Abstract

The characteristics of siamese oranges have a 30% part in the form of fruit peel which has not been used and discarded, however, siamese peel has pectin content that can be utilized as an edible coating. The purpose of this research is to determine the effect of using pectin compounds of chayote peel as edible coating on the quality of strawberry fruit during the shelf life. The research method was conducted using a 4x4 factorial complete randomized design with factors of chayote peel pectin concentration and storage temperature. The first factor is the concentration of edible coating from pectin which consists of 4 levels, namely 0%, 1%, 2%, and 3%. The second factor is the length of storage, consisting of 4 levels, namely 3, 6, 9 and 12 days of storage at refrigerator temperature (14oC). The variables observed include weight loss, texture, vitamin C content, pH test, total soluble solids and organoleptic (color, taste and appearance). Abstract

Polowijen Village is one of the villages that has historical heritage in Malang City. The local wisdom and traditional culture maintained today have made the Polowijen sub-district designated as the thematic village by the Mayor of Malang in 2017 with the name Kampung Budaya Polowijen. Its research helps preserve and promote the Polowijen cultural village so that global influences and foreign culture do not erode it. It is necessary to encourage this existing culture in various media, guide residents, and conduct audio-visual documentation, which can later be utilized for the next generation. This writing uses a descriptive method that describes the implementation of the best practice concept that has been carried out to save and preserve the cultural and indigenous knowledge in the Kampung Budaya Polowijen. The results of this writing activity are in the form of documentation relating to cultural activities and local wisdom in the Kampung Budaya Polowijen. The preservation activities' output was quite diverse: first, an online knowledge directory; second, a collection of cultural objects on Android application-based; third, repackaging the video documentation in a CD Drive and a pocketbook.

Abstract

Pemerintah Indonesia di bawah Presiden Parabowo, memiliki komitmen besar dalam mewujudkan swasembada dan kesejahteraan petani. Salah satu motor pendukung adalah ketlibatan Kelompok tani (Poktan). Kegiatan pengbdian ini dilakukan di Kelompok Tani Suka Maju Kelurahan Wonokoyo kecamatan Kedungkandang kota Malang. Tujuan kegiatan adalah memberikan pendampingan kepada kelompok tani dalam mendukung arah baru kebijakan perberasan nasional sekaligus meningkatkan potensi kelompok yang berdampak terhadap kesejahteran petani. Metode kegiatan dilakukan dengan menggunakan pendekatan Partisipatory. Bentuk Kegiatan pendampingan dengan menggalai potensi dan kendala yang dihadapi kelompok baik dalam mendukung swasembada. Hasil Kegiatan adalah: 1) teridentifikasinya berbagai persoalan baik yang bersifat teknis maupun non teknis, diantaranya yaitu: belum semua petani yang berhak menerima pupuk bersubsidi, belum memiliki alsintan, mahalnya biaya tenaga kerja, pengadaan bibit padi yang tidak tepat waktu tanam, petani masih susah lepas dari penggunaan pupuk kimia, produksi padi belum masksimal (sekitar 6 ton dari potensi sekitar 7 ton, jaringan irigasi yang belum sempurna diperbaiki, 2) disepakatinya kegiatan validasi data penerima pupuk bersubsidi, mendata ulang nama petani, luas lahan dan komoditas yang diajukan, 3) penggalakan pemakaian pupuk organic, hal ini didasarkjan pada realita di lapang bahwa petani sangat sulit melepaskan penakaian pupuk kimia, namun demikian sudah muncul pengakuan bahwa mereka mengakui pentingnya penggunaan pupuk organic, baik terkait dengan kesehatan tanah maupun masa depan petani penerusnya. Hasil kegiatan merekomendasikan pentingnya untuk memberikan pendampingan terhadap kelompok tani menuju kelompok tani yang sukses baik dalam mendukung swasemda maupun kesejahteraan petani.

Abstract

Fruit leather refers to a food item obtained by drying pureed fruit in an oven. Typical raw materials used in fruit leather include nutrient-rich tropical and subtropical fruits, high in dietary fiber and vitamin C. This study aims to explore the impact of erythritol and stevia sweeteners on the physic, physicochemical, and functional characteristics of siam-mango orange peel fruit leather. The study employed a factorial complete randomized design (CRD) with two factors: (1) the treatment of the ratio of citrus peel and mango fruit with concentrations of JM1 (50%: 50%), JM2 (40%: 60%), JM3 (30%: 70%), and JM4 (20%: 80%), and (2) the type of sweetener, specifically erythritol (28%) and stevia (5%). The testing parameters included physical characteristics such as texture and color, chemical characteristics such as moisture, ash, protein, fat, and carbohydrate content, as well as functional properties including vitamin C, reducing sugar, antioxidant, and dietary fiber. According to physicochemical testing, the optimal treatment was achieved using a combination of JM2G2 orange peel 10% and manga 90% (JM2) along with Stevia sweetener type (G2). The physicochemical analysis revealed that the moisture content was 14.52%, ash was 0.933%, protein was 3.73%, fat was 2.875%, and carbohydrate content was 77.945%. As well as analyzing the physical properties and functional effects of food on texture content, this study measured total color value, vitamin C, reducing sugar, and antioxidant activity (IC 50). The results showed that the values for each were 3.5, 49, 13.675%, 27.215%, and IC 50 value: 76.02, respectively. The utilization of erythritol and stevia sweeteners has been shown to impact the quality of fruit leather.
