Abstract

Sardine fish meal by-product contain eicosapentaenoic acid (EPA) and docosahexaenoic (DHA) and it can be made as emulsion. The purpose of this study were to determine the best fish oil emulsion by mixingthe oil phase (lecithin 3% and oil) and water phase (carboxymethyl cellulose/CMC 2% and fruit juice) and then stored until creaming, and the emulsion is analyzed their viscosity, pH, percent of stability and longseparation. Sardine oil is separated from the emulsion and tested oxidation parameters. The best emulsion was fish oil emulsion after refined without citric acid (RTS) with viscosity (2470.31 cP), pH (5.64), percent of stability (56.14%) and long separation (14 days). Primary and secondary oxidation parameters of RTS  were FFA (14.87%), PV (14.43 meq/kg), AV (32.57 meq KOH/g), AnV (17.3 meq/kg), and Totox (46.16 meq/kg).

Abstract

Seaweed is one of the main commodity which spread throughout Indonesian waters. Seaweed contains bioactive compounds which can serve as a defense form ultraviolet radiation. The purpose of this study was to obtain chemical composition, phytochemical compounds, vitamin E, and antioxidant activity of extract P. australis and E. cottonii. Chemical composition of P. australis moisture 87.25%; ash 2.34%; protein 1.05%, fat 0.58%; and carbohydrates 8.78% while E. cottonii moisture 76.15%; ash 5.62%; protein 2.32%; fat 0.11%; and carbohydrates 15.8%. The yield of P. australis extracts using methanol 4.55%; ethyl acetate 0.8%; and n-hexane 0.45%, yield of  E. cottonii extracts using methanol 6.6%; ethyl acetate 0.5%; and and n-hexane 0.35%. Vitamin E value of P. australis 162.75 μg/mL and E. cottonii 158.07 μg/mL. IC50 value of P. australis 87.082 ppm and E. cottonii  106.021 ppm. P. australis and E. cottonii contain phytochemical compound such as flavonoids, phenol hydroquinone, and triterpenoids, P. australis was also known contain tannins andsaponins.

Abstract

Green seaweeds contain many bioactive compounds which one of them act as antioxidants as wellas rich in fibers and essential minerals. This study was aimed to determine physicochemicals propertiesof green seaweed Caulerpa lentillifera, Halimeda opuntia and Ulva lactuca. The analitycal methods of thisresearch consists of: proximate analysis, mineral composition, phytochemical compounds, heavy metalcontent and antioxidant activity of extract green seaweed by CUPRAC, DPPH and FRAP method. Theproximate analysis showed that the water content of the three seagrasses ranged from 10.83-28.41%, the ashranged from 24.97-70.66%, the fat ranged from 3.80 to 5.26%, the fiber ranged from 2, 63-3.86%, proteinranges from 0.18 to 1.43% and carbohydrates range from 10.69 to 36.49%. Seaweeds contain Ca mineralsranging from 17.95-124.39 g / kg, Na ranges from 21.16 to 34.18 g / kg. Mg ranges from 2.63-22.23 g / kg,K ranges from 2.29-12.28 g / kg and Fe ranges from 0.13-0.34 g / kg. The three seaweeds contain Pb heavymetals ranging from 13.57-37.76 mg / kg, Cu ranges from 5.02-8.32 mg / kg and Hg ranges from 0.170 to0.265.. bioactive compound extract C. lentillifera, H. opuntia and U. lactuca contains alkaloids, flavonoids,phenols hydroquinone, saponins, steroids and triterpenoids. Green seaweeds contain DPPH antioxidantactivity within IC50 values of 43,53-95,91 mg/L, CUPRAC 138.21–212.43 μmol trolox /g, FRAP 175.93–181.79 μmol trolox/g.

Abstract

Seaweed is main commodity with abundant amount of Indonesian waters. Seaweed contains naturallybioactive compounds that acts as antioxidant and tyrosinase inhibitor which inhibit melanin formationand the latest approach used to skin lightening. The aim of this research were to determine chemicalcharacterization such as heavy metal, secondary metabolite (phytochemical compounds), moisture, vitaminC and E, antioxidant activity and total plate count (TPC) on dry simplisia and slurry of S. plagyophyllumand E. cottonii. Total microbe of S. plagyophyllum amounted 2.3×102 colony⁄g with moisture content 16,71%and E. cottonii amounted 2.2×103 colony⁄g with moisture content 19.79%. Brown seaweed, S. plagyophyllum,did not contain dangerous heavy metal. Vitamin C value in both spesies of seaweed were 212.95 mg/kg forS. plagyophyllum and 15,95 mg/kg for E. cottonii. Vitamin E of S. plagyophyllum amounted 363.86 mg/kgand 0.23 mg/kg for E. cottonii. IC50 value of S. plagyophyllum was 109 ppm and 130.62 ppm for E. cottonii.S. plagyophyllum slurry contain bioactive compound such as alkaloids, steroids, flavonoids, saponins andtannins. E. cottonii slurry contain bioactive compound alkaloids and terpenoids.

Abstract

Brown seaweed is one of the abundant resources that grows on the reefs of Pohuwato, Gorontalo Province. This research was aimed to determine the characteristics of S. polycystum and P. minor as sources of salt for hypertensive patients. The research consisted of proximate analysis, minerals, heavy metals, extraction, phytochemicals, phenols analysis, and antioxidant activity. S. polycystum, P. minor had water content of 17.69-22.31%, ash 24.51-30.53%, fat 0.50-0.52%, protein 3.65-4.78%, carbohydrates 53.66-41.88 and crude fiber 3.81-6.52%. The seaweeds also contained  Mg 8.89-22.41 mg/g, Fe 0.50-1.00 mg/g, K 26.90-32.71%, Na 22.23-22.69 mg/g, Ca 18.06-32.91 mg/g and ratio Na:K 0.69-0.83 mg/g. Heavy metals were detected in low levels with the content<0.002-<0.004 ppm. Ethanol extract of S. polycystum contained flavonoid, saponin, streoid, alkaloid. Meanwhile ethanol extract of P. minor contained flavonoid, saponin, triterpenoid, stereoid, phenol, dan alkaloid. Total phenol level of S. polycystum was 173.6 mg GAE/g and P. minor was 568.7 mg GAE/g. The antioxidant IC50 of S. Polycystum was 77.58 mg/L while P. minor was 66.38 mg/L.

Abstract

Anchovy is very abundant in Indonesian waters and become economically potential export commodity. The value of anchovy production in Indonesia increased from Rp 1.222 billion in 2006 to Rp 3.095 billion in 2014. The anchovy processing industries in East Java are mainly found in Madura and Tuban. This study was aimed to identify the implementation levels of the GMP (Good Manufacturing Practice) and SSOP (Sanitation Standard Operating Procedures) of three semi-dried anchovy fish processing units(UPI) in Tuban. The application of GMP and SSOP in these three fish processing units was assessed using observation and interview. The research shows that the application of the GMP and SSOP at UPI A andUPI B did not fulfill the regulation of the Minister of Industry of the Republic of Indonesia in 2010. Many components such as the building condition and layout, solid waste management, environmentalmanagement and personal management are still not fulfilled the standard. Meanwhile, UPI C in general have fulfilled the Regulation of the Minister of Industry of the Republic of Indonesia in 2010.

Abstract

Blue swimmer crab (Portunus sp.) is one of the aquatic products which also the member of crustacea with high value as local commodity and export commodity. Weight changes in blue swimmer crabs can occur during handling time and steam process. This research aimed to determine different handling time on weight changes, proximate composition and amino acids of blue swimmer crab (Portunus sp.). The handling times used in this research were 0 hours (J0), 2 hours (J2), 4 hours (J4), 6 hours (J6) conditioned in ambient temperature. Weight lost before and after steam process of blue swimmer crabs showed significant differences in J6. Proximate compositions did not show significant differences in J0 and J6. Amino acids analysis determined by HPLC method and and did not show significant differences in J0 and J6 except for methionine, histidine, arginine, serine, and glutamic acid.

Abstract

West Aceh Region has Nypa fruticans mangrove community distributed almost ±100 Ha. N.  fruticans  leaves have been used as traditional cigarette paper. The objective of this study was to explore bioactive compound of  N. fruticans from the coast of West Aceh as antioxidant. The extraction used 3 solvents including methanol (polar), etyl acetate (semi polar), and n-hexane (non polar). The result showed the methanol extract contained  bioactive compound content such as phenolic, flavonoid, tannin, saponin, and steroid while the etyl acetate extract comprised phenolic, tannin, and steroid. Moreover, n-hexane extract only had steroid compound. The result of antioxidant activit assay showed etyl acetate extract had IC50 value 8.81 µg/mL, methanol extract had IC50 value 9.31 µg/mL and n-hexane extract was 238.47 µg/mL with ascorbic acid as positive control. It is indicated the presence of phenolic, flavonoid, tannin, and saponin in the ethyl acetate extract play the role as antioxidant.

Abstract

Produksi minyak ikan di Indonesia memiliki kualitas rendah dan hanya dimanfaatkan sebagai bahan tambahan pakan ternak. Tingginya suhu dan lamanya ekstraksi memicu pembentukan radikal bebas dan oksidasi pada minyak sehingga memengaruhi kualitas minyak yang dihasilkan. Perbaikan proses ekstraksi mampu menghasilkan minyak ikan dengan kualitas baik. Tujuan penelitian ini adalah untuk menentukan suhu dan waktu ekstraksi untuk menghasilkan minyak ikan sesuai standar IFOS dengan metode dry rendering. Ekstraksi dilakukan pada suhu 50, 60, 70oC dan waktu 1, 2, 3 jam dengan metode dry rendering. Hasil ekstraksi terbaik yaitu pada suhu 50oC, 2 jam dan selanjutnya dilakukan pemurnian dengan proses bleaching menggunakan magnesol XL. Minyak ikan yang dihasilkan memiliki asam lemak bebas 0,08±0,03%, p-anisidin 1,92±0,63 mEq kg-1, total oksidasi 7,48±0,23 mEq kg-1 dan bilangan peroksida 2,70±0,20 mEq/kg. Hasil penelitian menunjukkan bahwa minyak ikan memenuhi standar IFOS pada parameter asam lemak bebas (≤ 1,5%), bilangan p-anisidin (≤ 20,0 meq kg-1), total oksidasi (≤ 26,0 meq kg-1) dan bilangan peroksida (≤5,0 meq kg-1).

Abstract

Pertumbuhan mikroba yang tidak diinginkan menunjukkan bahwa didalam produk pangan telah terjadi kontaminasi dari luar ataupun karena proses pengolahan. Tujuan dari penelitian ini adalah untuk mengetahui jumlah mikroba yang ada pada serbuk minuman fungsional lintah laut (Discodoris sp.) pada suhu yang berbeda (30 °C, 35 °C dan 45 °C) selama penyimpanan, adapun parameter pengamatan yang digunakan dalam penelitian ini meliputi uji total mikroba/kapang, pH (derajat keasaman) dan uji kadar air (aw). Metode yang digunakan untuk menghitung jumlah mikroba adalah Perhitungan jumlah total mikroba dilakukan dengan Standard Plate Count (SPC). Analisis data dilakukan dengan mendiskripsikan hasil Total Plate Count pada sampel  serbuk minuman fungsional lintah laut. Analisis tersebut disajikan suatu Standards Plate Count (SPC) dalam bentuk grafik untuk mempermudah dalam pembacaan. Hasil penelitian menunjukan bahwa Jumlah TPC pada dua formula serbuk minumam fungsional lintah laut ini pada berbagai suhu penyimpanan masih dibawah standar yang ditetapkan oleh SNI
