Abstract

Background: Obesity is a global problem which increasing simultaneously. The high-fat accumulation in the body will result from mild chronic inflammation. Developing a local drink based on seagrapes (Caulerpa racemose) is thought to have a high antioxidant capacity and the potential to become an alternative therapeutic drink for obese people. Seagrapes are easily damaged, so proper drying is needed to maintain antioxidant potential and assisted by adding gum arabic to increase the acceptability. Objectives: To analyze the antioxidant capacity and sensory of sea grapes powder drink (Caulerpa racemose). Methods: The design experiment research was utterly randomized and only used one gum Arabic treatment with a 2.5, 5, and 10% concentration and three replication as sea grapes powder drink samples. The samples were analyzed to seek the antioxidant capacity of DPPH (2,2-diphenyi-1-picrylhydrazyl), CUPRAC (Cupric Ion Reducing Antioxidant Capacity), and FRAP (Ferric Reducing Antioxidant Power). Then research data were analyzed by employing ANOVA  and Duncan's follow-up test. Results: The higher concentration of gum Arabic has significantly increased the antioxidant capacity. DPPH, CUPRAC, and FRAP values in 10% gum Arabic concentration were 13.21±0.1 mg/100 g, 25.26±0.5 mg, and 2.89±0.3mg/g. Based on the sensory test results, the panelists preferred the 10% gum Arabic concentration because the color is lighter, can minimize odor and viscosity, and taste better. Conclusions: Seagrapes powder drink with a concentration of 10% gum Arabic has the potential as a therapeutic obesity with the highest antioxidant capacity and is sensory acceptable.

Abstract

Background: Adolescents tend to use online food delivery service applications rather than going to food stalls or restaurants to buy food, but most of the food and drinks offered contain high levels of fat, sodium, and sugar but are low in other nutrients. Currently, WhatsApp ranks first in the social media category with the most active users, with teenagers being one of the users. Previous studies have not yet analyzed behavior change and the effectiveness of each medium in the same study. Therefore, the authors are interested in conducting research by providing nutrition education interventions through WhatsApp through digital posters, audio, and video. Objectives: Analyzed the effect of nutrition education through social media on nutritional knowledge and menu selection in food delivery applications. Methods: This research design was quasi-experimental. This research was conducted in Bekasi in 2022, with the research sample being teenagers using food delivery applications and WhatsApp. The number of samples in this study was 111, divided into three groups: audio, poster, and video. Knowledge improvement was assessed by the results of pre-test and post-test questionnaires, while changes in menu selection were seen from the results of 2x24 hour Food Recall. Nutrition education was carried out four times with a frequency of 1 time a week through the WhatsApp group. The effect of nutrition education on knowledge and menu selection was analyzed using the Wilcoxon test, paired t-test, and Kruskal Wallis. Results: There was an effect of knowledge of balanced nutrition, so there was a significant difference in nutritional knowledge (p<0.05) in the subjects of the entire intervention group after being given the intervention. Likewise, the menu selection in the food delivery application experienced a positive change after the intervention (p<0.05). The subject began to choose nutrient-dense menus in the food delivery application. However, there was no difference in effectiveness between educational media (p>0.05). Conclusions: There is an effect of nutrition education using audio, poster, and video on menu selection in food delivery applications.

Abstract

Background: In diabetes mellitus patients, one of the efforts to control normal blood glucose levels is to eat low glycemic index foods. Rice is an Indonesian staple food that contains carbohydrates. Several methods of processing could affect the glycemic index of rice.   Objectives: To analyze the glycemic index of rice processed by several methods. Methods: The design used was quasi-experimental. A total of ten people with criteria of healthy, aged 19-29 years, having normal body mass index and blood glucose levels were used in this study. Subjects were given five treatments. Treatment: 1) was given glucose as a reference, 2) was given rice that was traditionally processed and just cooked, 3) was given rice that was traditionally processed and had been stored at room temperature (25°C) for 12 hours, 4) was given rice that was electronically processed and just cooked, and 5) was given rice that was processed in a modern way and had been stored for 12 hours in magic com at hot temperature. Among the treatments, there was a gap of 7 days. Results: Traditionally processed rice has a glycemic index of 21.6, increasing to 24.7 after being stored at room temperature for 12 hours. Meanwhile, processed electronic rice has a glycemic index of 22.9 and increases to 36,4 after being stored in a rice cooker (hot temperature) for 12 hours. Conclusions: The four rice groups processed by various methods had low glycemic index values. Rice stored for 12 hours had a higher glycemic index value than freshly cooked rice.

Abstract

Background: In December 2019, the COVID-19 outbreak in Wuhan spread to 49 countries, including Indonesia. The government imposed a policy of learning at home for students. Due to activity restrictions, eating habits, and body weight changes have been reported in several countries. Objectives: This study aimed to see the impact of learning at home on changes in eating habits during the Covid-19 pandemic in Papua. Methods: The research design was cross-sectional, during June - July 2020, located in the Land of Papua (Papua and West Papua Provinces), Indonesia. Data was collected using Google Forms and shared through the WhatsApp group network. The analysis was carried out using non-parametric tests. The study was performed using non-parametric tests. Results: This study showed significant changes in food frequency during learning at home, dietary patterns, how to get food, fruit frequency intake, vegetable variations, and fruit variations. Conclusions: Learning at home during COVID-19 changed eating habits, including food frequency, dietary patterns, and fruit and vegetable variations. Although the variety of fruits and vegetables is declining, both are frequently increasing.

Abstract

Background:  Short birth length is one of the predictors of stunting. Objectives: This study aimed to examine birth length's determinants, which are risk factors for stunting in later life. Methods: Analytical observational study with a cross-sectional approach used secondary data from the Indonesia Nutrition Status Survey (SSGI) in 2021. The population was households representing 33 provinces. The study sample was the babies recorded in the 2021 SSGI study in the West Java census block, with as many as 7,112 babies. The data collected were the birth length of the baby, factors when the mother was pregnant with the baby such as the mother's age, place of residence, mother's education level, occupation, ownership of JKN/Jamkesda, ever received blood supplement tablets, place of delivery, birth attendant, possession of a prosperous family card, social welfare economy, and several family members. Data were analyzed by bivariate and multivariate. The eligible variables were analyzed by multiple logistic regression tests with a significance level of p<0.05. Results: The results of the multivariate analysis showed that the factors affecting the length of the child's body at birth were the ownership of health insurance (JKN) and the acceptance of blood supplement tablets (TTD). The study found that mothers who did not have health insurance (JKN) were at risk for giving birth to babies with a short body length of 4.526 times. Mothers who received blood supplement tablets were 0.196 times less likely to have a baby with short body length than mothers who had never received blood supplement tablets. Conclusions: Factors that affect short birth length are JKN/Jamkesmas ownership and acceptance of blood supplement tablets. It is recommended that specific nutrition interventions be continued through the provision of blood supplement tablets and sensitive nutrition interventions through health insurance programs in prevention.

Abstract

Background: The complex nutrition problem until now in Indonesia is stunting. Stunting is a failure-to-grow condition due to prolonged malnutrition since the baby was born during pregnancy. Therefore, the nutrition and health of adolescent girls as the future mother have a crucial role in preventing stunting. Objectives: Identified various programs intervention to adolescent girls as stunting prevention to the next generation and identify the successful various programs intervention to adolescent girls as stunting prevention to next generation Discussion: This research method used a literature review of ten journals from 2011 to 2021. The research results were various interventions for adolescent girls as stunting prevention for the next generation. There were nutrition education, stunting education, early marriage education, hygiene and sanitation education, fulfillment of micronutrient intake and consumption of balanced food, Multi Micro Nutrient (MMN) supplementation, school feeding program, and high calcium milk intake. Intervention for adolescent girls is the main target of 8000 HPK programs as holistic stunting prevention has a vital role, so it needs to be implemented as early as possible. Conclusions: Appropriate Interventions for adolescent girls have the potential to reduce stunting and increase the opportunity for human resources in the future.

Abstract

Background: Adolescence is when there is a sex change, both primary and secondary. In adolescent girls, the primary sex change is marked by the arrival of menstruation. Dysmenorrhea is pain that is felt during the menstrual process. Several types of non-medical therapy can be used to treat dysmenorrhea, including herbal drink products. Objectives: This research analyzed the relationship between knowledge and herbal drink product consumption patterns with dysmenorrhea of female adolescents in Pondok Pesantren Subulussalam Surabaya. Methods: This research was an analytical observational study with the cross-sectional method. This study's population was young women living in Pondok Pesantren Subulussalam Surabaya, Indonesia. The research sample was taken using the census sampling method where the population was sampled, namely 49 students. Data were collected by interview using a knowledge questionnaire of herbal drink products, the SQ – FFQ questionnaire, and the Numeric Rating Scale questionnaire. Results: From the research that has been done, the results showed that the average age of the research respondents was 14 years six months, and as many as 85.7% of respondents have normal menarche age, as many as 26.5% of respondents have long menstrual periods, as many as 30.6% of respondents know it is classified as lacking, and 75.5% of respondents have a consumption pattern of herbal beverage products with a seldom category. Conclusions: There was a relationship between knowledge of herbal drink products and the incidence of dysmenorrhea, but there was no relationship between consumption patterns of herbal drink products and the incidence of dysmenorrhea.

Abstract

Background: Malnutrition has impacted the health condition and life quality of the elderly who live in nursing homes. Unmaximized menu planning can cause this condition. Objectives: This study aimed to analyze the nutrition content of the menu provided by the nursing home based on recommended dietary allowance (RDA) for older people and to identify the current nutrition status of the elderly Methods: The food intakes were evaluated by observing all menus during the five days. Nutrient contents were analyzed by calculating all meal nutrition and comparing them to the recommended dietary allowance for the elderly. Body weight was measured using Bio Impedance Analysis (BIA) Tanita, and a stadiometer measured body height. Furthermore, weight and high were measured based on body mass index calculation to measure nutritional status. Results:  It was found that the mean energy content was 1242.6 ± 193.9 kcal/day, and only 69.03 ± 10.7% fulfilled the recommendation. For protein content, it only met 70.5% of the RDA. Macronutrients such as protein are only 70.5% of the recommended dietary needs for the elderly. From BMI analysis, it was found that 26.23 % of the elderly are undernutrition. Conclusions: The nutritional content of the menus served for the elderly in nursing homes did not yet meet the daily requirement and is still below that recommended for the elderly, so the nutrient of the menus should be increased to achieve optimum nutritional status.
