Abstract

Hard and crunchy textures are specific properties of fried product prefered by consummers. To have hard and crunchy textures being appropriate with consummer taste, it is necessary to pay attantion the raw material and the changes occurred during frying process. The objective of this research is to study the effect of temperature and pressure on the texture of fruit chips during vacuum frying process. The samples are jack fruits fried at temperature of 90 and 100OC, with frying duration of 15-16 minutes at vacuum pressure of 10 and 15 kPa. All water in products is assumed to be free water causing texture change if the water is removed. The observed parameters are hardness, crunchiness, water content, temperature, and vacuum pressure. The research result showed that temperature and vacuum pressure affected hardness, cruchiness and water vaporization of product during frying. The changing rates of hardness and crunchiness were affected by vaporizing rate of free water according to water content in product. The model of hardness and crunchiness changes as a fuction of water vaporization could be used to predict changes of hardness and crunchiness of product during vacuum frying process. Keywords: temperature, pressure, water content, hardness and crunchiness

Abstract

Whitening cream is a mixture of chemicals and other ingredients such as ingredients that resist sunlight (SPF) and antioxidants such as vitamin E, which can whiten or lighten black spots on the skin. With so many medicinal ingredients on the market that are easily found, many manufacturers add harmful ingredients that are not suitable for use in cosmetic products, one of which is facial whitening creams. The use of dangerous ingredients in facial whitening creams will cause unwanted things such as skin irritation, black spots appearing, poisoning to cause skin cancer. This study aims to determine the content and amount of mercury (Hg) and hydroquinone levels in whitening creams seen in traditional markets in Palu City. The sample of facial whitening cream under study was taken based on the purposive sampling method with the criteria of the sample that did not have a registration number, did not have an MUI halal certificate, did not contain active ingredients and did not have a BPOM number. Testing of hydroquinone levels was carried out using the Gas Chromatography-Mass Spectrometry (KGSM) method and testing for mercury (Hg) levels using the Atomic Absorption Spectrophotometer (AAS) method along with the additional MVU (Mercury Vaporizer Unit) method. Based on the measurement results, it was found that the highest levels of mercury (Hg) were sample B = 44.06 μg / g and the lowest was sample G = 13.89 μg / g and the results of hydroquinone levels were all negative. Of all the samples that have been studied all contain mercury (Hg) and negative contain hydroquinone.

Abstract

Eel is one kind of fish which contain albumin. Albumin is useful in the formation of new body tissue during growth and can accelerate the healing of body tissue. This study aimed to determine levels of albumin in the eels (Anguilla marmorata and Anguilla bicolor) as well as its effect of open wound healing tested at various concentrations. The albumin levels were determined using Bromocresol green method with three times repetition. The results showed that average albumin levels of Anguilla marmorata was 13,269 mg/100 g and Anguilla bicolor was 8,998 mg/100 g. Eel extract with the highest level of albumin was continued to pharmacological tests using 5 rabbits which had been open-wounded in 5 areas. Each rabbit was then given 5 treatments. The first two rabbits got positive control containing povidone iodine and negative control (ointment base), while the other three got albumin extract successively at concentration of 5%, 10% and 15%. The wounds were observed on days 1, 3, 5, 7, 10, 12, and 14. The data analysis for albumin levels was done using Independent T test and for open wound healing percentage using One Way ANOVA. The analysis results showed a significant difference of albumin levels between Anguilla marmorata and Anguilla bicolor and it found that the highest level of albumin was in Anguilla marmorata species. The effective extract concentration of albumin in wound healing was at concentration of 5% with wound healing percentage of up to 100%
