Abstract

Research facts prove that small-sized fish are essential nutrition during the first 1000 days of life. Central Sulawesi Province has an endemic small-sized marine fish species locally known as duo or penja fish (Awaous sp), which has not been studied for its bio-mineral content. This study aimed to analyze the moisture, ash, protein, calcium, iron, and zinc content in Awaous sp protein flour. This research was a descriptive laboratory study conducted at the Ilmu Bahan Makanan Laboratory Department of Nutrition Poltekkes Kemenkes Palu and PT. Saraswanti Indo Genetech Laboratory, Bogor, West Java, from January to September 2023. The sampling technique used purposive sampling, which involved purchasing fish from the local market in Palu city. Awaous sp protein flour had a moisture, ash, protein, Ca, Fe, and Zn content of 3.89%, 9.71%, 73.53%, 2316.88 mg/100g, 24.54 mg/100g, and 8.97 mg/100g, respectively. The contribution per serving of 145 grams of Awaous sp fish flour met the nutritional requirements (Recommended Dietary Allowances - RDA) for protein, Ca, Fe, and Zn per person per day for infants aged 6-11 months, children aged 1-3 years, pregnant women, and lactating women. Awaous sp protein flour had higher protein and Fe content compared to other small fish and had the potential to meet RDA requirements. Therefore, consuming Awaous sp protein flour as part of the daily diet can be a suitable strategy to address nutritional deficiencies during the first 1000 days of life for residents in Central Sulawesi.

Abstract

The liver and entrails of cakalang fish can be mixed into bakery products and other snacks using the latest technology to eliminate the fishy flavours. Although this product is believed to have selling value, this product has never been used as an idea in entrepreneurship. the target group is students and graduates who are or have been in the product sales business and have experience in the field of product marketing, a total of 10 people. The method of implementing the coaching system is related to practical knowledge about entrepreneurship and product manufacturing through training activities and technical guidance. Monitoring and evaluation of program success is carried out after 3 (three) months of entrepreneurial development with the achievement targets being the number of promotional activities and net profit earned. The results obtained were that there were 4 (four) people or 40% of participants who developed products in their line of business, where 2 people carried out business/entrepreneurship development and 2 people developed products into a snack menu at work. The average percentage of sales profit achievement is around 50% calculated during product sales. Based on the results of the program, it can be concluded that superior products have been created that can be developed into business ventures for students and graduates as training participants.

Abstract

Food Additives (FDA) are certain ingredients added to food to make it look attractive and have a longer shelf life. FDA can be dangerous if used in food in doses greater than the specified standard or consumption limit. Hazardous FDA are usually found in school snacks, so education is needed to increase students' knowledge to protect them from dangerous FDA. The purpose of this community service is to increase students' understanding and knowledge regarding dangerous FDA in school snacks. This activity was carried out at SMA Negeri 7 Palu with a total of 59 participants. The implementation of the activity was in the form of providing education about dangerous FDA in school snacks to students using lecture methods and leaflet distribution. Knowledge measurements were carried out before and after the education. The results of the pre-post test showed that there was an effect of providing education on students' knowledge with a significance value of α = 0.00 with an increase in knowledge of 25.4%. The increase in students' knowledge is expected to have implications for students' attitudes in choosing safe foods for consumption.

Abstract

Abstrak: Stunting tetap menjadi masalah kesehatan masyarakat yang persisten di Indonesia dan sangat terkait dengan anemia pada remaja putri serta terbatasnya akses rumah tangga terhadap pangan bergizi. Program pengabdian masyarakat ini bertujuan untuk memperkuat peran remaja putri dalam pencegahan stunting dengan meningkatkan pengetahuan kader kesehatan dan kader remaja serta mendorong pemanfaatan pekarangan rumah sebagai sumber pangan bergizi. Kegiatan ini dilaksanakan di Kota Palu, dengan melibatkan 29 peserta dan menggunakan metode edukasi interaktif yang didukung oleh leaflet. Tingkat pengetahuan diukur melalui pre-test dan post-test. Hasil menunjukkan adanya peningkatan signifikan pengetahuan kader mengenai anemia, stunting, dan pemanfaatan pekarangan rumah (p = 0,001). Program ini juga mendorong kader untuk menghidupkan kembali kebun gizi keluarga guna meningkatkan ketersediaan pangan kaya zat gizi. Temuan ini menunjukkan bahwa edukasi terstruktur secara efektif meningkatkan kapasitas masyarakat dalam pencegahan stunting dan menekankan pentingnya keberlanjutan program melalui pendampingan serta implementasi praktik di lapangan.Abstract: Stunting remains a persistent public health issue in Indonesia and is closely linked to anemia among adolescent girls and limited household access to nutritious foods. This community engagement program aimed to strengthen the role of adolescent girls in stunting prevention by improving the knowledge of health and youth cadres and promoting the use of home gardens as nutrition sources. Conducted in Palu City, the program involved 29 participants and utilized interactive education supported by leaflets. Knowledge levels were assessed using pre- and post-tests. Findings showed a significant improvement in cadre knowledge regarding anemia, stunting, and home garden utilization (p = 0.001). The program also encouraged cadres to revitalize home gardens to increase the availability of nutrient-rich foods. These results demonstrate that structured education effectively enhances community capacity for stunting prevention and underscores the importance of sustaining such initiatives through continued mentoring and practical implementation.
