition of the potential resources and local wisdom of the area. The purposes this study to determine the acceptability and nutritional value (energy, protein, fat, carbohydrates, vitamin C, vitamin D, vitamin A, calcium, iron, and zinc) of complementary feeding made from local food. Method: The type of research was an experimental by making 15 recipes complementary feeding. The nutritional value was tested using the software nutrisurvey 2007 and TKPI 2017 and the acceptability was assessed using the food weighing method on 90 panelist. Results: Complementary feeding with good acceptability were Tilapia Potato Porridge (6-8 months), Purple Sweet Potato Shepherd Pie (9-11 months), and Striped Snakehead Purple Sweet Potato Cakes (12-23 months). The complementary feeding menus in this study were able to meet the RDA (energy, protein, fat, carbohydrate, vitamin C, calcium, and zinc) but breats milk and snack still had to be given to under-two children. Conclusion: Children under-two years old tend to like snack-like foods and sweet-flavored complementary feeding.

Abstract

Abstrak Diet seimbang sangat penting untuk semua individu, termasuk remaja. Selain itu, ada korelasi antara konsumsi makanan dan prestasi akademik siswa. Pencapaian nutrisi yang tepat melalui konsumsi makanan sehari-hari diperlukan untuk meningkatkan fokus kognitif individu remaja. Remaja yang bergizi memadai cenderung mengarahkan perhatian mereka ke pendidikan, sehingga memaksimalkan prestasi akademik mereka. Pemahaman yang tidak memadai tentang nutrisi di kalangan remaja, ditambah dengan dampak buruk yang berasal dari kurangnya pengetahuan ini, menggarisbawahi perlunya menyebarluaskan informasi tentang praktik diet bergizi yang disesuaikan dengan demografi remaja. Upaya yang dilakukan melibatkan sosialisasi gizi melalui metode ceramah yang bertujuan untuk meningkatkan kesadaran gizi di kalangan remaja putri di sekolah Madrasah Aliyah Negeri (MAN) 4 Banjar. Kegiatan ini dilakukan dalam satu hari selama 1,5 jam pada November 2022, dan dihadiri oleh 51 siswa. Kemanjuran upaya ini dinilai melalui pertanyaan pra-tes responden sebelum dimulainya sosialisasi, diikuti dengan pengulangan pertanyaan yang sama pasca-sosialisasi. Hasil pengabdian menunjukkan perubahan yang terlihat dalam pengetahuan gizi para peserta ketika mengevaluasi hasil pra-tes dan pasca-tes sebelum dan sesudah sosialisasi. Tingkat pengetahuan dalam kategori baik mengalami peningkatan, dari hanya 20% sebelum sosialisasi menjadi 100% penuh setelah sosialisasi. Kata kunci: gizi seimbang; prestasi akademik; sosialisasi Abstract A sound dietary regimen is imperative for all individuals, including adolescents; furthermore, a correlation exists between dietary intake and academic performance. Attainment of proper nutrition through daily dietary consumption will enhance the cognitive focus of young learners. Adolescents who receive adequate nourishment will be better able to concentrate on their studies, thereby optimizing their academic accomplishments. Insufficient nutritional awareness among teenagers and the adverse consequences stemming from this lack of awareness constitute a key rationale for providing nutritional education on healthy eating habits to adolescents. The interventions implemented involve disseminating nutritional information through lecture method, aiming to boost nutritional literacy among female youth at Madrasah Aliyah Negeri (MAN) 4 Banjar. This activity was conducted in one day for 1.5 hours in November 2022, and was attended by 51 students. The assessment of activity implementation involves initial inquiry of respondents prior to socialization (pre-test) followed by subsequent inquiry after the socialization has taken place (post-test). Findings from the activities indicated a noticeable shift in the nutritional knowledge of participants when comparing pre-test and post-test results. The proportion of individuals with satisfactory knowledge levels prior to receiving socialization stood at a mere 20%, which then rose to 100% post-socialization. Keywords: academic achievement; balanced diet; socialization

Abstract

Abstract Background: Pregnant women are a nutritionally vulnerable group that requires adequate nutrition for the health of the mother and fetus. Efforts to increase the knowledge and attitudes of pregnant women about nutrition and food safety can be done through counselling. Objective: This study aims to find out the effectiveness of counselling to increase the knowledge and attitudes of pregnant women regarding nutrition and food safety. Method: The research method used was quasi-experimental. The sample is pregnant women in the Landasan Ulin area, Banjarbaru with as many as 30 respondents. The research was conducted from March to December 2022. Data was collected by interview using a questionnaire. Variable measurements were carried out before and after counselling. Data were analyzed statistically by t test, at significance α=0.05. Result: There are significant differences in the value of knowledge and attitude values before and after counselling. A significant increase in knowledge was found on 4 knowledge items, namely about a balanced menu, sources of vitamins, separating raw and cooked equipment, and substitute foods. Over all there is an increase in the value of the attitude before and after counselling. Conclusion: There are significant differences in knowledge and attitudes about nutrition and food safety before and after counselling which shows a positive effect on pregnant women. Keywords: Counselling, Knowledge, Attitudes, Nutrition, Food Safety   Abstrak Latar belakang: Ibu hamil merupakan kelompok rawan gizi yang memerlukan gizi cukup untuk kesehatan ibu dan janinnya. Upaya peningkatan pengetahuan dan sikap ibu hamil tentang gizi dan keamanan pangan salah satunya dapat dilakukan dengan konseling. Tujuan: Penelitian ini bertujuan menganalisis efektivitas konseling terhadap peningkatan pengetahuan dan sikap ibu hamil tentang gizi dan keamanan pangan. Metode: Metode penelitian yang digunakan adalah kuasi eksperimen, dengan desian one group pre-test and post-test. Sampel adalah ibu hamil di wilayah Landasan Ulin, Banjarbaru sebanyak 30 responden. Penelitian dilaksanakan pada bulan Maret – Desember 2022. Data dikumpulkan dengan wawancara menggunakan kuesioner. pengukuran pengetahuan dan sikap dilakukan 2 kali yaitu sebelum dan sesudah konseling dengan rentang waktu 10 hari. Data dianalisis secara statistik dengan uji t berpasangan (paired t-test), pada kemaknaan α=0.05. Hasil: Terdapat perbedaan signifikan nilai pengetahuan sebelum dan sesudah konseling (nilai p=0,001). Terdapat perbedaan signifikan nilai sikap sebelum dan sesudah konseling (nilai p=0,000). Ditemukan peningkatan pengetahuan secara signifikan pada 4 item pengetahuan yaitu tentang menu seimbang, sumber vitamin, memisahkan peralatan mentah dan matang, dan makanan pengganti. Secara keseluruhan terdapat peningkatan nilai sikap dari sebelum dan sesudah konseling. Kesimpulan: Terdapat perbedaan signifikan pengetahuan dan sikap tentang gizi dan keamanan pangan sebelum dan sesudah dilakukan konseling yang menunjukan pengaruh positif pada ibu hamil. Petugas kesehatan disarankan memberikan konseling rutin dengan beragam media yang mudah dipahami. Kata kunci: Konseling, Pengetahuan, Sikap, Gizi, Keamanan Pangan
