Abstract

This study evaluated how the sequence of osmotic–thermal processing and the drying method influence the sensory quality of candied ginger slices. We designed four processing treatments (P1–P4) that differed in the order of sugar contact and heating, as well as the end-step method (drying or sugar crystallization). Twenty panelists rated color, aroma, taste, texture, and overall liking on a 1–5 hedonic scale. We assessed differences among treatments using the Friedman test (α = 0.05). We selected the best treatment using a modified De Garmo effectiveness index with weighted sensory parameters. The results showed significant treatment effects across all main sensory attributes. P4 consistently achieved the highest acceptance scores and demonstrated a more favorable profile in derived attributes noted by panelists, including a more uniform appearance, a more pleasant aroma, a better-balanced taste, and a more acceptable bite. Consequently, P4 produced the highest total effectiveness score in the De Garmo selection. These findings indicate that optimizing the osmotic thermal sequence  particularly when finalized through controlled crystallization can enhance consumer acceptance and support more consistent product quality for small-scale to semi-commercial production.

Abstract

This study analyses the operational strategy for controlling the temperature of asphalt 60/70 cargo on the asphalt tanker MT LG Asphalt 2 during an eight-day voyage from Sungai Udang (Melaka) to Anggrek (Gorontalo Utara). Temperature control is critical to maintain cargo pumpability, product quality, energy efficiency, and operational safety. The research adopts a single case study with a descriptive–quantitative approach. Cargo temperature data were collected every 24 hours and combined with boiler operation records to formulate four basic heating actions (no heating, one boiler, two boilers 24 h, two boilers 48 h). These actions were then arranged into eleven heating strategies for an eight-day voyage. For each strategy, the final average cargo temperature and total fuel consumption (LSMGO/LSMFO) were calculated and compared with the voyage instruction requirement of 135–140 °C at discharge. The results show that no heating causes a temperature drop of about 3 °C/day, whereas continuous operation of two boilers is energy intensive. Among the eleven models, Strategy No. 11 (A–0–C–A–C–0–A–A) is the most optimal, achieving a final temperature of about 140 °C with moderate fuel use. The study recommends an intermittent, data-driven heating pattern as a practical basis for standard operating procedures on asphalt tankers.

Abstract

This qualitative research aims to analyze the role of green strategy and green innovation in improving sustainability performance, and to reveal how digital transformation affects this relationship in the context of modern business competition so that it can be a guide for managers in making strategic decisions to determine investments and their types. Data collection techniques were carried out systematically through qualitative techniques which included literature studies and documentation. The existing literature has not adequately integrated sustainability strategies with digital transformation as a determinant of green strategy effectiveness. The novelty of this research is that most studies only examine the direct or mediating effects of digital transformation, whereas this study examines its moderating effects. Based on the research results, all 4 hypotheses can be accepted, namely green strategy has a positive effect on green innovation, green innovation has a positive effect on sustainability performance, green strategy has a positive effect on sustainability performance, green strategy has a positive effect on sustainability performance and green strategy has a positive effect on sustainability performance with the moderating effect of digital transformation. The implementation of the right green strategy will facilitate the implementation of green innovation and contribute to sustainable development goals as well as promote environmentally responsible businesses in the global market by adopting digital transformation to address environmental issues, respond to consumer demands, save costs and comply with government regulations.

Abstract

The hospital work environment, particularly the Emergency Department (ER) and the Sanitation Waste Management Department (IPLS), has various potential hazards that can threaten the safety of staff. This study aims to identify potential hazards, assess risk levels, and determine occupational risk controls using the HIRADC method at Meuraxa Regional General Hospital. This quantitative study with a descriptive observational approach used a facility observation checklist and semi-structured interviews with staff. Data collection was conducted from June 1–16, 2025, through observation, documentation, and interviews. Risk analysis was based on likelihood and severity, then classified into low, medium, and high risks. The results showed a higher risk of infectious diseases among ER staff (57.1%) compared to ER staff (28.6%). In the ER, moderate–high risks were found in unfastened oxygen cylinders, dusty defibrillators, dirty suction pumps and HFNCs, and portable X-rays without radiation protection. Dominant risks included needlesticks, infection exposure, ampule injuries, limited PPE, noise, aggressive patients, and confined spaces. At the IPLS, high risks are found in the electrical panels and water pumps, and moderate risks are found in the filters and storage areas. The HIRADC method is considered effective and needs to be supported by strengthened controls, OHS training, and strict SOPs.

Abstract

Gelumpang Pirak Village has various work programs covering infrastructure development, public services, and economic empowerment funded through the village budget. However, the monitoring and budget management processes are still carried out semi-manually, resulting in reporting delays, limited transparency, and suboptimal allocation of funds based on actual activity needs. This study aims to design and develop a web-based work program monitoring information system integrated with the Activity Based Budgeting (ABB) method. The research method used is Research and Development (R&D), while the system development applies the Waterfall model consisting of requirement analysis, system design, implementation, testing, and maintenance stages. The implementation of the ABB method enables budget allocation based on activities, allowing each cost component to be traced in a more detailed and measurable manner. The system was developed using the PHP programming language and MySQL database, featuring program management, activity and resource recording, budget realization monitoring, comparative reports of budget and realization, and a public dashboard. The implementation results indicate that the system is able to automatically and in real-time detect budget variances and accelerate the monitoring and reporting process by approximately 60% compared to the previous manual method. Functional testing using Black Box Testing shows a validity level of 100% across all test scenarios. Therefore, the developed system is not only technically feasible but also effective in improving efficiency, transparency, and accountability in managing village work programs and budgets.

Abstract

Ineffective drug inventory management may result in overstock and stock shortages that disrupt healthcare services and reduce operational efficiency. This issue was identified at Klinik Pertamina, particularly in managing Lansoprazole stock, which demonstrates fluctuating demand patterns across periods. This study aims to design and implement a web-based drug forecasting system using the Single Moving Average (SMA) method to support accurate and data-driven procurement planning. The system was developed following the Waterfall model, consisting of requirement analysis, system design, implementation, testing, and maintenance. Forecasting accuracy was evaluated using Mean Absolute Deviation (MAD) and Mean Squared Error (MSE) as quantitative error indicators. Based on nine forecasting periods, the system produced a MAD value of 291 and an MSE value of 146,184. These results indicate that the SMA method with parameter N = 3 is capable of generating relatively stable predictions despite significant demand fluctuations in certain periods. The novelty of this research lies in integrating the SMA method into a web-based information system that automatically computes forecasting results and error metrics to support practical decision-making. Therefore, the proposed system contributes to improving inventory control, minimizing stock-related risks, and enhancing operational performance at Klinik Pertamina.

Abstract

The Indonesian maritime service industry operates within a project-based ecosystem characterized by high operational complexity and contractual performance demands, positioning service quality as a strategic determinant of customer satisfaction. This study aims to analyze the influence of administrative performance, project performance, marketing management, and price perception on customer satisfaction at PT PNEP using a Structural Equation Modeling–Partial Least Squares (SEM-PLS) approach. This research employed a quantitative design with a positivistic paradigm and surveyed 96 customers who completed contracts during 2020–2022. Data were collected through structured questionnaires comprising 29 indicators measured on a five-point Likert scale and analyzed using SmartPLS version 4. The measurement model demonstrated adequate convergent and discriminant validity, with all retained indicators achieving loading factors above 0.70 and AVE values exceeding 0.50. The structural model indicated that project performance and price perception had positive and significant effects on customer satisfaction, while administrative performance and marketing management were not statistically significant. Price perception emerged as the most dominant determinant (β = 0.517; p < 0.001), and the model explained 63.1% of the variance in customer satisfaction (R² = 0.631). In conclusion, customer satisfaction in project-based maritime services is primarily driven by core value factors, particularly project performance and perceived price fairness.

Abstract

This research relies on the analysis of fat content from the food replacement product (x) and lotus root (nelumbo nucifera) fermentation by utilizing the Soxhlet method. The experiment was conducted by extraction using n-hexane solvent for six hours. The fat content was determined based on the difference in weight after extraction. The findings showed that the fat content in the food replacement product (x) reached 63.60%, while in the lotus root fermentation it was 89.19%. These high numbers are influenced by the composition of the ingredients used, the effectiveness of nonpolar solvents, as well as changes in the matrix structure due to fermentation which increases lipid accessibility. The fermentation process, which lasted for 22 days, enhances enzymatic effectiveness that damages cell walls, thereby facilitating the extraction of lipophilic compounds. The results of this study indicate that fermentation can increase the measurement of fat in plant-based food materials, but the figures obtained reflect the fat that was successfully extracted, not pure fat. According to regulations in Indonesia, there is not yet a maximum limit for fat content in foods for special nutritional needs.

Abstract

Consumption of sugar-sweetened beverages (SSBs) among adolescents is increasing and has the potential to affect the quality of nutritional intake. This study aims to determine the relationship between SSB consumption habits and nutrient density values among public high school students in the city of Surakarta. This study is an observational analytical study with a cross-sectional design. The sample size in this study was 274 students selected using simple random sampling. Primary data were collected using a Food Frequency Questionnaire (FFQ) to describe SSB consumption frequency during the past month. Data were also obtained through a 24-hour food recall interview method over three non-consecutive days, consisting of two school days and one weekend day, to describe the respondents' daily food intake. Nutritional intake data were analyzed using NutriSurvey software and the Indonesian Food Consumption Table (TKPI), then used to calculate nutrient density values using the Nutrient Rich Food Index (NRF 9.3) method. Data analysis was performed univariately to describe the distribution of research variables and bivariately using the Spearman's rank correlation test. The results showed that there was a significant relationship between SSB consumption and nutrient density (p = 0.012) with a correlation coefficient of p = -0.151, indicating a very weak relationship. These findings indicate that increased SSB consumption tends to be associated with a decline in the quality of dietary intake among adolescents. Therefore, nutrition education and increased awareness in choosing healthier beverages are needed to support improvements in the quality of nutritional intake among adolescents.

Abstract

Land identity data management at the village level often faces obstacles in terms of access speed, document security, and data accuracy due to the conventional archiving system. This study aims to design and build a web-based Land Identity Information System (SIDENTAH) in Mangunarga Village, Cimanggung District, Sumedang Regency. The system development method used is Rapid Application Development (RAD), which was chosen because of its ability to accelerate the development cycle through the stages of requirements planning, user design, construction, and cutover. The use of RAD allows the active involvement of village officials in the prototyping process so that the resulting system is in accordance with operational needs in the field. The results of the study indicate that SIDENTAH is able to integrate land data into a centralized digital database, simplify the process of searching for land information, and minimize the risk of losing physical documents. Based on User Acceptance Testing by village government employees, the system is stated to function very well  worthy of implementation to improve the efficiency of land administration in Mangunarga Village.
