Abstract

Utilization of pineapple waste as by-product of pineapple fruit consumption such as peel, fruit eyes, and the core of the pineapple is still low. The middle part of the pineapple fruit called core has elongated shape, rather hard texture, and slightly of sweet and sour taste. Sweet and sour taste from the pineapple core had good nutritional content, so it enabling to be developed into more economically products, such as jelly candy. Chewy texture, transparent colors, sweetness, and fruity aroma as the jelly candy’s properties are strongly influenced by the gelling components and the temperature processing. The use of right combination between carrageenan concentration, pineapple core, and heating temperature can produced a good quality jelly candy. This research was carried out with Randomized Complete Block Design (RAK) method with two factors, i.e. variations of carrageenan (2%, 3% and 4% (b/v) and heating temperature (70°C, 80°C, 90°C). The aims of the research were to known characteristic of pineapple core jelly candy and determined the best formulation of it based on pishical, chemical and organoleptic characteristic. The result showed that the variation of 3% carrageenan and cooking temperature of 90°C was the best formulation of the pineapple core jelly candy with an effectiveness value of 0.66. It has texture value of 376.47 ± 0.71 g/mm; moisture content of 16.16 ± 0.37%; ash content of 1.26 ± 0.24%; vitamin C of 12.80 ± 0.69 mg/100g; reduction sugar of 11.90 ± 0.02%; and sucrose of 28.55 ± 0.24%. Based from organoleptic of jelly candy, the panelists like of texture (4.6), chewy texture (4.76) and rather like of the color (3.76), taste (4.28), aroma (4.04), overall organoleptic (4.12). Abstract

Tofu is a perishable food product, thus requiring a safe natural preservative. Liquid smoke from rice husk can be used as a tofu preservative, but its use in liquid form is less practical. Liquid smoke encapsulation process is a way to resolve the issue. The research objectives were to study the antibacterial activity of liquid smoke from rice husks and their encapsulated products, the effect of the concentration of liquid smoke encapsulation products on the shelf life of white tofu during storage, and the optimal concentration of liquid smoke encapsulation products that were able to maintain the quality of white tofu during storage. This type of research was experimental using a Split Plot Design, with the main plot was the concentration of encapsulated products, while the sub-plot was the storage time. Factors studied were the storage time (0, 2, 4 and 6 days) and encapsulation product concentrations (0, 0.5, 1, 1.5 and 2%). There were 20 combinations of treatment, repeated two times in order to get 40 units of trial. The results showed that the liquid smoke of rice husk had total phenol of 1,624.62 mg GAE/g, also had antibacterial activity against Escherichia coli ATCC and Staphylococcus aureus ATCC. Encapsulation product of rice husk liquid smoke had total phenol of 3,125 mg GAE/g and antibacterial activity against Escherichia coli ATCC and Staphylococcus aureus ATCC. The concentration of the encapsulated product affected the value of water content, protein content and the total plate count (TPC) during storage. The concentration of 2% encapsulated product produced the lowest changes during storage. The concentration of 1% encapsulated product resulted in tofu quality that was still organoleptically feasible until the second day of storage. Keywords: encapsulation, liquid smoke, white tofu

Abstract

The objectives of the research are to obtain the best “dodol” formulation of by using red fruit pasta as substitution ingredient of waxy rice flour, and to know its physicochemical electrophoresis properties and panelist preferences. The ratios between red fruit paste and waxy rice flour used in “dodol” preparation were 1,75:1; 1: 1; 1:1,75 and 1:2,5 (w/w). The result indicated that the best ratio of formulation of “dodol” was 1,75:1. The preferences test showed that the panelist like and texture of the formulation slightly color and odor. The increase of the use red fruit paste will produce delicious good odor non-sticky “dodol”, also increase panelist preferences. The best formulation of “dodol” have firmness value of 512,15 gf, elasticity 0,33 %, stichness 275,38 gf, water activity 0,87, water content 34,24 % and total solid 65,76 %.Keywords: “dodol”, psychochemical electrophoresis, red fruit pasta

Abstract

Indonesian coffee consumption per capita increase every year, it was 6-8%. Now, Indonesian coffee consumption is 800 g/capita/year. They like of instant coffee and three in one coffee, because this coffee was very simple and easier to prepare. The Robusta coffee has higher of yielded, nevertheless the Arabica coffee has good flavor. Generally, the crystallization step of instant coffee processing conducted by cane sugar adding. Coconut palm sugar has good flavor, but the crystallization step would be difficulty when used on instant coffee processing, because the sucrose content of coconut palm sugar lower than cane sugar. The aim of this research was to obtain the appropriate of Robusta-Arabica coffee ratio and coconut palm sugar-cane sugar ratio to produce the coconut palm sugar instant coffee which has good properties and good preference. Based on this research, the best treatment was Robusta-Arabica coffee ratio 1-2 and coconut palm sugar-cane sugar ratio 30-70.Keywords: instant coffee, robusta coffee, arabica coffee, coconut palm sugar, cane sugar

Abstract

Modified jack bean flour consists high protein which has a potential function for meatball product. This research was intended to identify the effect of the use of mushroom and modified jack bean as substituting ingredients of beef physical and chemical of the produced meatballs. The research used randomized block design (RBD), which consisted of one factor with 3 replications in each treatment, that is, the ratio variation of mushroom : modified jack bean flour : beef (F), in ratio of F1 (30%:10%:60%) , F2 (40%:15%:45%), F3 (50%:20%:30%), F4 (60%:25%:15%), F5 (70%:30%:0%) and 100 % beef. The data obtained were processed using analysis of variance. If there were significantly different data then, further test would be conducted using DMRT (Duncan Multiple Range Test) at 5% level. The effectiveness test results showed that the best value was from formulation F1 (ratio of mushroom : jack bean : beef at 30 : 10 : 60). Meatballs produced from the treatment had color brightness value of 54.58, texture 435.20 g/5mm, water content 53.88%, ash content 1.83%, fat content 1.37%, protein content 9.42%, carbohydrate content 33.50%, and fiber content 2.72 %.Keywords: Volvariella volvaceae, jack bean flour, meatball, protein, fat

Abstract

Tomato and rice bran are highly potential as source of antioxidant.But, proper processing need to optimize its potency as source of antioxidant.The objective of this experimental research was to develop tomato juice (TJ) and rice bran (RB) drinkwhich high content of its active compound. Preparation of material was making TJ and RB powder. To make TJ was used 2 treatment, i.e. blanching and filtering To improve acceptance of RB drink, it was addition of flavor (vary in type and concentration) to RB powder, and then applied organoleptic test to get the best acceptance of RB drink. Then,analyzing of nutrient content (NC) and soluble fiber (SF) of TJ and RB powder, and total carotene (TC) of TJ were applied. Development of this functional drink and its content analyzes was done at Laboratory of Community Nutrition Department, Bogor Agricultural University. Result showed that NC, SF and TC of TJ between treatment weren’t significantly different (p>0.05). TC of TJ was blanched-unfiltered (TJBU), blanched-filtered (TJBF), not blanched-unfiltered (TJNU), and not blanched-filtered (TJNF) were 13.7641, 12.4835, 13.7132, dan 12.2867 ppm, respectively. SF of TJBU, TJBF, TJNU, TJNF, and RB powder were 4.49%, 3.09%, 4.92%, 4.76%, dan 6.53%, respectively. The best acceptance of RB drink was flavored by 0.75%. cappuccino. So, TJ and RB drink can be used as an alternative of functional drink.Keywords: carotene, flavor, functional drink, rice bran, tomato

Abstract

The purposes of this research are to know the value of investments, investment feasibility, the value of PBP, BEP, and to provide the alternative of potential water use in the future. This research was conducted by using field observations of the location and pipeline layout to distribute the water reservoir in residential area using GPS. The methodsof data collection are question and answer method, study of  literature, and data processing (to determine the value of investment and potential use of water for agriculture, livestock, water treatment) and calculate of economic feasibility analysis using mathematical formulas. The study shows that the use of investment amounting to Rp.276.209.295, the contributions of citizens and the three agencies was declared unfit with a payback more than 20 years. If using the potential use of water is obtained 67861847 NPV more than 0 (feasible), 19,7 % IRR ≥ MARR of 14% (feasible), and BCR value of 5,0 more than 1 (feasible). Investment return in 3,6 years, the BEP occur if residents use as much as 572.418.490 liter of water, coffee mill 101.429.658 liter, 48.189 liters of water treatment, agriculture and animal husbandry of 1.908.061.967 liter. Annual benefit of water treatment. Rp.45.000.000 and livestock farming Rp.11.625.840/year.Keywords: water allocation, investment feasibility, potential water use

Abstract

Reducing caffeine was meant for improving health effect of drinking coffee. Meanwhile supplementation of functional food ingredient such inulin and fructooligosaccharides (FOS) in coffee beverage is expected for emerging health value of decaff coffee. Decaffosin instant coffee was formulated from decaffeinated coffee powder enriched with 27 % w/w inulin powder and 7 % fructooligosacharides (FOS). This study aims to identify nutritional quality and to evaluate the effect of inulin and FOS addition at the same time on preference level of Dekafosin instan coffee. The result of showed that Dekafosin instan coffee contain 5.04 % of water and 2.3 % of mineral. Total reducing sugar, sucrose, glucose, fructose and soluble dietary fiber content of the beverage are 30.83, 0.47, 2.8, 94.33 and 98.1 percentage, respectively. Meanwhile, caffeine and inulin content of the the beverage are 1.23 and 28.15 percentage. The statistical analysis proved that decaffeination and the supplementation of inulin and FOS did not influence on the preference level of Dekafosin instant coffee, as showing by the following value : preference level of colour (x² count = 17.397 < x² table = 18.549), aroma (x² count = 5.563 > x² table = 4.168) and taste (x² count = 11.413 < x² table = 14.684) wich has a significance value (p) > 5 percent. Therefore, based on this analysis data it can be concluded an addition of inulin and FOS did not influence preference level toward Dekafosin instant coffee beverage.Keywords : decaffeinated coffee, inulin, FOS, Dekafosin instant coffee beverage, nutritional quality, preference level

Abstract

Prol Tape is one of the local traditional food products (cake) from Jember, made from fermented cassava. Quality improvement problems were still faced by producers of prol tape. This was due to limited information of consumers’ satisfaction factors of this product. Therefore the evaluation of consumers’ respon was strongly needed to know consumers’ needs in this product. Quality Function Deployment (QFD) was used in this research to reach factors or product attributes related to consumers’ needs of prol tape product. The result of this research found that there were 4 attributes of consumers needs consisted of taste, colour, aroma and texture. There were also five technical responses from producers (production acctivities) which have close relationship to product quality. Compared to other brands, it was found that consumers prefer to select Wika than other brands (Sumber Madu, Primadona and Purnama Jati). From QFD analysis, Wika could reach the target compare to others. It means that Wika has better condition to answer consumers’ needs using tecchnical response. Some of recommended strategies are also explained briefly in this research paper.Keywords: quality, traditional product, QFD

Abstract

Cacao bean and cocoa products contained flavonoid polyphenol compounds. Monomeric flavanols (catechin and epicatechin) are the major flavonoids in cocoa products that have high antioxidative properties. High antioxidant activity of cocoa made it potential to be developed into healthy drink by adding extract of spicy. The aims of this research were to characterize chemical-functional (polyphenol content and antioxidant activity), and sensory (hedonic) properties, and also polyphenol stability of spicy-chocolate beverage during storage. Spicy-chocolate beverage was made from ingredients of cocoa extract, spices extract (ginger, lemongrass, and sappanwood), and sugar. The results showed that the total polyphenol content and antioxidant activity of spicy-chocolate beverage decreased as the lower addition of cocoa extract and greater addition of the spicy extracts in beverage formulations. The sensory test showed that panelists preferred spicy-chocolate beverage formula P5 (75% of cocoa extract; 9% of sappanwood extract; 3% of lemongrass extract and 13% of ginger extract), containing the total polyphenol content of 80,77 mg/100 mL, antioxidant activity (percent inhibition) of 72,66%, and sensory (hedonic) scores of the color, aroma, taste, and overall attributes were 2,08; 1,92; 2,14 and 2,08, respectively. Spicy-chocolate beverages were stored at refrigeration temperature had polyphenol stability higher than beverage stored at room temperature.Keywords: spicy-chocolate beverage, polyphenol, antioxidant activity, polyphenol stability
