Abstract

Persentase balita gizi kurang di Kabupaten Pati pada tahun 2021 sebesar 5% dan wilayah Puskesmas Sukolilo I merupakan wilayah yang memiliki jumlah kasus tertinggi di Kabupaten Pati yakni terdapat 11,04% kasus dibandingkan dengan tahun 2020 angka tersebut sangat melesat jauh sebesar 0,8% dari 23 balita. Penelitian ini bertujuan mengetahui faktor risiko yang berhubungan dengan kejadian gizi kurang pada balita usia 0-60 bulan buruk di wilayah Puskesmas Sukolilo I. Rancangan penelitian menggunakan Cross Sectional. Penelitian dilakukan pada bulan Juli-Agustus 2022 di Wilayah Kerja Puskesmas Sukolilo I. Teknis pengambilan data yang digunakan adalah Quota Sampling sebanyak 70 responden. Analisis data yang digunakan adalah analisis univariat, analisis bivariat menggunakan uji Chi Square dan analisis multivariat menggunakan Regresi Logistik. Hasil penelitian didapatkan ada hubungan BBLR (p=0,016), sanitasi lingkungan (sumber air minum) (p=0,001), tingkat kecukupan energi (p=0,000) dengan kejadian gizi kurang pada balita 0-60 bulan. Peluang risiko paling besar terkena gizi kurang yakni variabel tingkat kecukupan energi.

Abstract

Riskesdas 2018 data, the prevalence of heart disease in Indonesia is 1.5%. Congestive Heart Failure (CHF) is the inability of the heart to pump blood to meet the needs of oxygen and nutrients to the body's tissues. The most common symptom of recurrence is shortness of breath. One of the dietary managements of CHF patients is the limitation of sodium and fluid. The study aimed to determine sodium intake, fluid balance and nutritional status in the occurrence of shortness of breath based on Respiration Rate (RR) in Congestive Heart Failure (CHF) patients in Cardiac Hospitalization at H. Moch. Ansari Saleh Banjarmasin. This study was conducted through the an observational analytic with a prospective approach. The samples were 12 people with CHF who were hospitalized in RSUD H. Moch. Ansari Saleh Banjarmasin from April 16 to May 6, 2018. taken based on inclusion and exclusion criteria. The data was collected using a 1x24 hour food recall form, a liquid form and a Respiration Rate form.The collected data was further analyzed by using the Spearman rank correlation test with a 95% confidence level. The study has found that there is a correlation between sodium intake (p = 0.049) and fluid balance (p = 0.01) to the occurrence of shortness of breath based on the RR value of CHF patients and not significant for nutritional status. Based on the finding, therefore, adjusting sodium intake and fluid balance is useful to reduce symptoms of shortness of breath in CHF patients. Abstract

The number of diabetes mellitus patients in Indonesia is increasing. Vitamin D has a function to trigger insulin receptor expression, which results in a decrease in blood glucose levels. The prevalence of DM sufferers in Indonesia was recorded at 10.9%, while the prevalence in Yogyakarta City was 18.6% of people diagnosed with diabetes. The aim of this study was to find out whether there is a relationship between vitamin D intake and blood glucose levels of individuals suffering from type 2 diabetes mellitus in the city of Yogyakarta. This research is quantitative research with a cross sectional design. The independent variable for the study was vitamin D intake and the dependent variable was blood glucose levels, determined using a purposive sampling technique, with a sample size of 49 people. The measuring tools in this research were a characteristic questionnaire, the SQ-FFQ form, and a food photo book. Spearman rho correlation test will be used to analyze the data. The results showed that subjects in Yogyakarta City consumed less vitamin D than needed based on the RDA (600 IU/day) and there was no relationship between vitamin D intake and blood glucose levels in type 2 DM sufferers in Yogyakarta City with a value of p=0.6777 (p> 0.05) and the value of r = -0.0609 shows a tendency for a weak relationship and has a negative relationship direction, meaning that the higher the intake of vitamin D, the lower the blood glucose level. Vitamin D is not related to blood glucose levels in type 2 DM sufferers.

Abstract

This study aims to find out the influence of variations in mixing wheat flour and roa fish meal on physical, organoleptic, and protein levels of sticks for stunting prevention foods. This study was laboratorium experimental study. There were 4 trial (k = 4) using twice repetition (i = 2). Each repetition consist of 2 unit trial (n = 2), then the total were16 unit trial. We performed four ratio wheat flour and roa fish including 100%:0%, 90%:10%, 80%:20%, 70%:30%. The processing food was conducted in food technology laboratorium nutrition department Poltekkes Kemenkes Yogyakarta, while the protein level tested in Laboratorium Pusat Studi Pangan dan Gizi, UGM Yogyakarta. Setting on May 2022 involving 25 semi-experts panelists for hedonic tets We performed kruskal walis for identified the panelist favourite. Result showed that the more roa fish meal mixture the more brown the color, the more distinctive the aroma of roa fish, the crisp texture and savory taste. Panelists prefer snacks with a composition of 90%: 10%.

Abstract

Prevalensi Diabetes Melitus dari tahun 2013 hingga tahun 2018 mengalami peningkatan di Indonesia. Perkembangan Diabetes Melitus dapat dikaitkan dengan karakteristik individu, aktivitas fisik yang kurang, dan peningkatan indikator antropometri. Penelitian ini bertujuan untuk mengetahui hubungan indikator antropometri dengan Diabetes Melitus pada orang dewasa di Indonesia tahun 2018. Penelitian ini menggunakan desain studi Cross Sectional dengan menganalisis data sekunder Riskesdas 2018 pada usia dewasa 18-65 tahun sebanyak 80.868 sampel. Frekuensi Diabetes Melitus di Indonesia tahun 2018 sebesar 2,7%. Terdapat hubungan signifikan dan berisiko antara BB lebih (OR: 1,42; CI 95%: 1,26 – 1,60), obesitas (OR: 1,48; CI 95%: 1,34 – 1,63), dan obesitas sentral (OR: 2,67; CI 95%: 2,44 – 2,91) dengan Diabetes Melitus (P-value <0,001). Terdapat hubungan antara indikator antropometri dengan Diabetes Melitus pada orang dewasa di Indonesia. Diperlukan penyuluhan dan promosi kesehatan kepada masyarakat usia 18-65 tahun untuk mengontrol massa dan lemak tubuh dan melakukan aktivitas fisik secara rutin serta menjaga pola makan agar tidak berlebihan pada usia dewasa 18-65 tahun untuk mencegah Diabetes Melitus.

Abstract

Pati garut salah satu umbi lokal yang bebas gluten dan mudah dicerna tubuh. Pisang kepok tinggi akan vitamin C dan serat. Brownis garut dan pisang kepok perlu dikembangkan sebagai cemilan anak yang diet gluten, seperti kasus autisme. Penelitian ini bertujuan untuk menganalisis formulasi dan evaluasi organoleptik, kadar vitamin C, dan serat setiap perlakuan untuk mendapatkan formula terbaik. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan perlakuan proporsi pati garut : buah pisang kepok, yaitu F0 (0%:0%), F1 (25% : 75%), F2 (50% : 50%), F3 (75% : 25%) yang dilakukan pengulangan sebanyak 3 kali, uji statistik yang digunakan Friendman. Hasil penelitian ini menunjukkan F1 adalah formulasi terbaik dengan rasa paling manis, tekstur paling lembut, kadar vitamin C tertinggi sebesar 32,08 mg/100gr, kadar serat tertinggi 1,9%/100gr. Formula 1 dengan penambahan pisang kepok terbanyak memberikan rasa yang manis, memperbaiki tekstur, meningkatkan kandungan serat dan vitamin C. Pisang kepok terbukti efektif menutupi rasa hambar pada garut.

Abstract

Type 2 diabetes mellitus is a metabolic disease characterized by problems with insulin function, improper insulin, or a combination of both. The risk factors that influence FBG levels are dietary compliance, magnesium consumption, and stress levels. The purpose of this research is to determine the relationship between dietary compliance, magnesium consumption, and stress levels with Fasting Blood Glucose (FBG) levels. This research design uses a cross-sectional approach. The total number of subjects is 97 using purposive sampling techniques. The instruments used are the 24-hour food recall form, FFQ, SQ-FFQ, and Perceived Stress Scale questionnaires. Statistical analysis using the chi-square and multiple logistic regression tests. The research results indicate that there is a relationship between dietary compliance and FBG levels (p=0,000; OR=23,5). There is a relationship between frequency and magnesium intake with FBG levels (p=0,000; OR= 22,5 and p=0,000; OR= 61,5), and there is no relationship between stress levels and FBG levels (p=0,239). Magnesium intake is the most influential risk factor associated with FBG levels (p= 0,001; OR= 123,2). The conclusion of this study is that dietary compliance, frequency and magnesium intake are related to FBG levels, and stress levels not related to FBG levels.

Abstract

Latar Belakang : Provinsi Nusa Tenggara Timur (NTT) memiliki keunggulan komparatif dalam sektor peternakan dan perikanan. Selain itu, Provinsi NTT juga merupakan sentra ternak sapi dan babi. Namun, konsumsi protein penduduk Provinsi NTT relatif rendah di Indonesia. Kondisi ini juga diduga menjadi penyebab Provinsi NTT memiliki angka prevalensi stunting tertinggi di Indonesia. Tujuan : Oleh karena itu, penelitian ini memiliki tujuan untuk mengetahui gambaran umum, determinan, serta elastisitas pendapatan dan harga dari konsumsi protein hewani di Provinsi NTT Tahun 2018 sampai 2023. Metode : Analisis yang digunakan pada penelitian ini yaitu analisis deskriptif dan regresi data panel double-log. Hasil : Seluruh komoditas protein hewani dipengaruhi secara signifikan oleh harga dan pendapatan. Selain itu, rata-rata lama sekolah juga berpengaruh secara signifikan terhadap konsumsi daging, telur, ikan, dan susu bubuk. Rata-rata jumlah anggota rumah tangga hanya berpengaruh signifikan terhadap konsumsi telur. Seluruh komoditas protein hewani bersifat inelastis terhadap perubahan harga. Sementara itu, komoditas yang bersifat elastis terhadap perubahan pendapatan adalah daging dan susu cair. Kesimpulan : Peningkatan pendapatan penduduk, stabilisasi harga komoditas protein hewani, dan kampanye edukasi mengenai gizi perlu untuk dilakukan agar meningkatkan konsumsi protein hewani di Provinsi NTT.

Abstract

Background: Native chicken liver flour is a food ingredient obtained from Native chicken liver.Native chicken liver is one of the food ingredients that contains high iron. The utilization of chickenliver flour is done in the form of cookies, which is a snack that is often consumed by the communityand can be a side dish. Objective: Analyzing the comparison of the acceptability of cookies on the characteristics of color, taste, aroma, and texture of 4 formulas. Methods: This research used a complete randomized design (CRD) type of experimental research with 1 control and 4 (four) treatments and data processing using ANOVA test and Duncan's further test using Statistical Program for Social Science (SPSS). Results: The results of hedonic test analysis using ANOVA showed that F0, F1, F2, F3 there were significant differences in color, taste, aroma, and texture significance 0.000 (p < 0.05). While the results of the organoleptic quality test analysis using ANOVA show that F0, F1, F2, F3 show that there are significant differences in color, taste, and aroma with a significance of 0.000 (p < 0.05). However, there is no significant difference in texture significance 0.358 (p>0.05). Conclusion: There is a comparison of the acceptability and characteristics of cookies with the addition of Kampong chicken liver flour and kepok banana flour in each treatment. F3 became the selected formula because it obtained the highest value in the parameters of color, taste, aroma, and texture

Abstract

The prevalence of obesity continues to increase due to changes in energy balance caused by various factors. Risk factors for obesity consist of heredity, diet, lack of physical activity, age, gender and socio-economic factors. This study aims to determine the relationship between consumption of instant noodles, junk food and physical activity with the incidence of obesity in adolescents at SMKN 3 Bogor. This research used a cross-sectional design and was conducted on March 22 – June 12 2024 at SMKN 3 Bogor. The number of subjects selected in this research was 114 people using purposive sampling technique. The Spearman test results show that there is a significant relationship (p<0.05) between pocket money, junk food consumption and physical activity with the incidence of obesity in teenagers at SMKN 3 Bogor. On the other hand, the Spearman test results showed that there was no relationship (p>0.05) between age, gender and instant noodle consumption and the incidence of obesity in adolescents at SMKN 3 Bogor.
