Abstract

Coffee is a kind of drink that comes from the processing and extraction of coffee beans. In the production of coffee powder, the flavor is the essential quality because flavor affects consumer preferences. To produce a coffee drink that has a distinctive flavour, that is by combining robusta coffee beans and black glutinous rice. The purpose of this study was to determine the best treatment combination of temperature and roasting time of robusta coffee beans and black glutinous rice on the quality of the coffee powder. The research design used RAK which was arranged in a factorial manner of two factors, namely roasting temperatures of 190°C, 200°C, 210°C, and roasting times of 10, 15, and 20 minutes, to obtain 9 treatment combinations, 3 replicates. The research data were analyzed statistically by the ANOVA test, followed by the BNJ test. While the hedonic quality test is analyzed using the Friedman method. The Effectiveness Index test does determination of the best treatment. The best quality of coffee powder is produced at a temperature and roasting time of 200°C 20 minutes, namely the yield of 8.40%, the water content of 1.39%, ash content of 3.80%, the caffeine content of 1.33%, total antioxidants 71.87%, organoleptic characteristics, namely flavor 3.73 (strong), acidity 3.40 (quite sour), body/mouthfeel 3.67 (thick) and color 3.53 (black).

Abstract

Objective: Stunting is a major health emergency in most developing countries, including Indonesia. The total number of stunting children in 2019 in Enrekang Regency is quite high at 44.8%. Therefore, this study aims to determine the relationship between maternal knowledge, maternal education level, and the number of family members with the incidence of stunting in elementary school children in rural Enrekang, South Sulawesi. Method: An analytical observational study with a cross sectional approach. The subjects of the study were the mother and her child aged 6-12 years. Data collection using microtoa and questionnaires. 100 total samples were collected based on purposive sampling method. Data analysis using chi-square. Results: This study shows the proportion of stunted children 72.0%, maternal knowledge less 90.0%, low maternal education 66.0%, family size 95.0%. The results of statistical tests showed a significant relationship between maternal knowledge (p = 0.027) and the incidence of stunting. Meanwhile, the level of maternal education (p = 0.992) and the number of family members (p = 0.919) are not related to stunting events. Conclusion: There is a significant relationship between maternal knowledge and stunting events. Increasing health knowledge and nutritional awareness in mothers through health promotion, stunting education with posters and the distribution of leaflets on sustainable stunting is a toll road in tackling chronic nutrition in children in rural Enrekang

Abstract

The Kawua Health Center is one of the health centers in Poso Regency with the highest rabies-transmitting animal (RTA) bite cases in 2019 and is very disturbing to the community. Bites of Rabies Transmitting Animals (RTA) are risky for transmitting the rabies virus to humans, so an effective and efficient response is needed. The purpose of the study was to obtain information on the behavior of handling Rabies Transmitting Animal Bites in the working area of the Kawua Health Center, Poso Regency. Data collection was done by in-depth interviews involving 15 research informants determined by the purposive sampling technique. The results showed that the informants' knowledge was still not good regarding rabies, both in terms of prevention and control of RTA bites. The attitude of the informant was not good in carrying out first aid measures and prevention efforts before RTA bites occurred. Also, the role of health workers was not good in preventing and controlling rabies cases in the working area of the Kawua Health Center. Families play an important role in controlling rabies by providing informational, emotional, and instrumental support. It is recommended for the Kawua Health Center staff to improve the prevention and control of RTA bites cases further

Patient satisfaction is a measure of service quality in hospitals. Satisfaction can be influenced by various aspects, one of which is patient characteristics. The purpose of the study was to analyze the relationship between the Characteristics of Class 3 Inpatients and Service Satisfaction at Mokopido General Hospital, Baolan, Tolitoli Regency. This type of quantitative research with a Cross-Sectional approach. The population in this study amounted to 1,178 patients; a sample of 93 patients was obtained using the slovin formula, while sampling was using the Proportionate Stratified Random Sampling technique. The analysis used was the Contingency Correlation with a value of =10%. The results of this study indicated a strong relationship between patient characteristics in the form of last education (p = 0.000) and age (p = 0.000) with service satisfaction. There is a strong relationship between age group, education and service satisfaction at Mokopido General Hospital, Baolan, Tolitoli Regency. Older respondents are more satisfied with their services. Respondents who are not educated are more satisfied with the services received. Abstract

Eel fish (Anguilla marmorata (Q.) Gaimard) on Silver eel phase contains unsaturated fatty acids such as omega-3, omega-6, EPA, DHA and vitamin A which is known to overcome various functions of body tissues. The high content of fatty acids will facilitate oxidation, making it difficult for storage and causing rancidity, thus creating a new innovation such as being formulated into cream. This study aims to formulate the silver eel (Anguilla marmorata (Q.) Gaimard.) Oil extracts in the form of cream dosage preparations and evaluates the cream dosage using physical test parameters to maintain the quality of the cream produced. This study used laboratory experimental methods and the cream formulations were made in 4 formulas, they are F0, F1, F2 and F3 with the respective concentrations of stearic acid emulsifier 6%, 8%, 10% and triethanolamine 2%, 2%, and 3.5. %, and F0 as negative controls. The result obtained test showed that the F3 positive control cream preparation met the organoleptic requirements, the result of homogeneity test was homogeneous and there were mo coarse particles, the dispersion of the cream was 6.87 cm (5-7 cm), adhesion of the cream was 4.21 seconds (>4 seconds), cream pH was 6.25 (4.5-6.5). The F3 formula gave a significant value to the characteristics of the cream

Abstract

Acute Respiratory Infection (ARI) is one of the causes of high morbidity and mortality, especially in toddlers. The study purpose was to determine the susceptibility of ARI among children under five in these locations by considering the physical condition of houses (ventilation, density of occupancy, types of floors and walls). This research uses an ecological study with a Geographic Information System (GIS) approach. The research population in Talise health centre was 622 toddlers (sample 86) and Singgani health center was 1,167 toddlers (sample 93), samples were taken by Proportional Stratified Random Sampling based on the number of cases in each urban village in the study area. The results showed both of Talise and Singgani health centers the physical aspect of the houses was not associated with the incidence of ARI in children under five. Ventilation area with ρ-values 0.77 and 1.00, density with ρ-values 0.77 and 1.00, floor types with ρ-values 0.33 and 0.37, and wall types with ρ-values 0.75 and 1.00. Based on the results of the mapping at the two locations, it was found that the most vulnerable locations to ARI in infants with the highest number of vulnerable from all aspects of the physical condition of the house including ventilation area, occupancy density, type of floor, and type of wall were in the working area of the Singgani Health Center

This type of research was qualitative with a case study approach. The informants in this study consisted of key informants (the Head of the Pharmacy Installation of the Sigi Regency Health Office), the usual informants (the Pharmacy Installation Staff of the Sigi Regency Health Office), and ordinary informants (the person in charge of managing the pharmacy installation at the Public Health Center). Data collection through triangulation techniques, including in-depth interviews, observation, and documentation using interview guidelines. The results showed that the implementation of drug logistics management at the Pharmacy Installation of the Sigi Regency Health Office in terms of planning, budgeting, procurement, storage, distribution, and elimination, was appropriate as it should be but still had some obstacles. So it is still necessary to improve the implementation of logistics management that is more effective and efficient. It is recommended that the coordination of the Sigi Regency Health Office and the Public Health Center is more optimal in the implementation of drug management.
