Abstract

The prevalence of overnutrition among adolescents in Indonesia is elevating due to overeating and incativity. Adequate nutritional knowledge helps adolescents in choosing healthy foods and doing physical activities. This study aims to identify the relationship between knowledge of dietary guidelines, physical activity, and nutritional status of the students of SMA Negeri 1 Bandar Lampung. The study design used was cross-sectional design. The study was conducted in April 2022 with a total sample of 85 respondents which were recruited by using the simple random sampling technique. Data of dietary guidelines knowledge were collected by using a validity-and-reliability tested questionnaire and data of physical activity were collected by using IPAQ (International Physical Activity Questionnaire), while antropometric measurement was carried out to determine nutritional status. Chi-Square test and Fisher Exact test with 0.05 as the level of significancy were done in statistical analysis. The results show that majority of the students had inadequate knowledge of dietary guidelines (51.8%) and had heavy and moderate physical activity (42.4% and 41.2%). There was also 25.9% of overweight students. There were no significant relationship between knowledge of dietary guidelines and physical activity (p-value = 0.901) and knowledge of dietary guidelines and nutritional status (p = 0.451). Nevertheless, there was a significant relationship between physical activity and nutritional status (p=0.029). The education about 4 pillars of balanced nutrition, particularly "Isi Piringku" and physical activity were critical to improve the nutritional status of adolescents.

Abstract

The main cause of iron nutritional anemia in women is the lack of dietary iron (Fe) intake. Iron intake can be obtained from foods such as biscuits. Moringa flour and mung bean flour added as biscuit ingredients can be used as a high-iron snack in an effort to increase iron intake in adolescent girls. This study aims to determine the effect of the formulation of Moringa flour and mung bean flour on organoleptic properties and iron content. This research is an experimental study with a formulation ratio of F1 75%: 25%, F2 50%: 50% and F3 25%: 75%. The organoleptic test was carried out by 30 moderately trained people, then the best results were tested for iron levels by the ICP-OES (Inductively Coupled Plasma-Optical Emission Spectrometry) method. Data analysis used the Kruskal Wallis test, followed by the Mann Whitney test method. The biscuit that has the highest score is the F1 formulation with a ratio of moringa flour and mung bean flour 75%: 25%. One serving is 60 grams and can meet 24% of iron needs. The results of the statistical test found a value (p (0.000) < (0.05)) which means that there is an effect of the formulation of Moringa flour and mung bean flour on the taste of biscuits, and there is an effect on aspects of taste, aroma, and texture of biscuits. This research can be continued by improving the texture of the product to further increase its acceptability and conducting research on the target.

Abstract

One of many eating behavior problems is the lack of vegetables and fruit consumption. The lack of knowledge decrease personal ability in implementing the nutritional information in daily life. Nutrition Education is one of the effort to overcome the vegetable and fruit consumption problem. This study aims to see the effect of Nutrition Education using Android based application "My Food Record" media for the vegetable and fruit consumption and knowledge to the teenager in SMPN 8 Cimahi. The study design was Quasi-Experimental using pretest and posttest with control group of purposive sampling, each group consist of 20 people. The average score of Vegetable and fruit knowlede achieved before intervention is 40.33 and after intervention is 48.00. The average vegetable consumption per day before intervention is 108.93gr while after intervention is 123.12gr. In addition, the average fruit consumption per day before intervention is 294.23gr and after intervention is 341.86gr. T-test and Wilcoxon test show there is a significant effect on Vegetable and Fruit Knowledge (p=0.000 and 0.0008), meanwhile there is no significant effect on the Vegetable (p=0.600 and 0.811) and Fruit (p=0.802) consumption on both groups. The result of independent test, T-test and Mann Whitney shows no significant different of average vegetable and fruit knowledge (p=0.348), vegetable consumption (p=0.477), and fruit consumption (p=0949). The nutrition Education is able to increase the vegetable and fruit knowledge and consumption eventhough it is not statistically significant. Nutrition education of fruit and vegetable using this android based application needs a continuation to achieve the knowledge upgrade and positive behavior change.

Abstract

Egg Roll based on fermented glutinous black rice and dragon fruit is a snack product high in fiber and antioxidants. The purpose of this study is to determine the three best formulations and to determine the effect of different balances on the preferences levels, fiber content, anthocyanin, and antioxidant activity.  The design of this study is an experimental with Completely Randomized Design (CRD). The research method uses hedonic test for preference level, enzymatic gravimetry for fiber, differential spectrophotometry for anthocyanins, and Uv-Vis DPPH spectrophotometry for antioxidant activity. This study involved 30 moderately trained panelists who were students of the Department of Nutrition, Poltekkes, Ministry of Health, Bandung. The data were analyzed using the Kruskal Wallis Test and continoud with the Man Whitney Test. The results of the hedonic test show that formula 1 with a balance of 30% fermented glutinous black rice: 70% dragon fruit has the highest level of preference in aspects of color, taste, aroma, texture, and overall. The results of the Kruskal Wallis test show that there are differences in aspects of color, taste, aroma, texture, and overall. The highest fiber is found in formula 3 which is 6.31 g/100g. The highest anthocyanin is found in formula 3 which is 22.64 mg/100g. The antioxidant activity of IC 50 is 186.15 ppm. This product can be developed as a snack source of fiber and antioxidants.

Abstract

Anemia can be said to be one of the health problems faced by many Indonesian teenagers, based on the 2018 RISKESDAS data, it can be seen that there is a trend of increasing prevalence of anemic teenagers, namely there are 32% of teenagers in Indonesia who experience anemia. One form of anemia prevention is to increase the intake of foods high in iron and increase the nutritional content of food products. Katuk leaves contain 6,4 g protein and 3,5 mg iron and green beans contain 22,9 g protein and 7,5 iron. Katuk leaves and mung beans can be processed into boba. This study aims to determine the organoleptic quality (color, aroma, taste, texture and overall), protein and iron content of katuk leaf and mung beans boba. The design of this study is experimental. The analyzed quality of boba was organoleptic, protein and iron content. The organoleptic tests were carried out on three balances of katuk leaves and green beans using hedonic tests, namely F1 (70%:30%), F2 (50%:50%) and F3 (30%:70%). Organoleptic test results conducted by 30 quitewell-trained panelists showed the best formula of organoleptic was F1. In 100 gr of boba katuk leaves dan mug beans content 1,65% protein and 1,36 iron. Boba katuk leaves and mung beans can be used as alternative snacks for anemic teenagers.

Abstract

Background: Chronic Kidney Disease (CKD) is a disease that attacks the kidneys and the condition gradually worsens, becomes chronic or persistent, and lasts a long time. The prevalence of chronic kidney disease cases in Indonesia according to basic health research (Riskesdas) in 2018 was 0.38%. Hypertension is one of the risk factors often found in kidney failure. Prolonged increase in blood pressure in arterioles and glomeruli will cause sclerosis of blood vessels. Case: Mr.U aged 50 years experienced nutritional problems inadequate oral intake, changes in urea and creatinine values, and wrong behavior about food during hospitalization patient's medical diagnosis are CKD and hypertension. Results and Discussion: Providing an initial low protein diet of 0.6 and then at the end of treatment to high energy high protein on HD 1.2 gr/kg ideal body weight in a soft form adapted to the patient's ability has purpose to increase patient intake. The dietary requirements given at the beginning of the intervention were energy 2047.5 kcal, protein 35.1 g, fat 68.25 g, carbohydrates 323.5 g. The results of monitoring and evaluation showed that during observation on the third day, the patient's energy intake reached 75%. The results of urea and creatinine also decreased, physical/clinical showed reduced tightness but still experienced post-hemodialysis nausea. Collaboration was carried out together with doctor, nutritionists, nurses, and waiters. During the intervention, education, and counseling were also provided regarding the patient's eating arrangements. Conclusion: the intervention provided can overcome some of the patient's nutritional problems.

Abstract

Onde Ketawa made from purple sweet potato flour and mocaf flour is a high-fiber food product. The purpose of this study was to determine the formulation of purple sweet potato flour and mocaf flour on the quality of onde ketawa as a food interlude that contains high fiber so that it can be given to Diabetes Mellitus patients. The design in this study was experimental with a completely randomized design (RAL). The research method used was hedonic test for liking level and gravimetric enzymatic for food fiber content test. This study involved 30 moderately trained panelists. The data analysis used was Kruskal Wallis then continued with the Mann Whitney test. The hedonic test results showed that formula 2 with a balance of 50% purple sweet potato flour: 50% mocaf flour had the highest level of liking in the aspects of color, taste and overall. The results of the Kruskal Wallis test showed that there were differences in the aspects of taste and overall. The fiber contained in formula 2 is 10.6 grams per 100 grams. Further research needs to be done to determine the IG value of onde ketawa products.

Abstract

chool-age children are vulnerable to nutritional deficiencies of fiber and vitamin C because they consume less vegetables and fruit. One effort to prevent fiber and vitamin C deficiency is making ice cream products that contain high levels of fiber and vitamin C where the additional ingredients are obtained from brown rice bran and crystal guava. The aim of this research is to determine the effect of red rice bran and crystal guava formulations on the quality of ice cream products including organoleptic properties, fiber content and vitamin C levels. This study used one-factor completely randomized design with 3 formulations of brown rice bran and guava crystals namely F1 (15%:85%), F2 (25%:75%) and F3 (35%:65%). The research method used the hedonic test to determine the organoleptic properties, enzymatic gravimetry for the fiber test and iodimetri titration for the vitamin C test. Formula F1 (15%:85%) was the best formula that contains 5.19 g of fiber and 38.4 mg of vitamin C, thus fullfilled a daily requirements of fiber and vitamin C for elementary school children approximately 20% and 80% in one serving (80 g). The Kruskall Wallis test revealed that there was an effect of different formulations of red rice bran and crystal guava ice cream on the color, taste and overall of the ice cream (p<0.05). The production cost of F1 ice cream is IDR 3,000/80 g. Red rice bran and crystal guava ice cream products should be subjected macronutrient analysis in the laboratory using proximate testing.

Abstract

Background: Balanced nutrition is a daily food composition that contains nutrients both types and amounts according to body needs. Balanced nutrition is needed to student for their growth period. Most of elementary school student do not know about balanced nutrition because they are still focused on the concept of “4 sehat 5 sempurna” where they think that eating rice should be more than side dishes and vegetables, even some said that drinking milk alone is enough and does not need other food. Purpose: This research aims to determine the effectiveness of providing nutrition education using flashcard and powerpoint media on increasing knowledge, attitudes and behavior of balanced nutrition in students of SDN Pasirkaliki Mandiri 2 Cimahi. Method: The research design used was a quasi-experimental with pre-test and post-test control group. The sample using purposive sampling with 62 samples. Statistical analysis using Paired T-Test, Wilcoxon and T-Independent. Results: The results shows that there is an increase in knowledge about balanced nutrition in the intervention group (p=0.000) and the control group (p=0.000), attitudes in the intervention group (p=0.014) and the control group (p=0.004), behavior in the intervention group (p=0.004) and there was no increase in behavior regarding balanced nutrition in the control group (p=0.398). Conclusion: There is no difference in the average increase in knowledge, attitudes and behavior of balanced nutrition between flashcard educational media and powerpoint media. Recommendation: Flashcard educational media needs to be redeveloped both from the appearance and from the choice of language used to attract students so as to get better results. Abstract

Adolescent girls are at high risk of experiencing nutritional problems, one of which is chronic energy deficiency (CED). Inadequate nutrient intake during adolescence will have an impact on health in subsequent life stages, namely adulthood (pregnant mothers) and old age. One of the efforts that can be done to address nutritional problems in adolescent girls is to change their behaviors by enhancing their knowledge through nutrition education. One of the nutritional education media used for targeting adolescent girls is the social media platform Instagram. The aim of this research was to determine the effect of balanced nutrition counseling using the social media platform Instagram on knowledge, energy intake, and protein intake among high school adolescent girls. The intervention was conducted for a total of 9 days over a period of 18 days. This study is a quasi-experiment with a two-group pre-test and post-test design. The treatment group was provided with the social media platform Instagram, while the control group was provided with PowerPoint media. The sample size consisted of 64 participants divided into two groups: the treatment group and the control group, using purposive sampling method. The data were analyzed using the Wilcoxon test, Dependent t-test, Independent t-test, and Mann-Whitney test. The research findings revealed that there was an influence of nutrition counseling on knowledge, energy intake, and protein intake in the treatment group. Similarly, there was an influence of nutrition counseling on knowledge, energy intake, and protein intake in the control group. There was a difference in knowledge between the treatment group and the control group among adolescent girls. However, there was no difference in energy intake and protein intake between the treatment group and the control group among adolescent girls. Periodic and continuous nutrition counseling is necessary to observe significant changes in energy intake and protein intake.
