Abstract

The purpose of this study was to determine the effect of the concentration of sorbitol and immersion time on the quality and sensory test of dried candied papaya. This study was using completely randomized design with two factors, i.e concentration of sorbitol (P) (40, 50, 60, 70, and 80%) and immersion time (R) (24, 48, and 72 hours). The analyzed parameters were water content (%), ash content (%), vitamin C content (mg/100 g sample), total acid content (mg/100 g sample), fruit hardness (kgf), total soluble solid (oBrix),  fiber content (%), and sensory test (color, flavor, taste, and texture). The results showed that concentration of sorbitol had highly significant effect on water content (%), ash content (%), vitamin C content (mg/100 g sample), total acid content (mg/100 g sample), fruit hardness (kgf), total soluble solid (oBrix), sensory test (taste); had  significant effect on flavor and taste and had no effect on fiber content (%), total sugar content (%), color and texture. The immersion time had highly significant effect on vitamin C content (mg/100 g sample), total acid content (mg/100 g sample), fruit hardness (kgf), and had no significant effect on water content (%), ash content (%), fiber content (%), total soluble solid (oBrix),  and sensory test (color, flavor, taste, and texture). The interaction of the factors had significant effect on fruit hardness (kgf). The best treatment which gave the best effect on papaya dried candy was 80% sorbitol and 48 hours of immersion time. Abstract

The aim of this research was to determine the effect of ratio of starfruit with pumpkin pulps and concentration of sodium benzoate on the quality and sensory test of starfruit sauce. This research was using factorial Completely Randomized Design (CRD) with two factors, i.e :ratio of starfruit with pumpkin pulps (P)(90:10%, 85:15%, 80:20%, 75:25%) and concentration of sodium benzoate (S) (0, 0,1, 0,2, 0,3%). The analyzed parameters were water content (%), ash content (%), total microbes (Log CFU/g), total acid (%), vitamin C content (mg/100 g sample), total soluble solid (oBrix), pH,  viscosity, and organoleptic value (colour, aroma, and taste). The result showed that ratio starfruit with pumpkin pulps had highly significant effect on water content (%), total microbes (Log CFU/g),  total acid (%), vitamin C content (mg/100 g sample), total soluble solid (oBrix), pH, viscosity, and organoleptic values (colour, aroma, and taste). The concentration of sodium benzoate had highly significant effect on water content (%), ash content (%), total microbes (Log CFU/g),  total acid (%), vitamin C content (mg/100 g sample), total soluble solid (oBrix), pH, viscosity, and organoleptic value of colour; and had no effect on organoleptic value of aroma and taste and hedonic taste. The interaction of the two factors had highly significant effect on total microbes (Log CFU/g) and had significant effect on organoleptic value of colour. The best treatment which gave the best effect on starfruit sauce was 90:10% of starfruit with pumpkin pulps and 0,2% sodium benzoat. Keyword:Pumpkin, sauce, sodium benzoate, starfruit

Abstract

The aim of this research was to find the effect of ratio of pineapple with broccoli pulps and several arabic gum concentration on the quality of pineapple and broccoli mixture fruit leather. This research was conducted at the Laboratory of Food Technology, Faculty of Agriculture, University of Sumatera Utara, Medan, using completely randomized design with two factors, i.e.:ratio of  pineapple with broccoli pulps (B): (65%:35% ; 60%:40% ; 55%:45% ; 50%:50%) and arabic gum concentration (G): (0,6% ; 0,8% ; 1,0% ; 1,2%). Parameters analyzed were moisture content, ash content, vitamin C content, total soluble solid, crude fiber content, total acid, score of organoleptic values of colour, taste and texture and hedonic of organoleptic values of colour, flavor, taste, and texture. The results showed that ratio of pineapple with broccoli pulps had highly significant effect on vitamin C content, crude fiber content, total acid, score of organoleptic values of colour, taste and texture, and hedonic of  organoleptic values of flavor and texture. Arabic gum concentration had highly significant effect on moisture content, ash content, vitamin C content, total soluble solid, crude fiber content and total acid. Interactions of the two factors had highly significant effect on vitamin C content and had no significant effect on moisture content, ash content,total soluble solid, crude fiber content, total acid, score of organoleptic values of colour, taste and texture, and hedonic of organoleptic values of colour, flavor, taste and texture. The ratio of  pineapple and broccoli  pulps of (55% : 45%) and arabic gum concentration of (1,2%) produced the best quality of fruit leather and accepted by the panelists. Abstract

Serdang Bedagai as one of rice centra in North Sumatera need to be reviewed its irrigation network to hold out and increase production. The purpose of this research was to study the rice potential production on Sungai Ular irrigation fields in Perbaungan district Serdang Bedagai regency in achieving the maximum level of rice production based on sun radiation level, time to grow rice, and rice variety. The research also studied the ratio between irrigation field and crops field, the ratio between technical irrigation with pre technical and conventional irrigation and also realibility of existing irrigation network. In the year of 2009-2013, the results indicated that the irrigation network realibility was need to increase. The average ratio between irrigation field and crops field was 1,80, the average ratio between technical irrigation with pre technical irrigation and conventional irrigation was 0,57 and the rice production target was 58,89 %. Abstract

At this time, coconut scraping for taking milk still use squeeze of coconut. Beside that, the coconut use as material to made breads too. Therefore the writer made a desiccated coconut. This research was done by literature study, equipment manufacture, testing and observations of parameters. The parameters observed were the equipment capacity, economics analysis, break event point and the feasibility study using value of internal rate of return and net present value. The capacity of the equipment was 114,07 coconut/hour, Economics analysis was Rp. 354,06/coconut, break event point was 16.927,61 coconut/year, internal rate of return was 43,93 % and the equipment was feasible. Abstract

Quality of pepper in the market is depend on post harvest process, so that this stage needs a very the serious attention. As pepper had two types, the process is also different. The test of flat burr mill type pepper grinding was to know the feasebility of the  mill in white pepper procesing. This research was done in Agricultural Central Laboratorium, Agricultural Department, University of North Sumatera, Medan on October 2014. Parameters observed were effective capacity, percentage of losses seed, moisture content, and the ash content. Results of the research showed that the average effective capacity  was 185.72 gr/minute, and  the percentage of losses seed was 2.9%. The equipment was feaseable to process white pepper, the ash content average was 1.4%, and the average  moisture content was 15.9%. Keyword : Flat burr  grinding mill, white pepper.

Abstract

Drip irrigation is needed in the efficient use of water for the plant and also attention is needed for its performance. The study was aimed to determine the performance of drip irrigation on Latosol soil with and without Caisim plants (Brassica juncea L.). Parameters measured were soil physical properties, evapotranspiration, field capacity, emission uniformity, drip irrigation efficiency, and Caisim (Brassica juncea L.) dry weight.  The results showed that Latosol soil had clayey loam texture with a bulk density value of 1,05 g/cm3, particle density of 2,5 g/cm, porosity of 58,07% and a water content of 36,67% field capacity, evapotranspiration in the early phase was  1,11 mm/day, in the middle phase was 1,91 mm/day, and in the final phase was 1,18 mm/day, the average emission uniformity was 91,86%, the efficiency of use of irrigation in the final phase of plant growth was 100% on the ground with or without plants. Irrigation storage efficiency value at the end of the growth phase on soil with plants was 49,28% and was 15,42% on soil without plants, Caisim had an average dry weight of 1,65 grams and a water content of 87,66%. Abstract

Coconut is one of multifunction plant, every part of it was useful. One of its usage is fruit flesh grating and then dried to avoid  bacteria’s growth, so it can be used to prepare bread, biscuit, candy, taking the coconut milk and ingredient of coconut flour. Therefore, the writer was design and constructed grated coconut dryer. This research has been done since April to August 2014 in Laboratorium Keteknikan Pertanian, Fakultas Pertanian Universitas Sumatera Utara, Medan by literature study, construction testing and observing the equipment. The parameters observed were effective capacity, tested of the equipment, analyzed the economic value. Based on this research it was summarized that the effective capacity of the equipment was 0,67 kg/hr, basic costs were Rp.15.391,36 for the first year, Rp. 13.739,39 for the second year, Rp. 13.189,49 for the third year, Rp. 12.915,02 for the fourth year and Rp. 12.750,65 for the fifth year, break event point was 752,21 kg/year for the first year, 405 kg/year for the second year, 290 kg/year for the third year, 232,52 kg/year for the fourth year and 198,03 kg/year for the fifth year, net present value was Rp. 118,963.293,2, internal rate of return was 43,56%, its mean that this equipment was worthy to use. Abstract

The processing of grains that contained starch into foodstuffs (chip) is an interesting thing to be known, one of the process is material’s pressing. The purpose of this research was to design, build, test and analyze the economic value of grains’ chip molder. The parameters observed were effective capacity, percentage of damaged material, organoleptic’s test and economic analysis. Based on this research, it was summarized that the effective capacity of the equipment was 2.82 kg/hour and the damaged material’s percentage was 8.07%. The color was categorized as 2 (white), the thickness was categorized as 1 (thin) and the flavor was categorized as 2 (medium). Economic analysis was as follows: basic costs for the first to the fifth year was Rp. 4,286.8/kg, Rp. 3,968.21/kg, Rp. 3,862.16/kg, Rp. 3,809.22/kg and Rp. 3,777.53/kg respectively. Break even point (BEP) for the first to the fifth year was 289.78 kg/year, 156.22 kg/year, 111.77 kg/year, 89.57 kg/year and 76.29 kg/year respectively. Internal rate of return (IRR) was 45.72%. Abstract

Pitchers that are made of clay loam and burnt with high temperature have ability to autoregulate soil irrigation which is an efficient technique among other system of irrigation. The Important physical characteristics of pitcher are hydraulic conductivity and porosity. This research was one of preliminary study in making regulation of pitcher physical characteristics using sanding methode. This research was performed using non factorial randomized block design. Parameters analyzed were porosity, hydraulic conductivity, water seepage volume and soil surface wetting distance. The result showed the sanding methode had no significant effect on porosity, hydraulic conductivity, water seepage volume and soil surface wetting distance.
