The development of science and technology in agriculture, has been instrumental in increasing the production of various agricultural commodities. But climate change is also uncertain world led to decreased agricultural productivity. World energy crisis resulted in higher prices of agricultural commodities due to competition between food and energy are higher. Efforts to utilize biomass (agricultural products) has started a lot of research, not only as raw material for bioenergy, but also in an attempt to exploit agro-products into valuable economic products, and realize clean production in agro-industry.

Abstract

Pemilihan pemasok merupakan salah satu hal krusial dalam kegiatan rantai pasok. Pentingnya pemilihan pemasok sangat berpengaruh pada kualitas dan ketersediaan suatu produk. Pemasok kemasan pudak dalam memenuhi kebutuhan kemasan pudak belum optimal. Tujuan penelitian ini adalah menentukan pemilihan pemasok yang berbasis Multi-Criteria Decision Making (MCDM). MCDM yang digunakan pada penelitian ini adalah metode Analytical Hierarchy Process (AHP). Peran AHP pada penelitian ini yaitu menentukan pemasok terbaik yang ada di Industri Pudak Gresik. Penentuan pemasok terbaik berdasarkan pada kinerja tiap pemasok. Ada 4 pemasok yang bekerja sama dengan industri pudak. Penelitian ini menggunakan kriteria berdasarkan hasil wawancara dengan pemangku kepentingan di industry pudak Gresik. Kriteria terdiri dari harga, kualitas, pengiriman, dan pelayanan. Penyelesaian menggunakan metode AHP terhadap 4 pemasok telah mendapatkan nilai ranking pada masing-masing pemasok. Pemasok A merupakan prioritas pemasok terbaik dengan nilai tertinggi yaitu 0,379. Analisis sesnsitivitas menghasilkan nilai peringkat dari pemasok konsisten walaupun dilakukan perubahan bobot pada kriteria secara upward change maupun downward change. Penelitian ini mampu menentukan supplier terbaik dan meningkatkan kinerja pemasok di masa yang akan datang. Abstract

Indonesia has biodiversity including medicinal plants. The medicinal plant business can be a profitable business prospect because it has high export opportunities. Based on the benefits obtained, the production of medicinal plants needs to be considered by monitoring and evaluating production results to increase productivity, especially for areas with low production levels. The Department of Food Crops and Horticulture of West Java Province through the website https://opendata.jabarprov.go.id has provided production datasets for each type of medicinal plant, but it has not yet become a dataset with various types of medicinal plants. The purpose of this study was to design an integrated data storage model in the form of a data warehouse, grouping medicinal plant production areas using data mining and designing data visualization in business intelligence systems. Business intelligence system design was carried out through several stages, namely system requirements analysis, identification of data and information needs, data warehouse design, data warehouse filling, data mining processes, data visualization, and system performance evaluation. The results of the research were the application of a data warehouse using a dimensional model with a star schema; a grouping of production areas using the KMeans algorithm with optimal k=3 and the number of elements produced in each cluster is 24 regions in cluster 0, 1 region in cluster 1, and 2 regions in cluster 2; a business intelligence system is implemented using a dashboard to show information on the amount of production and display the results of grouping potential areas for producing medicinal plants.Keywords: business intelligence, data warehouse, dimensional models, visualization, medicinal plants

Abstract

Milk is food from livestock (animal) from dairy cows which contains protein, fat, vitamins, and minerals that can affect nutritional levels, especially in children during their growth period. The high interest in milk consumption in Indonesia affects the milk processing industry to increase every year. Starting from smallholder farms, milk can be processed into dairy products that are suitable for consumption by the community. The process of processing whole milk into dairy products that are ready to be consumed through a process that produces emissions, so that it has the potential to have an impact on the environment. The purpose of this study is to identify and quantify the materials and energy used, the amount of emissions produced from the milk production process, and estimate the magnitude of the impact on the environment and provide recommendations for alternative process improvements to minimize these impacts. The method used is a life cycle assessment (LCA) with a cradle to gate scope, starting from activities in livestock, animal feed, transportation, and process activities in cooperatives. The emission impacts studied in this study are greenhouse gases (GHG), acidification, and eutrophication. The case study was conducted at the South Bandung Dairy Cooperative (KPBS) Pangalengan. This cooperative consists of thousands of small-scale dairy farmers who contribute to the milk processing industry in Indonesia. Based on the results of the study, the impact values ​​of GHG, acidification, and eutrophication per 1 kg of milk were 10,1 kg CO2 eq, 0.03 kg SO2 eq, and 0.03 kg PO43-eq, respectively. Transportation and activities on livestock are the highest hotspots in these emissions. Efforts to reduce environmental impacts that can be done are by implementing an integrated livestock system for the utilization of nutrients from cow dung waste. Abstract

Gayo Arabica coffee is a high-quality specialty coffee with a distinctive, complex aroma and a fairly strong viscosity. By developing a visualization of the Gayo Arabica coffee packaging design, the coffee product is expected to be more accepted in the market according to consumer preferences. This study aimed to formulate a strategy for developing visualization of the Gayo Arabica coffee packaging design. Factors that cover the problem of packaging design visualization included colour, shape, brand, illustration/image, information/labeling, and local and cultural wisdom. The formulation strategy for packaging design visualization development could be completed using the soft systems methodology (SSM). The use of the SSM method providds two recommended activities, namely technical activities and policy activities. The results of this study can be used as a reference or reference for the industry or interested parties in considering the visualization of designs related to the packaging of Gayo Arabica coffee products. Abstract

Livestock is the main sector in the effort to fulfill food needs for people in Indonesia and has the potential to maintain the availability of animal food. Guidance and socialization to provide information and knowledge in the field of food production from animals, especially in areas with low levels of chicken meat production need to be done. The research objectives were the use of the K-Means and K-Medoids algorithms for grouping chicken meat production areas in the province of West Java and the use of the Davies Bouldin Index (DBI) value in choosing the best algorithm. The application of K-Means and K-Medoids was carried out through the data mining process phase, namely data collection, data preprocessing, data mining implementation, evaluation of the number of clusters, determination of the best algorithm, and clustering results. The K-Means algorithm with 5 clusters can optimally classify potential areas for chicken meat production in West Java province with a DBI value of 0.273. The results of clustering can be used in business processes related to information on the amount of chicken meat production in the West Java region as a reference in the pattern of guidance to increase animal food production, develop chicken farming potential, and develop animal feed distribution potential. Abstract

The Covid-19 pandemic in 2020 caused everything to change, including the pattern of human life. Currently, the activities carried out must comply with health protocols. Despite the restaurant's strict safety protocol measures, customers generally do not feel safe dine-in during a pandemic. This study classified the restaurant environment in the form of premium, deluxe, and standard classes using Kansei engineering. This study aimed to identify the attributes of an ergonomic environment in a restaurant for dine-in in the era of the post-pandemic era also find out the best alternative by Technique for Order Preference by Similiarity to Ideal Solution (TOPSIS). A total of 503 respondents from 3 provinces on the island of Java (East Java, Central Java, DI Yogyakarta) participated in the survey in this study. In detail, 41 respondents were needed for interviews, 418 respondents for attribute determination and 44 expert respondents for the TOPSIS. Kansei results generated 37 attributes in the premium, 39 attributes in the deluxe and 7 attributes in the standard classes. The research concluded that consumers tend to choose premium class facilities to dine-in at restaurants in the era of the new order of life. Keywords : dine-in, ergonomics, kansei engineering, TOPSIS

Abstract

Padang city precisely in the administrative area of ​​Labuhan Tarok Village, Teluk Kabung Bungus District, is a capture fish production center that makes a major contribution in West Sumatera, in that area already has a cold storage which is a facility belonging to the Ministry of Maritime affairs and fisheries. Currently, the cold storage is constrained by not being used optimally, where cold storage is often found in a condition less than 50% filled. Objective of this study was to analyze the utility level of the existing cold storage using a dynamic system. In this study primary data was used by the data collection methods, namely field observations, interviews, FGD and secondary data collection derived data from relevant government agencies. The software used in this research was Vensim software. Based on the dynamic simulation obtained, it was stated that the number of fish entering cold storage generally does not show significant fluctuations. By assuming the current fleet and fishing gear, it can be concluded that if we maintain the current condition of the vessels and fishing gear, the amounts of fish caught entering cold storage will still not get the optimal cold storage capacity. Therefore, it is necessary to disseminate information to the local fishing community to empower the use of cold storage, improve the facilities and infrastructure of ocean Bungus fishery port, especially cold storage, besides that it is hoped that the local government will help find subsidized assistance for more modern fishing fleets and gear. Abstract

Horticulture is a commercial commodity with high economic value, one of which is kale leaves. Rumah Sayur Cisarua is a brand from the Sinar Mukti Farmers Group which markets kale leaves to Singapore. Information from partners, kale leaves experience a decrease in freshness in just 6-8 hours after arriving in Singapore. This study aimed to obtain a minimally process design for kale leaves so that the quality and freshness can be maintained during distribution to consumers, and can be applied at Rumah Sayur Cisarua. The minimal process on the selected kale leaves was carried out by hydrocooling with various soaking times of 5, 8 and 11 minutes. Furthermore, the kale leaves were stored in two storage schemes, namely (a) room temperature (20-25oC) and (b) room temperature (20-25oC) for 5 hours and continued in a showcase (5-8oC). Kale leaves stored in the first storage scheme experienced a change in leaf colour on the first day, while those stored in the second storage scheme experienced a change in leaf color on the fourth day. The length of soaking time chosen by the partners was 11 minutes with storage in the second scheme, due to the fresh appearance of the kale and the lower weight loss compared to the other soaking times. The additional cost required for the hydrocooling process of 50 kg of kale leaves is IDR 139,129.00 and the profit that partners get is 60%. Keywords : hydrocooling, minimally process, kale leaf

Abstract

Moringa leaves (Moringa oleifera) have bioactive components such as phenolic compounds, which have antioxidant activity and are beneficial for health, such as preventing free radicals, anticancer and antidiabetic. Bioactive ingredients from Moringa leaves have weaknesses namely, they are sensitive to heat, light, and oxygen, so an encapsulation process is needed to minimize the loss of bioactive compounds in the extract. This study aimed to determine the effect of coating ingredients from maltodextrin and Whey Protein Isolate with ratios (1:3 and 3:1) on the characteristics of Moringa leaf extract microcapsules. This research is descriptive research with three repetitions. Dried moringa leaves were extracted using ethanol solvent with the Ultrasound-Assisted Extraction (UAE) method. The extract obtained was encapsulated and spray-dried at an inlet temperature of 125°C. The results showed that Moringa leaf extract had a phenolic content of 590.25 ± 1.12 (mg GAE/g), a flavonoid content of 173.96 ± 1.57 mg QE/g and an IC50 value of 52.74 µg/mL. The combination of maltodextrin and whey protein isolate (WPI) coating materials with ratios (1:3 and 3:1) produced yield values (53.66 ± 2.25 % and 60.78 ± 4.60%), water content (3.49 ± 0.35 % and 3.73 ± 0.4 %), solubility (95 ± 0.03% and 86 ± 0.08 %), total phenolic (377.21 ± 0.82 mg GAE/g and 349.88 ± 1, 64 mg GAE/g), total flavonoids (101.32 ± 3.36 mg QE/g and 86.35 ± 2.81 mg QE/g), IC50 (88.22 ± 0.68 µg/mL and 149, 65 ± 4.03 µg/mL) and encapsulation efficiency (63.94% and 59.31%) and the resulting colour leads to a green colour. Abstract

White frangipani flowers (Plumeria obtusa) are widespread across many regions in Indonesia and are frequently used as an essential component of religious ceremonies as offerings in the temples. They can be found placed at many village corners as local culture and beliefs. The used frangipani flowers caused a huge amount of flower waste. To resolve this issue, frangipani flowers can be utilized through product development to add their value, such as by producing essential oils. It has been reported from previous studies that the essential oil of frangipani flowers was done through conventional methods which used toxic chemical solvents or distillation processes with high-temperature conditions that can damage the volatile and bioactive compounds in flowers. Thus, in this research, the processing of frangipani flowers into essential oil was done with supercritical carbon dioxide (CO2) extraction. The results showed that supercritical CO2 extraction produces a lower yield (1.27%) of essential oil if compared to soxhlet extraction with n-hexane (4.23%), however supercritical CO2 extraction provides advantages of no residue of extraction product and more environmentally-friendly method. Furthermore, the identification of bioactive compounds from P. obtusa essential oil showed that there were 65 compounds identified from supercritical CO2 extraction with 87% of compounds with activities and benefits reported from literature, whereas essential oil from soxhlet extraction produced more compounds, 76 compounds were identified with 78% of compounds with reported activities and benefits. This confirms that supercritical CO2 extraction was more selective in extracting specific volatile compounds.
