Abstract

The background of this study is based on the high nutritional content of purple eggplant, such as fiber, vitamins, and antioxidant compounds, which have the potential to increase the nutritional value of cookies while reducing the use of wheat flour. The purpose of this study is to develop a healthier cookie formulation by utilizing purple eggplant as a partial substitution ingredient for wheat flour, as well as to evaluate its organoleptic quality and nutritional content. The method used is an experimental method with a complete random design (RAL). The manufacturing process includes processing purple eggplant into flour, formulation of ingredient mixtures, and organoleptic testing with trained panelists. Organoleptic testing involves assessing the taste, aroma, texture, and color of cookies. The results showed that the substitution of wheat flour with purple eggplant flour of up to 30% produced cookies with a crispy texture, sweet-medium taste, and a distinctive aroma that was liked by the panelists. The fiber and protein content of cookies is also significantly increased compared to cookies without substitution. In conclusion, the use of purple eggplant as a substitute for wheat flour in making cookies provides better nutritional benefits without reducing product acceptability. This innovation offers a potential healthy food alternative to be further developed in the snack food industry.

Abstract

Generally, construction support is provided directly by the government, but in this case, the government provides construction support through other toll road business entities. The provision of construction support through toll road business entities on the Terbanggi Besar – Pematang Panggang – Kayu Agung Toll Road has financially increased the investment feasibility parameters, including an increase in the IRR value to 12% from the original 9.36% before the provision of construction support; The NPV value with the provision of construction support has a better NPV value, which is Rp. 3,875 T compared to the NPV value without construction support of - Rp. 2,044 T; The value of the payback period without the provision of construction support is 22 years and 3 months and with the provision of construction support for 19 years and 5 months. However, in the implementation process, the quality of toll road infrastructure at construction support locations is not met, resulting in business entities still having to participate in bearing quality risks to construction work carried out by the government. Business entities receiving construction support must bear maintenance costs due to repairs to damage to the construction support site. However, the increase in maintenance costs, in general, did not have a significant effect on the investment feasibility parameters of the Terbanggi Besar – Pematang Panggang – Kayu Agung toll road project. The increase in maintenance costs affected the decrease in IRR by 1.4%. The NPV indicator also decreased by Rp. 198 billion or 5.1%. The payback period has also increased from 19 years and 5 months to 19 years and 8 months. However, the mechanism for providing construction support through business entities needs to be considered to ensure that the benefits of providing construction support can be felt to the maximum.

Abstract

The maternal mortality rate (MMR) is one of the indicators that shows how the quality of health services is. Based on the results of maternal and perinatal audits, in general, cases of death due to obstetrics can still be prevented if health service efforts are adjusted to standards. The ability of health service facilities to carry out early detection and readiness of health workers, especially midwives, is important in comprehensive and quality pregnancy, childbirth, and postpartum services through continuous midwifery services. ANC examination services are one of the four safe motherhood concepts carried out to reduce AKI and need to be carried out in an integrated manner to improve the quality of ANC services at Puskesmas. The low coverage of KIA services by health workers is linked to midwifery performance problems. Midwifery performance problems are greatly influenced by various factors. The purpose of this study is to further explore the determinant factors related to the performance of midwives in antenatal care (ANC) services in Puskesmas. The approach used in this study is a study of literature with data sources in the form of original articles published in national/international journals through electronic databases such as Google Scholar and Garuda. The results of the study show that the individual factors are significantly related, namely ability, experience, and age; psychological factors that are significantly related, namely attitude and motivation; significantly related organizational factors, namely leadership, remuneration, length of service, employee status, facilities, and workload. The results of this study can be used as input for health service provider institutions to improve the quality of midwives in providing antenatal care (ANC) services.

Abstract

Tempeh is a highly nutritious food source that is widely consumed by people every day. Tempeh artisans, such as those in Jatisari Village, produce quality tempeh through an optimal fermentation process. The ideal fermentation process takes place at a temperature of 30°C–35°C, a humidity of 65%–72%, and an ammonia gas content of 43–50 ppm, with a fermentation time of about 18 hours to produce cooked tempeh. To improve the efficiency and quality of the fermentation process, a tool that is able to control and monitor the condition of the fermentation chamber is needed automatically. This research develops a tempeh fermentation control and monitoring system using a NodeMCU microcontroller, relay, VNH2SP30, DHT11 sensor, and MQ-137 sensor, which are integrated with fuzzy logic. This system controls the incandescent lamp as a heater and the peltier as a cooler in the fermentation container compartment. Control and monitoring results are displayed in real-time via LCD and Android app, with the successful fermentation time shortened to 16 hours.
