Abstract

Abstract:The background of this research focuses on the importance of entrepreneurial skills in facing increasingly complex global economic challenges. In this context, entrepreneurship education is expected to encourage students to develop the interests and skills needed for entrepreneurship. The aim of the research is to analyze the relationship between learning outcomes and entrepreneurial interest in Class XI Culinary Arts students at SMK Negeri 1 Batusangkar.  This research method is quantitative correlational research. The research subjects were 33 SMK Negeri 1 Batusangkar. Data collection is carried out via gform. Data were analyzed descriptively and by regression test analysis. using the SPSS version 26 for Windows program. The results of the research show that the description of learning outcomes in the Creative Products and Entrepreneurship Subjects of Class XI Culinary Arts students at SMK Negeri 1 Batusangkar is in the low category.  The description of interest in entrepreneurship among Class XI Culinary Arts students at SMK Negeri 1 Batusangkar is in the low category. There is a significant positive relationship between learning outcomes and interest in entrepreneurship for Class XI Culinary Arts students at SMK Negeri 1 Batusangkar. The research concluded that there is a relationship between learning outcomes and students' entrepreneurial interest.

Abstract

Sweet bread is a popular food product widely favored across various community groups. It is known for its soft texture and sweet taste that delights the palate, making it a preferred choice for breakfast or a snack. This study aims to analyze the quality of sweet bread enriched with pumpkin based on several sensory aspects, including aroma, texture, and taste. The research method employed was experimental. The results showed that the bread quality from treatments I and III, with 100% pumpkin substitution, exhibited good volume expansion, a round and neat shape, and a yellowish-orange color characteristic of pumpkin. The texture was thin and soft, the taste was sweet, and the aroma had a distinct pumpkin fragrance.

Abstract

This research was motivated by the low learning outcomes of students in the Pastry subject. One of the factors influencing learning outcomes is learning discipline. The purpose of this study is to describe students' learning discipline, describe their Pastry learning outcomes, and analyze the relationship between the two. This study used a quantitative approach with a correlational method. The population consisted of all Grade XII Culinary students at SMK Negeri 1 Ampek Angkek in the 2023/2024 academic year, comprising 61 students. The sampling technique used was total sampling. Data on learning discipline were collected through a Likert scale questionnaire tested for validity and reliability, while learning outcomes were obtained from students' final exam scores in Pastry. Data analysis was carried out using descriptive and correlation techniques. The t-test results showed that t_count 9.092 > t_table 2.000, thus Ha was accepted and Ho was rejected. It is concluded that there is a positive and significant relationship between learning discipline and learning outcomes.

Abstract

This research is motivated by the low learning outcomes of students in the Pastry subject. One aspect related to this issue is the students' learning attitude. The purpose of this study is to examine the relationship between learning attitude and student learning outcomes in the Pastry subject at the Culinary Department of SMK Negeri 9 Padang. The research method used in this study is a quantitative approach with an ex post facto research design with a population of 224 twelfth-grade students in the 2024/2025 academic year. The sample was selected using simple random sampling. The instruments used include a Likert scale questionnaire, which has been tested for validity and reliability, and documentation of students' learning outcomes. The data were analyzed using the Pearson Product Moment correlation technique. The results show that both learning attitudes and learning outcomes are in the moderate category. The correlation coefficient of 0.796 indicates a strong relationship, and the hypothesis test shows that the t-count (10.84) is greater than the t-table (1.995), so the alternative hypothesis (Ha) is accepted.

Abstract

Watermelon, a fruit from the Cucurbitaceae family, is known for its sweet and juicy pulp, rich in nutrients like vitamin C, vitamin A, and lycopene. A study aims to assess the impact of using watermelon albedo, the white part of the rind often discarded, in making watermelon syrup, using a specified recipe. The research analyzes various aspects like sugar content, pH, viscosity, and sensory properties such as taste, aroma, texture, and color. The study is an experimental one following the Complete Randomized Design (CRD) method, with primary data collected from 20 panelists evaluating the watermelon syrup quality with albedo substitution, applying 4 treatments and 3 repetitions. This aims to explore the potential of utilizing watermelon albedo, usually considered waste, for its fiber and nutrient content in food applications.The data obtained then tabulated in the form of tables and performed Analysis of Variance (ANOVA), if Fh>Ft then continued with the Duncan Test. In this study, watermelon albedo was used as a substitute material in the manufacture of watermelon syrup with a variation in the percentage of substitution of 0%, 15%, 30%, and 45% which significantly affected the quality of thick texture 4.60 (450gr albedo), homogeneous texture quality 5.03 (150gr albedo), and taste 3.50 (550 gr albedo). The results of the quality of watermelon syrup with the influence of the best watermelon albedo substitution are in the second treatment (X1) with the addition of albedo as much as 150gr both from the color, aroma, texture and taste sensory tests.

Abstract

Genjer is a common weed found in agricultural land, especially in areas with sufficient water availability. One way to reduce the presence of genjer is to process it into functional food products, such as genjer leaf extract yogurt, which offers a unique and healthy beverage innovation. The purpose of this study was to analyze the effect of adding genjer leaf extract on the quality of color, aroma, texture, taste and level of preference of yogurt. This type of research is a pure experiment with a Completely Randomized Design (CRD) method involving 4 treatments (0%, 5%, 10%, 15%) and 3 repetitions, with 30 panelists from the Family Welfare Education Study Program Students, Padang State University. Data were analyzed using ANOVA and continued with Duncan's Test if Fcount>Ftable. The results of the study stated that the addition of genjer leaf extract as much as 0%, 5%, 10%, 15% to yogurt had a significant effect on the quality of color (green) and taste (sour). Meanwhile, the quality of aroma (distinctive fragrance of genjer) and texture (slightly thick) did not have a significant effect. The best overall results in this study were shown by adding 10% genjer leaf extract (X2).

Abstract

The low participation of vocational high school graduates in higher education (10% nationally) is a challenge. This study examines the correlation between academic achievement and interest in continuing education among students at SMKN 1 Batusangkar. This quantitative correlational study involved 33 12th-grade students in the Culinary Services Expertise Program. Data were collected via a Google Form questionnaire (Likert scale 1-5, Cronbach's α = 0.85) and report card grades from the odd semester of 2023/2024. Analysis used Pearson Product-Moment correlation with SPSS. The results show a robust correlation between academic achievement and interest in continuing education (r = 0.99, p < 0.001). Students with high grades tend to be interested in college. Academic achievement can predict interest in continuing education with 99.6% accuracy. The findings encourage vocational high schools to prioritize improving academic achievement to boost interest in college, for example, through the implementation of mentoring programs.

Abstract

Synthetic dyes that are often used in making putu ayu cakes can be harmful to health because they contain sulfuric acid or citric acid chemicals, so safer natural dye alternatives are needed. Red dragon fruit contains anthocyanins, antioxidants, and essential nutrients that can be used as natural dyes while providing added value in terms of product health and aesthetics. This study aims to analyze the sensory quality of putu ayu cakes with the addition of red dragon fruit extract of 20%, 30%, and 40%. The type of research used was a pure experiment with a Completely Randomized Design (CRD) and three times. The research sample consisted of three treatments and one control, assessed by five semi-trained panelists, namely lecturers from the IKK Department of Culinary Arts, UNP. Data were obtained through organoleptic tests including color, aroma, and taste using an instrument in the form of an assessment sheet. Data analysis techniques were carried out quantitatively inferentially. The results showed that the addition of 40% red dragon fruit extract had the most significant effect on color, aroma and taste (dragon fruit), but did not have a significant effect on the sweetness of putu ayu cakes.

Abstract

This study aims to examine the implementation of Basic Culinary subjects to improve students’ skills in preparing continental main courses at SMK Negeri 6 Padang. The research method used is descriptive qualitative with data collection techniques through observation, interviews, and documentation. The research informants are teachers who teach continental cuisine subjects. The learning process at the school follows industry standards from the implementation to the evaluation of practical activities. The implementation of Basic Culinary is carried out through integrated theoretical and practical learning, emphasizing mastery of basic cooking techniques, ingredient knowledge, equipment usage, as well as understanding hygiene and sanitation. The teaching methods applied include direct demonstration, the use of interactive media, and question-and-answer sessions to strengthen students’ understanding. Practical sessions are conducted in accordance with industry Standard Operating Procedures (SOP), and quality control is strictly applied from the selection of raw materials to the final product inspection. The role of teachers is crucial in guiding, directing, and evaluating each stage of students’ practical work. Evaluation is conducted comprehensively, covering aspects of planning, implementation, cooking techniques, taste, texture, dish quality, attitude, teamwork, and presentation. The results show that the implementation of Basic Culinary subjects has a positive impact on improving students’ abilities in preparing main courses, both in technical skills and theoretical understanding. Students provide positive feedback on learning based on direct practice and feel better prepared to meet industry demands. Follow-up evaluations include providing opportunities for improvement and discussions among teachers to address challenges encountered during practice. This study recommends that schools and educators continue to enhance the quality of learning based on industry standards to produce competent and job-ready graduates.

Abstract

This study aims to determine the influence of Teaching Factory (TeFa) learning on the entrepreneurial interest of 12th-grade culinary students at SMK Negeri 2 Pariaman. The research employed a causal associative approach. Data were collected through questionnaires distributed to 64 students. Data analysis was conducted using SPSS version 26.0 with a simple linear regression test. The results showed that: (1) Teaching Factory learning was categorized as fairly good (31.25%), and students’ entrepreneurial interest was also in the fairly good category (34.38%). (2) The regression test results indicated a positive and significant influence of TeFa learning on students' entrepreneurial interest, with a significance value of 0.010 (< 0.05). (3) The regression coefficient was 0.350, meaning that each one-unit increase in the TeFa learning variable could increase entrepreneurial interest by 0.350 points. The R Square value was 0.102, indicating that Teaching Factory learning contributed 10.2% to students’ entrepreneurial interest, while the remaining 89.8% was influenced by other factors.
