Abstract

Penelitian ini dilakukan di Jurusan Kebidanan Poltekkes Kemenkes Kalimantan Timur Balikpapan. Penelitianini menggunakan metode survei konsumen. Data yang telah diisi akan dihitung frekuensinya menggunakanprogram SPSS. Kemudian penelitian dilanjutkan dengan menguji kandungan escheria coli untuk 3 sampel baksoyang dijual disekitar Poltekkes Kemenkes Kalimantan Timur Balikpapan. Hasil penelitian menunjukkanpreferensi mahasiswa terhadap bakso adalah mereka peduli akan kualitasnya 78 persen, suka rasa kenyal 65persen, suka tekstur yang agak kasar 53 persen, elastisitas 65 persen, ukurannya yang medium 82 persen danberaroma daging 49 persen. Untuk perilaku mahasiswa cenderung mengambil keputusannya kadang-kadang dariteman 53 persen. Mereka kurang loyal terhadap merk bakso 54 persen, alasan utamanya karena rasanya 47persen, sumber informasi dari iklan, dan teman 57 persen. Bakso yang dirasa mahasiswa enak 68 persen danharga murah 57 persen, selain itu seringnya mahasiswa mengkonsumsi bakso adalah sekali dalam seminggu 87persen, lokasi pembelian bakso yang paling disukai mahasiswa adalah warung 75 persen. Keamanan panganbakso di sekitar Poltekkes Kemenkes Kalimantan Timur dinyatakan bebas dari escheria coli.

Abstract

Background: Some studies state that fish consumption of at least 200-400 g/week can reduce the risk of coronary heart disease. Omega 3 polyunsaturated fatty acids in fish have cardioprotective effects. However, the cardiac effect of fish consumption are not primarily related to the amount of fish consumed but also its cooking method. The cooking method (eg, frying) may alter the fatty acid content of a fish meal by absorbing fatty acids from cooking oils and adding trans fatty acids. Non-fried fish consumption (eg, boiled/steamed) was associated with lower risk of coronary heart disease but fried fish was not.Objective: To identify the quantity of fish consumed and the cooking method with the incidence of dyslipidemia.Method: The study was observational with case control design in patients that checked themselves at Prodia laboratory of Samarinda. Respondents consisted of 152 patients, comprising 76 cases and 76 control. Cases were patients with dyslipidemia and control were those without dyslipidemia matched according to gender and age. Analysis used Chi-Square statistical test at confidence interval 95%.Results: There was significant difference in average of fish consumed between case and control group (164.86±63.61 g vs 218.55±62.21 g; p<0.05). There was also significant difference (p<0.05) between case and control group in variables of body mass index (24.53±2.4 kg/m2 vs 23.26±1.6 kg/m2); intake of saturated fatty acids (SFA) (34.58±5.82 g vs 28.27±5.4 g); simple carbohydrate (63.86±13.67 g vs 49.35±11.81 g); fruit and vegetable (42.61±20.17 g vs 53.48±23.47 g); and waist circumference (88.88±9.08 cm vs 86.21±7.8 cm). In the final multivariate analysis, quantity of fish consumed has no influences with dyslipidemia (p>0,05), but the influence is in the cooking method process (OR=10,84; p<0,05).Conclusion: There was no influence between quantity of fish consumption. Risk for the prevalence of dyslipidemia was 10,84 times greater in the subject who the cooking method does not suitable the recommendation.

Abstract

This study aims to determine the effect of Infant and young child feeding training on the knowledge and attitudes of Integrated Healthcare Center cadres in Teluk Lingga, East Kutai Regency. The research is a quasi-experimental study with a pretest and posttest (one group pretest-postest) research design conducted in March 2023 in the working area of the Teluk Lingga Health Center, East Kutai Regency, East Kalimantan, Indonesia. A total of 51 cadres were involved as respondents by setting inclusion and exclusion criteria. IYCF variables are carried out by delivering material, counselors, and practices. The variables of knowledge and attitude were obtained using questionnaires that had been tested for validity and reliability. The data is then collected and then analyzed with the Paired-Sample T-Test. The difference in the level of knowledge of Integrated Healthcare Center cadres before and after being given IYCF training was 62.61 to 83.67 and obtained a p-value of 0.000. This means that there is an influence of IYCF training on the knowledge of Integrated Healthcare Center cadres. The attitude showed a difference in the attitude of Integrated Healthcare Center cadres before and after being given IYCF training with an average of 35.53, an increase of 42.96, and obtained a p-value of 0.000, which means that there is a significant difference between the average score on the pre-test and post-test. IYCF training has a significant effect on increasing the knowledge and attitudes of Integrated Healthcare Center cadres. We hope that this training will be carried out continuously.

Abstract

Breast milk (BM) is one of the most important nutrients for baby needs. This is the best baby food for the perfection of growth and development. Increasing the knowledge and attitude of mothers is considered necessary because it contributes to parenting for their children. This research aims to determine the effect of breastfeeding education using leaflet media on the knowledge and attitudes of pregnant women. The research is a quasi-experiment with a pre-test and post-test with a control group research design conducted in March – April 2023 in the working area of the South Sangatta Health Center, East Kutai Regency, East Kalimantan, Indonesia. A total of 32 samples were involved in random sampling by taking into account inclusion and exclusion criteria. The data is analyzed with the Paired-Sample T-test. The research shows the influence of exclusive breastfeeding education using leaflet media on the knowledge of pregnant women (p = 0.000), and the influence of exclusive breastfeeding education using non-leaflet media on the knowledge of pregnant women (p = 0.006). There is an influence of exclusive breastfeeding education using leaflet media on the attitude of pregnant women (p = 0.000), and the influence of exclusive breastfeeding education using non-leaflet media on the attitude of pregnant women (p = 0.006). Education using leaflets is much more effective than non-leaflet education. This finding is empirical evidence that nutrition education in the form of media is encouraged to welcome changes in public perception

Abstract

Peningkatan kadar asam urat serum yang melebihi 7,0 mg/dL pada pria atau 6,0 mg/dL pada wanita merupakan gangguan penyakit pada persendian. Sedangkan perubahan merupakah tekanan darah arteri diatas 140/90 mmHg merupakan kondisi seseorang mengalami hipertensi. Peningkatan kadar asam urat dan tekanan darah merupakan penyakit metabolik yang sering terjadi pada kehidupan sehari-hari di era tahun 2000-an. Penelitian ini bertujuan untuk mengetahui apakah terdapat hubungan antara kadar asam urat dengan tekanan darah pada pegawai Poltekkes Kemenkes Kalimantan Timur Samarinda. Penelitian yang dilakukan bersifat analitik dengan pendekatan cross sectional dan sampel penelitian berjumlah 103 orang. Variabel yang digunakan untuk variabel bebas kadar asam urat, variabel tergantung tekanan darah. Analisis data adalah analisis univariat dan bivariat dengan menggunakan uji statistik korelasi dengan bantuan komputer program SPSS versi 28. Hasil yang diperoleh pada penelitian ini adalah terdapat hubungan yang signifikan antara kadar asam urat dengan tekanan darah sistol (p=0,028) dan tidak terdapat hubungan yang signifikan antara kadar asam urat dengan tekanan darah diastol (p=0,259). Secara umum kondisi asam urat dapat menyebabkan peradangan pada pembuluh darah, serta menyebabkan tidak berfungsinya jaringan endotelium. Tetapi, belum ada penelitian yang menyatakan bahwa asam urat mempunyai peranan penyebab dalam kondisi metabolisme yang menurun, seperti resistensi insulin dan obesitas.

Abstract

Tujuan penelitian yaitu untuk menganalisis hubungan tingkat kepuasan penyajian dan pelayanan makanan terhadap sisa makanan pasien rawat inap di RS Pratama Gerbang Sehat Mahulu Kabupaten Mahakam Ulu. Jenis penelitian adalah observasional analitik dengan menggunakan pendekatan Cross Sectional. Populasi dalam penelitian adalah seluruh pasien perempuan dewasa, laki-laki dewasa dan Kebidanan rawat inap di RS Gerbang Sehat Mahulu dengan jumlah rata-rata pasien 60 orang (pasien dewasa) perbulan. Variabel independen yaitu kepuasan penyajian dan pelayanan makanan, sedangkan variabel dependen adalah sisa makanan pasien dengan menggunakan metode taksiran visual comstock. Analisis data yaitu menggunakan SPSS dan uji statistik Che-Square dengan tingkat signifikansi p < 0.05. Hasil penelitian yaitu tingkat kepuasan penyajian makanan yaitu tidak ada hubungan antara ketepatan waktu pemberian makanan dengan nilai p = 0,428, variasi menu dengan nilai p = 0,742, tekstur makanan dengan nilai p = 0,428 dan cara penyajian makanan dengan nilai p = 0,428 terhadap sisa makanan pasien. Terdapat hubungan antara rasa makanan dengan sisa makanan pasien dengan nilai p = 0,031. Tingkat kepuasan pelayanan makanan yaitu tidak ada hubungan antara sikap petugas penyajian makanan dengan nilai p = 0,575 dan peralatan saji makanan dengan nilai p = 0,914 terhadap sisa makanan pasien. kesimpulan yaitu tingkat kepuasan penyajian makanan pasien rawat inap di rumah sakit hanya dipengaruhi oleh rasa makanan. Pasien yang merasa puas dengan rasa makanan cenderung menyisakan makanan lebih sedikit. Sementara itu, tingkat kepuasan pelayanan makanan pasien rawat inap di rumah sakit tidak dipengaruhi oleh ketepatan waktu pemberian makanan, variasi menu, tekstur makanan, cara penyajian makanan, sikap petugas penyajian makanan, dan peralatan saji makanan

Abstract

Dislipidemia, khususnya peningkatan kadar LDL (Low Density Lipoprotein), merupakan salah satu faktor risiko utama penyakit jantung dan stroke. Gaya hidup tidak sehat seperti pola makan tinggi lemak dan rendah serat, kurang aktivitas fisik, serta kebiasaan merokok berkontribusi terhadap kondisi ini. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian jus nanas (Ananas comosus) dan wortel (Daucus carota) terhadap kadar LDL pada pekerja di PT. Kanitra Mitra Jayautama. Desain penelitian menggunakan quasi experimental dengan rancangan one group pretest-posttest. Sejumlah 21 responden laki-laki berusia 19–37 tahun diberikan jus nanas dan wortel sebanyak 280 ml (140 g nanas dan 55,5 g wortel) satu kali per hari selama 14 hari. Data kadar LDL diukur sebelum dan sesudah intervensi. Hasil penelitian menunjukkan terjadi penurunan rerata kadar LDL dari 118,8 mg/dL menjadi 91,52 mg/dL. Hasil uji paired sample t-test menunjukkan penurunan tersebut signifikan secara statistic yaitu 0,003 (p<0,05). Kandungan flavonoid, β-karoten, pektin, vitamin C, dan niasin dalam nanas dan wortel berperan dalam menurunkan kadar LDL. Kesimpulan, jus nanas dan wortel berpengaruh signifikan dalam menurunkan kadar LDL. Intervensi ini dapat menjadi alternatif terapi non-farmakologis bagi penderita dislipidemia.

Abstract

ABSTRAK Latar Belakang: Diperkirakan sebanyak 1 miliar penduduk dewasa atau 12% populasi dunia mengalami obesitas pada tahun 2025. Obesitas di Indonesia juga mengalami peningkatan yang pesat khususnya pada kelompok dewasa dan pekerja. Penyebab utama obesitas pada pekerja salah satunya karena kualitas diet yang rendah dan asupan energi berlebih sehingga menyebabkan ketidakseimbangan energi. Tujuan: Tujuan penelitian ini adalah untuk mengeksplorasi faktor-faktor yang mempengaruhi kualitas diet dengan timbulnya obesitas pada pekerja perusahaan di Kalimantan Timur.Metode: Penelitian ini menggunakan desain kualitatif dengan responden yaitu pekerja obesitas. Secara keseluruhan, 25 orang responden yang dibagi menjadi 5 kelompok focus group discussion (FGD) untuk dilakukan wawancara semi terstruktur. Penetapan responden dilakukan secara purposive berdasarkan unit kerja. Pengumpulan data menggunakan perekam audio dan pencatatan. Data demografi dikumpulkan menggunakan kuesioner, FGD menggunakan instrumen berupa panduan yang berisi daftar pertanyaan mencakup pengetahuan tentang pola makan sehat dan obesitas, kualitas diet, kontrol diri dalam pemilihan makanan dan pengaruh lingkungan di tempat kerja. Data dianalisis menggunakan metode analisis isi, sintesis tematik dan triangulasi untuk validasi.Hasil: Hasil penelitian menunjukkan bahwa terdapat 4 faktor utama yang mempengaruhi kualitas diet dan obesitas pada pekerja, yaitu : kurangnya pengetahuan tentang pola makan sehat, kualitas diet yang rendah, kurangnya kontrol diri dalam pemilihan makanan, dan pengaruh lingkungan makan serta media sosial di tempat kerja.Kesimpulan: Studi ini menyediakan informasi faktor-faktor yang mempengaruhi kualitas diet dengan terjadinya obesitas pada pekerja. Obesity in Indonesia is also increasing rapidly, especially among adults and workers. One of the main causes of obesity in workers is low dietary quality and excessive energy intake.Objectives: The aim of this research is to explore the factors affecting diet quality and obesity in company workers in East Kalimantan.Methods: This study uses a qualitative design conducted in an industrial company in East Kalimantan. The respondents are workers with obesity. Overall, 5 semi-structured focus groups discussion (FGD) were conducted with a total of 25 respondents who were determined purposively according to work units. Respondents' demographic data were collected through a short questionnaire. Data collection using an audio recorder and notes. The instrument to be used is a FGD guide that contains questions related to knowledge about healthy eating patterns and obesity, dietary quality, self-control in food choices and influence of workplace food environment. Qualitative data is processed and analyzed using analytical methods content, thematic synthesis and triangulation for validation.Results: The result of this study shows that there are four main themes affecting dietary quality and obesity among workers. These factors are: lack of knowledge about healthy eating patterns, low dietary quality, lack of self-control and influence of workplace food environment.Conclusions: This study provides information on factors affecting diet quality and obesity in workers.
