Abstract

Peran tokoh masyarakat sebagai edukator dibutuhkan untuk meningkatkan keberagaman konsumsi pangan masyarakat, sehingga tokoh masyarakat harus mempunyai pengetahuan yang baik tentang keberagaman konsumsi pangan. Tujuan penelitian ini untuk mengetahui tingkat pengetahuan tokoh masyarakat tentang keberagaman konsumsi pangan. Untuk mengetahui capaian keberagaman konsumsi pangan tokoh masyarakat serta hubungan antara pengetahuan dengan keberagaman konsumsi pangan tokoh masyarakat. Penelitian ini menggunakan desain crossectional. Lokasi penelitian di Kecamatan Jetis Kabupaten Bantul. Sampel diambil secara proporsional random sampling. Variabel bebas dalam penelitian ini adalah pengetahuan dan variabel terikatnya adalah keberagaman konsumsi pangan tokoh masyarakat. Data dianalisis dengan korelasi product moment. Rata-rata skor pengetahuan tokoh masyarakat adalah 44.85±13,71. Rata-rata skor keberagaman konsumsi pangan tokoh masyarakat adalah (50.87±13,58)%. Analisis korelasi product moment menunjukkan p=0,019. Ada hubungan antara pengetahuan dengan keberagaman konsumsi pangan tokoh masyarakat. Ahli gizi puskesmas diharapkan dapat memberikan penyuluhan atau pelatihan untuk meningkatkan pengetahuan tentang keberagaman konsumsi pangan kepada tokoh masyarakat.

Abstract

Background: Riskesdas in 2013 showed that Yogyakarta (DIY) had a prevalence of stunted new kid in school is less than the national average, which is 14.9% (MOH, 2013). Stunted or short, is a linear growth retardation has been widely used as an indicator to measure the nutritional status of individuals and community groups. Stunted can be influenced by several factors: birth weight, birth length match and genetic factors. Objective: To determine the weight, length of low birth weight and genetic factors as predictors of the occurrence of stunted on elementary school children. Methods: The study was a case control analytic. Research sites in SD Muhammadiyah Ngijon 1 Subdistrict Moyudan. The study was conducted in May and June 2015. The subjects were school children grade 1 to grade 5 the number of cases as many as 47 children and 94 control children. With the inclusion criteria of research subjects willing to become respondents, was present at the time of the study, they have a father and mother, and exclusion criteria have no data BB and PB birth, can not stand upright. The research variables are BBL, PBL, genetic factors and TB / U at this time. Data were analyzed by chi-square test and Odd Ratio (OR) calculation. Results: In case group as much as 91.5% of normal birth weight and length of 80.9% of normal birth weight, most of the height of a normal mother and father as many as 85.1%. In the control group as much as 78.7% of normal birth weight and 61.7% were born normal body length, height mostly normal mom and dad that 96.7% of women and 90.4% normal normal father. Statistical test result is no significant correlation between height mothers with stunted incidence in school children, and the results of chi-square test P = 0.026 with value Odd Ratio (OR) of 3.9 and a range of values from 1.091 to 14.214 Cl95%. Conclusion: High maternal body of mothers can be used as predictors of the occurrence of stunted school children and mothers with stunted nutritional status have 3.9 times the risk of having children with stunted nutritional status. Abstract

Background : IDD problem is a serious problem, 33% of districts in Indonesia are endemic, 21% of endemic mild, moderate endemic 5% and 7% by weight endemic. Urine Iodine Excretion (EYU) illustrates the iodine intake of a person, because 90% of the iodine that enter the body are excreted through the urine. Blocking agents are substances certain minerals such as iron, manganese and calcium, which can bind iodine in groundwater. Objectives : This study aims to determine the relationship of Fe content in ground water sources against EYU levels in school children in the village of the District Cerme Panjatan Kulon Progo. Methods : An observational analytic research with cross sectional design. Data collection is done in May - June 2015. Location research Elementary School Cerme, District Panjatan Kulon Progo. The subjects of the study as many as 34 children in elementary school classroom Cerme 3, 4 and 5 were taken by simple random sampling. Well water and urine samples taken students then tested the iron in the Central Health Laboratory test Yogyakarta and iodine in urine in Magelang BP2GAKY Laboratory. Data analysis using Spearman Range test with significancy level : 0.05. Result : Fe content in the ground water is below the normal threshold is <0.3 mg / L. While levels EYU school children who are under the optimal level of 5.9%, the optimal level of 32.4%, and the optimum levels above 61.8% (optimal: 100 - 199μg / L). Conclusion : There was no significant relationship between the Fe content in groundwater with levels of EYU in school children in District Panjatan Kulon Progo (p = 0.447). Keywords: Fe, EYU

Abstract

Background: Today, there are many sought a safe natural antioxidant source, mainly derived from plants. Some fruits and vegetables shown to have high antioxidant activity. Carrot have a lot of antioxidant. During this carrot has not been used optimally. Jam is a semi-solid food made from fruit and sugar. Jam usually made of the crushed fruits. The addition of carrots in jam is expected to add the content of the antioxidant activity and preferred by the consumers so that could become one of the new alternative in an effort to diversify sources of antioxidant for food product. Objective: This study aims to determine the phisycal character, organoleptic character, and the antioxidant activity of the pineapple jam with mix variations of the carrot. Method: The kind of this study is experimental with simple random design. Results: The test data result of the phisycal character, organoleptic character, and the antioxidant activity analyzed by using the descriptive method. The more mix variations of the carrots so the color of the jam became more orange, the taste became langu like the typical of carrot, the smell became langu also like the typical of carrot, and the texture became smoother. The preffered color jam is the mix variations of carrots color 35%. The preffered smell of the jam is the mix variations of carrots 25%. The preffered taste of the jam is mix variations of carrots 35%. The preffered texture of the jam is mix variations of carrots 25%. The more mixture of carrots, the antioxidant activity of pineapple jam became higher. Conclusion: There is a difference in phisycal character, organoleptic character, and the antioxidant activity in pineapple jam with mix variations of carrots. Abstract

Latar Belakang : Ketersediaan keberagaman pangan di Daerah Istimewa Yogyakarta (DIY) pada tahun 2014 sebesar 96,9%, tetapi keberagaman konsumsi pangan riilnya baru mencapai 85,3%. Tujuan : Untuk mengetahui faktor-faktor yang berpengaruh terhadap keberagaman konsumsi pangan rumah tangga di DIY. Metode : Penelitian menggunakan data sekunder 1.576 rumah tangga hasil Surkesnas 2015 di DIY. Data dianalisis dengan Ordinary Least Square (OLS). Hasil : Rata-rata skor keberagaman konsumsi pangan rumah tangga sebesar 65,74%. Kesimpulan : Ada pengaruh positif umur ibu, pendidikan ibu, pendapatan, dan pekerjaan terhadap keberagaman konsumsi pangan rumah tangga. Ada pengaruh negatif jumlah anggota rumah tangga dan kemiskinan terhadap keberagaman konsumsi pangan rumah tangga
