Abstract

Jelly candy was formulated with additional Gelidium and gelatin. Gelidium and gelatin contain components that can improve the texture. The objective of this study was to know the chemical quality from Gelidium sp. jelly formulation. Three treatments GA (content of Gelidium was 63,2%), GB (content of Gelidium was 61,80%) and GC (content of Gelidium was 60,4%) were analyzed to see their chemical quality. The highest moisture content was obtained at GA treatment (19,13%). The highest ash content was obtained at GC treatment (0,45%). The highest sugar content obtained at GB treatment (55,22%). The highest Protein content obtained at GC treatment (21,89%). The lead (Pb) unidentified in a product after formulation.

Abstract

The Arrhenius model ASLT method is widely used to estimate the shelf life of food products that are easily damaged by the effects of chemical reactions, including fat oxidation, Maillard reactions, protein denaturation and so on. The aim of this study was to determine the best shelf life through stability testing. Testing shelf life was done by acceleration time or acceleration model using Arrhenius method. During the storage period, the product was stored in three different temperature conditions, ie, 30 ° C, 35 ° C and 45 ° C. Stability test performed on every 7 days observation of water content test (aw). Estimation of shelf life based on the critical parameter that is water activity value (aw) hence can be known save age of functional beverage powders sea slug of T2 have a longer shelf life when compared with  T1.

Abstract

This study aims to obtain the right formulation in terms of nutritional and organoleptic value of Brunok instant powder drink. The optimized factor is the amount of Brunok extract used for the manufacture of instant powder drinks with an additional 1% emulsifier and 10% maltodextrin. Making instant powder drinks using the foam mat drying method using an oven with a low temperature setting of 70-80 °C for 15-20 minutes. The use of low temperature is intended to maintain the functional value of the Brunok instant powder drink which is beneficial for health. Based on the trial and error test, 3 instant powder drink formulations were obtained, namely F111, F211 and F311, by means of the hedonic test the preferred formulation for panelists was the F211 formula. The characteristics of the selected powder drink are water content 4.91%, fat 1.75%, protein 2.47%, ash content 0.45% carbohydrate content 90.43% and ALT 7.0x101 colony/g.

Abstract

Scaevola taccada (Beach Naupaka) is common plant found on Indonesia coast.This study was aimed to determine antioxidant activity and levels of vitamin C contained in the juice of old, young, and mixed beach naupaka's fruit. Antioxidant activity was tested using DPPH method and vitamin C levels using the iodimetric titration m. The results obtained showed that the antioxidant activity of beach naupaka were 113.47 ppm for old fruit, 130.71 ppm for young fruit, 164.58 ppm for mixed fruit. Vitamin C levels of old, young, and mixed fruit water were 7.04 mg, 36.96 mg, and 30.8 mg respectively.

Abstract

Snubnose pompano (Trachinotus blochii) is one of the commodities of aquaculture featured in Riau Archipelagic Province. This biota has a selling price that is expensive, so that the necessary transport technology innovative to maintain resale value. Melastoma malabathricum leaf is one of the natural ingredients that are suspected of potential to be used as the material of anesthesia. The purpose of this study is to determine the concentration of crude extract the leaves of Melastoma malabathricum according to anesthesia snubnose pompano and survival rate. Baded on the results of the study, the crude extract Melastoma malabathricum best is at a concentration of 25% with the onset time 40.69 minutes and recovered time 13.34 minutes with a survival rate 100%. The quality of the water after anesthesia still in the verge of reasonable limits where the pH value 6.67, dissolved oxygen 4.5, temperature 28.19ºC and total ammoniac nitrogen 1,59 mg/L.

Abstract

This study aims to analyze the amino acid component contained in the golden sea cucumber so that it can be used as a basis for consideration, management, especially the development of sea cucumbers. Protein in sea cucumbers have complete amino acids, both essential amino acids and non-essential amino acids. The result of the proximate test of golden sea cucumber has high protein content which is 95,14% and fat 0,20% compared to other sea cucumber type while the protein of sea cucumber is very low that is 1.78% and 1.54% ash. The highest content of dried sea cucumber amino acids in golden sea cucumber meat seen in glutamic acid of 6.6049%, 7.1769% glycine, aspartic acid 3.9227% and proline of 3.4189% while the results of wet sea cucumber amino acids have a low amino acid value with glutamic acid 0.2281%, Glycine 0.2308% and Alanin 0.2169%.

Abstract

Sunscreen cream products are usually derived from ingredients that contain an anti-UV component. Kaempferia galanga and Turbinaria sp. as long as it was known to have a good anti-UV light. However, research on the formulation of sunscreen creams from the two ingredients has never been done, so the need for research from both materials. The objective of this study was to get the best formulation of sunscreen cream from seaweed (Turbinaria sp.) and K. galanga. The treatments used in this study were the ratio between seaweed Turbinaria sp. and K. galanga in a ratio of 1: 1 (Cream A), 1: 2 (Cream B), 2: 1 (Cream C), and control (Cream D). The overall organoleptic value of aroma was not significantly different, whereas the best value for color and texture was found in cream B with an organoleptic value of color 3.27 and texture 3.2. All treatments were homogeneous and had an O/W emulsion type. pH and viscosity values in all treatments were by the applicable cosmetic cream requirements. The highest SPF value was found in cream B with a value of 18.04 ± 4.72. That makes cream B was the best treatment in this study

Abstract

Research on laboratory scale Spirulina platensis cultivation in Indonesia has developed quite a lot, however, several obstacles occur at harvest time, ranging from high prices and a very long time. Therefore this study aims to determine the effectiveness of the use of electrocoagulation in harvesting S. platensis using different voltage. The research phase included microalgae cultivation, electrocoagulation process, and harvesting of S. platensis, then continued with an analysis of biomass S. platensis, proximate composition, and water quality (pH, temperature, and Ferro (Fe) content). The treatment of electrocoagulation method harvesting of microalgae with voltages 0, 5, 10, and 15 volts (F0, F1, F2, and F3, respectively) were applied in this study. The best biomass harvested with electrocoagulation from F3 treatment was 6.05 gr/L. The proximate content of S. platensis with F0, F1, F2, and F3 treatments were moisture 24.58%, 12.32%, 15.36%, 17.8%, ash 26.56%, 22.42%, 26.53%, 34.99%, protein 34.24%, 30.26%, 25.81%, 21.67%, fat 1.27%, 0.86%, 1.65%, 0.65%, and carbohydrate 13.35%, 34.15%, 30.66%, 25.22%, respectively. The water quality result showed with, F0, F1, F2, and F3 treatments were pH 7, 7, 9, 8, temperature 32°C, 32°C, 32°C, 34°C, Ferro (Fe) 0.1 mg/L, 8.01 mg/L, 12.58 mg/L, 12.29 mg/L, respectively. The best treatment with electrocoagulation method harvesting was F3.
