Abstract

This research was aims to know the mechanism of heat transfer in starchy food during roasting process using sand as a medium for heat transfer. This research is experimental research, and the research samples were shrimp crackers roasted at the temperature of 120, 140 and 160 oC within roasting time of 10, 15, 20 and 25 seconds. During the roasting process, the temperature of sand and crackers was measured using a thermocouple to know the change in temperature that happened. The parameters being observed the temperature, water content of crackers and rate of heat transfer. The research results showed that during the roasting process, the changes of temperature, water content of the crackers and rate of heat transfer. The higher the temperature and the length of time roasting cause the temperature of the crackers to increase closer to the temperature of the sand with the decrease in the water content of crackers and increase in the rate of heat transfer

Abstract

The purpose of this study was to to determine the lead contamination and water quality in Tallo River by comparing it with standards quality of waters, to obtain information and data on the effect of industrial waste on the level of lead pollution (Pb) in the watersTallo River, and to analysis the effect of lead on water quality (temperature, pH and dissolved oxygen) in Tallo River. This research was a descriptive study using a survey method. The study was conducted by taking samples of water, soil, and fish at three different stations, namely at the Tello Bridge area, at the area around the section of the Toll Bridge and at the Port of Paotere. The results of this study indicated that lead (Pb) pollution in water, fish and soil, were still below the threshold value. This indicated that water, fish and the land of the Tallo River were still in good condition. Tallo River water quality (temperature, pH and DO), according to Government Regulation No. 82 of 2001, was categorized in the class 3 water criteria. Industrial waste on the Tallo River to Paotere Port had affected the concentration of lead in water, fish and land but has not exceeded the normal threshold. The results of linear regression test showed that effect of lead (Pb) on water temperature only 36% and the remaining 64% determined by other factors (R2= 0,3627), meaning that lead (Pb) in the Tallo River had less effect on temperature. Lead (Pb) in the Tallo River had less effect on DO parameters (R2= 0,4417). According to analysis, lead (Pb) in the Tallo River had high effect on pH parameters (R2= 0,9048).

Abstract

This study aims to determine the effect of the addition of liquid smoke concentration to the chemical properties of dumbo catfish fish and to determine the level of panelist acceptance of the organoleptic value of the resulting dumbo catfish fish. This research is a quantitative research (experiment) using Randomized Complete Design (RAL) with variation of liquid smoke concentration 0%, 6%, 8% and 10%. At fogging 4 hours with temperature 60 ℃. Parameters observed included moisture content, fat content, protein content, phenol content, TBA and organoleptics including flavor, aroma, color, and texture. The data obtained will be analyzed by analysis of variance (ANOVA) and Duncan's advanced test. The results showed that smoked dumbo catfish using liquid smoke most favored by panelists was Dumbo catfish smoke which was produced at 10% liquid smoke concentration treatment.

Abstract

This study aims to determine the factors that affect the income generation of processing group of fishery products in coastal Pangkep regency. Knowing the income level of the group of fishery producers who have received assistance or who have not received assistance from the Director General of Strengthening Maritime and Fishery Competitiveness in Pangkep Regency. This research was conducted in February until March 2018 in coastal area of Pangkep Regency. Data collection using t test analysis is comparative test. The results of multiple regression analysis show that the role of government variable has t arithmetic 2.278> t table of 2.2015 (sig. Α = 0,05 and df = nk, that is 15-4 = 11), unstandardized beta coefficient of 0.258 and significance level of 0.044 <0.05. This shows that the role of government affects the income of fishery product processing business group. economic variable has t count 2,450> t table equal to 2,2015 (sig. α = 0,05 and df = nk, that is 15-4 = 11) with unstandardized beta coefficient of 0,139 and level of significance 0,032 smaller than 0,05 . This shows that the economy affects the income of fishery product processing business group. While the socio-cultural variables have t arithmetic equal to -1.259 <t table of 2.2015 (sig. Α = 0,05 and df = nk, ie 15-4 = 11) with unstandardized beta coefficient of -0.167 and the significance level -0.154 greater than 0.05. This shows that social culture does not affect the income of fishery product processing business group.

Abstract

Dodol was a  processed product of agricultural  that are semi-wet, white to brown, made of a mixture of glutinous rice flour, coconut milk, sugar with or without preservatives. The aims of this research was to determine the quality and nutritional value of the tomato dodol. This research was used a completely randomized design (CRD). The data of this research were quantitative data. The quantitative data obtained from analysis of variation (ANOVA) and foellowed by DMRT examine. Based on the research,  the quality of tomatoes dodol that was  produced show that the addicting of tomatoes puree was gave significant effect on moisture content, fat and carbohydrate levels in tomato dodol. Treatment  Of addicting of tomato fruit puree  with 25%  of tomato fruit puree is the best treatment to produce nutritional value, 16.92 of moisture content. 7.96 of fat content. and 39.91 of carbohydrate content

Abstract

This research is a classroom action research that aims to study and describe the application of type Two stay Two stray (Ts-Ts) coopertative learning model in improving the achievement studient learning outcomes, class X.2 Agricultural Product Processing Technology. The subjects of this study were  learner studient of class X.2 TPHP of SMK Negeri 3 takalar totaling 32 the learner studient. Data collection techniques covering observation, written tests and documentation. Data analysis techniques in this study are qualitative analysis to analyze the results of observations and quantitative analysis to analyze learner studient outcomes data using descriptive statistics. The results of this study indicate that the application of the Two stay Two stray (Ts-Ts) type of cooperative learning model can  improving the achievement learner studient outcomes, of class X.2 TPHP of SMK 3 Takalar. This matter the based on the value of learner studient outcomes  at the stage pre-test, post-test cycle I and post cycle II test that is 1). mastery learner studient on   intial test (51,48), learning completeness (18,75), 2). mastery learner studient  post test cycle I (65.69), learning completeness (65,62) , 3). mastery learner studient  on  post test cycle II   (79.33), learning completeness (90.62%). This shows that the value of learner studient outcomes of  from pre-test, post-test cycle I and post test cycle II has increased.

Abstract

The aim of this research is to improve the growth of vegetable planting through Plant Media Modifying in Hydroponic Planting Systems. This research is an experimental research by using a form of design randomized group (RAK) with 3 treatments and 3 different concentrations, and 3 controls with the same concentration. The experimental method is done with four repetitions. Thus the number of plants being studied is 48 sample. The results showed 3 models of Plant Media Modifying in hydroponic planting system that has been done in this study, overall appears giving contribution to increasing the growth of vegetable planting when compared with group controls. The combination of husked mixture and hull of rice appears the highest contribution, while the lowest contribution toward the growth of vegetable planting is shown through a mixture of husked charcoal and fern roots

Abstract

This study aims to determine the effect of artificial feed by adding cassava leaf flour (Manihot utillisima) to the water quality of the African catfish nursery pond (Clarias gariepinus). This study used the T test (one sample T test) to compare the treatment with artificial feed and commercial feed consisting of 3 replications. The feeding dose was 3% of the weight of the fish for 30 days of maintenance with the frequency of feeding twice a day. Parameters observed were NH3, NO2, NO3, pH, temperature, DO and survival of African catfish. The results showed that the provision of artificial feed in the African catfish nursery did not have a significant effect (P> 0.05) on the observed water quality parameters. The quality of water obtained during maintenance by providing commercial and artificial feed is still supporting the survival of African catfish.

Abstract

This study aims to determine the suitability of land and carrying capacity for seaweed farming in the coastal area of Suppa District Pinrang Regency, assess the feasibility of seaweed cultivation development; identify factors of strengths, weaknesses, opportunities, and threats that affect the development of seaweed cultivation area; formulating a seaweed cultivation development strategy The method used is: spatial data analysis with Geogerafis Information System method, SWOT analysis to determine the strategy of seaweed cultivation area development. The results showed that the width of land suitability for seaweed cultivation based on land suitability map was appropriate (S) ± 578,57 hectare and not appropriate (N) ± 759,68 hectare, while the carrying capacity of land for seaweed cultivation is ± 173,571 hectare. Priority of Seaweed Development Strategy based on the results of the analysis, determined the eight best strategies of seaweed cultivation business development 1. Develop a cultivation processing, 2. Provide training gradually. 3. Provide gradual counseling, 4. Optimize existing production capacity, 5. Expand the cultivation area, 6. Optimize production, 7. Increased access to capital, 8. Expand and maintain network marketing.

Abstract

This research aimed to determine the effect of drying time and temperature on the quality of red chili powder using the cabinet dryer. The research uses a completely randomized design (CDR) factorial pattern consist of 2 factors and 3 replications. Technique of data analysis using analysis of variance (ANOVA). The results showed that the drying time and temperature provides a significant influence on yield, moisture content, color, and pungency level of red chili powder. Treatment of 32 hours drying time and a drying temperature of 60oC provides the best results for the quality of red chili powder produced by the characteristic yield 14, 35%, moisture content 8,12%, color 4,48 (like), and the highest degree of spiciness
