Abstract

Adolescence is a critical period that is vulnerable to health issues, including anemia, which is triggered by deficiencies in iron, folic acid, and vitamin C. This study aims to analyze the nutritional content of seaweed chips as an alternative snack to combat anemia in adolescent girls. Using an experimental design, two variants of seaweed chips (original and spicy) were analyzed for their macro- and micronutrient content, including protein, iron, folic acid, and vitamin C. The results showed that the original chips contained an average of 7.1% protein and 39.97 μg/g of iron, while the spicy chips had a higher vitamin C content (67.1%) but lower iron levels (33.1 μg/g). The folic acid content in both variants was very low (<0.25 mg/kg). Nevertheless, the high vitamin C content in the spicy chips can enhance iron absorption, supporting efforts to prevent anemia. Although these seaweed chips cannot be relied upon as a primary source of protein or folic acid, they offer a healthy, low-calorie snack alternative.

Abstract

Stunting among children under five years old (toddler) is a fundamental challenge that must be addressed. This is due to the nutritional status of children in the first five years of life is related to cognitive development and the prevention of chronic diseases later in life. Given the high prevalence of stunting across various regions, it is necessary to conduct research to identify factors associated with stunting. Food security is one of the factors contributing to stunting based on the WHO framework. This study aimed to examine the relationship between household food security and the incidence of stunting. This study used a cohort design with retrospective approach. The retrospective method used in this approach involves first measuring stunting in children under five years old, then tracing back their household food security history to determine whether there are factors influencing the incidence of stunting. The sampling technique used was purposive sampling, and the sample size was determined using the Slovin formula, resulting in a total of 123 mothers with stunted toddlers. Chi-square analysis was used for data analysis. The chi-square test showed a p-value of 0.010. This study found a significant relationship between household food security and the incidence of stunting.

Abstract

Stunting is a chronic condition that describes impaired growth due to long-term malnutrition. It is one of the consequences of malnutrition experienced by toddlers (children under five years old). It causes children to fail to grow and are too short for their age due to a lack of nutritional needs, namely protein sources. Toddlers who experience stunting will have suboptimal intelligence levels, be more susceptible to disease, and be at risk of mental retardation as well as decreasing productivity levels in the future. The occurrence of stunting in Indonesia is a recurring problem, and there is a fairly high prevalence of stunting each year in North Sumatra, Medan Belawan District. This study aims to determine the effect of the innovation of Tonjangpis abon (a combination of mackerel tuna and banana blossom floss) in an integrated stunting prevention movement on weight gain in 2-3-year-old children in Belawan I District. This is a quasi-experimental study with a one-group pre-test and post-test design. The research population was undernourished toddlers aged 12-36 months in Belawan I District, with a total sampling technique of 16 undernourished toddlers aged 12-36 months. The result shows a p-value of 0.004, which means there is a significant effect of Tonjangpis abon innovation in an integrated stunting prevention movement on weight gain in 2-3-year-old children.
