Abstract

Essential oils are used as raw materials in the flavors and fragrances industry. Essential oils contain active compounds that are volatile at ambient temperature so that it is unstable to environmental changes. Complex coacervation is one of the techniques used in the encapsulation process to protect the active material. Essential oil blends were encapsulated by gelatin and maltodextrin as wall material and sodium tripolyphosphate as crosslinking agent. The objective of this study was to analyze the effect of the proportion between essential oils, wall material, and crosslinking agents on the yield, loading capacity, and encapsulation efficiency. The results showed that the optimum formulation for microcapsules was the essential oil and wall material ratio 1:2 and crosslinking agent concentration of 3%, with the yield of 45.18%, loading capacity of 5.37%, and encapsulation efficiency of 92.20%. The microcapsule size obtained was 0.1475 μm with polydispersity index of 0.410. Key words: complex coacervation, encapsulation, essential oil, gelatin, maltodextrin

Abstract

The rice production process produces a by-product called rice agricultural waste, namely rice straw. Rice straws in huge quantities can be used to manufacture various products such as paper, art paper, decor boards, and paintings. Processing rice straw waste can increase the value-selling of the product and reduce environmental pollution. Rice straw can be found in Padang City, especially around the location of the Padang State Development Agricultural Vocational High School. It causes the buildup of rice straw waste at several points around the school. This activity aimed to provide knowledge to the students regarding using rice straw waste as valuable products. The method was counselling and training the students. The results of this activity showed their high enthusiasm for producing paper products, decorative boards, and paintings from rice straw waste.

Abstract

Hidrosol serai wangi merupakan produk samping yang dihasilkan dari proses penyulingan tanaman serai wangi. Hidrosol berbentuk cair, berwarna jernih dan beraroma sama dengan tanaman aromatiknya. Hidrosol masih mengandung minyak atsiri dalam jumlah yang kecil yaitu 0.2%. Hal ini menjadikan hidrosol berpotensi sebagai produk samping yang memiliki manfaat untuk digunakan dan diolah lebih lanjut. Tujuan dari penelitian ini adalah mengetahui karakteristik hidrosol serai wangi yang meliputi pH, warna, aroma, dan indeks bias, mengetahui aktivitas antioksidan hidrosol serai wangi, dan mengetahui aktivitas antibakteri hidrosol serai wangi. Pengujian pH hidrosol serai wangi menggunakan pH meter, aroma dan warna menggunakan uji organoleptik dan indeks bias menggunakan refraktometer abbe. Aktivitas antioksidan diukur dengan menggunakan metode DPPH, dan total fenol diukur menggunakan metode Folin-Ciocalteu. Aktivitas antibakteri diukur menggunakan metode cakram dengan bakteri Escherichia coli dan Staphylococcus aureus. Hasil penelitian menunjukkan pH hidrosol serai wangi 4.7, aroma khas serai wangi dengan warna bening sedikit kuning, nilai indeks bias hidrosol serai wangi adalah 1.313. Aktivitas antioksidan dan total fenol hidrosol serai wangi pada konsentrasi hidrosol 200, 400, 600, 800 dan 1000 ppm adalah 9.60, 12.65, 18.27, 27.75, dan 32.44 % inhibisi dan 35.87, 52.17, 68.04, 73.48, dan 81.30 mgGAE/gr. Aktivitas antibakteri menggunakan bakteri Escherichia coli dan Staphylococcus aureus dengan zona hambat 3.8 mm dengan kategori daya hambat lemah untuk E.coli dan 11.7 mm dengan kategori daya hambat sedang.

Abstract

Essential oils, including those used in aromatherapy, are currently in high demand as consumers increasingly prefer products made from natural ingredients. Citronella oil, when used as aromatherapy, is intended to relieve headaches, enhance breathing, and produce a warming effect upon inhalation. Aromatherapy necklaces provide a convenient and portable method for delivering the benefits of essential oils. Encapsulation technology addresses the volatility of essential oils in aromatherapy gels by creating a controlled slow-release mechanism, enabling the gradual release of essential oils over a specified period. This study aims to evaluate the characteristics of aromatherapy necklaces and assess the aroma intensity of citronella oil through sensory analysis. Sensory analysis was conducted using semi-trained and trained panelists. The aromatherapy necklace comprises a mixture of gels and emulsions containing encapsulated essential oils, formulated for immediate use. The sensory analysis results indicated that the addition of 10% essential oils yielded the highest scores for color and texture assessments (4.08 and 3.96, respectively), while the addition of 7.5% essential oils produced the highest score for aroma assessment (4.16). The aroma intensity decreased from a score of 6.00 on day 1 to 3.17 on day 7. The gradual and controlled decline in aroma intensity aligns with the intended purpose of the essential oil encapsulation process.

Abstract

The production of smoked catfish in Pasaman Barat faces several challenges, including traditional smoking processes that lack the implementation of Good Manufacturing Practices (GMP), inadequate packaging and labeling, and limited marketing strategies. These conditions result in inconsistent product quality, a short shelf life, and low market competitiveness. This community service program aims to improve the product quality and sustainability of the Gusni Afrida MSME partner through the application of GMP, enhanced packaging techniques, and the development of digital marketing strategies.  The methods employed include training in GMP implementation, vacuum packaging techniques, labeling, replacement of equipment compliant with GMP standards, and mentoring in GMP applications. The program enhances the partner's understanding of GMP, vacuum packaging techniques, labeling, production management, and digital marketing, accompanied by the practical implementation of GMP. This involves the use of equipment that meets GMP standards, employing proper production personnel attributes, vacuum packaging techniques, and attractive product labeling. In addition, e-commerce-based marketing broadens market access.  Implementation of this program is expected to positively impact the quality, efficiency, and competitiveness of the partner's products. The adoption of GMP and modern marketing strategies can serve as models for the development of small businesses in the local food industry.

Abstract

Limau Manis Village as Kampung Manggis is supported by the production of mangosteen in Padang City which is number 2 (two) in West Sumatra and 80% of mangosteen in Padang City comes from Pauh Subdistrict, with the center being in Limau Manis Village and the existence of Kampung Manggis brings hope for the community to improve their economy and will have an impact on the economy of the Padang City community. The skin of mangosteen fruit can be processed into value-added products. However, farmers and local businesses still face several challenges, such as the lack of knowledge and technology to process mangosteen peels into economically valuable products. Abundant mangosteen peels during the harvest season are often discarded or burned, causing environmental impacts such as soil and air pollution. However, due to the lack of public knowledge on mangosteen peel processing as waste, an innovative solution is needed to turn mangosteen peel waste into a new source of income through the development of competitive derivative products. This community service activity is designed as a strategic step to empower the community, optimize local potential, and build an innovative, sustainable mangosteen agroindustry, creating value-added products and improving the economic welfare of the community. In addition, this activity is also expected to be a model of agroindustry development based on local potential that can be developed. The purpose of this community service activity is to provide training in improving the knowledge, skills of the community in processing mangosteen skin, increasing the added value of mangosteen skin into mangosteen skin tea and mangosteen skin syrup products that have a broad impact on economic, social and environmental improvement.

Abstract

Beberapa penelitian menunjukkan bahwa tersedianya sumber daya pangan pada satu komunitas tidak menjamin terpenuhinya kebutuhan gizi dan vitamin, terutama bagi anak-anak. Minimnya pengetahuan ibu untuk variasi makanan menjadi salah satu penyebabnya, terutama makanan pendamping ASI (MP-ASI). Hal ini menjadi satu persoalan di Nagari Sikucur Barat, Kecamatan V Koto Kampung Dalam, Kabupaten Padang Pariaman. Nagari Sikucur Barat ini sebagai wilayah pesisir sangat dekat dengan laut dan hasil laut yang merupakan sumber daya pangan utama. Permasalahan prioritas yang dihadapi Nagari Sikucur Barat adalah minimnya pengetahuan ibu terhadap makanan bergizi yang diberikan untuk bayi, khususnya MP-ASI, dan kurangnya pengetahuan ibu-ibu terhadap makanan alternatif untuk bayi. Ikan sebagai sumber bahan pangan utama yang tersedia di Sikucur Barat sangat berlimpah, artinya setiap hari ikan dapat diperoleh dengan mudah. Kegiatan Pengabdian Kepada Masyarakat (PKM) ini bertujuan untuk memberikan pengetahuan yang lebih luas kepada masyarakat, khususnya ibu-ibu yang memiliki anak balita mengenai pentingnya makanan yang sehat dan bergizi untuk anak dan variasi makanan dengan bahan utama ikan. Metode yang digunakan adalah sosialisasi dan praktik memasak abon berbahan ikan. Hasil dari kegiatan ini adalah abon ikan yang dimasak bersama-sama dengan para ibu, dan pemberian hadiah kepada lima pemenang yang bisa menjawab pertanyaan setelah sosialisasi dilakukan.

Abstract

Smart packaging film labels are used as indicator labels to determine the freshness of a product by utilizing natural dyes. Senduduk flower extract contains anthocyanins that have the potential to be used as dyes for film labels because they are sensitive to pH changes. The type of carrier used to transport natural dyes affects the quality of the indicator film label. The purpose of this study was to determine the best type of carrier for smart packaging film labels that use senduduk flower extract as a color indicator. This study used three types of carriers (chitosan, paper, and starch). The test parameters included the label's response to NaOH and NH3, water vapor transmission rate, thickness, tensile strength, elongation percentage, moisture content, and barrier properties. Senduduk flower extract has a deep red color with a pH value of 2. The response of the indicator film label to NaOH and NH3 vapor for the three types of carriers underwent color changes based on the RGB value on each film label. These color changes were analyzed from digital photos and then read using an application to produce the average RGB color, Whatman paper had the lowest thickness was 0.05 mm, moisture content the lowest in the starch film label was 16.52%, water vapor transmission rate was the lowest in the starch film label was 0.74 g/hour m², and barrier strength Whatman paper the best was 17.67 mm, the mechanical properties of the film label with the lowest tensile strength on the chitosan film label were 26.89 N/cm2 and elongation the lowest on Whatman paper was 0.71%. All three types of carriers had good stability during five days of storage at room temperature as observed visually.

Abstract

Oil palm (Elaeis guineensis) is a strategic plantation commodity that contributes significantly to Indonesia’s economy; however, the expansion of oil palm plantations may generate social and environmental impacts. This study aims to analyze the economic, social, and environmental impacts of oil palm plantation expansion on farming communities surrounding the Sultan Thaha Syaifuddin Forest Park (Tahura STS), Batanghari Regency, Jambi Province. The study employed a random sampling method with respondents selected purposively. Income analysis was used to estimate economic benefits, while descriptive analysis was applied to identify social and environmental impacts. The results indicate that oil palm plantation expansion increased farmers’ average income by 47% in the on-farm sector and provided additional income in the off-farm (21%) and non-farm (32%) sectors, resulting in an average total income increase of 23%. However, plantation expansion also triggered social conflicts between local communities and migrants and generated environmental impacts, including reduced groundwater availability, increased forest fire risk, and declining tree biodiversity.
