Abstract

Brownies chips are a snack made from brownies dough that is molded into thin squares and baked dry to produce brownies chips that are easy to consume and last a long time. The aim of this research is to determine the formulation of jicama flour (Pachyrhizus erosus) and wheat flour which produces brownies chips with the best sensory properties. This research was structured in a Complete Randomized Block Design (RAKL) with six treatments and four replications. The formulation treatment of jicama flour and wheat flour consisted of 6 levels, namely T0 (0% : 100%), T1 (10% : 90%), T2 (20% : 80%), T3 (30% : 70%), T4 (40% : 60%), T5 (50% : 50%). Data were analyzed using the Bartlett test and Tuckey test, followed by analysis of variance (ANARA), and the Least Significant Difference (BNT) test at the 5% level. Based on the research results, brownies chips with a formulation of jicama flour and wheat flour that produces the best sensory results is the T4 treatment (40% jicama flour : 60% wheat flour) which has a sweet and distinctive chocolate taste, blackish brown color, crunchy and dense texture, and aromatic. typical brownies chips. The results of the chemical analysis of the brownies chips were water content 3,76%, ash content 2,34%, protein content 13,87%, fat content 25,61%, carbohydrate content 54,42%, and crude fiber content 6,01%. The calculation results for the calorific value of brownies chips per 100 grams are 503,65 kcal.

Abstract

Dimsum Moresto merupakan restoran penyedia produk olahan dimsum yang saat ini sangat dikenal dikalangan masyarakat, terutama masyarakat Bandar Lampung. Kesukaan masyarakat Indonesia terhadap dimsum dapat diketahui melalui penilaian konsumen terhadap atribut-atribut produk yang dimiliki oleh produk dimsum. Penelitian ini bertujuan untuk mengetahui sikap konsumen terhadap produk Dimsum Moresto, serta mengetahui atribut terpenting dan kinerja atribut produk Dimsum Moresto agar dapat dikembangkan. Penelitian ini dilakukan menggunakan metode fishbein untuk menilai sikap konsumen terhadap atribut produk dan metode Importance Performance Analysis (IPA) untuk mengetahui atribut terpenting dan kinerja atribut tersebut. Atribut yang digunakan berupa rasa, tekstur, varian, aroma, warna, porsi, harga, dan promosi. Atribut rasa memperoleh nilai sikap sebesar 20,70 yang dinilai sangat positif oleh konsumen. Atribut tekstur, varian, aroma, warna, porsi, dan harga memperoleh nilai sikap 15,4 hingga 20,2 yang dinilai positif oleh konsumen. Atribut promosi memperoleh nilai sikap sebesar 14,95 yang dinilai netral oleh konsumen. Atribut harga dan promosi termasuk ke dalam kuadran prioritas utama dikarenakan menurut penilaian konsumen atribut tersebut dianggap penting dalam keputusan pembelian dimsum tetapi kinerjanya belum memenuhi harapan konsumen, sehingga perlu untuk dikembangkan agar dapat meningkatkan penjualan.

Abstract

The aim of the study was to obtain a formulation of mung bean flour and tapioca flour nugget swanggi fish (Priacanthus tayenus) with sensory properties according to SNI-7758-2013. The study was arranged in a Completely Randomized Block Design (RAKL) with one factor and four replications. The comparison treatment of tapioca flour and mung bean flour consisted of 6 levels, namely P1(100%:0%), P2(90%:10%), P3(80%:20%), P4 (70%:30%), P5(60%:40%), and P6(50%:50%). The similarity of data variance was analyzed by Bartlett's test and additional data by Tuckey's test, and then analysis of variance was carried out to determine the effect between treatments. The data were further analyzed with the Least Significant Difference Test (BNT) at the 5% level. The results showed that the best Swanggi fish nuggets, according to SNI 7758:2013, the addition of 30% mung bean flour and 70% tapioca flour (P4), which resulted in half-cooked nugget texture with a score of 7.07 (solid and compact) and nugget texture ripe with a score of 6.56 (somewhat dense and compact), taste with a score of 6.70 (typical of fish), the half-cooked aroma of nuggets with a score of 6.84 (like) and ripe nuggets with a score of 7.26 (like), colour with a score of 7.58 (yellowish white) and overall acceptance with a score of 7.92 (like). The water content of swanggi fish nuggets in the best treatment (P4) was 50.02%, ash content was 2.98%, protein content was 9.83%, and fat content was 4.17%.

Abstract

Today, there are still very few product variations for product development from Heterotrigona itama pure honey, so it is necessary to develop Heterotrigona itama pure honey products. This study aims to determine the best Heterotrigona itama pure honey formulation for making cold lemon tea. The research consisted of three stages: dehumidification of Heterotrigona itama honey, formulation of cold lemon tea drink, and continued testing in the form of hedonic tests and proximate analysis of the best formula. The research used a completely randomized design (CRD) with the formulation of Heterotrigona itama honey and white crystal sugar, including 45 grams of sugar (F0), 23 grams of honey and 33.75 grams of sugar (F1), 46 grams of honey and 22.5 grams of sugar (F2), 69 grams of honey and 11.25 grams of sugar (F3), and 92 grams of honey (F4) with F0 as the control formulation. The data were analyzed using variance (ANOVA) followed by the Honest Significant Difference (BNJ) test. The formulation of Heterotrigona itama honey with a concentration of 46 grams and white crystalline sugar with a concentration of 22.5 grams (F2) in 500 ml of water is the best formula. The public accepts it for making cold lemon tea fresh drinks with a pH value of 3.09, reducing sugar of 4.6645 %, ash of 0.391 %, and total titrated acid of 2.4826%.

Abstract

Mocaf flour and tapioca have potential as a filler to produce baji-baji fish nuggets. The purpose of this study was to determine the effect of adding mocaf flour and tapioca on chemical, physical and sensory characteristcs of baji-baji fish nuggets, and to obtained the best ratio of mocaf flour and tapioca to produce baji-baji fish nuggets with chemical, physical and sensory properties. The experiment used a Completely Randomized Block Design (RCBD) with a single factor, and four replications.  The factor used was the comparison of mocaf flour and tapioca which consisted of six levels, namely 5%: 95% (P0), 20%: 80% (P1), 35%: 65% (P2), 50%: 50% (P3), 65%: 35% (P4), and 80% : 20% (P5).  The data obtained were tested for homogeneity with the Barlett test and additional data were tested with the Tuckey test, then the data were analyzed for variance (ANARA) to determine the effect between treatments. The data will be analyzed further with the Least Significant Difference Test (LSD) at 5% level.  The results showed that the addition of mocaf flour and tapioca had an effect on the moisture content, ash content, hardness, cohesiveness, springiness, texture and overall acceptance of baji-baji fish nuggets. The best concentration of mocaf flour and tapiocaadded in baji-baji fish nuggets was P2 (35% mocaf flour: 65% tapioca) with moisture content (53.28%), ash content (2 ,08%), hardness 253.06 gf, cohesiveness 1.01 gs, springiness 6.85 mm, texture 8.56 (solid, compact), taste 7.08 (fish-spesialize), color 7.06 (liked),entirely- acceptance 7.10 (liked), protein content (14.12%), and fat content (10.28%).

Abstract

Butterfly pea flower is one of the flowers that can be used as an ingredient in making functional drinks. This research aims to determine the best formulation of a combination of functional drink treatment of butterfly pea flower with the addition of different butterfly pea flower extracts and to determine the antioxidant activity of butterfly pea flower using the DPPH method. This research was structured in a Complete Randomized Block Design (RAKL) with a single factor and 4 replications. The formulation of the telang flower functional drink consists of 6 concentrations, namely 5 mL (P1), 10 mL (P2), 15 mL (P3), 20 mL (P4), 25 mL (P5), 30 mL (P6). The data obtained were analyzed for homogeneity using the Bartlett test and additional data was tested using the Tuckey test, then the data was analyzed for variance (ANARA) to determine the effect between treatments. If there is a real influence, the data is analyzed further with the Honestly Significant Difference Test (BNJ) at the 5% level. The results showed that the best drink formulation was P3 (15 mL of butterfly pea flower extract concentration) which produced a taste with a score of 3.07 (like), color with a score of 3.74 (like), aroma with a score of 3.78 (like), and overall acceptance with a score of 3.63 (likes). The antioxidant activity of the telang flower functional drink ranges between 29.9−42.2% with an IC50 value of 80.14 ppm which is classified as a strong antioxidant.

Abstract

Tujuan dari penelitian ini yaitu mengetahui pengaruh penggunaan beberapa jenis hidrokoloid yaitu karagenan, pektin, gelatin dan CMC terhadap karakteristik sensori selai campuran lembaran sirsak dan pepaya serta mengetahui jenis hidrokoloid yang digunakan sehingga menghasilkan selai campuran lembaran sirsak dan pepaya dengan sifat sensori terbaik. Penelitian ini disusun menggunakan Rancangan Acak Kelompok Lengkap (RAKL) dengan 5 perlakuan dan 5 kali ulangan. Perlakuan dalam penelitian ini yaitu P1 (Tanpa penambahan hidrokoloid), P2 (Penambahan pektin 2%), P3 (Penambahan karagenan 2%), P4 (Penambahan gelatin 1,5%) dan P5 (Penambahan CMC 1%). Data dianalisis menggunakan uji Bartlett dan uji Tuckey, dilanjutkan dengan analisis ragam (ANARA), dan uji lanjut BNT (Beda Nyata Terkecil) dengan taraf 5%. Berdasarkan hasil penelitian, penggunaan berbagai jenis hidrokoloid berpengaruh terhadap parameter tekstur dan penerimaan secara keseluruhan. Pektin dengan konsentrasi 2% merupakan hidrokoloid yang menghasilkan selai lembaran dengan karakteristik sensori terbaik dengan hasil skor kesukaan tekstur 3,313 (suka) dan skoring tekstur 3,425 (kompak dan plastis), aroma 3,133 (suka), warna 3,040 (suka), rasa 3,193 (suka ), penerimaan keseluruhan 3,733 (sangat suka), kadar udara 10,87%, vitamin C 0,9725 mg/g, kekerasan (kekerasan) 601,25 gf, kohesif (kekompakan) 0,815 dan springiness (kekenyalan) 2,85 mm.

Abstract

Abon ikan tuhuk sangat rentan terhadap ketengikan, Ketengikan terjadi karena asam lemak pada suhu ruang dirombak akibat hidrolisis atau oksidasi sehingga perlu adanya penambahan antioksidan untuk menekan laju asam lemak bebas. Tujuan penelitian adalah untuk mengetahui pengaruh penambahan ekstrak buah mahkota dewa (Phaleria macrocarpa) terhadap perubahan asam lemak bebas yang terkandung dalam abon ikan tuhuk (marlin) yang disimpan selama 28 hari. Antioksidan yang digunakan yaitu ekstrak buah mahkota dewa dengan konsentrasi 0%, 1%,2% 3% dan 4%. Penelitian dilakukan menggunakan Rancangan acak Lengkap faktor tunggal. Data diuji lanjut dengan Uji Beda Nyata (BNT) pada taraf 1%. Ekstrak buah mahkota dewa pada abon ikan tuhuk berpengaruh nyata terhadap perubahan total asam lemak bebas, tetapi tidak berpengaruh nyata terhadap rasa, aroma, warna dan tekstur. Konsentrasi yang terpilih yaitu pada penambahan sebesar 4% dengan kriteria rasa khas abon, aroma tidak tengik, tekstur kering, warna kuning kecoklatan, dengan kandungan asam lemak bebas sebesar 7,56%, kadar lemak 25,58%, kadar air 5,95%, kadar abu 6,56%, kadar protein 29,56%, kadar karbohidrat 28,88%, kadar gula 26% dan serat kasar 2,71%.Kata kunci: antioksidan, mahkota dewa, abon ikan tuhuk

Abstract

Kerupuk merupakan makanan yang digemari namum masih rendah nutrisi. Tujuan penelitian adalah mengetahui pengaruh penambahan tepung tempe terhadap sifat fisikokimia dan sensori pada kerupuk ikan lele (Clarias gariepinus) serta mendapatkan konsentrasi tepung tempe terbaik terhadap sifat fisikokimia dan sensori pada kerupuk ikan lele (Clarias gariepinus) yang sesuai mutu SNI 01-2713-2009. Penelitian disusun dalam Rancangan Acak Kelompok Lengkap (RAKL) non faktorial dengan 7 taraf perlakuan dan 4 kali ulangan. Formulasi penambahan tepung tempe sebesar 0% (P0), 5% (P1), 10% (P2), 15% (P3), 20% (P4), 25% (P5) dan 30% (P6) (b/b). Data diuji kesamaan ragamnya dengan uji Bartlett dan kemenambahan data diuji dengan Uji Tuckey. Analisis Sidik Ragam digunakan untuk mengetahui pengaruh perlakuan, selanjutnya perbeedaan antar perlakuan dianalisis menggunakan Uji Beda Nyata Terkecil (BNT) pada taraf 5%. Hasil penelitian menunjukkan bahwa kerupuk ikan lele terbaik adalah perlakuan P2 (penambahan tepung tempe 10%) yang menghasilkan volume pengembangan sebesar 346,02%, kadar air sebesar 7,88%, kadar protein sebesar 9,78%, kadar abu sebesar 3,72% dan aktivitas antioksidan 178,80%. Uji sensori pada produk menghasilkan tekstur dengan skor 3,60 (renyah), rasa dengan skor 3,41 (rasa agak khas tepung tempe), warna dengan skor 3,70 (kuning) dan aroma dengan skor 3,21 (aroma agak khas tepung tempe).
