Abstract

Many teenage girls in Indonesia suffer from anemia, prompting exploration into alternative dietary interventions. Moringa leaves, known for their high iron content, offer a potential solution. This study aimed to formulate tofu meatballs enriched with moringa flour, evaluating their iron content and organoleptic qualities as a feasible iron supplement for adolescent girls. Three tofu meatball formulations were tested: F1B with no added moringa flour, F2B with 5 g, and F3B with 10 g. Iron content was assessed using ICP-OES, and organoleptic tests were conducted. Statistical analysis included the Kruskal-Walli’s test, with Mann-Whitney test for significant differences. Results revealed F2B had the highest iron content at 1.34 mg/100 g, followed by F1B at 1.06 mg/100 g, and F3B at 1.23 mg/100 g. However, iron levels per serving fell short of the 10% daily requirement. While F1B was preferred for taste, aroma, color, and texture, F2B and F3B were still acceptable. Future improvements could involve using boiled moringa leaves and seasoning to enhance organoleptic qualities.

Abstract

At the age of 7-18 years, consumption of carbohydrates as a source of energy and consumption of protein sources greatly affects their nutritional status. There are several foster children at GSY Dhuafa who are facing nutritional problems due to insufficient nutrition from food that is rich in energy and protein content. This study aims to determine whether there is a relationship between energy and protein intake with the nutritional status of foster children At GSY Dhuafa in 2023. Using a cross-sectional research method with a sample of 35 children using a total sampling technique. Data analysis in this study used univariate and bivariate analysis with the Chi-square test. From the research that has been done, the results show that there is a strong relationship between the adequacy of energy and protein nutrition and nutritional status (p=0.000), while protein intake has results (p=0.354), which means that there is no relationship between protein and nutritional status. There is a relationship between energy intake and nutritional status and there is no relationship between protein intake and the nutritional status of the respondents. It is expected to pay more attention to intake to meet nutritional needs in order to achieve good nutritional status.

Abstract

Anemia is a condition of low red blood cell mass or hemoglobin. Another way of prevention and control is to consume food sources of iron such as tofu. The general objective of this study was to determine the characteristics of "NAHUKOL" on the results of the acceptability test and iron levels of alternative snacks to prevent anemia. The research design used was experimental research with a total sample of 3 samples, the iron test sample used the most preferred sample and the control group. Data collection techniques used acceptability test and iron content test. the study was conducted from October to March 2023. The analytical technique used in the acceptability test was the Kruskal Wallis test and in the iron, test using the atomic absorption spectrophotometer method. The results of the research on the acceptability test obtained the most preferred formula was formulation 2. The iron content test obtained results in formulation 2 of 4.43 mg/100 g and the control group of 4.2 mg/100 g. NAHUKOL products (Tofu and Broccoli Nuggets) can be used as an alternative food to prevent anemia.

Abstract

The nutritional status of school children can be influenced by food consumption and snacking habits, potentially leading to malnutrition and obesity. This study aims to identify the profile of macro-nutrient intake, snacking habits, and the nutritional status of elementary school children at UPT SDN 86 Gresik. It is descriptive in nature and involves 82 students as respondents. The survey method was utilized, employing questionnaires and interviews for data collection. The research conducted at UPT SDN 86 Gresik revealed that 46.7% of students had an energy deficit, 62.2% had a protein deficit, 64.4% had a fat deficit, and 57.8% had a carbohydrate deficit. Additionally, 42.2% exhibited poor snacking frequency, and 60% consumed unhealthy snacks. Based on the research findings, it can be concluded that 4 students (8.9%) had poor nutritional status, 32 students (68.9%) had a normal nutritional status, 2 students (4.4%) had excess nutritional status, and 7 students (15.6%) were obese

Abstract

Anemia is common in developing countries such as Indonesia. Government prevention efforts to overcome iron deficiency are by giving Blood Addition Tablets and also improving diet. Identify the intake of protein iron consumption, compliance consumption of government activity blood supplement tablets and consumption patterns of iron inhibitors in SMA Negeri 1 Barat Magetan District. This research is a descriptive study. Data collection by interview with a questionnaire instrument compliance consumption of blood supplement tablets and food intake interview with SQ-FFQ questionnaire. The number of respondents was 58 students with proportional random sampling technique. The percentage of students who did not consume blood supplement tablets (67.2%). The level of iron intake was deficient (62.1%), students consumed tannin very often (25.9%), consumption of phytic acid often (48.3%), and the level of protein intake was severely deficient (79.3%). Most students did not consume the given blood supplement tablets. Most students had iron deficiency and protein intake levels that were severely deficient. The students also had a frequent category in consuming phytic acid and also had a frequent category in consuming phytic acid. Schools are advised to hold counseling on anemia and balanced nutrition, and blood supplement tablets supplementation activities.

Abstract

Based on DP3AK 2021 East Java, 23% of young women and 12% of young men suffer from anemia. Red spinach and Moringa leaves are contain high levels of iron so it can be used as alternative foods to prevent anemia in young women. The purpose was to analyze the results of tests of acceptability and iron levels of "red spinach & moringa" baymor cake as a snack to prevent anemia in young women. The research method is experimental research. Data will be analyzed using the Kruskal Wallis test, if the results are p <0.05 then it will be continued using the Mann Whitney test. The average result of the acceptability test is the BM 1 formulation which is 4.04 (likes it), BM 2 which is 3.49 (rather likes it) and BM 3 which is 3.2 (rather likes it). The results of iron levels in the control formulation (BM 1) were 3.63 mg/100g and the most preferred formulation was BM 2 of 9.81 mg/100g. The control formulation (BM 1) with iron content of 3.63 mg/100g was the most preferred formulation by the panelists, while the second most preferred formulation was BM 2 of 9.81 mg/100g.

Abstract

The transition from childhood to adulthood that adolescents go through is known as the "adolescent stage". Anemia is a common nutritional condition among adolescent girls in Indonesia. This study aimed to determine the relationship between knowledge and attitudes of adolescent girls regarding anemia and their willingness to take Fe (iron) tablets. The type of research is analytic observational with a cross sectional approach. A total of 68 panelists were purposively selected. The results showed that most had a good understanding of anemia, but there were still many who did not take Fe (iron) tablets. Chi-Square test was applied to analyze the data and it was found that adolescent girls in class X SMA Negeri 13 Surabaya did not know anything about anemia and did not take blood enhancement tablets. In conclusion, most of the adolescent girls have positive attitude and knowledge related to anemia, but some adolescents do not consume Fe (iron) supplements. Suggestion: Inspire adolescent girls to consume Fe (iron) supplements along with providing comprehensive information related to anemia and motivation.

Abstract

Street food is food that is sold and served by street vendors on the side of the road and in public places, which can be eaten directly without further processing or preparation. This study aims to describe the level of knowledge, attitudes, behavior, eating habits, and nutritional status of students at MI Darun Najah Klopoten Sukodono Sidoarjo. This research method uses a descriptive method. The total population of this study was 311 students in grades 4, 5, and 6 and a sample of 56 students was taken using Proportionate Stratified Random Sampling. Data collection was carried out through interviews with knowledge questionnaires, attitudes, FFQ forms, and anthropometric measurements. From the results of the study, most of the students had a sufficient category of knowledge (64.3%), good attitude (71.4%), frequent snacking behavior (53.6%), and good nutritional status (55.4%). From this, it can be concluded that most students still have sufficient knowledge and behavior of frequent snacking habits. It is recommended that the school hold outreach to students regarding information on snacks and nutrition and how to eat good and healthy snacks. School canteens are also expected to provide nutritious snacks.

Abstract

The growth and development of elementary school-aged children require adequate nutrition. A preliminary study conducted on 10 students of Latukan Elementary School revealed that 20% of them were overweight, 60% had good nutritional status, and 20% were underweight. However, this preliminary study failed to provide a comprehensive understanding of the knowledge, snack consumption behavior, and nutritional status of students at Latukan Public Elementary School in Lamongan Regency. To address this gap, a descriptive study was conducted to determine the knowledge, consumption behavior of school snacks, and nutritional status of elementary school students in Latukan, Lamongan Regency. The study population comprised 66 students, with a sample size of 40 students selected through proportional random sampling. Data were collected through interviews using questionnaires and food frequency questionnaires. The findings revealed that 55% of the students had good knowledge, 55% exhibited moderate behavior, 57.5% consumed school snacks frequently, and 62.5% had good nutritional status. Moreover, 22.5% of the students were categorized as having more nutritional needs. This research aims to raise awareness among the community regarding the importance of nutritional knowledge and healthy snack consumption habits among school-aged children.

Abstract

Adolescence, which lasts from ten to twelve years, is a period of growth and development of the body that requires adequate nutritional intake to prevent problems such as malnutrition and decreased concentration in studies. According to basic data collected in October 2020, 30% of teenagers had normal nutritional status and 70% had poor nutritional status or were underweight. The purpose of this study is to ascertain how nutritional status and intake are related the focus of adolescent learning at the Ahludz Dzikri Al-Qur'an Assembly. This research uses an analytical observational method with a cross-sectional approach. Thirty students from the Ahludz Dzikri Al-Qur'an Council participated in this study. The Spearman test was employed to examine the non-probability sampling methods used in this investigation. The research results showed that there is a relationship between nutritional status and nutrient intake, and that nutrient intake and nutritional status are related, and then learning should be focused, so it is better for students to consume a variety of foods to improve the students' nutritional status and concentration.
