Abstract

Increased consumption of processed foods, including instant noodles, which have excess sodium content, can make a significant contribution to non-communicable diseases. The purpose of this study was to analyze the factors associated with the consumption of instant noodles in nutrition students at Binawan University. This study used a cross-sectional design involving 76 nutrition students at Binawan University. Data were analyzed using Chi-square test. The research subject data for consumption of instant noodles was the most rare category, namely 46 people (60,5%), nutritional knowledge was in the poor category, namely 50 people (65,8%), the influence of peers in the affected category was 47 people (61,8%), the length of use of social media in the old category is 48 people (63,2%), pocket money in the low category is 45 people (59,2%), the availability of instant noodles in the easy category is 63 people (82,9%). Statistical data showed that there was a relationship between instant noodle consumption and the influence of peers, pocket money, and availability of instant noodles (p<0,05). There is no relationship between nutritional knowledge and duration of use of social media (p>0,05). There is a relationship between the consumption of instant noodles with the influence of peers, allowance, and the availability of instant noodles.

Abstract

Perilaku konsumsi gula, garam, dan lemak di Indonesia untuk usia > 10 tahun mencapai sebesar 53,1 %, untuk makanan asin sebesar 26,2% dan untuk makanan berlemak 40,7%. Berdasarkan hasil Riset Kesehatan Dasar status anak usia 5-12 tahun dengan berdasarkan indeks massa tubuh usia di Indonesia dalam prevalensi gemuk sebesar 20,6%. Tujuan Penelitian ini adalah untuk menganalisis pola konsumsi gula, garam, lemak dengan status gizi siswa sekolah dasar di Sekolah Dasar Islam Terpadu An-Najah Kota Depok. Penelitian ini menggunakan metode kuantitatif dengan desain cross sectional. Sebanyak 66 responden yang memenuhi kriteria inklusi yaitu seluruh anak Sekolah Dasar Islam Terpadu An-Najah kelas 4,5, dan 6 yang hadir dalam proses penelitian. Instrument penelitian menggunakan Form Semi Quantitatif Food Frequency Questionnaire. Kemudian dianalisis menggunakan Uji Chi-Square. Menurut analisis yang dilakukan tidak terdapat hasil yang berhubungan antara konsumsi gula (p = 0,201), garam (p = 0,276), lemak (p = 0,220) dengan status gizi siswa Sekolah Dasar. Tidak terdapatnya hasil yang signifikan antara konsumsi gula, garam, dan lemak dengan status gizi anak sekolah dasar dikarenakan gula, garam, dan lemak merupakan zat gizi mikro yang tidak memiliki hubungan yang berpengaruh dengan status gizi. Berdasarkan hasil yang didapatkan tidak terdapat hubungan yang signifikan antara pola konsumsi gula, garam, lemak dengan status gizi siswa Sekolah Dasar Islam Terpadu An-Najah.

Abstract

Menurut SSGI tahun 2021 balita yang mengalami stunting sebanyak 24,4%, sebanyak 17% untuk balita underweight, dan balita yang mengalami wasting sebanyak 7,1%. Penelitian ini bertujuan untuk menganalisis hubungan pengetahuan ibu, sikap ibu dan pola asuh ibu dengan status gizi. Desain penelitian ini adalah cross-sectional study yang melibatkan 88 orang responden. Rekrutmen responden menggunakan teknik stratified random sampling. Pengumpulan data meliputi pengukuran antropometri dan pengisian kuesioner pengetahuan ibu, sikap ibu, dan pola asuh ibu. Analisis statistik yang digunakan adalah uji chi-square. Hasil penelitian menunjukan terdapat 17 (19,3%) balita pendek, 17 (19,3%) balita dengan BB kurang, 17 (19,3%) balita dengan status gizi kurang, 6 (6,8%) balita gizi lebih. Hasil analisis bivariat didapatkan bahwa terdapat hubungan positif antara sikap ibu dengan status gizi dan pola asuh ibu dengan status gizi (p-value 0,000; p-value 0,000). Tidak terdapat hubungan pengetahuan dengan status gizi maka hasil temuan yang didapatkan dari penelitian ini bahwa pengetahuan ibu tidak memiliki pengaruh terhadap status gizi balita.

Abstract

Background: Anemia during pregnancy significantly increases maternal risk and poor pregnancy outcomes by 1.71-fold. Enhancing pregnant women's knowledge and adherence to health guidelines requires a comprehensive approach. Objectives: This study analyzed the effects of booklet education and cadre assistance on adherence to iron tablet consumption among anemic pregnant women in East Jakarta. Methods: This quasi-experimental study was conducted in 2019 on anemic pregnant women in Makasar Public Health Center, Jakarta. This study comprised three groups: iron-folic acid supplementation only (IF), iron-folic acid supplementation with booklet education (IFB), and iron-folic acid supplementation with booklet education and cadre assistance (IFBA), serving as control, intervention I, and intervention II, respectively. The interventions lasted for three months. Adherence to iron supplementation and knowledge, attitude, and behavior (KAB) regarding anemia were measured. The data were analyzed using ANOVA/Kruskall-Wallis test, Wilcoxon test, and Mc-Nemar test with a significance level of 0.05. Results: There was no difference in the increase of knowledge and behavior regarding anemia among the three groups (p < 0.05) although the behavior score in the IFBA group was significantly higher than in the other two groups. In addition, there was no difference in the percentage of adherence to iron tablet consumption before and after the intervention in the IF, IFB, and IFBA groups (p > 0.05). However, the IFBA group showed an increase of about 41% in adherence. Conclusions: There was no difference in the increase of knowledge and attitude regarding anemia among the three groups, except for behavior. However, the IFBA group showed a significant increase in knowledge, attitude, and behavior after the intervention.

Abstract

Pendahuluan: Remaja putri sering kali mengutamakan tren sosial dibandingkan gizi atau keamanan pangan, sehingga menyebabkan tingginya angka keracunan pangan—48% di rumah dan 21% di sekolah. Untuk mengatasi hal tersebut, diperlukan media edukasi yang menarik. Penelitian ini menganalisis dampak media podcast dan flashcard terhadap pengetahuan keamanan pangan pada siswi MAN 2 Kota Bogor. Metode: Penelitian ini merupakan penelitian kuantitatif dengan desain penelitian True experimental dengan rancangan pre-test post-test control group design. Pengumpulan data dilakukan melalui pre-test dan post-test untuk mengukur pengetahuan responden. Hasil: Analisis data menggunakan Paired Sample T-test menunjukkan adanya perubahan yang signifikan terhadap peningkatan pengetahuan siswa tentang memilih pangan aman sebelum dan sesudah edukasi menggunakan media podcast dan flashcard, yang ditunjukkan dengan nilai p pada pre-test dan post-test sebesar 0,000 yang berarti nilai tersebut < 0,05 pada kelompok podcast dan 0,001 (< 0,05) pada kelompok flashcard. Kesimpulan: Penelitian ini menyimpulkan bahwa baik media podcast maupun flashcard secara signifikan dapat meningkatkan pengetahuan siswa dalam memilih pangan aman (p < 0,05). Media podcast, khususnya, efektif untuk mendidik remaja. Untuk meningkatkan pemahaman, upaya di masa mendatang harus menekankan respons tubuh terhadap makanan yang tidak aman dan melibatkan lebih banyak subjek penelitian.     Introduction: Adolescent girls often prioritize social trends over nutrition or food safety, contributing to high rates of food poisoning—48% at home and 21% at school. To address this, engaging educational media is needed. This study analyzes the impact of podcast and flashcard media on food safety knowledge among female students at MAN 2 Bogor City. Method: This study is a quantitative study with a True experimental research design with a pre-test post-test control group design. Data were collected through pre-test and post-test to measure respondents' knowledge. Results: Data analysis using the Paired Sample T-test showed significant changes in increasing students' knowledge about choosing safe food before and after education using podcast and flashcard media, as indicated by the p-value in the pre-test and post-test of 0.000, which means the value is <0.05 in the podcast group and 0.001 (<0.05) in the flashcard group. Conclusion: This study concludes that both podcast and flashcard media significantly improve students' knowledge in choosing safe food (p < 0.05). Podcast media, in particular, is effective for educating adolescents. To enhance understanding, future efforts should emphasize the body's response to unsafe food and involve a broader range of research subjects.

Abstract

The Ciliwung riverbank area is a water catchment area and is prone to flooding every year, which poses a risk of various kinds of infectious diseases and other health problems. This needs to be prevented by socializing about PHBS (Clean and Healthy Living Behavior) to school children. The aim of this community service activity is to provide education regarding PHBS and the practice of hand washing movements to school-aged children in the Ciliwung riverbank area. This activity was carried out at 7 elementary schools in the East Jakarta and South Jakarta areas in April – May 2018. The results of this activity were an increase in knowledge regarding PHBS for most school groups (score more than 60%). Regular socialization of sanitary behavior is necessary, and the school setting needs to have a sufficient infrastructure for sanitation.

Abstract

Diabetes mellitus is one of the major health issues in Indonesia, and Diabetes mellitus is a significant health issue in Indonesia, and consuming low-glycemic index foods can help manage blood sugar levels. This study aimed to develop a cookie formula incorporating red ginger by-products and analyze its proximate composition, fiber content, antioxidant activity, and glycemic index. The research methods included an organoleptic test involving 30 panelists, chemical composition analysis, and a glycemic index test on 20 subjects. Organoleptic test results showed that cookies with red ginger by-products had a more preferred color and taste than control cookies. Chemical analysis revealed an increase in dietary fiber content and antioxidant activity in cookies containing red ginger byproducts. The glycemic index test indicated that these cookies contributed to a more stable reduction in the blood sugar levels. The study concludes that incorporating red ginger by-products into cookie formulations can provide additional nutritional benefits for patients with diabetes mellitus while supporting sustainability through a zero-waste approach. These findings highlight the potential of red ginger by-products as a functional food ingredient that benefits both health and environmental sustainability, encouraging further exploration of food by-product utilization in functional food development.

Abstract

Stunting is a chronic nutritional problem affecting child growth and remains a challenge in East Jakarta, particularly in Pondok Kopi and Klender. This program aimed to improve the nutritional status of stunted children through family-based nutrition education and assistance. Activities were conducted from September to November 2023 in the Duren Sawit Public Health Center area. Interventions included nutrition education, monitoring of weight and height, dietary intake recording, and home environment observation. Results showed improved maternal knowledge about food variety and nutritional status improvements in some children. Approximately 20–25% showed progress in weight-for-age, height-for-age, and weight-for-height indicators. Despite fluctuations, the interventions had a positive impact on child growth. Environmental factors also influenced nutrition, so sanitation education was provided. The program demonstrated that family-based education and assistance can help reduce stunting, though continued and personalized interventions are still needed.
