Abstract

Background : Chemical material such as formalin and borax should notfound in food because it can cause nausea, stomachache, vomiting, bloody defecation.But with reason to reduce production costs, take profits and extend the shelf life, many producers who still use these materials.This is due to lack of knowledge and the attitude of the producer indifferent to food security.Objective : Knowing the relationship between knowledge and attitudes of schoolboy snack vendors to the use of formaldehyde and borax in children's snacks in public elementary schools in the urban area of pedurungan Semarang city.Method :This research is a descriptive analytic study with cross sectional design, a total sample of 20 samples of schoolchildren's street vendors. In this study the measuring instruments used were questionnaires and interviews. The test used is Fisher's exact.Results : Trader's knowledge is mostly good (80%)and the attitude of traders mostly supports (60%). The bivariate test results obtained p value 0.05 so there is no relationship between knowledge and attitudes of street food traders to the use of formalin and borax.Conclusion : The use of formalin and borax is not caused by the knowledge and attitudes of traders related to food security.

Abstract

Background: Muscle fatigue in anaerobic activity occured, when athletes have high intensity activities. The accumulation of lactic acid in muscle and blood could inhibit muscle contraction caused low concentration and performance. Sitrulin in yellow watermelon (Citrullus lanatus) juice can delay muscle fatigue in anaerobic activity.Objective: To know the effect of Yellow Watermelon Juice (Citrullus lanatus) To Anaerobic Muscle Fatigue Index Athletes.Methods: This study used quasi experimental design with a pre-post test design group control design. The fourteen athletes who were randomly divided into control groups and treatment groups. The control group was given a placebo and the treatment group was given a 500 ml watermelon juice with a dose of 1,8gr of sitrulin during seven days. Yellow watermelon (Citrullus lanatus) juice are given 60 minutes before the test done. Anaerobic muscle fatigue in soccer athletes were measured using a RAST (Running-based Anaerobic Sprint Test) by calculating the Muscle Fatigue Index. Data were analyzed by Independent t-test.Results: In this study there was an increase category of muscle fatigue index from good category (0.21-3.31) to very good category (0.21), although both control and treatment group not significant different statistically (p = 0,532). The mean initial muscle fatigue index of the treatment and control group respectively (0.1157 ± 0.05) and (0.1486 ± 0.65). The mean final muscle fatigue index of the treatment and control group respectively (0.1229 ± 0.04) and (0.1371 ± 0.03).Conclusion:The adduction of yellow watermelon juice (citrullus lanatus) during seven days did not affect the reduction of anaerobic muscle fatigue (p = 0,532).

Abstract

Background : People with hypercholesterolemia used pharmacological therapies such as fibrates, statins, nicotinic acid and bile acids. Side effects of these drugs can cause other diseases, beside that the treatment of hypercholesterolemia takes a long time and many of them are not compliant therefore other alternative treatment are needed by increasing the consumption of fruits and vegetables.Objective : This study aimed to know the effect of giving smoothies combination of various fruits and vegetables to lower of total cholesterol level in adult woman.Method : This research is true experiment study with Randomized Pre and Post Test Control Group Design design. Sampling was done randomly to get 17 treatment samples and 17 control samples. Intervention was given by of giving smoothies combination of various fruits and vegetables for 21 days. Bivariate test used independent t-test, while multivariate used anova repeated measured.Result: The result showed that intervention of combination fruits and vegetables for 21 days showed significant differences in total cholesterol levels between treatment groups and intervention groups before and after intervention (p = 0.01) by 33 mg / dl decrease level. There is an effect of giving smoothies combination of various fruits and vegetables to decrease total cholesterol level (p = 0.021). Fiber intake (p = 0.011) and carbohydrate intake (p = 0.019) also had an effect on lowering total cholesterol levels.Conclusion : The conclusion showed that smoothies  combination  of various fruits and vegetables for 21 days can reduce total cholesterol levels by 33 mg/dl.

Abstract

Background: the Staphylococcus aureus bacteria is one of the microbes that can causes gastroenteritis. This bacterium normaly was live as a human. The role of food handlers is very important in the existence of the Staphylococcus aureus bacteria.Objective: to find out the relationship between education, knowledge and hygiene practice of food handler’s sanitation toward the existence of the Staphylococcus aureus bacteria on animal dishes at Shella’s Catering Semarang.Methods: this study used descriptive analytic with cross sectional design, the number of samples is 9 samples of animal dishes with 2 times repetition. Staphylococcus aureus can be identified by conductingan the MSA test. The data of education, knowledge and practice of food handler’s hygiene sanitation were collected using questionnaires through interview. The statistical test used Fisher's exact.Results: the knowledge and practice of food handler’s hygiene sanitation were categorized good (60%). The results of the bivariate test showed that there was no correlation between education, knowledge and practices of hygiene sanitation on the existence of the Staphylococcus aureus bacteria in animal dishes (p 0.05)Conclusion: there is no relationship between education, knowledge and hygiene practice of food handler’s sanitation toward the existence of the Staphylococcus aureus bacteria in animal dishes.

Abstract

Background: Indonesia is still faced with a triple burden of nutrition, such as malnutrition, stunting and overnutrition. According to UNICEF, one of the cause nutrition problems is the lack of knowledge about nutrition. The prevention of health problem starts at the early stage, namely the understanding of balance nutrition guideline in school-age children. New method need to be made to make it easier for students to arrest nutrition message, namely in the form of edutainment cards.Objective: To determine the effectiveness of nutrition education by using the edutainment card method on knowledge about balance nutrition guideline in elementary school.Research Methods: The type of research is Experimental with pre and post-control group design design. Sampling using random sampling technique to get 30 treatment samples and 30 control samples. Research was in SDN Palebon 02, conducted in Februari 2019. The data collected are sample identity dataand knowledge of balance nutrition guideline. The data was analysed by independent t-test with 95% confidence level.Results: There was significant difference in knowledge about balance nutrition guideline in the treatment and control groups after intervention with edutainment card method (p value = 0.001).Conclusion: Edutainment card as a media for education is effective for increasing nutrition knowledge in children

Abstract

Background : Hypertension is a health issues that needs attention. Based on Riskesdas Data, prevalence of hypertension increased from 7,6% in 2007 to 9,5% in 2013. One of the treatments which can be done is by giving fruits that contain potassium and fiber.Objective : To determine the effect of melon fruit on the decrease systolic and diastolic blood pressure in patients with hypertension age 41-64 years.Method : This study used Quasi Experiment method with Pretest Posttest Control Group Design. The samples of study was determined by non randomized sampling technique consists of 11 treatments and 11 controls sampels.Results : there was significant difference in systolic and diastolic blood pressure between the treatment and control group (p0,05). There was no effect of giving melon fruit to decrease systolic (p=0,071) and diastolic (p=0,042) blood pressure in patient hypertension with control variable of sodium, potassium, magnesium, calcium and fiber intake.Conclusion : Consumption of melon fruit for 9 days can reduce systolic blood pressure 14.82±5.759 mmHg and diastolic of 7.64±2.292 mmHg, although statistically  insignificant

Abstract

Background : Hyperuricemia is one form of non-infectious disease caused by dietary changes with the composition of foods that contain lots of protein and fat. Factors that affect the occurrence of hyperuricemia include food intake factors, physiological factors, behavioral factors.Objective : To determine the risk of physiological factors to hyperuricemia.Research Method : This research used observational method with case control design in the community in the work area of Tlogosari Kulon Community Health Center Semarang. The samples of research were taken by randomly sampling technique,obtained 25 case samples and 25 control samples. Hyperuricemia data was obtained from laboratory examination data. Physiological factor data (nutritional status,  waist circumference, waist circumference ratio, blood pressure, age, sex,  education, employment, and family income) collected with interview using questionare to the sampelt. Bivariate analysys result using chi-square test and full multivariate analysis result using multiple logistic reggression test.Result :  The  risk factor for hyperuricemia is waist circumference 80 cm for women and 90 cm for men at risk 3.27 times hyperuricemia compared with waist circumference ≤80 cm for women and ≤90 cm for men. (95% CI 1,18 - 12.60). Nutritional status, waist circumference ratio, blood pressure, age, sex,  education, employment, and family income were not at risko to hyperuricemia.  Conclusion : The risk of physiological factors to hyperuricemia are  waist circumference.

Abstract

Background : Diabetes mellitus is a condition in which blood levels in the body is high due to a disruption in the pancreas gland so the body can not produce or can not use insulin. Diabetes mellitus type 2 is a type of diabetes mellitus that does not depend on insulin or better known as non-insulin-dependent. Prevalence of Diabetes Mellitus in Central Java was ranked 2nd out of 8 new cases of PTM (Non Communicable Disease), with a percentage of 18.44%. Control efforts can be done by eating high-fiber foods, one of the foods that contain fiber is high enough and potentially lower blood glucose levels, namely bengkuang. Objective: To determine the effect of bengkuang juice on fasting blood glucose level in type 2 diabetes mellitus. Research Methods : Type of quasy experiment study with pretest-posttest control group design. The population is patients of type 2 diabetes mellitus aged 40-60 years in the work area of Kedungmundu Public Health Center in April as many as 60 people. Sampling using non randomized sampling technique. The sample size is 36 people divided into 18 treatment groups and 18 control groups. Intervention given in the form ofbengkuang juice for 14 days. Multivariate test using anova repeated measured.Results : The giving of bengkuang juice controlled by nutrient intake (energy, protein, fat, carbohydrate and fiber) showed no significant effect on decreasing fasting blood glucose level (p = 0.344). Conclusion: Bengkuang juice has no significant effect on decreasing fasting blood glucose level in type 2 diabetes mellitus.

Abstract

Background : Health education with the methods in games is more interesting than counseling methods in the classroom.  The using of Quartet card media is the way as an alternative media to give information about the nutrition, which one using the game. Providing nutrition education through quartet card media is expected to increase breakfast habits, breakfast energy and protein intake and nutrition knowledge especially for elementary school.Objectives : To determine the effect of nutrition education on quartet card media on breakfast habits, breakfast energy and protein intake and nutritional knowledge about breakfast in elementary school students. Method : This study used the quasy experiment method with a pre test, post test and control group design. The Sampling was done by randomly to get 26 treatment samples and 26 control samples at the Elementary School in Pedurungan Kidul 01 and 02  Semarang City. The data collected were sample identity card (name, age, gender, parental education, parental work), breakfast habits, breakfast energy and protein intake and nutritional knowledge about breakfast. Data was collected by interview and answering the questionnaire. The results of bivariate analysis using the Paired T-Test, Wilxocon, Independent T-Test and Mann Whitney test.Results : There was an effect of increasing breakfast habits by an average of 1.71 ± 0.58, an increase in the amount of breakfast energy and protein intake and nutritional knowledge in the treatment group and a decrease in breakfast habits by an average of -0.34 ± 0.12 in control group before and after providing nutrition education through quartet card media with a value of p 0.05.Conclusion : Quartet card media about breakfast increases breakfast habits, breakfast energy and protein intake and nutritional knowledge in the treatment group.

Abstract

Background: Agility is one of the important aspects to achieve maximum achievement. Player agility can be influenced by a combination of genetic factors, motivation, training, nutritional status, health status, and somatotype. In this study the things that will be examined in influencing agility are fat intake, percent body fat, and somatotype.Objective: To determine the relationship between fat intake, body fat percentage, and somatotype with the agility of soccer athletes in the Salatiga Training Center (STC) training.Method: This study was anstudy observational with adesign cross sectional. The sample used was all football athletes at the Salatiga Training Center (STC) and included in the inclusion criteria. The test used wasTest Chi Square to determine the effect of fat intake, percent body fat, somatotype on athlete's agility andtest Logistic Regression to determine how much influence fat intake, body fat percentage, and somatotype had on agility.Results: There was no relationship between fat intake and the agility of soccer athletes at the Salatiga Training Center (STC) training. There is no relationship between the percentage of body fat with the agility of soccer athletes at the Salatiga Training Center (STC) training. There is no relationship between somatotype and the agility of football athletes at the Salatiga Training Center (STC) training.Conclusion: There is no relationship between fat intake, percent body fat, and somatotype with the agility of soccer athletes at the Salatiga Training Center (STC) training.
