Abstract

Stunting is a nutritional problem which its overcoming effort should be started from thousand days of early life. Age of 6 to 24 months is a golden life phase that when its nutritional fulfillment are insufficient, it will give a big impact for the future life. On this phase, the childs are started for recognition of breastmilk complementary food which its texture and amount are different based on the age. There are still many problems in Indonesia regarding the golden standard implementation of infant and child feeding such as Early Breastfeeding Initiation, Exclusive Breastfeeding, and Breastfeeding till 24 months or more. Workshop using andragogy training technique in rilex but serious situation is expected to increase knowledge of training material. Workshop is conducted by utilizing the available space with group dynamics and games. The results of public service activity with 24 cadres as participant showed that there are 20 cadres that increase their knowledge after attending workshop and there are 4 cadres that there is no change in knowledge. Wilcoxon test showed p value as 0.001. This is indicate that statistically there is a significant different of knowledge after attending workshop. The common child and infant feeding practice in our community is early complementary feeding with excuses that breastmilk is not enough to increase baby weight and food taboo such as forbidden for consumption of milk banana.

Abstract

The contribution of iodine from food is thought to depend largely on the consumption of iodized salt. Potassium iodate (KIO3) is often used as a source of iodine in iodized salt, but experimental data on the stability of potassium iodate at low temperature storage are still very limited. This study aims to determine the effect of KIO3 conditions of iodized salt stored at low temperatures (0oC, 5oC, 13oC, 15oC, and a temperature range of 29-33oC). This research is a descriptive type, which aims to determine the KIO3 content of iodized salt at low temperature storage using salt samples purchased from modern markets. The results obtained indicate that the storage at low temperatures of iodized salt resulted in a decrease in KIO3 levels. The loss of KIO3 in iodized salt tends to increase the lower the temperature. Depreciation of KIO3 content in iodized salt at low temperature storage, namely: 0oC (17.4%), 5oC (7.3%), 13oC (6.8%), 15oC (2.4%) and a temperature range of 29-33oC ( 2.3%). Based on the results of the study, it can be concluded that the KIO3 content in iodized salt can experience shrinkage at low temperature storage.

Abstract

Indonesia as a developing country is one of the contributors to the increasing incidence of Overweight adolescents. The form of activities such as providing counseling and training on early detection of overweight and providing short workshops on making healthy snacks to prevent obesity (Banana Bud) is one of the efforts to prevent obesity in adolescents. The purpose of this community service is to increase adolescent knowledge about overweight prevention, improve adolescent skills in early detection of overweight and in selecting and making snacks to prevent overweight. This type of community service is providing counseling and training on early detection of overweight as well as providing a short workshop on making healthy snacks to prevent overweight (Banana bud) at Karuna Dipa junior high school in Palu City. Knowledge assessment results show that an increase in the average knowledge score was 2.9 points (14.5%). For the skill of determining BMI, students achieved the ability of 72% which was assessed from their ability to calculate BMI using discs or using a calculator, while for the determination of overweight, students' abilities reached 83% which was assessed from their ability to use discs to detect overweight. The conclusion of community service is that there is an increase in knowledge, skills for determining BMI using discs and calculators, and knowledge of making healthy snacks to prevent overweight

Abstract

Food is one of the most important things in human survival and in terms of fulfilling a person's nutrients needed to grow and develop. In accordance with the diversity of resources, culture and local wisdom. Indonesia has a variety of local food sources that produce animal protein in the form of fish, shrimp, shellfish, and others. One source of animal protein that is still rarely known is freshwater clams or Gravestone (Pilsbryoconcha Exilis). People in the North Morowali or Morowali areas usually call the mussel (Pilsbryoconcha Exilis) as meti. One example of the use of this shellfish is making Chips. This Gravestone Chips (Pilsbryoconcha Exilis is made as an alternative to get protein intake. The purpose of this community service is to find out the development of Gravestone chips (Pilsbryoconcha Exilis). The results of community service showed that the results of the assessment before the counseling (pretest) were 27.3% of participants with good knowledge and there was an increase after attending the counseling (posttest) to 91.7%. The conclusion of this community service is that this activity has a good impact on participants in terms of knowledge about protein sources from local food and examples of their processing.

Abstract

Adolescents are the nation's assets for the creation of a better future generation. Adolescence is a time of rapid changes in terms of physical, cognitive, psychosocial or behavioral growth. Female adolescent often experience problems, one of which is anemia. Anemia is a deficiency (deficiency) of red blood cells due to low hemoglobin levels in the body. Anemia that occurs in female adolescent can interfere with the process of growth and development. The purpose of this community service is to increase the knowledge and awareness of female adolescent regarding balanced nutrition messages and anemia. The method used is public education by utilizing the media (food model). The results of this activity showed that 30.5% of female adolescent had anemia, 41,7% of female adolescent with good knowledge, and increased to 93,3% after training. The conclusion of this community service activity is that there is an increase in knowledge and awareness of female adolescent related to anemia by implementing a balanced nutrition messages. Through this activity, participants are expected to maintain a healthy lifestyle with balanced nutrition guidelines and make efforts to prevent anemia.

Abstract

Pemilihan makanan merupakan jumlah pangan yang dikonsumsi seseorang atau sekelompok orang yang bertujuan untuk memenuhi kebutuhan fisiologis, psikologis, dan sosiologis. Pemilihan makanan pada remaja dapat menentukan pemenuhan kebutuhan zat gizi remaja. Status gizi remaja saat ini juga dapat menentukan status gizi generasi selanjutnya. Ada beberapa faktor yang dapat mempengaruhi pemilihan makanan seperti faktor biologis, pengalaman dengan makanan, pribadi dan antarpribadi, serta faktor lingkungan. Tujuan Penelitian ini untuk menganalisis faktor yang mempengaruhi pemilihan makanan pada remaja dengan status gizi normal dan tidak normal di Kota Palu. Jenis penelitian deskriptif dengan pendekatan cross sectional. Penelitian ini akan dilakukan di SMA Negeri 5 Kota Palu, Sulawesi Tengah. Waktu penelitian pada bulan Juni hingga Agustus 2023. Populasi adalah semua remaja SMA di Kota Palu. Teknik pengambilan sampel menggunakan purposive sampling dengan kriteria sampel yaitu remaja usia 15-18 tahun dan bersedia menjadi responden dalam penelitian. Besar sampel sebanyak 96 orang. Instrumen penelitian menggunakan kuesioner pemilihan makanan atau food choice questionare (FCQ) dan alat yang digunakan untuk mengukur status gizi yaitu timbangan berat badan dan microtoise. Hasil penelitian adalah faktor biologis, pengalaman dengan makanan, pribadi dan antarpribadi, serta faktor lingkungan tidak berhubungan dengan status gizi remaja dengan smeua nilai p > 0,05. Begitu pula semua nilai OR < 1, sehingga dapat disimpulkan faktor pemilihan makanan tidak mempengaruhi status gizi remaja. Perlu menilai berbagai faktor lain yang mungkin berhubungan dengan status gizi remaja.

Abstract

Di Provinsi Sulawesi Tengah tahun 2018 terdapat 32,5% balita yang mengalami stunting yang bermakna sebagai masalah kesehatan masyarakat dan dianggap serius. Penelitian ini bertujuan untuk mengetahui gambaran status riwayat berat badan lahir rendah, inisiasi menyusui dini dan ASI ekslusif pada balita stunting di Kelurahan Duyu wilayah kerja Puskesmas Sangurara. Penelitian ini merupakan penelitian deskriptif dengan jumlah sampel sebanyak 50 balita stunting. Data diperoleh dengan cara wawancara menggunakan kuesioner terstruktur. Hasil menunjukkan bahwa balita stunting dengan status riwayat berat badan lahir rendah (BBLR) yaitu 6 orang (12,0%), tidak dilakukan inisiasi menyusu dini (IMD) yaitu 38 orang (76,0%), dan riwayat tidak diberikan ASI Ekslusif yaitu 35 orang (70,0%). Kesimpulan dari penelitian ini adalah hanya sebagian kecil balita stunting memiliki riwayat BBLR, namun sebagian besar balita stunting memiliki riwayat tidak IMD dan tidak diberikan ASI Ekslusif.

Abstract

Synthesis of phenethyl (O-acetyl-p-coumaroyl) (4) from p-coumaric acid (1) using phenethylalcohol was succesfully conducted via acetylation (2), chlorination (3), and esterification (4). The acetylation was performed using acetic anhydride in pyridine at room temperature for 6 hours, the chlorination was performed using thionyl chloride in dry benzene by reflux at 75oC for 4 hours, continued with esterification by in situ using phenethylalcohol in dry dichloromethane at room temperature for 4 hours. The structure of each step reaction product was identified using FT-IR spectroscopy. The compound 2 was obtained as yellowish crystal with m.p 201-203oC and the compound 4 was obtained as white crystal with m.p 68-69oC.

Abstract

Adolescents are a group vulnerable to nutritional problems due to their ongoing growth phase. A lack of nutritional knowledge and poor body image perception can negatively impact their nutritional status. Nutrition education is essential to enhance adolescents' knowledge, shaping healthy attitudes and behaviors regarding diet and other factors influencing food choices. This study utilized WhatsApp as an educational media platform. This study aimed to analyze the effect of social media-based nutrition education on adolescents' nutritional knowledge and body image perceptions. This descriptive research employed a quasi-experimental approach with a one-group pre-test and post-test design. The study was conducted in high schools in Palu City, Central Sulawesi, from January to June 2024. Data collected included respondent characteristics, knowledge levels, and body image perceptions. Data collection involved administering a nutrition knowledge questionnaire and assessing body image perception using the Figure Rating Scale (FRS). The data were analyzed using a paired sample t-test. The results revealed a significant effect of social media-based nutrition education on both adolescents' nutritional knowledge and body image perceptions, with a significance value of ????<0.05. There was a 61% increase in the percentage of adolescents with sufficient knowledge. Additionally, there was a 25% increase in the number of adolescents satisfied with their body shape.

Abstract

  Palu City is the capital of Central Sulawesi Province which is prone to earthquakes because there is a fault in the earth's crust known as the Palu-Koro fault. There were 3 disasters at once in Central Sulawesi, namely the earthquake, tsunami and liquefaction in 2018. Natural disasters can have an impact on various kinds of losses experienced by the community, including nutritional disorders and disrupted components of food security. Toddlers are the group most vulnerable to nutritional problems and food insecurity in disaster situations up to post-disaster. This study aims to determine household food security and nutritional status of children under five after the disaster in Palu City. This research is a descriptive type of research using a cross-sectional by looking at the relationship between household food security and the nutritional status of children under five after the disaster in Palu City. The sampling technique used purposive sampling with a total sample of 101 respondents consisting of mothers and toddlers. The instruments used were the USDA questionnaire to assess food security and measurements of length or height and weight to measure the nutritional status of children under five. Data collection used a USDA questionnaire to assess household food security and the BB/U index was used to assess the nutritional status of children under five. There is no significant relationship between food security and nutritional status of children under five after the disaster in Palu City. This can happen because children under five with nutritional status of normal or abnormal weight 76.24% come from families with high food security scores. In addition, the existence of good food distribution in Palu City after the disaster occurred was also a cause of good food availability.
