Abstract

Bali is famous for many types of traditional food, one of which is famous is suckling pig. Since ancient times suckling pig has been used as a means of religious ceremonies. A long with the development of the era and the increase in the number of population not only for ceremonies but many suckling pig that have been consumed by the public. Gianyar and Ubud Subdistricts as one of the mobility and tourism areas that are growing rapidly, seems to provide opportunities for the development of restaurant businesses, especially suckling pig. The purpose of this study is to find out about the relation, preception and satisfication of customer to competitiveness of suckling pig restaurant in Gianyar Regency. This study conducted for 12 weeks at suckling pig restaurant in Gianyar Regency. Election of location determined Purrposive method and election of sampling used Accidental Sampling method. Respondents of this study as many as 80 respondens who consumed suckling pig. Variables observed are perception, satisfication, and competitiveness of suckling pig restaurant. The result of this study showed perception of customer to suckling pig culinary is in high category with 75.73% average. Satisfication of customer to suckling pig culinary is in high category with 76.27% average. Competitiveness of suckling pig restaurant is in high category with 68.52 % average. Relation between perception to competitiveness of suckling pig restaurant has obivious significant (P<0,01). Relation between satisfication to competitiveness suckling pig restaurant has significant (P<0,05). According to the result of this study could be recommended, producers have to understand the standards of consumer needs so that restaurants can provide products that match or exceed consumer needs. Abstract

Integrated agricultural system is one of the leading activities of the Bali Provincial Government in an effort to increase income and poverty alleviation in Bali. However, until now the implementation of Simantri has not been able to increase the member's income optimally. This study aims to determine the relationship of Simantri management implementation with income level of farmers in Bali. The study was conducted in eight districts spread in Bali, lasting for 3 months from April to July 2018. The selection of research sites using purposive method and the determination of samples using Stratified Purposive Sampling method. Respondents from this study amounted to 45 farmers members of Gapoktan Simantri. The analysis used is qualitative descriptive analysis and Spearman level correlation test. The results of this study indicate that the implementation of Simantri management in Bali Province included in the medium category. Increase in farmer income is included in the low category. Relation between the implementation of Simantri management with income level of Farmer who have followed the Simantri program in Bali Province has obivious significant (P<0.01). Suggestions that can be delivered are Farmers members of Gapoktan Simantri should apply livestock business units, food crops and waste treatment with more leverage, in order to reduce the production cost of Simantri managed to increase revenue.Keywords: Simantri, application, revenue, management

Abstract

This study aims to find out the comparative quality of organoleptic pork from landrace pigs that are fed to landfill (TPA) waste with meat from landrace pigs fed by commercial feed. The research was conducted in the Laboratory of Animal Product Technology and Microbiology Faculty of Animal Husbandry, Agrokomplek Building of Udayana University. This study used Completely Randomized Design (CRD) with a comparison of two different meat samples. Data analysis was performed by using Mann-Whitney Non-Parametric analysis with the help of SPSS 24. Organoleptic variables observed in this study include color, aroma, texture, tenderness, taste and overall acceptance. The treatment consisted of meat from landrace pigs fed on landfill waste with meat from landrace pigs fed by commercial feed. From the result of the research, it is found that panelist's favorite level of color, texture, tenderness and meat flavor of landfill pigs are fed significantly (P<0.05) with pigs given commercial feed. While the panelist's favorite level of landrace pigs aroma given by landfill-based waste feed was statistically not significantly different (P>0.05) with commercially fed pigs. Based on the results of this study it can be concluded that meat from landrace pigs fed on landfill waste has lower organoleptic quality compared to meat from landrace pigs fed by commercial feed. Abstract

The local chicken East Kalimantan (Nunukan chicken crossbreed) is one of the chickens crossing from Nunukan chicken and local chicken of East Kalimantan as one of genetic resources of genuine chicken from Borneo which has the potential to be a chicken breeding in Indonesia. This chicken is a native chicken Indonesia that has a different phenotypic diversity of other local chickens. The aim at the study was to compare and study chicken differentiation variables based on the size of rooster and hen’s local chickens of based on discriminant analysis approach. Phenotypic characteristics of body size used as the basis of characterization is body weight (BW), Height of Body (HB), Body length (BL), chest circumference (CC), chest width (CW) and shank length (SL). The research was carried out at the House’s of Local Chicken Maintenance have Agriculture, Fisheries and Forestry Office of Samarinda City Government, East Kalimantan. The material used 35 local chickens East Kalimantan consists of 21 rooster and 14 hens chicken. Six measured body size variables were body weight, height weight, body length, chest circumference, chest width and shank length. Statistical analysis using descriptive analysis and discriminant analysis with the help of statistical programme computer to find out the differentiation variables between rooster’s and hens chickens were observed. The results showed that significant body size variables differed from height of body and shank length except body length, chest circumference, and chest width. The variability of morphometrics of local chickens of East Kalimantan was 64.16%, while the discriminant model formed for body weight into this study on local chickens of East Kalimantan was Y = 0.649 - 0.359HB + 1.144SL. Abstract

Kandungan gizi pada telur penting diketahui untuk meningkatkan pengetahuan masyarakat. Penelitian ini bertujuan untuk mengetahui pengaruh ekstrak air daun kelor (Moringa oleifera) terhadap warna, kadar protein, lemak dan kolesterol telur ayam Lohmann Brown umur 22-30 minggu. Penelitian telah dilaksanakan di peternakan ayam petelur di Desa Dajan Peken, Kecamatan Tabanan, Kabupaten Tabanan, selama 3 bulan menggunakan 36 ekor ayam petelur Lohmann Brown dengan berat badan yang homogen dipelihara dalam 18 petak kandang battery. Rancangan yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan 3 perlakuan dan 6 kali ulangan. Adapun perlakuan tersebut adalah air minum tanpa ekstrak air daun kelor (K0) sebagai kontrol, air minum dengan ekstrak air daun kelor 3% (K1), dan air minum dengan ekstrak air daun kelor 6% (K2). Variabel yang diamati adalah warna kuning, kadar protein, kadar lemak dan kolesterol. Hasil penelitian menunjukkan bahwa warna kuning dan kadar protein pada perlakuan K1 dan K2 berbeda nyata (P<0,05) lebih tinggi dibandingkan dengan K0. Namun kadar lemak dan kolesterol kuning telur pada perlakuan K1 dan K2 nyata lebih rendah (P<0,05) dibandingkan dengan ayam yang tidak diberikan ekstrak air daun kelor (Moringa oleifera). Berdasarkan hasil penelitian dapat disimpulkanbahwa pemberian ekstrak air daun kelor (Moringa oleifera) pada level 3% dan 6% melalui air minum dapat meningkatkan warna kuning dan kadar protein kuning telur sebaliknya menurunkan kadar lemak dan kolesterol kuning telur ayam Lohmann Brown umur 22-30 minggu. Abstract

There are two systems in broiler farm those are opened house and closed house. This study aims was to find out the income of closed house broiler farmat non-partnership farming model. It was conducted at CV. Sari Mulya Tunjuk VillageTabanan Regency, from March to May with data for 7 production period. Data obtained consist of primary and secondary data. The secondary data was the performance data at the first to the sixth periods, where as the primary data was the data from the following period (the 7thperiod). The variables observed wereeconomic consisted of investment and production cost, revenue, income, R/C ratio and break even point (BEP). The data obtained was analyzed descriptive and quantitatively. The results showed that of investment cost is Rp 687.825.000, production cost is Rp 374.674.071/period, farmer's income is Rp 70.241.378, with an R/C ratio of 1.19. This effort reached BEP at 4.063,79kg of production or 2.285 head chicken and chicken selling price was Rp16.364/kg. It can be concluded that broiler breeding farms in closed house on the non-partnership model is good and feasible to cultivate. Keywords: Broiler chicken, closed house, non-partnership model, income

Abstract

Research on the performance of local rabbits fed concentrate at different levels with carrot leaf base feed was conducted in Dajan Peken Village, Tabanan Subdistrict, Tabanan Regency were reread for 12 weeks. The design used in this research was a randomized block design, with five replications and used 20 unit object. The rabbits were allocated randomly into four treatments, namely rabbits is fed without concentrate (R0), concentrate of 15 g/head/day (R1), concentrate of 30 g/head/day (R2), concentrate of 45 g/head/day (R3). Carrots leaf and water fed ad_libitum. Results of the research, it was found that the rabbits with treatment of R3 consume least carrot leaf and consume more concentrate, so that weight gain and the body weight are the highest (p<0,05), while the obtained FCR is not significantly different from the other treatments. Performance of local rabbits fed control rations plus concentrate 45 g/head/day (R3) showed higher results from treatment of R0 (without concentrate) and the others treatments. Abstract

This research aims to analyze the effect of wine waste in diets on microbes in male local rabbits meat. This research was carried out in the village of Tejakula, Buleleng Regency, Tejakula for 16 weeks. Rabbits are used in this study are male rabbit with local age 5-6 week as many as 6 tail. This study used a Randomized Design Group (RAK) consisting of 3 treatment and 2 repeats with each treatment namely waste without using wine ration or ration control (P0), rations that uses 5% waste wine (P1) and the ration using a 10% waste wine (P2). diets and water given ad libitum basis. The observed variable is the TPC (Total Plate Count), the Coliform and e. coli. The results showed that the use of waste wine in rations to TPC (P < 0.05) whiles the Coliform and e. coli did not show the presence of influence. Thus it can be concluded that the use of waste rations of wine as much as 5% and 10% showed good results. Keywords: The level of microbial contamination, the quality of the meat, waste of wine

Abstract

This study aims to evaluate the potential of gelatin extract from bali cowhide in maintaining the quality of duck eggs and determine the response of panelists to the quality of post-soaking gelatin extract eggs. This research has been carried out at the Animal Husbandry and Microbiology Technology Laboratory, Faculty of Animal Husbandry, Udayana University. This study lasted for one month from May 4 to June 4, 2018. The design used was a Completely Randomized Design (CRD) with five treatments and three repetitions. The treatments were without soaking or control (P0) soaking gelatin for 15 minutes (P15) soaking gelatin for 30 minutes (P30) soaking gelatin for 45 minutes (P45) and soaking gelatin for 60 minutes (P60). The variables observed were egg white index, egg yolk index, egg yolk color, egg aroma and egg flavor. The results showed that there was an influence between the length of the duck egg immersion and the control or not given the gelatin soaking of bali cowhide on the panelist's preference for the color of yolk, flavor and aroma was significantly different (P <0.05) this was due to the alleged gelatin immersion to maintain and the penetration of gelatin protein with protein in eggs and can maintain the decomposition of fat and carbohydrates in duck eggs while the yolk index and egg white index have no significant effect (P> 0.05) this is due to the high molecule in gelatin which is in the range 67-167 kilodalton so that the penetration of gelatin in covering the pores of egg shells is not optimal and the occurrence of gelatin clotting occurs during storage which has an unreal effect. Based on the results of the study that the administration of gelatin solution from bali cowhide extract can provide better quality duck eggs and can increase panelist preference in egg yolks, egg flavor and egg aroma. In general, the 15 minute soaking time gives the quality of egg yolks, egg flavor and good egg aroma to duck eggs. Keywords: gelatin, soaking, duck eggs

Abstract

This study has been conducted for 3 months (12 weeks). The aims of this study is to determine the effect of different level concentrate supplementation on the base feed by using carrot leaf waste in characteristics of local rabbit carcass. The rabbits used in this study were local rabbits consisting of 20 rabbits aged 5 weeks. The basic feed used was carrot leaf. This study was using Randomized Block Design(RBD) with four treatments, each treatments ware repeated five times and each unit using one local rabbit. This study used four treatments: concentrate supplementation (R) consisting of not supplementation as control ration (R0), 15g concentrate supplementation (R1), supplementation 30g (R2) and 45g concentrate supplementation (R3). The variables observed were cutting weight, carcass weight, carcass percentage and carcass commercial cutting percentage. The result of this study showed that R3 treatment made the cutting weight and carcass weight was higher (P>0.05) than R0, R1 and R2. The Carcass percentage and carcasses commercial cutting weight including Foreleg, Hind leg, Loin and Rack showed a non significant between R3 treatment and rabbits with different concentrate supplementation (P<0.05). Based on the result of this study, the conclusion can be drawn that the characteristics of local rabbit carcasses given basic feed based on carrot leaf waste supplemented with 45g/day concentrate resulted the higher carcass weight than rabbits given concentrate supplementations 30g/day, 15g/day, and not supplementationconcentrate.
