Abstract

Adolescent obesity is an increasing health problem in Indonesia and contributes to various degenerative diseases. One approach to lose weight is to consume high-fiber foods. Tembul brownies, made from a combination of tempeh flour and bran flour, are an alternative snack with high fiber and have the potential to help lose weight. This study aims to determine the effect of giving tembul brownies as a high-fiber snack on weight loss in obese adolescents. The sampling method used was the Stratafied Random Sampling technique with a quasi-experimental design with a two-group pretest-posttest design. The subjects of the study were 62 obese adolescents at SMA Muhammadiyah 1 Palembang and SMA Negeri 6 Palembang who were divided into treatment and comparison groups. The treatment group was given tembul brownies twice a day as much as 50 grams for 21 days. The data collected included body weight, macronutrient intake, and fiber, and were analyzed using appropriate statistical tests. The average weight before treatment was 88.13 kg and after treatment was 87.79 kg with an average decrease of 0.335 kg. The results of the paired t-test showed a pvalue of 0.001 (<0.05) which indicates that there is an effect of giving tembul brownies on weight loss in obese adolescents. There is an effect of giving tembul brownies (tempeh flour and bran flour) as a high-fiber snack on weight loss in obese adolescents.

Abstract

Stunting not only affects physical growth but also children's cognitive development and health, which impacts the nation's future productivity and competitiveness. One of the most direct causes of stunting is insufficient protein intake. Children in coastal areas under the age of five are significantly affected by household food security. Children from fishing families often consume small fish because their parents prefer to sell their catch of large fish, while small fish are for their own consumption. Even unsalable fish are sometimes eaten by the family. The aim of the study was to determine the relationship between protein consumption levels and handwashing practices with soap and the nutritional status of short and very short toddlers aged 24-59 months in coastal areas. This research method used a cross-sectional research design, the research subjects were 54 stunted toddlers living in the coastal areas of Lombok Island. The results showed that the gender was almost equal between boys (48.1%) and girls (51.9%), with stunted toddlers as many as 79.6% and very short 20.4%. The level of protein adequacy of toddlers was in the good category (37.0%) and above adequacy (42.6%). The practice of washing hands with soap was the majority of toddlers, 53.7% of whom washed their hands with soap. The conclusion of the study was that there was no significant relationship (p>0.05) between the level of protein consumption and handwashing behavior with the nutritional status of stunted and very short children.

Abstract

Pediatric patients with infectious diseases and neurological disorders are at high risk of malnutrition due to increased metabolic needs, infection processes, and limited nutritional intake. Problem: the risk increases in patients with a history of prematurity and neuromuscular disorders such as Cerebral Palsy which can cause difficulty eating and low nutritional intake. The purpose of this study is to describe the nutritional care process for An. MFA, a 5-year-old male 8 months old with a diagnosis of measles, bronchopneumonia, Cerebral Palsy and malnutrition who was treated in the Mina Inpatient Room of Harapan dan Doa Hospital, Bengkulu City. Research method: a case study with a five-step approach of the Standardized Nutrition Care Process (PAGT), including assessment, diagnosis, intervention, monitoring, and nutritional evaluation. Anthropometric results showed poor nutritional status with a BMI/U of -3.64 SD and MUAC 64%. Dietary history showed inadequate intake because the patient since birth only consumed formula milk without additional food. Biochemical examination showed a hemoglobin level of 11.0 g/dL which is still normal. Clinical examination revealed a body temperature of 37.1°C, pulse rate of 121 beats/minute, respiratory rate of 31 breaths/minute, and SpO₂ of 99% with a general condition of moderate illness. Intervention in the form of a High Energy High Protein (TETP) liquid diet was given in stages according to the patient's clinical condition and tolerance. Monitoring over three days showed an increase in energy and nutrient intake and improvements in several clinical parameters, although anthropometric changes were not yet significant. It was concluded that planned and monitored nutritional care plays an important role in meeting nutritional needs, preventing deterioration of nutritional status, and supporting patient recovery

Abstract

Background: Nutritional disorders such as stunting, wasting, and underweight are still serious problems in Indonesia that impact the quality of children's growth. Bleberan fish (Thryssa sp.) is a local marine resource in the coastal area of ​​Bengkulu, which is rich in animal protein and iron, but its utilization as nutritious food for children has not been optimal. Objective: This study aims to develop bleberan fish rollade products as an alternative functional food that has high nutritional value and good acceptability to stimulate the growth rate of children with nutritional disorders. Method: This type of research is research and development (R&D) conducted at the Nutrition Food Laboratory of the Ministry of Health Polytechnic of Bengkulu. Products without added vegetables or F0 (Original) were tested in the form of steamed and fried, which were previously dipped in a solution of wheat flour, paint, and breadcrumbs before being fried. Data on energy and macronutrient composition were collected through nutrient content estimation using TKPI and organoleptic tests (color, aroma, texture, and taste) by 40 nutrition student panelists using a hedonic scale. Results: Analysis showed that the nutritional content per serving (50 grams) ranged from 147–170 kcal of energy and 10–11 grams of protein. Based on organoleptic testing, fried roulade was the most popular overall, with a 52.5% preference rating, and was superior in color (67.5%) and taste (60%). The Mann-Whitney statistical test showed significant differences (p < 0.05) in panelist preference for all product attributes based on different presentation techniques. Conclusion: Bleberan fish rollade has great potential as a functional food to address nutritional disorders due to its high protein content (18.75 g/100 g) and iron (1.71 mg). The original bleberan fish formulation is recommended as the primary choice due to its stable organoleptic quality and highest acceptability.

Abstract

Langerhans Cell Histiocytosis (LCH) is a rare disease caused by the abnormal proliferation of Langerhans cells that can affect multiple organs. This case report documents the standardized nutritional care process for a 3-year-old female patient (An. K) diagnosed with LCH on chemotherapy, febrile neutropenia, anemia, and pneumonia, admitted to the Aster Ward of RSUD Prof. Dr. Margono Soekarjo Purwokerto. Nutritional screening using the Pediatric Yorkhill Malnutrition Score (PYMS) yielded a total score of 5, indicating high malnutrition risk. Nutritional assessment revealed severe malnutrition (BB/TB: -3.02 SD; BB/U: -4.61 SD; TB/U: -4.32 SD) and inadequate oral intake (energy 17.6%, protein 38.7%, fat 25.4%, and carbohydrate 10.9% of requirements based on 24-hour recall). Nutritional diagnoses established were inadequate oral intake (NI-2.1) and severe malnutrition due to chronic disease (NC-4.2.1). Nutritional intervention was delivered through a high-calorie high-protein (TKTP) diet in soft food form, 3 main meals plus 1 snack per day, supplemented with Pediacomplate 20g/day. Oral nutrition support, nutrition education and counseling were also provided to the patient and family. After four days of monitoring, intake reached 65.2% of requirements, with a progressive daily increase. Hemoglobin improved from 6.7 g/dL to 11.2 g/dL and hematocrit from 18.8% to 32.1% following medical management. This case highlights the critical role of standardized nutritional care in managing severely malnourished oncology patients undergoing chemotherapy.
