Abstract

Abstract

It has been a regular practice in this part of the world to continually use spent edible oil and consumed it without knowing the harmful effects of such. Heating results in the formation of free reactive oxygen species (ROS) which is responsible for oxidative stress and changes to various organs in the body. The study aimed at investigating the changes caused on liver and kidney by consumption of repeatedly used (spent) oil and possible ameliorating potential of virgin coconut oil (VCO) on spent vegetable oil-induced liver and kidney changes in Wistar albino rats. Blood samples were obtained and assayed for biomarkers of liver and kidney damage; It was observed that spent vegetable oils induced severe damage on liver and kidney. While administration of virgin coconut oil significantly (p<0.05) reversed the changes induced by the spent oil as observed in the biomarkers AST, ALT, ALP, Urea, Creatinine, Uric acid, Total serum protein, Albumin. These findings suggest that VCO could ameliorate the adverse effect of consumption of spent oil on liver and kidney indices in rats.

Abstract

Crude fiber is the remainder of plant cell walls that are not hydrolyzed by human digestive enzymes. One fruit that contains fiber is Siamese oranges. Citrus fruit can be used in various types of preparations so that its shelf life is longer. Preserving citrus fruit can be done by processing oranges into orange marmalade. Marmalade is a semi-solid food that has a gel-like texture. Substitution using date juice can be done to increase the nutritional content of orange jam which has decreased due to the heating process during production. Therefore, this study aims to determine the fiber content in the Siam orange jam formulation as a substitute for sukari date juice. This research is an experimental study with a Completely Randomized Design (CRD) using the crude fiber test using the Weende method. The formulation of orange marmalade is carried out in 3 formulas with a ratio of orange flesh: orange peel and dates, namely F1 (100%:0); F2 (80%: 20%); F3 (85%: 15%). The research results showed that the most preferred formulation was F3 and the formulation with the highest crude fiber content was F3 with a content of 3%, followed by F2 with a content of 2.5% and F1 with a content of 2%.

Abstract

Background: Background: The prevalence of overweight and obesity among adolescents aged 16-18 years in East Java is 10.2% and 4.7% (SKI, 2023). Data from SSGI in 2022 shows that the prevalence of overweight in adolescents aged 15-18 years in East Java is 23%. This study was conducted on students as an effort to increase knowledge, change attitudes, and energy consumption, one of which is with nutritional interventions in the form of nutrition education. Objective: This study aims to determine the differences in knowledge, attitudes and energy consumption before and after online media-based nutrition education (VitaNutriHealth) in overweight students at SMAN 1 Bululawang Malang. Methods: This study used pre-experimental research with a quantitative approach with the design of One Group Pretest and Posttest Design conducted at SMAN 1 Bululawang Malang with purposive sampling technique and obtained a sample of 50 students. The intervention used was counseling using VitaNutriHealth media. Data collection instruments in the study used questionnaires and 24-hour recall forms. Data analysis used univariate, and bivariate using Paired Sample T-Test if the data is normally distributed and Wilcoxon Signed Test if the data is not normally distributed. Results and Conclusion: There is a significant difference between before and after nutrition counseling on knowledge, attitude and energy consumption of overweight students at SMAN 1 Bululawang Malang (p=0.000).
