Abstract

Moringa (Moringa oleifera) seeds contain good nutritional constituents and several components that can potentially reduce cholesterol levels, namely oleic acid, phytosterols, and dietary fiber. However, it tastes bitter, so it needs to be treated so that the bitter taste disappears but does not affect much of the content that can lower cholesterol. This study aims to get moringa seeds that are not bitter and have the potential to prevent hypercholesterolemia. The soaking treatment of peeled moringa seeds in either water or 3.5% NaCl salt, followed by 80 minutes of boiling, resulted in moringa flour with a very low bitter taste. The oleic acid content of the seed flour from soaking treatment with water or salt by boiling for 40 or 80 minutes is still high, in the range of 69–72%. Oleic acid is known to improve blood cholesterol profiles. The content of phytosterols, one of the cholesterol absorption inhibitors, from moringa flour treatment of 27–29 mg/100 g dw, is much higher than control flour (15 mg/100 g dw). The dietary fiber content of moringa seeds (total dietary fiber, soluble dietary fiber, insoluble dietary fiber) generally does not change after treatment. The results showed that soaking moringa seeds in water for 24 hours, followed by boiling for 80 minutes, produced moringa flour that can be used to develop hypercholesterolemia prevention foods. Keywords: bitter taste, cholesterol, moringa seeds, oleic, phytosterol

Abstract

This study evaluated the effect of moist heat processing (boiling, steaming, autoclaving) on the physical properties of Moringa oleifera seed flour to determine the optimal pretreatment for product development. Exotesta of moringa seeds were removed, subjected to the treatments, oven-dried, grounded, and sieved (60 mesh). Moisture content, color (CIELab), bulk density, and angle of repose were analyzed. Results showed that all treatments increased moisture content compared to raw seeds (4,36–4,46%), with no significant difference among treatments. Autoclaving produced flour with the highest bulk density (0,4258 g/cm³) and lowest angle of repose (33,37°), indicating better flowability. Color analysis revealed darker flour in autoclaved and boiled samples due to Maillard reactions. Overall, autoclaving is the most effective pretreatment for producing denser, free-flowing Moringa seed flour suitable for functional food applications.

Abstract

Edible film was a thin layer made from agricultural-based raw materials that was applied as a coating on food components and was directly consumable. Red ginger as a herbal plant contained polysaccharides that had the potential to serve as a starch source. This study aimed to obtain the best edible film formulation with the addition of red ginger starch, which was applied as packaging for seblak seasoning. The research was conducted experimentally using a completely randomized design (CRD) consisting of five treatments and three replications. The treatments included P1 with 0.5 g of red ginger starch, P2 with 1.0 g, P3 with 1.5 g, P4 with 2.0 g, and P5 with 2.5 g. The observed parameters were water vapor transmission rate, thickness, solubility, dissolution time in seblak seasoning, and moisture content of the edible film applied to the seasoning. Based on the results, the selected treatment was P1 (0.5 g red ginger starch), which produced a water vapor transmission rate of 4.58 g/m²•hour, a thickness of 0.18 mm, a solubility of 91.08%, a dissolution time of 1 minute 3 seconds in seblak seasoning, and a moisture index of 0.0711 g on the sixth day.

Abstract

This community service activity began with the implementation of a Focus Group Discussion (FGD) with partners, which served as an initial exploration to design service programs that were relevant to the needs of the community. Partners in this activity are the manager of the school business unit and the parents of students. The results of the FGD resulted in an agreement on the focus of activities with stages, namely: (1) Education to improve food quality and nutrition in the prevention of stunting from an early age, and (2) Processing of local fish products (snakehead fish) as a zero waste-based food diversification. Through this FGD, an overview of needs, challenges, and opportunities that can be the basis for the implementation of counseling programs is obtained. It is hoped that the results of this activity can increase partners' knowledge about the processing of local fish food products in an effort to prevent stunting.
