Abstract

The application of various lecture methods through distance learning has several obstacles, so alternative methods are needed. This study aims to analyze the effect of mind mapping learning methods assisted by picture media on students' knowledge of the Basic Competence of Analyzing Dessert through Distance Learning. The research was held at Vocational High School 38 Jakarta with a population of 69 students in 2021/2022. The research method used a quasi-experimental, non-equivalent control group design with a purposive sampling technique. Class XI Culinary II is the Experiment Class with 33 Respondents, and Class XI Culinary I is the Control Class with 35 Respondents. Research data was sourced from the mean value of the post-test of the two classes. The results showed that the t-test = 2.138 with a significance of p = (0.037) <0.05. Accordingly, H0 was rejected, so Ha was accepted. The mean value of the Experimental Class showed an increase in knowledge of 22% while the Control Class was 14%. So, the mind mapping method with the help of image media is more influential in increasing knowledge of analyzing desserts through distance learning.

Abstract

Background, in the era of digital transformation like now in the 21st century, where information and communication technology has developed very rapidly. The use of technology is considered very important in all areas of human life to facilitate communication and information in a very wide scope and reach, quickly and easily. This research method was carried out using the research and development (r&d) method. Development research is a process used to develop and validate educational products. In this research and development, the researchers used the addie development model. The material expert trial was conducted by expert lecturers from the culinary education faculty of engineering, jakarta state university. The results of the material expert assessment instrument consisted of 3 aspects of assessment, which were divided into 13 indicators and 17 statements with a maximum score of 68 points. Material Experts, Media Experts And Linguists stated that android-based mobile learning media on the material for processing and serving traditional indonesian flour-based cakes was stated suitable for use in the learning process. The conclusion of the students stated that android-based mobile learning media on traditional cake material was declared feasible for use in the learning process

Abstract

This research was conducted to determine the development of video tutorial learning media for manatiang service in restaurant management and service courses. This research conducted on Vocational Education in Culinary Arts, State University of Jakarta since June 2022. This research used the Research and Development (R&D) method with the ADDIE development model (1) analysis, (2) design, (3) development, (4) implementation, and (5) evaluation with data analysis techniques in the form of descriptive percentages. This research was validated by media, material, and language experts. The development of learning media is expressed through validation results by media expert that scores 92% (very good), by material expert that scores 81% (good), and test result obtained from linguists are 82% (good). In the one to one evaluation, the percentage was 94% (very good), in the small group evaluation, the percentage was 94% (very good), in the field group evaluation the percentage was 83% (very good), and in the student responses the percentage was 85% (very good). From the results of the study, it can be concluded that the video tutorial learning media is feasible to use in the learning process.
