Abstract

Nutrition counseling using the slogan 4 Healthy 5 Perfect since 1952, began to undergo changes into the General Guidelines for Balanced Nutrition (PUGS) in 1992. Counseling about health and nutrition to the community is not an easy thing because it involves behavior change. Reduced knowledge will also reduce a person's ability to apply nutritional information to everyday life. School children are the next generation of the nation and constitute development capital, so that their health needs to be improved. This study aims to determine the effect of counseling on balanced nutrition knowledge and practices in children of Mandai Elementary School in Makassar City. This study wanted to see the effect of balanced nutrition counseling on a group before and after intervention. This research is an analytical study with quasi-experimental design (quasi experimental), one group pretest posttest design approach. The sample is the fifth grade students in the Mandai Elementary School in Makassar City who were selected by simple random sampling of 46 samples. Data on balanced nutrition knowledge and balanced nutrition practices before and after counseling were obtained through interviews using questionnaires. Data analysis using the Wilcoxon test. Data is presented using tables and narratives.The results showed that there was an influence of knowledge (p = 0,000) and balanced nutrition practices (p = 0,001) of school children before and after counseling. It is recommended for schools, especially teachers, to be able to socialize repetitive balanced nutrition guidelines through empowering School Health Enterprises (SHE).

Abstract

ABSTRACTAnemia is a health problem that is often found in developing countries including indonesia. Iron deficiency anemia often occurs in pregnant women. Other micronutrient deficiencies such as folic and zinc and copper also play a role in the occurrence of anemia in pregnancy. The purpose of the study was to determine the relationship of iron determine the relationship of iron, folid acid, and zinc intake to hemoglobin levels in pregnant women in Paccerakkang health center Biringkanaya district Makassar city. This type of research was observational with a cross sectional stud design. The sample in this study were pregnant women who had normal hemoglobin levels of 15 people and abnormal hemoglobin levels of 17 people who examined at Paccerakkang health center Biringkanaya district, Makassar city. Iron intake, folid acid and zinc were obtained by using the 24 hour recall method and the respondents identity data was obtained from direct interviews using a questionnaire while the hemoglobin data was obtained through hemoglobin examination at Paccerakkang health center Biringkanaya district, Makassar city. The results of the analysis between the relationship between iron intake and hemoglobin levels with p value = 0,010 which means there is a relationship between iron and hemoglobin level.  The results of the analysis between the relationship of folic acid intake with hemoglobin levels with p value=0,020 which means there is a relationship between folid acid intake and hemoglobin level. The results of the analysis between the relationship between zinc intake and hemoglobin level were p=0,015 which means that there is a relationship between zinc intake and hemoglobin level

Abstract

Stunting is a disease that during the last 10 years in Southeast Sulawesi showed a significant increase in prevalence. Various programs have been launched to reduce the incidence of this case and some regions have shown a decline. However, the decrease that occurred was very small, therefore it needed an appropriate method so that the stunting eradication program could be implemented properly. This study aims to determine the effect of providing counseling methods on the knowledge of mothers of children under five about stunting. Counseling methods used in this study are simulation, leafleat and individual or individual methods. This type of research is a quasi-experimental, which consists of four groups, namely groups given counseling with simulation methods, leafleats, individuals and groups that are not given treatment. The population in this study were all mothers of stunted children of 84 people. The sample size was 57 respondents, taken by proportional stratified random sampling. Data were analyzed descriptively and inferentially. The results showed that there was an effect of counseling by simulation and leafleat methods (p-value <0.05) on the mother's knowledge of stunting while the individual method had no significant effect on the mother's knowledge of stunting (p-value = 0.107> 0.05) . Therefore, the simulation and leafleat counseling methods are expected to be one of the counseling methods in implementing stunting eradication.

Abstract

Stunting prevalence among Indonesian children remained high (30,8%). Existing studies found varied results on the association between exclusive breastfeeding and stunting. This study aimed to analyze whether exclusive breastfeeding was a risk factor for stunting among children aged 24-59 months in Pajangan and Pleret Subdistricts, Bantul District. A case-control study design was conducted. As many as 43 cases and 43 controls were selected using multistage cluster sampling. Cases were children with stunting status while controls were non-stunted children. Independent variable was history of exclusive breastfeeding whereas dependent variable was stunting. Statistical analyses performed in this study included descriptive statistics and chi-square test. No significant relationship between history of exclusive breastfeeding and stunting among children aged 24-59 months in Pajangan and Pleret Subdistricts, Bantul District. Nonetheless, the proportion of children receiving exclusive breastfeeding was higher among non-stunted children (81%) compared to the proportion of children receiving exclusive breastfeeding among stunted children (65%). Exclusive breastfeeding was not a risk factor for stunting among children aged 24-59 months.

Abstract

Backgrounds:Nutrition problem is a health problem that influenced by many factors. Malnuorished toddlers has slow growth and development than the healthy toddler, if the problem has not solve it can caused health problem until the toddler become mature. Aged of 0-24 months is a golden period of growth and development.Objectives:This research aims to determine the relationship of protein intake with toddler’s nutritional status aged 6-24 months in RW 2 Puskesmas Batua Area Makassar City.Methods:This research is an descriptive-analytic with cross sectional study design. The population were all the toddler aged 6-24 months in RW 2 Puskesmas Batua. Sample was selected by random sampling method. Total sample were 35 toddler. The statistical analysis test that used was chi square with the degree of significancy 0,05.Results:The results showed that protein intake 17 toddler  was good (48,6%) compared to the others (51,4%). Abstract

Pendahuluan:Belum adanya batasan IMT ataupun LP bagidiabetesi, padahal diperlukan karena diabetes berisiko lebih tinggi mengalamikegemukan, obesitas dislipidemia, dan hipertensi dibandingkan yang bukan diabetes.Tujuan penelitian adalah mengetahui hubungan antara status anthropometri dengan kadar glukosa darah, HbA1c dan pola makan pada penderita DM di Puskesmas Tarik Kabupaten Sidoarjo. Metode: Desain penelitian observasional analitik dengan pendekatan cross-sectional.Metode pengambilan sampel adalah consecutive non random sampling dengan jumlah sampel 30 subjek. Alat pengumpul data yang digunakan berupa hasil pemeriksaan laboratorium, data prolanis, form sq-ffq, lembar observasi dan informed consent. Analisis statistik menggunakan non parametrik chi square. Hasil:Sebagian besar subjek dengan status gizi gemuk dan obesitas sentral memiliki kadar glukosa darah sewaktu lebih sebesar 40% dan HbA1c lebih sebesar 36,6%. Presentase subjek yang mengkonsumi makanan dengan IG rendah lebih tinggi daripada yang mengkonsumsi IG tinggi. Terdapat hubungan antara status anthropometri dengan kadar glukosa darah sewaktu serta HbA1c pada penderita DM menunjukkan nilai p-value>0,005. Hubungan antara pola makan dengan status anthropometri, kadar glukosa darah sewaktu dan HbA1c menunjukkan nilai p-value >0,005 untuk semua kategori IG. Kesimpulan: Tidak terdapat hubungan signifikan antara status anthropometri dengan kadar glukosa darah sewaktu, HbA1c, maupun pola makan pada penderita DM. Namun terjadi peningkatan tren terhadap kadar glukosa darah sewaktu dan HbA1c pada subjek dengan IMT gemuk dan LP obesitas sentral.

Abstract

Background: Excessive salt intake could increase the risk of high blood pressure or hypertension. The recommended dose limits Balanced Nutrition Guidelines (PGS) in 2014 ie 5 g / person / day equivalent to 1 tea spoon.Aims: This study aimed to describe the consumption of salt based on a balanced nutrition guidelines Housewife in Kassi Kebo District of Maros Baru.Method: This research was a descriptive cross sectional study. Samples were housewives who were in the neighborhood Kassi Kebo Village, Baju Bodoa District of Maros Baru numbering 97 people selected by purposive sampling. Salt consumption was obtained by the method of 2 x 24 hour recall questionnaire.Result: The results showed that salt consumption in housewives were generally classified as either 78.6% and the average amount of salt consumed 4.1 grams / day less than the standard PGS was 5 salt / daySuggestion: It was recommended that those housewives in Kassi kebo to keep the amount of salt consumed.Key words : Salt Consumption, PGS 2014

Abstract

AbstractFood served in a hospital must be able to realize its quality so that it can be consumed by patients. One of the factors causing endless consumption of food is patient satisfaction in food service. The purpose of this study was to determine the description of inpatient satisfaction at food service at the Makassar City General Hospital. This type of research is observational research that uses a survey approach. It was conducted in Makassar City Hospital in March - May 2019. The sample in this study was 40 inpatient internals taken by purposive sampling according to the specified criteria. Data were collected using a questionnaire, data were processed using computers, primary data were analyzed descriptively based on frequency distribution. The results of this study showed that inpatients at the internal department of food service in Makassar City Hospital based on the aspect of taste generally expressed satisfaction on the morning menu (77.5%), and 22.5% who were not satisfied. Day and night menus generally satisfied patients (97.5%) based on taste, appearance (≥ 95%), texture aspects (aspek 95%), various aspects of the menu (≥ 95%). In general, patients are satisfied with food service at Makassar City Hospital, but there are still 22.5% of patients who are dissatisfied with the morning menu that is served. Keywords: patient satisfaction, food service

Abstract

Backgrounds: Brownies are popular food and favored by many people at different ages, including school-age children. In this study, the raw materials used in the brownies are tempe and carrot (Daucus carota L), both materials have a high content of nutrients including iron and vitamin A.Objectives: The study aims to determine the nutrients contents (carbohydrates, protein, fat, vitamin A and fe) and the organoleptic testing of the products of tempe brownies of carrot (Daucus carota L.) subtitution.Methods: The study is a true-experimental research using a completed randomized design (CRD). The results revealed that 4 treatments with different concentrations by adding carrot (Daucus carota L.) are 1:0  (100g tempe), 3:1 (75g tempe, 25g carrot), 1:1 (50g tempe, 50g carrot) and 1:3 (25g tempe, 75g carrot) with three rehashes.Results: The results of Carbohydrates research of 13.78%, protein 11.52%, fat 24.29%, vitamin A 5,17ug/g, iron 36,89ug/g. The organoleptic testing that most preferred and good quality is 1:1 treatment. The Friedman testing of P<0.05 is on scent, taste and the overall quality.Conclusions: The 1:1 ratio is the best product recommendation based on the nutrients and organoleptic testing of four samples.                                        Keywords: Brownies, Tempe, Carrot (Daucus Carota L.), Nutrient

Abstract

Masalah gizi khususnya kekurangan energi protein dan kekurangan vitamin A pada balita merupakan masalah yang sering dijumpai setiap tahun di Indonesia. Cara mengatasi masalah gizi pada balita adalah dengan memperbanyak konsumsi sumber protein dan sumber vitamin A. Dengan mengganti makanan yang biasa dikonsumsi anak dengan makanan yang kaya gizi. Cookies Provita merupakan jajanan pengganti tepung kacang hijau dan tepung labu.Penelitian ini bertujuan untuk mengetahui akseptabilitas dan nilai gizi cookies provita dengan substitusi tepung kacang hijau dan tepung labu kuning. Penelitian ini merupakan penelitian laboratorium dengan desain One Shot Case Study. Penerimaan dinilai berdasarkan uji preferensi dari aspek warna, aroma, tekstur dan rasa dengan panel yang sedikit terlatih sebanyak 25 orang. Nilai gizi dihitung berdasarkan Tabel Komposisi Pangan Indonesia Tahun 2017.Hasil penelitian menunjukkan bahwa produk dengan penerimaan tertinggi adalah formula O3C dengan konsentrasi 40%; 15% dengan skor 302. Berdasarkan aspek warna dan aroma, produk yang paling disukai adalah O3C, sedangkan aspek tekstur dan rasa paling disukai yaitu produk O2B. Kandungan protein pada formula terbaik O3C adalah 42,29 gram dan vitamin A 1289,9 mikrogram. Protein dalam 1 kue provita adalah 1,2 gram dan vitamin A 36,8 mikrogram.Disarankan jika ingin menggunakan tepung kacang hijau dan tepung labu untuk substitusi pastry sebaiknya menggunakan rumus O3C yaitu konsentrasi 40%; 15%, serta menganalisis kandungan nutrisi lainnya
